GERMANY’S ANSWER TO THANKSGIVING:

When you think of Thanksgiving, you probably think of the 1621 Pilgrims and the Native Americans in New England giving thanks for that year’s harvest. Well the offering of thanks at harvest time is not unique to the United States. Giving thanks during harvesting has been observed in many other cultures throughout history including ancient Egyptians and Greeks. Germany has its own Thanksgiving celebration, called “Erntedankfest,” which literally translates to harvest-thanks-fest.

ven though harvest festivals predate Christianity, the German Thanksgiving is a traditional Christian celebration that serves as a way for believers to thank God for the gifts of harvest. As a result, most local church communities will have a special service or even a small

event to celebrate. It is not an official German holiday but still a popular date in the German calendar, especially at daycares and preschools, at the end of September or early October, with most church services taking place on the first Sunday of October. Erntedankfest is not a big day of

family get-togethers and feasting like you may be accustomed to in the U.S. It is primarily a rural celebration, and is part of a church service in larger cities. In many German communities, however, festivities also include parades with floats and marching bands as well as farmer’s markets.

If you haven’t tasted it yet, go ahead! Stollen — or German Christmas bread — is a holiday season must have. With almonds, fruits and marzipan, this cake is a typical Advent delight in Germany.

he “Christstollen,” as it’s properly called in German, dates back to the 15th century. Originally, it was an Advent fasting meal in monasteries made from flour, yeast and water. Since those ingredients didn’t provide much taste, Saxonian nobility asked for authorization to use butter, the use of which had been forbidden by church authorities. But, Pope Nickolaus V denied the request. Fortunately, six decades later the permission did come, and the Holy Father sent the “Butter letter” in 1491. Ever since, stollen has become a popular cake. Today, you can find more than 12 different types of stollen in Germany, starting with the most known almond and marzipan stollen down to the red wine or oranges and Cointreau stollen.

Basically, many regional bakeries have introduced their individual stollen variation, so it’s best to try them for yourself. INGREDIENTS • 50 grams slivered almonds • 500 grams raisins • 50 grams candied orange peel • 50 grams candied lemon peel • 50 milliliters rum or apple juice • 400 grams flour • 1/4 liter milk • 1 cube fresh yeast • 3 spoons of honey • 450 grams butter • 1 small spoon of salt • 100 grams cooking marzipan • 1/2 vanilla bean • 1 organic lemon • flour for baking preparations • about 150 grams powdered sugar

INSTRUCTIONS 1. Soak the fruit in rum for several hours. If you want to leave out the alcohol, use apple juice instead. 2. Pour boiling water on the almonds and leave them for 10 minutes. Then, strain and mix with the fruit. Mix 200 grams flour, tepid milk, crumbled yeast and honey into a pre-dough. Put some flour on it and leave it to rest and rise in a warm place until the surface starts to crackle. 3. Cut the vanilla bean open and scrape out the pulp. Add it to the pre-dough with the rest of the flour, 200 grams chipped butter, salt, grated marzipan and the lemon zest. Knead it for 10 minutes. You can also use the dough hook. Once done, again leave the dough to rise in a warm spot for one hour. Cover it with a dry cloth to prevent draft. After that time, the dough should have doubled. Work it again thoroughly on a floured surface and mould it into a bread shape. 4. Heat the oven to 200 degrees Celsius and bake your stollen for 15 minutes. After that, reduce oven temperature to 180 degrees Celsius and leave the stollen in the oven for another 45 minutes. If needed, cover the cake after 25 minutes with some baking paper to keep it from getting too dark. 5. Once removed from the oven, spread it with melted butter immediately. Professional bakers recommend letting the cake cool down for a day before sprinkling powdered sugar generously on it for a thick coating. Store it in a cool place.

PLAY BALL

It’s easy to see how a game of catch can improve hand-eye coordination. Ball play also helps with reasoning, balance and vision. It also accomplishes the difficult task of eccentric strengthening (strengthening with a controlled release rather than lifting) of large and small muscle groups.

Did you know that simple, active play helps your child’s development? It’s true. In addition to basic fitness, active play improves concentration, coordination, learning, social skills and much more. Though your family may already have some favorite activities, see below for more ideas and how they help with development.

Mix it up. Try balls of different sizes, textures and weights. Add a Frisbee or an American football into the mix. Rather than tossing back and forth, throw or kick to a target. Get sporty: dribble a basketball with the hands or a soccer ball with the feet, swing the baseball bat or the hockey stick, even work in a game of golf. Children of any age are welcome on the Rolling Hills Golf Course in Baumholder accompanied by a responsible adult. Club rentals are available for players as young as three; teens 16 and up can golf on their own. The Woodlawn Golf Course accepts children six and over with their parents. Skills mastered now will prepare your child for team sports later.

Challenge your child by incorporating side stepping, braiding, or walking backward on the trails. Performing these uncommon motions on uneven surfaces challenges not only coordination but proprioception (knowing where your body is in space) and vestibular (balance) skills. Incorporate learning into your hikes – study plants, weather, bugs, towns…the possibilities are endless. Add a challenge such as a kilometer goal or a certain number of castle ruins to explore. Check out the many barefoot walking trails in the area for warmer months. For older children, consider hiking longer and more challenging routes or even hut-to-hut hiking in the Alps.

RIDE A BIKE

Many German communities have special trails and courses for bikes and pedestrians. While there are obvious strength and endurance benefits from bicycling, riding a bike can aid your child’s development in other areas too. Cyclists learn to navigate their communities and care for their equipment. Bicycling is a pre-driving skill as riders learn the rules of the road.

TIPS: Look over a map and include your child in planning the route. As children gain experience, see if they can orient to home and other familiar landmarks to improve memory, perception and sense of direction. Being involved in bike maintenance and use of personal safety equipment teaches responsibility, safety, and self-awareness.

TAKE A HIKE

We live in an area rich with hiking trails of many lengths and difficulty levels. In addition to the physical benefits, children learn about themselves and their surroundings when hiking. Because most hikes are lowimpact, hiking can incorporate other interests like photography, nature, and history.

Laughter, logic and leadership go hand and hand with play. So, jump rope, hula hoop, or pass out the swim noodles and play tag. Overcome obstacles by designing your own obstacle course with everyday items. In addition to balancing, inclines and declines, add stepping on pillows or other soft surfaces to part of the course. This is another way to challenge balance, proprioception and vestibular senses. If the weather won’t cooperate, design an obstacle course inside. TIPS: Let children make up games, explain the rules, and keep score. Have them design, plan, and build the obstacle courses (check for safety, of course.) Try an outdoor ropes course or go climbing and bouldering. The climbing wall at Outdoor Recreation in the KMCC Mall welcomes families and children as young as two years old to climb, though they must be sixteen to belay (manage the ropes to support another climber.) SNAPPING OUT OF THE WINTER BLUES FIVE TIPS FOR BATTLING SEASONAL DEPRESSION

Well unfortunately for many of us, that just about hits the nail on the head. The beauty of autumn has passed, and all of the beautiful leaves have fallen from the trees and have been raked, bagged and tossed away. The air is colder and the days are darker. We leave for work and school when it’s dark and return home to darkness all over again. For some, winter is a festive time of year marked by holiday gatherings and the excitement of snow. For others, the chilly season triggers anxiety and depression. Here are the top five tips for how to shed a little sunlight on your seasonal sadness.

Get outside. Bundle up and spend as much time as you can outside now and through the duration of the winter season. This will help you store any sun exposure you currently have. Additionally, sunlight is the most important weapon against seasonal depression, so use it to your advantage.

If you can afford it, buy a light box. As the winter months allow less sun exposure, these nifty little devices can give you a boost when the natural sunlight cannot. Look forward. Be a proactive and forward thinker. Get your holiday shopping done early. Start making plans and preparing for upcoming events, vacations, projects or whatever interests you. Keeping your mind and calendar busy will make all the difference.

Know your limits. Although it is extremely important to stay engaged with family, friends and communities, know when to say “no.” Don’t be afraid to say “no”; rather than overwhelming yourself with further anxiety. And if you do find yourself in a pickle, do not be afraid to ask for help!

Exercise. Whether it is a leisurely bike ride, a brisk walk or squats at your desk, be sure to get the blood moving every single day. Elevate your heart rate. Make time for this and put it on the daily calendar. Exercise is mental therapy. As we inch our way closer to the “thick of it” in terms of the winter season, keep these tips in mind and take control of your mental health.

In Germany, New Year’s Eve is called Silvester. Pope Sylvester I is reported to have died on 31 December 335. While the festivities feel the same as a New Year’s Eve celebration in the United States, in Germany, they are actually celebrating Saint Sylvester. At midnight, a great noise is heard through fireworks and church bells. This tradition, that noise helps ward off spirits, dates back to pre-medieval times.

Children have their own ritual with the observance of the Advent Calendar tradition, starting on Dec. 1 and counting down the 24 days leading up to Christmas. Each day on the calendar has a little door or window that, when opened, reveals a treat (usually a chocolate, candy, or toy). However, for children in Germany, St. Nicholas Day is when they find out whether they were naughty or nice. Because you count down to Christmas, the dates for Advent Sundays change from year to year (This year, Advent Sundays are Dec. 3, 10, 17 and 24). Traditionally, a wreath with four candles is placed on a living room or dining room table. On each Sunday before Christmas, one of the candles is lit, culminating in the fourth candle lighting on the fourth Advent Sunday. This year, the fourth Advent happens to fall on Christmas Eve..

In southern parts of Germany as number of days are celebrated called Rauhnaechte. This begins on Dec. 25 and marks the coming of Epiphany. Traditionally, a smudging, or burning of incense, is done daily during this twelve-day period. During this time of the year, Thanksgiving is a holiday, like many, that we love to share with our dogs. If you own a dog, or perhaps even have multiple dogs, you undoubtedly have at least one reason to be grateful for.

More than anything, the holiday season is known for kindness and giving. Showing one another how much we care often results in the form of gifts. And while it’s wonderful to give to those we know and love, there are millions of people who do not share the same advantages or luxuries. Many are separated from their loved ones, and some don’t even get to experience the same kind of thoughtfulness.

I

t’s been said that no act of kindness, however small, is ever wasted. If you’re looking to spread joy or for some good karma, there are plenty of ways to give back to your community and the world at large this holiday season.

A

significant aspect of this day revolves around the Thanksgiving dinner, and it is possible to safely share these delicious treats with our furry friends if done correctly. In fact, several traditional Thanksgiving foods serve as a nutritious meal for dogs. Turkey, for instance, is an exceptional source of lean protein, but avoid giving your dog the skin because it can be hard for them to digest. Also refrain from giving them turkey fat or bones since large amounts can cause indigestion, nausea and in certain cases pancreatitis. Sweet potatoes and potatoes can serves as a nutritious, healthy vegetable for your dog. Sweet potatoes are often used in diets for dogs with digestive problems. Remember that they need to be plain, skinned and cooked. Another good source of fiber is wild rice. And of course plainly cooked vegetables as in carrots, green beans, peas, and broccoli are all healthy. But remember moderation is key, and that too many vegetables can cause gastric upset. Skip the gravy, but cranberry sauce is ok as long as you watch the sugar content and only give a small amount. And make sure that

there are no additional ingredients like grapes, raisins or currants in it, which are toxic to dogs. Always remember to give treats in moderation since a change to their diet can cause an upset stomach or diarrhea. Additionally, try to stick to their regular feeding routine, even if you are eating at different times during the holidays. Thanksgiving can be a stressful time for your dog due to the presence of numerous people and loud noises. Therefore, maintaining a consistent routine can help to calm your dog. There are also sections to donate to animals, women empowerment, basic needs and sustainable farming. Adopt a family. Living overseas naturally takes us out of our home-town environment. If

you’re familiar with The Salvation Army’s Red Kettle campaign, then you know it’s an easy way to support those in need. But just because you’re living in Europe doesn’t mean you can’t help other families during the holidays. The Salvation Army also has a program where people can adopt a family to help out with a few extra items they might not be able to afford during the holidays. Families create a wish list, and people who adopt the family receive the list early in the holiday season. ermany’s Salvation Army branch is located in Cologne or to find a branch close to you please visit their website www.heilsarmee.de. On the website you can also see options to volunteer or donate this holiday season. Locally, many Family Readi­ness Groups and spouses groups are doing “Angel Trees” and accepting donations for families who might need a little extra help this holiday season. Make your groceries pull double duty. Buy groceries that give back. Not only can you collect Box Tops for Education, which can give back 10 cents to the school of your choice, but consider purchasing items in which all profits and royalties from those products go to charitable causes. Company’s such as Newman’s Own donate all of their profits to charity. Tom’s of Maine, Stonyfield and Ben & Jerry’s all donate up to 10 percent of their profits to local charities. Don’t forget to contact your local commissary to find out how you can contribute to their annual Feds Feed Families campaign. Last year, Defense Commissary Agency employees and patrons

donated over 3 million pounds of food and personal hygiene items for local food banks and pantries. Efforts are still needed and appreciated for families in need. Small gestures. If you’re looking for smaller-scale activities, there are plenty of ways to earn those good karma points and spread holiday cheer! Call a friend you haven’t talked to in a while. Catch up. Make each other laugh. Pay for someone’s coffee, lunch, gas, etc. If they catch you in the act, simply ask that they “pay-it-forward.” Give an unexpected generous tip to your server. Bake some holiday cookies or goodies for your office or your neighbors. Not a baker? Just buy some cookies and decorate them nicely on a tray. They’ll never know the difference. Smile at strangers. You’d be surprised how far a simple smile will go to make someone’s day. Pay someone a genuine compliment. Donate blood. Donate to local food drives or clothing bins. Shovel your neighbor’s driveway when it snows. Work with your local units to donate time for gift-wrapping or a cookie drive.

EUROPE’S SUNNIEST WINTER DESTINATIONS

Living in Germany can be an amazing, life-changing experience. But let’s be honest. The winters are dark. Real dark. Fortunately, Germany’s central location offers a way for light-seekers to find the sun…which often isn’t as far away as you might think!

n Germany, it feels sometimes like you can go from November to February without ever seeing the sun. This isn’t just exaggeration. On average, you can expect to see about 45 hours of sun each December in Kaiserslautern. That’s… not a lot of sun. That’s a work week. Here’s the good news, though. It doesn’t take a whole lot of time, effort or money to find sunny locations in Europe. Most sunny winter destinations require a short flight (2-3 hours), and some are reachable in a day or so by car. If you’re dreading another dark German winter, then here are five places to start your travel planning.

SOUTHERN SPAIN

SICILY, ITALY

The southern coast of Spain is the place to be. In December, the cities of Alicante and Malaga offer more than 160 hours, on average, of sunshine. Barcelona is no slouch, either, offering 137 average hours of sun during December. For those of us who live in Germany, then, our chances of seeing the sun increase three to four times if we catch a flight to Spain. That’s huge. But it’s not just the sun, either. Alicante, Malaga and Barcelona have beaches, bars, restaurants, museums, parks, and so much else to do. With the warm weather and the Mediterranean Sea nearby, your spirits can’t help but lift. So start planning now!

Sicily sometimes gets forgotten. It’s understandable. There are so many fantastic destinations to visit a bit further north — Rome, Venice, Florence, Turin, and so on. But when winter comes, don’t forget Sicily! It’s one of the sunniest places in Europe when everything goes dark up north. Catania has 120 hours of sun during December, and Messina (just north of Catania), has 112. Sicily is also packed with history, having been inhabited at one time or another by Carthaginians, Phoenicians, Romans, and Greeks. It was in Syracuse, after all, where the great Archimedes did most of his good work. Nowadays, Sicily also has amazing food, strong wine, and wonderful places to stay. Go there, and you’ll wonder why you didn’t seek out Sicily sooner.

CÔTE D’AZUR, FRANCE Road trip, anyone? If you just can’t take the German winter anymore, climb in the car, head southwest, cross the border into France, and keep going until you hit the Mediterranean Sea. Make sure you set your GPS for Nice, which is nice, and is pronounced like “niece.” Wordplay aside, Nice is an awesome place to spend winter break. It gets, on average, 137 hours of sun during December. The English Promenade is one of the most famous seaside destinations in Europe. It often feels like a relief to walk it during the winter. With the waves lapping gently at the sand, and palm trees waving in the wind, you can almost forget that you’re not in a tropical paradise. Marseille, just down the coast, is also an excellent choice for sun-seekers.

Whatever you do, don’t overlook Portugal. Lisbon is just a three-hour nonstop flight from Frankfurt. There, you’ll find incredible shopping, restaurants, cultural opportunities, the Atlantic coast, English speakers everywhere, a great Christmas market, and 100 more hours of sunshine than you’ll find in the KMC. Even better: rent a car in Lisbon and drive a few hours south to Faro. There, you will find a dreamlike beach existence, 160 hours of December sunshine, and more peace and quiet than seems reasonable for any normal person. It’s amazing.

ATHENS, GREECE Athens has been charming visitors for thousands of years – especially in the winter. In December, the weather is warm, sunny (127 hours each December, on average), and tranquil. Visiting during the off-season also means fewer packed cultural monuments, more open seats at restaurants, friendlier locals, and slightly less insane traffic. You can also use Athens as a jumping-off point for island cruises. Because drifting your December away in the Aegean Sea is the soul recharge of a lifetime. WINTER HIKING OBERSTDORF

Rubinger Oy Due to its location this trail can be a day full of sunshine reflecting off the snow and ice so make sure that you bring sunscreen and sunglasses. Although I wore boots with a good grip, they were no match for some of the icy stretches on the trail. Having my boot spikes attached to my backpack saved the day and allowed me to enjoy the amazing 360-degree views of the surrounding mountains and valleys during my trek. Continue on to the Dummelshoos bridge and then the spruce forest along the Trettach River before returning to your start point.

Distance: 5.5 km Time estimate: 2 hours Experience: Excellent Terrain: Valley Difficulty rating: Easy to moderate depending on weather conditions, can be icy along some stretches. Stillachtal Valley This trek has an abundant variety of attractions along the way. You have a view of the Allgäu’s main ridge, meadows in the Stillachtal valley and the Stillach River. You can also visit the leaning tower of Oberstdorf which is open all year long. If you want to gain a little altitude you can climb through the forest to Einodsbach at 1,114 meters. However, the snow can get a bit deep so good hiking boots with

gaitors will keep your feet feeling comfortable. Make sure to take a break at one of the many local pubs or local eateries to enjoy a refreshing beverage, excellent food and hang out with the locals. Distance: 13 km Time estimate: 3 hours Experience: Excellent Terrain: Valley Difficulty rating: Easy to moderate and difficult depending on weather conditions. The trek up hill through the forest can have deep snow.

There are also many other activities in the area that include snowshoeing, sledding, tubing, and taking a nap in the sun on a lounge chair during a stop at a valley chalet along your hike. What to wear: Warm clothing, a hat, gloves or mittens, snow pants, winter jacket, snow boots, and goggles. What to bring: First aid kit, sunscreen, water, snacks, a change of socks, gloves, hat, cell phone, and euro cash. Plastic is not accepted everywhere.

I normally take one-day hikes during the winter in the local areas only a short drive away. However, I decided to venture out for an entire weekend after being told to stop being a lazy hiking homebody who goes out for a few hours and retreats back home to binge watch the latest series on TV. Thanks for that advice because it led me to visiting Oberstdorf. This region is on the Southern tip of Germany in the Allgäu Alps and has one of the largest winter hiking trail networks in the Alps with over 140 kilometers of hiking fun, relaxation, and enjoyment. The opportunities were so many that It was a bit overwhelming and hard to decide which trails to take, however, I narrowed it down to suggest the following two treks that I will visit again this winter.

JUNGFRAUJOCH TOP OF EUROPE

Travelers from around the world visit Switzerland to take the journey to the top of Europe and visiting Europe’s highest altitude railway station. At 3,454 meters this is one of the most impressive views of Switzerland’s many snowcapped peaks. I’ve taken this journey a few times during different seasons and each experience was unique.

Below are some of the most popular attractions for your visit to the top of Europe:

The Alpine Sensation This is a 250-meter-long corridor between the Sphinx Hall and Ice Palace peaks. During this amazing and very chilly experience you can see memorials of the miners who’s hard work and sacrifices made the journey by railway to the top of Europe possible. Listening to the music and seeing the images along the way can be enlightening, or haunting, as

The Jungfrau railway runs 9 kilometers from Kleine Scheidegg to the highest railway station in Europe at Jungfraujoch (3,454 m).

you are taken back in time to the start of the construction of the railway. Ice Palace The corridors and halls of the Ice Palace are a very impressive collection of ice artwork presenting a variety of sculptures, including a bear, penguin, eagle and more. The natural resemblance of the animal sculptures makes them appear as if they were frozen in place. The Ice Palace was carved out of the glacier in the 1930s by two mountain guides by hand using only ice picks and saws, creating a 1000 square meter large labyrinth. Eismeer Glacier The train stops at the Eismeer station at 3,160 meters for a 5-minute break to give passengers the opportunity to take photographs. Views of ice blocks and 4,000-meter peaks have visitors gasping in awe. This stop is a great opportunity to take an assessment of weather conditions and figure out if you need to dig into your backpack to adjust your clothing layers.

T

he train ride to Jungfraujoch in itself is amazing and is worth the time spending 30 minutes from the Grindelwald village station to Kleine Scheidegg pass station and another 50 minutes on an epic ride to the highest point. However, if you time it right you can enjoy the views during the first leg, take a break at the Kleine Scheidegg station and treat yourself to local food and drink specialties inside the restaurant or out on the terrace with view of the Eiger mountain, as well as the surrounding peaks and valleys, before boarding the next train that will take you through the Eiger mountain tunnel. If you’ve never been in the Swiss Alps be prepared for a variety of weather conditions and temperature changes. Everything from high winds to snowstorms and whiteout conditions due to dense fog can take you by surprise. Be prepared by having proper layers and not assuming that the sunny skies at the start of your trip will last for the rest of the day.

HOMEMADE CRANBERRY SAUCE

1. In a medium-sized saucepan over mediumheat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop, about 10 minutes. 2. Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools. 3. Serve with your perfect turkey.

Making the “perfect” turkey is essential: It’s the main course that your guests look forward to every year plus it needs to be up-to-par with leftover footballfrenzy food standards. No pressure, right? Keep it simple yet impressive this holiday season and create a traditional holiday meal with these recipes to impress your guests and have them going back up for seconds. Canned cranberry sauce and creamed corn? No way — throw the canned goods out the window this year and see how easy and delicious it is to make your holiday meal from scratch.

PERFECT TURKEY Start to finish: Overnight prep time (about 4 hours cook time) Servings: 24 • One 18-pound turkey • 2 cups kosher salt • 1/2 cup butter • 2 large onions • 4 carrots • 4 stalks celery • 2 sprigs thyme • 1 bay leaf • 1 cup dry white wine 1. Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture for 12 hours.

2. Heat the oven to 350 degrees Fahrenheit. Rinse turkey, and throw away the brine mixture. 3. Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine. 4. Roast uncovered 3 1/2 to 4 hours in the oven, until the internal temperature in the thigh reaches 180 degrees Fahrenheit (85 Celsius). Carefully turn the turkey breast side up about 2/3 through the roasting time and brush with the remaining butter. Allow the bird to rest about 30 minutes before carving.

Start to finish: 40 minutes Servings: 8 to 12 • 4 1/2 cups cooked and mashed sweet potatoes • 1/2 cup butter, melted • 1/3 cup milk • 1 cup white sugar • 1/2 teaspoon vanilla extract • 2 eggs, beaten • 1 cup light brown sugar • 1/2 cup all-purpose flour • 1/3 cup butter • 1 cup chopped pecans

1. Heat the oven to 350 degrees Fahrenheit. Grease a 9x13 inch baking dish. 2. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract and eggs. 3. Spread sweet potato mixture into the prepared baking dish. 4. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes. 5. Bake for 25 to 30 minutes, or until golden brown.

CREAMED CORN Start to finish: 15 minutes Servings: 8 • 2 packages frozen corn, thawed • 1 cup heavy cream • 1 teaspoon salt • 2 tablespoons sugar • 1/4 teaspoon ground black pepper • 2 tablespoons butter • 1 cup whole milk • 2 tablespoons all-purpose flour • 1/4 cup freshly grated Parmesan cheese

Start to finish: 20 minutes prep time (at least 30 minutes hands-off time) Servings: Makes 4 single or 2 double pie crusts • 4 cups all-purpose flour • 1 3/4 cups shortening • 3 tablespoons white sugar • 2 teaspoons salt • 1 egg • 1/2 cup water

1. In a skillet over medium-heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. 2. Cook stirring over medium-heat until the mixture is thickened, and corn is cooked through. 3. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

1. In a large mixing bowl, combine all-purpose flour, shortening, sugar and salt. Blend together with a pastry cutter until crumbly. 2. In a small bowl, mix egg with water. Blend into flour mixture. Form dough into 4 equal balls, wrap in plastic wrap or place in a zipclose bag. 3. Chill in refrigerator for about 30 minutes and up to 2 days, or until ready to use. 4. Make your favorite holiday pie.

Wouldn’t it be nice if there were a place you could go for some pampering? Guess what?! There is! Bonus: Many are close to the KMC area.

R

egardless of how long you’ve been living in Germany, you may have always wondered about the elusive spa and sauna experience. Admittedly, I knew nothing about them before arriving overseas except from my experiences back in the States: Massages, whirlpools, facials, etc. But after some digging I found there is much more to the spa/sauna experience in Germany. Adopted from Roman tradition, the concept of a spa was originally created for soldiers returning from battle as a form of hydrotherapy. In Latin spa or sanus per aquam means ‘health by water,’ so it makes sense that when we think of a spa we think of water and pools. The spa culture is so important in Germany (over 900 registered across the country!) that treatments and visits can be prescribed by your physician and are covered by the federal health care system. You read that correctly. German health care covers spa treatments. Commonly seen as vital to maintaining health, Germany considers the spa a natural and logical remedy for stress and anxiety. It’s important to know that there are a variety of spas and each have their own rules of etiquette and unique methods for relaxation.

The Spa

Similar to the U.S., German spas typically offer wellness treatments like massage and facials in addition to the use of their sauna. Therme, or thermal baths, are what Americans call a day spa and are purely medicinal in nature. Therme typically offer a variety of saunas, steam baths, and tanning beds with a separate section devoted to cosmetic treatments (think manicures, pedicures, and massages). While day spas are popular, most locations also offer hotel accommodations. Treatments are typically separate from any hotel costs and it is recommended they be booked in advance.

What to expect:

1. Changing rooms may not be separate and are likely less lavish than that of an American spa. 2. Swimsuits are worn in most areas and in the pool with the exception of the sauna. 3. Showering before entering. 4. Flip-flops are recommended for walking around.

The Sauna

Saunas and steam baths tend to be one portion of the overall spa experience. In fact, it is more common for people to go to a spa solely to use the sauna. Saunas are commonly found near a swimming pool and typically look like a wooden cabin. Germans are very particular when it comes to sauna etiquette so if you are hoping to blend in, be sure to know what you’re getting yourself into.

What to expect:

1. Nudity is normal. Europeans as a whole are much more relaxed when it comes to the human body. In fact, Germany established its first nude beach on the island of Sylt in 1920. Massage areas are typically towel only or in German, FKK (Freie Körper Kultur, meaning free body culture). Some places might let you get away with wearing a towel in the sauna as long as you are nude underneath. Depending on where you go, nudity could be mandatory, so if you’re not big into letting it all hang out be sure to check the spa’s rules ahead of time. If you think Germans already stare too much and you decide to cover-up at the spa, expect the staring to continue. 2. Shower before entering. 3. Enter the sauna quickly so as to not let too much heat escape. 4. Sit or lie on your towel with every body part on it. Germans are very particular about this! 5. Most (if not, all) saunas are co-ed. 6. Bring a bathrobe and flip-flops for walking around other areas of the spa as well as a few towels for drying yourself off and sitting on. 7. The average sau­na session is bet­ween 20 and 30 minutes although it is typ­ical to re-visit multiple times throughout the day. 8. Loud conversations are a ‘no-no.’

So now that you know what to expect, feel like you could use a relaxing day, weekend, or week? The good news is you are closer than you think. In fact, if you’ve ever seen signs for Bad Duerkheim or Bad Kreuznach, you are all set! The word Bad in German translates to ‘bath’ and when used as a prefix (Bad Duerkheim) or suffix (Wiesbaden), the town is denoted as a ‘spa town.’ There are a variety of spas, saunas, and water parks well within an hour’s drive of the KMC area. Water Parks

Bet you weren’t expecting this to be an option! If you have children and realize that kids are typically persona non grata at spas and saunas, water parks are likely what you’re looking for. Hydro-parks have become more popular in recent years and most include additional in-house spa facilities for adults. Win-win! Similar to that of what can be found in the States, most water parks offer indoor and outdoor pools for year-round enjoyment along with massive slides and rides.

Maybe this is your first Christmas market season in Germany or maybe you feel like you’ve visited every one you can handle. What if I told you about one that is underground? When I say underground I don’t mean it’s a secret. I mean it is literally in caves!

A

bout six weeks before Christmas, the small Dutch town of Valkenburg, Netherlands, transforms its famous Velvet Caves called “Fluweelengrot” into a Christmas market and Santa’s residence. These passageways date back to the 12th century and are directly below the remains of the city’s castle. They are lined with lights and decorations where you can shop at various stalls offering unique handmade crafts and traditional holiday food. It is the oldest, largest and most visited underground Christmas market in Europe. In 2015, CNN’s website named Valkenburg one of fifteen top places to visit for the Christmas season. The Huffington Post United Kingdom’s online travel section named Valkenburg one of nine totally unique Christmas markets, as well. Now in its 38th year, visitors can enjoy galleries and sculptures while listening to the echoing voices of carol singers below the famous Cauberg hill. Strolling through the caves, you might catch a glimpse

of the many beautiful murals lining the walls. The Velvet Caves are home to sculptures dating back to Roman times. There is even an 18th century chapel. You’ll be able to create your own souvenire made from marlstone, or you can take a cable care ride to the Wilhelmina tower where there is a small culinary Christmas market, toboggan run and mini golf. If you’re just a window shopper, there are plenty of other activities to keep you busy. Within the caves are informative tales about marlstone and the history behind the sculptures. When you’re in need of some fresh air, there are a variety of activities above ground including Santa’s Village with original wooden chalets where you can buy Christmas accessories and gifts or enjoy hot waffles, crepes, hot chocolate, and mulled wine. From November 18. until Dec. 30 there is a Christmas parade every Wednesday at 7 p.m. and Saturday at 7:30 p.m. in the historic town center.

ith more than 3.5 million people, Berlin is by far the largest city in Germany. As the capital, it’s one of the most historic and culturally vibrant places in the world, packed with outstanding museums, shops, concert venues, clubs and restaurants. Berlin is also wonderfully Ger­man when it comes to Christmas. There are over 100 (yes, you read that correctly) Christmas markets in the city. In mid-December, a visitor can hardly walk the streets without running into one. You’ll find them in market squares, in front of palaces, near the City Hall, and in many more spots, as well. The lights are magic, too. One of the best family-friendly winter holiday experiences in Germany can be found at the Berlin Zoo. Between midNovember and mid-January, Europe’s largest zoo will be wildly (pun intended) illuminated. It’s a must-see if you’re traveling with children, and even if you’re not. HAMBURG

H

amburg is magical during the month of December. Since it sits right on the River Elbe and isn’t far from the North Sea, visitors might almost believe they were in a big American coastal city. But Hamburg definitely has its own, non-American, vibe. It offers dozens of Christmas markets. Many of them are very, well, Hamburgian. The rocking Santa Pauli market offers an adults-only, gluhwein-infused, late night big city party that is an absolute blast. For families looking to experience Hamburg’s flair, the city offers a maritime Christmas market, which takes place on an urban island between the Alster and Elbe rivers. Ships are anchored nearby, and the market offers an ice skating rink. Hamburg also has a Scandinavian Christmas market, a Christmas market for dogs, and Christmas parades. COLOGNE

F

or those of us who have spent a fair amount of time in the KMC, Cologne is well known as a winter holiday destination. The mad, often jam-packed, always wonderful Christmas market outside the massive cathedral (held this year from Nov. 23-Dec. 23) is less than three hours away by car, and the trip is well worth it. A slightly lesser-known fact is that Cologne also has a ton of other fun things to do that don’t involve the cathedral Christmas market. You can take an “Advent”-themed Rhein cruise (highly recommended) or wander the city and stumble into another Christmas market (there are dozens). Cologne also has a fantastic New Year’s market that runs from Dec. 26 to Jan. 7.

MUNICH

M

unich is a straight-up beautiful city. The Ma­rien­platz, Munich’s main square, is a must-visit at any time of the year. During the winter holiday season, the Marienplatz is next-level. The lights are incredible. In fact, if you had to pick one bigcity Christmas market to visit, this might just be it – simply because it’s so beautiful. This year, the Marienplatz Christmas market runs from Nov. 27 to Dec. 24. Munich also offers loads of other fun things to do. The medieval Christmas market will transport you back in time. It’s like a much more interesting, much more holidayoriented version of the Renaissance Fair. Visitors will find fests, markets, and New Year’s celebrations all over the city. ven though it is the smallest of Germany’s largest cities, Frankfurt still offers an amazing holiday season. The Frankfurt Christmas market is large, sprawling and exceptional. Located downtown near the river, the market is easily

You might want to save Barcelona for a summer trip, but going to Catalonia’s capital city in the winter months can be a spectacular trip. Temperatures don’t get Germany-cold and what you will save in cash will be substantial. Paris also happens to have one of the best Christmas Markets; be sure to climb to the top of the Arc de Triomphe for a view of the lights lining the Champs-Élysées and the Eiffel Tower all alit. Another amazing town, offering just about everything you could want: a castle on the hill, a river cutting through the middle of things, a funicular, great beer, great food, great people, amazing history, and gorgeous architecture. Now sprinkle a light dusting of snow across everything, and you have a truly magical experience. Prague is surprisingly walkable (okay, mostly), and is very fitting for the entire family.

INNSBRUCK, AUSTRIA If you are looking for an elegant city in the Alps, Innsbruck is it. A former host to the Winter Olympics, the capital of the Tyrolean region is the perfect home base for day ski and boarding trips with a resort right from the city center (accessible by tram, take the Nordkette funicular,) as well as historical imperial architecture. Check out the Goldenes Dachl (Golden Roof) in the old town to see a roof made of pure gold for the marriage of Maximilian I and his wife. The Tyrolean Folk Show is great for the family as well.

Like other big European cities, Munich (München in German) will have a fraction of the crowds in winter time (although Christmas market time is busy, but worth it). The Bavarian capital has lots to do if you like historic buildings (see the Glockenspiel at Marienplatz) and churches (learn the story of the Devil’s Footprint at Frauenkirche). A trip to Munich isn’t complete without a stop at the Hofbraeuhaus to drink big beers and sing German songs (get the Schweinehaxe — delicious pork roasted on the bone) but you may want to try the lesser known Augustiner Braeustuben for great tasting beer and amazing food. Munich can be on the pricey side, so a winter trip can be what the doctor ordered for your wallet.

ROME, ITALY What can you say about Rome that hasn’t been said? It has to make your bucket list before you leave Europe. Summer can be extremely hot and busy, while winter temperatures are cool but comfortable. Think about a winter trip to Italy’s capital to see the Trevi Fountain, Colosseum, Vatican and endless list of amazing historical sites. Stay in a neighborhood slightly off the beaten path to experience more mom and pop restaurants for the real Lazio region fare.

ICELAND It might seem off to leave the cold, only to go somewhere colder, but Iceland is so fantastic, the weather doesn’t even matter. The people are so warm, the terrain is so primal, and, if you are lucky, the Northern Lights are so magical, that the frigid temperatures will not even matter! Fly into Reykjavik, take a shuttle to downtown, and take day trips to see the major sites. If you are lucky enough to have more than a couple days, try getting out to some other towns to stay; small towns, yes, but experiences you will not forget anytime soon!

AMSTERDAM, NETHERLANDS If you have not yet been, Amsterdam is simply one of the chillest cities you will ever visit (and not just because of all the “coffee” shops, which, by the way, you do not have to visit). Amsterdam is almost completely level, with all those incredibly quaint canals and bridges over them, gorgeous leaning buildings (there is a reason they do that), and amazing history. Amsterdam also happens to be one of, if not the most, diverse cities in all of Europe. Museums, bars, restaurants, canals, tours, and yes, coffee shops. Just awesome. FINLAND Again with the cold winter getaway? Yes, but this time, fly into Helsinki, if you have time to hang out for a couple days, do so, but if not, hop on a small plane north to go to Ivalo, then take a short bus ride to Kakslauttanen (www.kakslauttanen.fi/en), for your magical stay in a glass igloo. There are a ton of activities, but really, do you need more than just laying there, looking up?
