part of why it was universally recommended as a “best” destination. The Prague Old Town market is open during all major holidays from early December to January 6. You could also spend the holidays with Santa and roller coasters at the Christmas market in Tivoli Gardens, Copenhagen’s magical amusement park, open through December 31. For those who want a true stretch goal, fly to Tallinn, Estonia, and bask in fairy tale lights, northern weather, and history: the city’s Town Hall Square has hosted Christmas trees since the 1400s. 4. Go underground in Valkenburg: This one tends to be missed on “best of ” lists. It shouldn’t be. Valkenburg, just 300 km up the road in the Netherlands, offers a literal underground experience: its gorgeous Christmas markets are hosted in two caves. Open from mid-November to December 23, you need to see this sooner rather than later. Unlike most

by Ronnie Juhans contributing writer As the unpredictable German Winter weather approaches, the temptation to stay indoors and keep your fingers and thumbs fit with the latest technology increases. Indoor bouldering is an excellent way to maintain or increase your level of fitness no matter what the conditions outside. Bouldering is a form of rock climbing that is performed on small rock formations or artificial rock walls, known as boulders, without the use of ropes or harnesses. This sport is a full body workout that has increased in popularity because it is fun, challenging, increases strength and stamina, and offers a social aspect. While bouldering, you do not encounter people tuning out everything around them by blasting music in their ears or cruising through social media while on a treadmill, stationary bike or any other piece of equipment as you would in a gym. Bouldering requires no more equipment than a chalk bag and a good pair of climbing shoes, both
• Clothing that is loose, comfortable and unrestrictive. • Climbing shoes that have been properly fitted. Otherwise I suggest renting them for a small fee at the climbing hall. • A pair of sandals or flip flops. • Euro to be on the safe side in case your plastic is not accepted.

Some of them can be very restrictive for safety reasons. • Take breaks frequently to avoid overexertion and injury. • Don’t wear climbing shoes outside, in the restrooms or while taking a food and drink break. • Don’t allow children to be unattended at any time.

The lack of proper fit can make your bouldering experience miserable. Seek expert advice for a perfect fitting shoe. If you are afraid of heights and cannot bring yourself to trust another person on the ground with your life (belayer), this form of climbing allows you to stay within your comfort zone, bail out whenever you are too fatigued, not feeling it anymore, and know that you have a crash pad below that will absorb that unexpected fall. The featured climbing centers in this article are within a short distance of the KMC and offer a variety of routes based on skill levels, strength building areas, group programs, kid’s programs, slacklines, outdoor bouldering, yoga and saunas, as well as food and drink bistros.

Rocktown has a large 1,500 square meter bouldering gym that is not only designed for a great workout but is visually grasping due to its amazing structures. Beginners to experts will have a great experience here. The German national bouldering team has even used this venue for training. Other features include slacklines, areas for strength and flexibility training, and yoga classes. Classes are offered on a regular bases for adults and kids. There is also a kid’s area with low walls that can be used for birthday parties, an equipment and accessory shop, as well as a very impressive bistro and bar that offers pizza snacks and drinks when you need to take a break or just hang out for a while.

While the festivities feel the same as a New Year’s Eve celebration in the United States, in Germany, they are actually celebrating Saint Sylvester. At midnight, a great noise is heard through fireworks and church bells. This tradition, that noise helps ward off spirits, dates back to pre-medieval times.

Advent Sundays help usher in the festivities. Advent Sundays are the four Sundays in December leading up to Christmas. Because you count down to Christmas, the dates for Advent Sundays change from year to year (in 2018 they will be Dec. 2, 9, 16, and 23). Traditionally, a wreath with four candles is placed on a living room or dining room table. On each Sunday before Christmas, one of the candles is lit, culminating in the fourth candle lighting on the fourth Advent Sunday, just days before Christmas Eve.

Anyone who’s stood amidst the glow of a Weihnachtsmarkt or Christmas market knows that the holiday season in Germany is special. While different regions of Germany have their own customs, some traditions are observed countrywide.
Christmas. Each day on the calendar has a little door or window that, when opened, reveals a treat (usually a chocolate, candy, or toy). However, for children in Germany, St. Nicholas Day is when they find out whether they were naughty or nice. On the evening of Dec. 5, German children put out their boots before bed. If they’ve been good, they wake to find that St. Nicholas has visited and with the help of his assistant, Knecht Ruprecht, placed small gifts and candy in their boots. In Bavaria, St. Nicholas and Ruprecht are accompanied by the Krampus, a horned creature who is there to punish the children who haven’t been so good.

Winter forest hiking – time for adventures For my fellow hikers who enjoyed the great outdoors trekking during the warmer months of the year, there is no need to put away those boots and let Old Man Winter keep you indoors until spring of next year. Winter hiking and snowshoeing are excellent activities for those of you who are not into skiing or snowboarding and want to keep up your fitness levels while checking out amazing scenery, tasting schnapps and local food specialties along the way, visiting landmarks, and seeing a variety of wildlife and plants that thrive throughout the winter months. Below are four routes for you to start enjoying nature in the colder months. Gipfelrauschen Hike This hike begins at the Hunsrueckhaus located next to the Erbeskopf ski slope. The clearly marked trails lead you through dense spruce and fir forest areas with a variety of wide open spaces to narrow footpaths and nature preservation areas. It then takes a few upward spiral turns and drops back into a valley path that leads you to the Gipfel (peak) platform which is the highest point in the region. From the Gipfel you have a view of the hills, valleys, and villages for several kilometers in every direction. The path from the Gipfel leads you down to your start point at the Hunsrueckhaus where you can recharge and warm up with an amazing soup of the day, local schnapps, local food specialties, and visit the nature museum and souvenir shop. Wind, Wasser & Wacken Hike The Wind, Water, and Rock trail is an excellent environmental education hike for adults, school groups, and anyone who wants to get out and enjoy a day crossing streams, meadows, and trekking along thick forest paths in the Hardtwald forest near Thalfang. The theme is climate protection, energy conservation through the use of wind and water power in the region, and also focuses on geology. Along the way you encounter windmills, underground springs, mineral wells, a dark narrow oak forest area, and the Berger Wacken geological area. All areas have informational signs posted, and there are a variety of rest stops along the way for a picnic lunch and snacks. Just below the start point in the village of Thalfang you will find a variety of restaurants and cafes to enjoy local food and drink specialties, as well as grocery stores and shops just in case you forgot to pack something for your day out on the trail. Start point: Wanderpark platz, “Huns rücker Windweg,” junction K77 / K76, 54426 Heidenburg / Berglicht Distance: 10.1 km Time estimate: 3 ½ Hours Experience: Excellent Terrain: Wide open meadows, narrow trails, creek crossings, dense forest Difficulty Rating: Easy to moderate. Baerenbachpfad Hike The Baumholder community is often regarded by many as a place that they are stuck in with nothing to do and nowhere to go locally, especially during winter. However, there are many adventures just minutes away from post and the housing areas. The Baerenbachfad (bear stream path) hiking trail takes you on a very quiet and peaceful journey by streams, rock formations, waterfalls, through meadows, fields, and forest areas with amazing panoramic views. Take advantage of the many rest stops along the trail for a picnic lunch or to get a glimpse of the many inhabitants of this well-preserved forest region. The old town of Baumholder has a variety of small cafes and restaurants where you can find local specialties as well as American, Italian, and Asian restaurants. Feldberg Although I’ve been snowboarding and skiing for many years, snowshoeing is a way for me to mix up my activities while avoiding crowded slopes, long ticket and lift lines, and hauling a bunch of equipment around. This very popular sport does not require hours of lessons, is very easy to learn, has a low injury risk factor, is inexpensive, and a great way to relieve stress, the winter blues, burn excess holiday calories, and spend quality family time outdoors. One of my favorite snowshoe adventures start at the House of Nature adjacent to the Feldberg ski lift. All trails are clearly marked, and you can get a trail map for free or hire a guide for an additional fee. Although some of the trails can be a bit challenging while trekking through deep snow, it is worth the extra effort to experience the panoramic views, crisp mountain air, and taking a break at one of many mountain huts and lodges to relax and recharge. They offer the best local specialties that include Black Forest smoked ham, sausages, cake, cherry schnapps, beer and wine. Some of them also have overnight accommodations.
The House of Nature in Feldberg offers regular guided snowshoe tours as well as snowshoe rental. Based on snow conditions, tours are provided every Sunday from December till March at noon. Christmas markets in Regensburg radiate with allure of old world By Thomas Warner contributing writer One of the best Christmas market scenes in Europe happens each winter in Regensburg. The town itself is a jewel and at Christmas it takes on another life of its own. Markets are set up at several locations – all within walking distance of one another – and visitors usually begin planning another warmweather visit to this undiscovered European stalwart.
Planning a trip to this Bavarian masterpiece is easy, as you take the Autobahn 6 eastward, past Mannheim, Heidelberg and finally Nuremburg, where you will go south on Autobahn 3 some 50 kilometers. In all, it takes about five hours to drive, but a train ticket from Landstuhl to Regensburg might cost as little as 30 euro, with the market areas then easily accessible from the central train station. Christmas markets along the Danube River have drawn big crowds for over 100 years, but they remain largely undiscovered by mass American audiences because of the lack of name recognition compared to larger German cities of Cologne and elsewhere. With the expected drive, it is a good idea to arrange for an overnight stay so you can

An internationally-known boys choir sings at masses and church ceremonies in the cathedral, making for a memorable and spiritually pleasing experience if you can catch them. Occasionally they perform outdoors but more often inside. Other musicians with horns, stringed instruments, and classical flavors are almost always performing world music, traditional, and classical numbers as a backdrop to the outdoor market ambiance. It sets an uplifting tone for the overall experience and is pleasing to both the ear and the soul.

The historical aspects of Regensburg make it appealing and noteworthy for new visitors, but one might use the Christmas markets as the overall reason to go there. With overnight plans, you can also access the Roman-era Stone Bridge walking area, the 1800s Walhalla monument, the ages-old public Sausage House restaurant, multiple rich, market shopping experiences, or a simple cup of coffee with friends while soaking up the intrigue of the passing of time. This is a city with a flair for culture. It has a philharmonic symphony, a thriving theater scene, a university, and people living here who take pride in showcasing their town as having much more than just the Christmas markets.

Skydiving is one of those experiences in life that many ponder and have on their bucket list of amazing adventures. My only warning to you is the addictive nature of this sport. My first jump got me so hooked that every time I see a Cessna fly over, even during the offseason, my adrenalin levels crank up and take me back to that moment. Arriving at the hangar for my first jump and meeting the tandem instructors who were professional, friendly, and gave off powerful enthusiastic vibes got everyone in the group motivated and eager to get the show on the road and into the sky. We were briefed on the safety of the sport, equipment, and the process of jumping out of a plane while going on a tandem flight from 14,000 feet. After boarding we took off on a smooth ascent and just chilled out while enjoying the view on the way up. My instructor was hilarious and told a couple of jokes during the flight, keeping us laughing. Once the plane leveled, the words “ready mate� was the last thing that I recall hearing before spilling out the door for a thrill of a lifetime. The initial jump and freefall at over 100 miles per
hour was crazy. It was amazing, like floating on water and not that gut-wrenching sick feeling of falling uncontrollably that many people anticipate and fear. After the initial freefall the instructor deployed his chute and slowed us down for our descent to the drop zone. One of the coolest things was to go into circular maneuvers with my hands stretched in front of me while enjoying an amazing view of the hills, valleys, and surrounding villages below without an inkling of fear in my mind. As we approached the landing zone my tandem instructor let me take the toggles and steer the chute for a bit while continuing to shout out what we were about to do and make sure that I was comfortable and that we would land safely. Once we landed I was ready to hop back into the plane and jump again. Skydiving like many other adventures are seasonal because of weather conditions. End of March through October is prime season. I will feature some of the best skydiving opportunities, and experiences in the spring and summer 2019 editions of the Kaiserslautern American. Until then there is a way to test the water this winter before diving in head first once the seasons change again. Indoor skydiving in a wind tunnel is an excellent way to try out how skydiving feels before-
hand and get yourself ready for the season. The wind tunnel airflow simulates the realistic freefall portion of a skydive as well as allowing you to do turns, go forward, backward, slow down and speed up your fall rate all which build your precision levels and confidence. The indoor flights are actually longer than outdoor flights. Not only was it fun and gave me that adrenalin junky fix, it is also very safe and can be done
with a group of friends or the whole family at one time. I have visited Indoor Skydiving Bottrop on various occasions. This extraordinary facility is open for beginners and professionals from all sectors of skydiving and offers the possibility to practice flying before an actual jump. The flight chamber is 17 meters high and has room for up to six participants. Skydiving Bottrop has a variety of packages for
adults, kids, and groups that start with two tunnel flights which are longer than two skydives from an altitude of 13,000 feet! You are welcome to bring food, water and snacks, or eat at the bistro. At 3,454 meters this is one of the most impressive views of Switzerland’s many snow-capped peaks. I’ve taken this journey a few times during different seasons and each experience was unique. The train ride to Jungfraujoch in itself is amazing and is worth the time spending 30 minutes from the Grindelwald village station to Kleine Scheidegg pass station and another 50 minutes on an epic ride to the highest point. However, if you time it right you can enjoy the views during the first leg, take a break at the Kleine Scheidegg station and treat yourself to local food and drink specialties inside the restaurant or out on the terrace with view of the Eiger mountain, as well as the surrounding peaks and valleys, before boarding the

next train that will take you through the Eiger mountain tunnel. If you’ve never been in the Swiss Alps be prepared for a variety of weather conditions and temperature changes. Everything from high winds to snowstorms and whiteout conditions due to dense fog can take you by surprise. Be prepared by having proper layers and not assuming that the sunny skies at the start of your trip will last for the rest of the day. Below are some of the most popular attractions for your visit to the top of Europe.

Eismeer Glacier The train stops at the Eismeer station at 3,160 meters for a 5-minute break to give passengers the opportunity to take photographs. Views of ice blocks and 4,000-meter peaks have visitors gasping in awe. This stop is a great opportunity to take an assessment of weather conditions and figure out if you need to dig into your backpack to adjust your clothing layers. The Alpine Sensation This is a 250-meter-long corridor between the Sphinx Hall and Ice Palace peaks. During this amazing and very chilly experience you can see memorials of the miners who’s hard work and sacrifices made the journey by railway to the top of Europe possible. Listening to the music and seeing the images along the way can be enlightening, or haunting, as you are taken back in time to the start of the construction of the railway.

Ice Palace The corridors and halls of the Ice Palace are a very impressive collection of ice artwork presenting a variety of sculptures, including a bear, penguin, eagle and more. The natural resemblance of the animal sculptures makes them appear as if they were frozen in place. The Ice Palace was carved out of the glacier in the 1930s by two mountain guides by hand using only ice picks and saws, creating a 1000 square meter large labyrinth.

Lindt Swiss Chocolate Although Lindt chocolate can be found almost anywhere, chocoholics from the world over spend a lot of their time at Jungfraujoch visiting the highest altitude chocolate shop and factory. The Lindt tour includes everything from learning how to use the mixing machines, how chocolate bars are made, an overview of the facility, and free time to load up on your favorite fix.

Living within a few hours of Switzerland in the KMC, I suggest driving to Interlaken or giving you the opportunity to not only visit the top of Europe by train but also ending your day by spending time sightseeing, eating more Swiss food, shopping for souvenirs like Swiss chocolate, Swiss army knives, watches, handcrafted woodworks, and eating the best Black Forest Cake (Schwarzwaelder Kuchen) in Europe while being entertained by the dozens of paragliders circling above and landing in a field just a stone’s throw away.

Though Lisbon in winter can be rainy, visitors can also be treated to a week’s worth of sun and warmth — like we were. Good weather wasn’t a gift that we took lightly. When it was time to leave, I looked at my children and said, “Take a deep breath, kids. We won’t be smelling anything like this for a long time.” I was talking about the crisp, clean smell of a sunny winter morning somewhere warm, like southern California or Florida. But the children nodded earnestly and took deep breaths. They know how it is. Winter in Europe rarely gets this good.

If you’ve noticed that you can no longer move inside your closet or garage, it may be time to start polishing up on your closet and garage organization skills. To help you with the decluttering process, here are five tips to consider.

What happens, then, when you and your family move abroad and are cut off from grandmother’s pumpkin pie? Do you try to video-conference into a dining room filled with bleary-eyed loved ones nine time zones away? Do you desperately decorate your house with blazing lights and violate a dozen local ordinances in the process? No. You do something better. You take a deep breath, get strategic, and build your own tradi-

Step 3: Dream big. Keep the brainstorm going. You live in a place where the possibilities for holiday adventure are staggering. You could see northern lights in Scandinavia or sun yourself on Spanish beaches. Gorge on gasthaus Sunday brunches or fly to Bratislava to hunt for handpainted holiday eggs. Wrap yourself in stinky Estonian
spa mud or go for something more pine-scented in Karlovy Vary. All these places (and hundreds more) are available to you during the holidays. Many people back home would call them “oncein-a-lifetime” opportunities. And here you are… Step 4: Think long-term. By definition, traditions endure. But most of us are only going to be here, in Europe, for a finite period of time. The tradition-building process, however, is portable and highly adaptable. So when you move to Korea, Texas, Kansas, Italy, or wherever, take this process with you. Make tradition-building a tradition! Step 5: Write down your plan and go. Once you’ve mourned, brainstormed, and dreamed your way to what your family’s new holiday traditions could be, pick a short list of winners and write them down. Then stack hands and start executing the plan.

Step 1: Be intentional about acknowledging reality. When you move abroad, reality has a way of not being subtle. New rules, new languages, and new country codes are hard to ignore. But holidays are sneaky. Even in a new place, holidays tend to produce bubbles that fool us into thinking things haven't changed that much. To move forward, the bubble has to pop. So pull out a pen and write down what you loved about holidays past. Th en acknowledge that some of those things are gone. If it helps, have a ceremony in which you say goodbye to them.
Step 2: Have a “holiday traditions” brainstorm — all brains are required. Now that you’ve mourned the loss of what once was, focus on the present. Gather your family and begin brainstorming. Write everything down. Ask yourself — and answer — questions like: what do the holidays really mean? What do you like about them? What do you not like? If you were free to start from scratch — if someone, say, picked you up and set you down in a different country — what would you do? Choose a moderator to make sure everyone participates.

German Christmas
Meal
While many Germans resort to classic dishes like potato salad and sausages or Schnitzel, most take advantage of the spare time that comes with the holidays and create extravagant meals for the whole family. The basic concept is the same as American feasts: a combination of meat, seasonal vegetables and carbs. While you can never go wrong with a classic pork tenderloin, mashed potatoes and brussel sprouts menu, here’s an option that’s slightly more effort but definitely worth the time it takes to prepare: Rinderrouladen (beef rolls), homemade red cabbage and bread dumplings. Don’t let the number of steps fool you, this requires none of the German cooking experience and results in all of the German flavors. Bonus: legend has it that leftovers taste even better and everything about this meal is suitable for reheating the next day. Serves 4 adults. Including cooking time, it will take you a little over 2 hours. Rouladen Ingredients: • 6 “Rinderrouladen” (buy pre cut at German butchers) • 6 thick slices of bacon • 6 pickled cucumbers, sliced lengthwise • 12 tsp. mustard • 2 shallots, thinly sliced • 2 tbsp. clarified butter or vegetable oil • Salt, pepper • cooking string or toothpicks Sauce • 1 bouquet of soup greens (carrot, celery, leek) • 2 tsp. tomato paste • 1 tbsp. sugar • 9 fl. oz. red wine • 14 fl. oz. beef stock • Salt, pepper to taste • 2 oz. butter cubes, frozen • 1 packet of chestnuts, pre-cooked • Optional: 1 tbsp. crème fraîche Instructions: 1. Slice and dice all of your vegetables. 2. Use a meat hammer to flatten your Rouladen. 3. Season with salt and pepper. Evenly spread 2 tsp. of mustard, a slice of bacon, the slices equivalent of one pickled cucumber and some of the shallots. 4. Roll the roulade like a burrito to ensure nothing falls out. 5. Wrap like a Christmas present using the cooking string. Toothpicks work, too.
6. Preheat the oven at 320°F/160°C 7. Use a large, oven proof pan to brown the Rouladen in butter on all sides. 8. Take meat out of the pan and add the soup greens, remaining shallots and tomato paste that will later become the sauce. 9. Sauté for 5 minutes. 10. Gradually add red wine and beef stock, giving it time to set between pours. 11. Put Rouladen back in the pan, on top of your sauce base, and put in the oven for circa 90 minutes. If they start to get too dark for your liking, simply place a lid or aluminum foil on top. 12. Check if the meat is well done before taking it out. Keep warm. 13. Press sauce through a strainer and add cold butter cubes and, if desired, crème fraîche to make it extra creamy. 14. Add chestnuts and simmer for a few more minutes before adding the Rouladen again. Red Cabbage Ingredients: • 3/4 red cabbage

1 onion 2 apples 1 bayleaf 2 tbsp. vinegar 4 fl. oz. red wine (can be substituted with cherry or elderberry juice) 3/4 tsp. cinnamon or gingerbread spice 2 tbsp. red currant jam (“Johannisbeergelee”) Salt, pepper 2 tbsp. clarified butter or vegetable oil
Instructions: 1. Keep in mind that, like spinach, cabbage shrinks while cooking. 2. Cut cabbage into fine strips, toss the stem. 3. Dice apples and onion. 4. Melt the butter in a pot and sauté the apples and onion for a minute before adding the cabbage and mixing
everything together. 5. Add spices, jam, vinegar and wine. 6. Simmer on medium heat for anything between 30 and 120 minutes depending on how soft you want it to be. 7. You can prepare this a day in advance without missing out on flavor. Simply add a splash of water and reheat it when needed. Bread Dumplings Ingredients: • 6 bread rolls, at least a day old • 1 onion • 2 oz. butter • 7 fl. oz. milk • 3 eggs • salt and pepper • 1.5 oz. flour

• 3 tsbp. chopped parsley Instructions: 1. Dice bread and onions. 2. Sauté the onions in butter for 4-5 min. 3. Add milk to the onions, heat up for a moment and pour into a bowl containing the breadcrumbs. 4. Add eggs, flour, parsley, pepper and salt, knead thoroughly. 5. Tip: if the dough feels too dry, add more milk. 6. Let the mixture sit for 30 min. 7. Wet your hands to form 12 dumplings. 8. Boil a little more than half a gallon of salt water. 9. Add dumplings and simmer for 10-12 min.
