OSI Det 501, French law enforcement team up Story and photos by Senior Airman Taylor Slater 86th Airlift Wing Public Affairs Members of the Office of Special Investigations Detachments 501, 515, and 538 and French law enforcement partnered up for the first time in a three-day subject matter expert engagement from Jan. 11-13, sharing tactics, techniques and strategies with each other. Detachment 501 and members of French units “Recherche, Assistance, Intervention, Dissuasion” (Search, Assistance, Intervention, Deterrence), or RAID, and Groupe d'intervention de la Gendarmerie Nationale, or National Gendarmerie Intervention Group (GIGN), specialize in protective service details as well as critical law enforcement operations in highrisk circumstances or areas, helping lead to a team-up nearly two years in the making. “It’s a very rare opportunity,” said Special Agent Christopher Santiago, OSI Detachment 501 special agent-in-charge and personal security advisor to the commander of United States Air Forces Europe - Air Forces Africa. “Most of the time you don’t get to meet anybody like them because of the nature of their jobs, and it’s the same thing for us.” Training engagements such as these help prepare the groups for future real-world scenarios where they may have to collaborate as well as build confidence and understanding of each other’s capabilities. “It’s important to do the training now so that when the time comes we can be interoperable and operate together globally,” said Col. Terrence Joyce, Office of Special Investigations

5th Field Investigations Region commander. The main activities of the engagement were spread out through three days. On the first day, the two groups practiced VIP protection strategies at the Combat Arms Training and Maintenance facility. The groups fired different types of guns, progressing from M-11s to MP-5 and M-4s. The group drove to a law enforcement vehicle training facility on the second day where they conducted several scenarios involving protecting VIPs in a vehicle. Snowfall also added an unexpected challenge for the group. The final day consisted of a closed-door briefing where they exchanged best practices for VIP protection in high threat areas, with specific events related to real world events in recent history. With both agencies often tasked with organizational responsibilities, the partnership was initially difficult to come to fruition. “The exchange was difficult to schedule due to constant realworld, operational responsibilities,” Santiago said. “However, since it was of great importance to all the partners involved, they utilized the one week everyone was free during a six month period.” Despite the business of all parties involved, Santiago hopes to have the three units engage on a more frequent basis. “We’re all sharing knowledge, experience, different training tactics and techniques,” Santiago said. “All these different things we’ve learned over the course of our years is allowing us to have a really good exchange between the three organizations.”

Thanks to the 86th Munitions Squadron, the United States Air Force is not just all bark and no bite. “86 MUNS is the primary airlift hub for munitions to everyone in the United States European Command,” said Tech. Sgt. Rayvone Williams, 86 MUNS munitions control section chief. The 86 MUNS is responsible for maintaining, storing and providing rapid shipment of combat munitions support across the European theater, in order to deter and eliminate threats to the U.S., partner nations and allies. “Our job here is not necessarily to build the munitions like you’d see at a fighter base,” said Chief Master Sgt. Gordon Comerford, 86 MUNS superintendent. “Our job is to get them where they are needed.”

Ramstein stores, maintains and resupplies munitions for bases across Europe since not every base has the capability to store munitions. “We have a variety of fourth and fifth generation air-to-air and air-to-ground munitions, as well as a full complement of ground-base-defense munitions,” said Master Sgt. David Hardy, 86 MUNS systems flight chief. The stockpile management section of 86 MUNS ensures proper storage of all munitions, while the inspection section performs a periodic inspection to make sure munitions are good to go for whenever they need to be employed. Williams says that each section relies on the other for mission success. As the global gateway — and the only munitions airlift hub in U.S. Air Forces in Europe - Air Forces Africa — Ramstein Air Base is able to provide rapid and agile combat munitions support through the hard work of the men and women of the 86 MUNS.

AF colonel swims a million meters, teaches importance of comprehensive fitness by Staff Sgt. Christian Conrad Armed Forces Network - Kaiserslautern When asked how he’d characterize himself in a swimming pool, Col. Brian Thompson is quick to downplay. “I’m definitely not Aquaman,” he laughs. “I’m more of a manatee if anything.” But after finishing out 2021 with a million meters swam, the equivalent of swimming the English Channel 30 times over, Thompson is more than deserving of the Aquaman moniker, however at odds with his characteristically down-to-earth attitude towards his own accomplishment. “If I’d impart any advice to a service member who’s struggling with gathering up the motivation to achieve their goals, it’d be, ‘If Colonel Thompson can do it, then you can too,’” he said. At 54, Thompson is the first to note his body has lost some of its elasticity over the years, preferring to swim over higher-impact forms of cardio like running in an effort to safeguard his joints. The nature of Thompson’s work as Third Air Force’s staff judge advocate also makes high demand of his time, often forcing the former high school and college swimmer to start his days during the morning’s wee hours to fit in a workout. “There are definitely days where I’m basically dragging myself to the pool in the morning—it can be a slog,” he said. “The importance of finding something you can feel passionate about is really what makes the difference, though. The connection between the mind and body is what will keep you powering through during times of struggle—and not just during trips to the gym or pool. If your body’s

fit, it tends to help push the mind to that same level of fitness, and vice versa.” According to a recent study by Frontiers in Psychiatry, those with an active lifestyle prove to be 60 percent less likely to develop anxiety than those who live a more sedentary lifestyle over a 21-year period. That, combined with the Air Force’s priority of Comprehensive Airmen Fitness — a commitment to holistic improvement of oneself related to the philosophy’s “pillars” of social, mental, spiritual and physical well-being — paints a picture in which each facet of a person’s health impacts one another and is important both in and of itself as well as a component within a larger, interconnected system. Chief Master Sergeant of the Air Force Joanne Bass also touched on the importance of keeping one’s CAF pillars strong in a recent post on her social media.

“When (one of the CAF pillars) are off, we tend to be out of balance,” she said in the post. “Think about what fuels you, both intrinsically and outwardly, and try to get more of that in. Rest, connect with others, find some good hobbies and remember what you fuel your mind and body with matters.” For Thompson, swimming has long been a passion, something he says he has always found to have a natural inclination for. Though, beyond the physical aspect of such a Herculean accomplishment, Thompson claims much of the million meters came naturally — a side effect of simply doing something he loves. With the right mindset, swimming and other forms of exercise can go beyond being just a simple way to stay fit, he said. “When I’m swimming, it’s more than ‘Okay, twenty more laps and I can indulge that sweet tooth of mine,’” Thompson continued.

“It’s a way for me to process my day, think about what I have to do… It can be very meditative in that way, and it’s something I wish for all service members to find that thing they’re passionate about and let it be all it can be for them.” With his goal of swimming a million meters now completed and in his rearview, Thompson shows no sign of slowing down, even planning a 12.5-mile swim in the summer off the Florida Keys and, further off, his bucket list item of swimming the 20.5-mile English Channel. As he puts it: “A day might come where I’ll have to take my foot off the gas with my swimming, but it’s not today. As long as it remains something that brings me joy, I’m going to continue with it as long as I can.”

Air Force’s Daniel ‘Chappie’ James Jr. was first black 4-star general by Katie Lange Department of Defense News There are numerous Black American service members who broke barriers and could be highlighted during Black History Month. This Feb. 11, however, would have been the 101st birthday of Air Force Gen. Daniel “Chappie” James Jr., the first Black man to become a four-star general in any U.S. military branch. James died shortly after he left service in 1978, but his accomplishments are worth celebration. As an airman who served in three wars, James overcame extreme poverty, racism and segregation — including in the military — to become a skilled tactician in combat and a steady-handed leader whose speeches on patriotism and the American way were highly regarded. Humble beginnings James was born Feb. 11, 1920, in Pensacola, Florida, and was the youngest of 17 children. His dad was a laborer at a gas company and his mother was a teacher. When James was young, his mother decided she would teach her own children because she wasn’t impressed with the quality of education at the local segregated public school, according to an Air Force Magazine article. She started her own school, which gradually attracted other neighborhood kids. According to the article, she ran the school for 52 years until she died at the age of 82. One of the most memorable things she taught her pupils was to never quit. Clearly, her youngest son took that to heart. From dreams to reality As a Black child in the segregated south, James wasn’t sure what type of job he would one day be able to get, but he grew up watch-

ing the takeoffs and landings at nearby Pensacola Naval Air Station, which gave him the dream of being a pilot. Chappie, as they called him — a nickname that was his brother Charles’ until Charles passed it down to him – graduated high school in 1937. At 6’4” and 250 pounds, the athletic teen earned himself a football scholarship to the famed Tuskegee Institute in Alabama. According to Air Force historian Howard E. Halvorsen, James was expelled from his academic studies at Tuskegee his senior year for going on too many “escapades” that were frowned upon by the institution. However, he was still able to attend the Civilian Pilot Training Program offered through Tuskegee. It was one of the first training opportunities offered to minorities. James graduated from the program in March 1942 with his civilian pilot certification. He did eventually earn a bachelor’s degree from Tuskegee, too, Halvorsen said, but he didn’t get that until 1969 when the school awarded him the degree based on the many credit hours he’d earned during his military career. James met his wife, Dorothy Watkins, while they were both enrolled at Tuskegee. They married on the campus in November 1942 and had a daughter and two sons. The oldest of the two sons, Daniel James III, went on to have his own illustrious Air Force career. James stayed at Tuskegee as a civilian instructor pilot for the Army Air Corps Aviation Cadet Program until January 1943, when he joined the program himself. He was commissioned into the Army Air Corps the following July; however, he was never sent overseas to fight in World War II after he completed his fighter pilot combat training. Instead, he spent the next several years training cadets in the U.S. Combat capable When the Air Force began implementing its desegregation plan in 1949, James was finally sent overseas. He was assigned to the 18th Fighter Wing’s 12th FighterBomber Squadron, an integrated unit in the Philippines. James later told his son that very few white service members initially talked to him, but he persisted anyway. James was sent to Korea in July 1950 and completed 101 combat missions during his deployment. A year later, he was back in the U.S. and working his way up the ranks, including a stint at the Pentagon. By the time Vietnam began, he

was a colonel. In June 1967, James deployed to Ubon Royal Thai Air Force Base, Thailand, where he was named vice commander of the 8th Tactical Fighter Wing. The unit was under the command of then-Col. Robin Olds, who James knew from working at the Pentagon. James flew 78 combat missions into North Vietnam and helped Olds to plan and lead the famed Operation Bolo in January 1967. In what’s often considered the greatest air battle of the war, U.S. fighters destroyed seven enemy MiG-21 aircraft during Bolo, which was the highest total kill of any air mission during Vietnam. The mission, which saw no U.S. losses, is how the 8th TFW earned its nickname “The Wolf Pack” — because Olds told his pilots they would be “wolves in sheep’s clothing.” Steady under pressure After returning to the U.S., James served as vice commander of the 33rd Tactical Fighter Wing at Eglin Air Force Base. He was persistent, tactically skillful and seen as a steady combat leader — attributes that earned him his next role as the commander of the 7272nd Fighter Training Wing at Wheelus Air Base in Libya. It was August of 1969, and Muammar Gadhafi had just successfully overthrown the Libyan king. The U.S. had agreed to turn Wheelus over to the Libyans prior to the coup, and James was responsible for the withdrawal. He kept a cool head despite the tensions, which led to a successful and conflict-free drawdown. “James’ leadership and diplomatic skills were put to full use in that delicate situation in which the new anti-Western, radical Libyan leader sought to expel the Air Force,” Halvorsen later said. “Back home, James’ speeches on Americanism and patriotism were so well regarded, many were read into the Congressional Record.” Military officials had begun to take notice of his public speaking skills when James was at Eglin. After Libya, he was tapped to be a deputy assistant secretary of defense for public affairs. When he took the job in March 1970, he was also promoted to brigadier general,

making him the first Black general in the Air Force. In September 1974, James took over as vice commander of the Military Airlift Command based at Scott Air Force Base,Illinois. He had been promoted twice by this time, attaining his third star as lieutenant general. Making history … again On Sept. 1, 1975, James was officially promoted to the rank of fourstar general, becoming the first Black man to attain that rank in the U.S. military. “If my making an advancement can serve as some kind of spark to some young Black or other minority, it will be worth all the years, all the blood and sweat it took in getting here,” James said upon earning that fourth star. Along with the promotion came the position of commander in chief of North American Aerospace Defense Command, which gave him operational command of all U.S. and Canadian strategic aerospace defense forces. In December 1977, James took over as special assistant to the U.S. Air Force chief of staff, but he retired two months later on Feb. 1, 1978, for health reasons. Sadly, James died on Feb. 25 — 24 days later — due to a heart attack. The 58-year-old was buried in Arlington National Cemetery. Legacy James’ successes earned him numerous military and national accolades throughout his career, including the George Washington Freedom Foundation Medal in 1967 and 1968. He was also awarded honorary Doctor of Laws degrees from at least five higher-education institutions — along with his Tuskegee degree. James’ name lives on across the military, but perhaps most notably at the institution at which his career started. In May 1987, Tuskegee University dedicated the Gen. Daniel “Chappie” James Jr. Center for Aerospace Science and Health Education to the general. The center includes the James Center Arena, where the school’s basketball teams currently play.

Among these things are their teeth. A common misconception many people take after is the effectiveness of braces after youth. The fact of the matter is applying braces well into your adult years can cause more harm than damage. In young mouths, the teeth are still moving and have not established their permanent roots. This allows for easier placement and manipulation of said teeth. This also allows for better results after the braces are removed. Anyone who cycles through their time of wearing braces are highly encouraged to wear their retainer to keep the teeth in position, but for children, this is much more of a subject due to the more frequent movement of their teeth. The early preteen years, somewhere between the ages of ten to fourteen, are the most ideal years to attach braces. The jawbone is much softer between these ages, allowing for easier movement and adjustments. Although this time period may be ideal, some patients may have to

from over-crowded teeth and may have to be subject to wearing braces for a second time. Usually, after these years, the jawbone hardens and the teeth move into their more cemented positions. This complicates the process of doing any more work on them after placement. The teeth may fall out because of the “uprooting” of the teeth that tends to happen when braces are applied into adult years. Uprooting can unfortunately promote the unhealthy eruption of these adult teeth, which are not commonly known to grow back. It is important to take all necessary measures to protect adult teeth.

When you think about braces, you commonly think about the traditional wire and brackets that are cemented onto your teeth. Within the past decade, you can see patients opt into wearing an invisible type of braces more often. These new types of braces are sets of personalized trays that gradually shift the patients bite into alignment. The purpose of these braces allows the patient to have more of an esthetic look compared to a mouth full of metal. Although these braces look better, this puts a lot of responsibility onto the patient as they are in charge of actually

cleaning and proper wearing. Contrary to popular belief, more dental professionals recommend the use of personalized retainers as opposed to the widely advertised “one size fits all” retainers. The latter fail to provide any real retention for the teeth and are much less effective in providing the service it is meant to provide. The purpose of a retainer is to keep the teeth in the desired position that the braces shifted them into. This puts a little extra emphasis on the type and quality of the retainer a patient should decide to wear. For the most part, your overall health begins in the mouth. The way a person cares for their dental health plays a large part in the operations and effectiveness of the other systems of the body. Your body works for you. Treat it back.

16 Sustainment Brigade, RK3 HMF Bremen’s partnership This week Sergeant Major Kamrath and a few of his fellow Sergeants Major from the German Bundeswehr RK3 HMF Bremen unit drove seven hours from Garlstedt to Smith Barracks in Baumholder. The purpose of their visit was to discuss the next year’s events between their unit and the 16th Sustainment Brigade. This continues the ongoing partnership that has created countless friendships between members of different militaries. It allows Soldiers from both sides to broaden their skill sets, learn how different allied nation’s militaries operate, and compete to earn awards whilst building camaraderie. The partnership between these units has allowed over 200 Soldiers from the 16th Sustainment Brigade to earn German Armed Forces Proficiency Badges and Schutzenschnur Badges, collectively. These awards including physical endeavors such as running, rucking and swimming. It also includes shooting the German weapon systems to include the G36 rifle and P8 pistol. environmental protection laws. The effects of all these measures are constantly evaluated in a large-scale monitoring program. Drinking water is the most strictly monitored livelihood in Germany.

‘King of Calypso’ Harry Belafonte was WWII sailor by David Vergun Department of Defense News Singer, songwriter, actor and social activist Harry Belafonte was in the Navy during World War II, dropping out of high school in New York City to enlist and contribute to the war effort from 1944 to 1945. At the time, the military services were segregated. Belafonte, a Jamaican American, was assigned to Port Chicago, California, 35 miles from San Francisco. During World War II, Black service members were not normally assigned to frontline fighting units. Rather, they were assigned mostly to supporting specialties. His job was to load military ships bound for the Pacific theater. Just before Belafonte arrived in Port Chicago, California, a massive explosion took place, involving military ships loaded with ammunition. About 320 people were killed — twothirds of them Black sailors. “It was the worst homefront disaster of World War II, but almost no one knows about it or what followed,” he said. After the tragedy, Black sailors refused to load ammunition under the same unsafe, segregated conditions that were said to have sparked the explosion. It became known as the Port Chicago mutiny. Fifty of the sailors were convicted of mutiny and sentenced to prison. Most were not released until months after the war ended. “The Port Chicago mutiny was one of America’s ugliest miscarriages of justice, the largest mass trial in naval history, and a national disgrace,” Belafonte said. He credited television producer Ted Turner and his staff with having the courage to put the story on television. In 1994, the Port Chicago Naval Magazine National Memorial was dedicated to the lives lost in the disaster. Once he completed his service in 1945, Belafonte returned to New York City. He used his GI Bill benefits to pay for his classes at The New School Dramatic Workshop, alongside future actors Marlon Brando and Belafonte’s lifelong friend Sidney Poitier. To supplement his income while attending acting classes, Belafonte

sang at nightclubs at times backed by the music legends that included jazz musicians Charlie Parker, Max Roach and Miles Davis. Later, he developed an interest in folk music. With guitarist and friend Millard Thomas, Belafonte made his debut at The Village Vanguard, a legendary jazz club in New York City. In 1953, he signed a contract with RCA Victor, recording regularly for the label until 1974. Belafonte also performed during the so-called Rat Pack-era in Las Vegas. He and pianist Liberace, musician and singer Ray Vasquez, and singer Sammy Davis Jr. were featured at the Sands Hotel and Casino and the Dunes Hotel. Belafonte’s first widely released single, which became his signature audience participation song in virtually all of his live performances, was “Matilda,” recorded on April 27, 1953. His breakthrough album “Calypso” (1956) became the first long-playing record in the world to sell over 1 mil-

lion copies within a year. The album introduced American audiences to calypso music and Belafonte was dubbed the King of Calypso. Besides calypso, Belafonte recorded blues, folk, gospel, show tunes and American standards. Belafonte was an early supporter of the civil rights movement in the 1950s and 1960s and one of Martin Luther King Jr.’s friends. Throughout his career, he has been an advocate for political and humanitarian causes, such as the anti-apartheid movement in South Africa. He has also starred in several films, most notably “Carmen Jones” (1954), “Island in the Sun” (1957), and “Odds Against Tomorrow” (1959). From Feb. 5-9, 1968, Belafonte guest hosted “The Tonight Show,” substituting for Johnny Carson. Among his guests were King and Sen. Robert F. Kennedy. Belafonte, born March 1, 1927, in New York City, is now 94.

impressive war record during that time period, but with all the success also came sacrifices. Nearly half of the Army Air Force’s casualties in the war were suffered by 8th Air Force. Of the number of bombers and fighters lost, 33 percent were assigned to the Eighth. Nonetheless, the dedicated warriors of 8th Air Force still garnered 17 Medal of Honor recipients ranging from general officer to enlisted ranks during World War II. And by the end of the war, the Mighty Eighth laid claim to the most aces, sorties, bomb tonnage dropped and aerial victories of the war. “Bomber operations have and will continue to remain a vital component to U.S. strategic forces for many years to come,” said Gebara. Over the next few decades, the Mighty Eighth would go through many expansions and modernizations and the inventory would eventually grow to encompass bombers, tankers and fighters. “The Mighty Eighth’s longrange global strike capabilities continued to grow following WWII events,” said Lane Callaway, 8th Air Force historian. Beginning in late 1959, the 8th Air Force gained missile systems and units, enabled to support two

legs of the nation’s nuclear triad and would soon go on to conduct conventional bombing operations in Southeast Asia from the midsixties to early seventies. The Mighty Eighth has participated in a string of contingency operations in support of bomber assurance and deterrence missions using the world’s most advanced and equipped bombers. The role bombers played in American airpower became even more pronounced following the events of 9/11. The 8th Air Force headquarters supported the Commander-inChief with facilities and staff expertise when President George Bush aboard Air Force One landed at Barksdale. The President addressed the nation about the “9/11” attacks from Eighth Air Force’s commander’s conference room. Afterwards, the Mighty Eighth went on to participate in Operations Noble Eagle, Enduring Freedom, and Iraqi Freedom. “One of the most significant organizational changes to date was in February 2010 when the Eighth Air Force was assigned to the new Air Force Global Strike Command,” said Callaway. On Feb. 1, 1942, the heritage, honors and lineage of the “Mighty Eighth” sprung to life. The Eighth Air Force’s story began during World War II and continues today with a charge to conduct indefinite strategic deterrence anytime, anywhere in order to safeguard the United States of America. Eighth Air Force was first activated under the designation as the VIII Bomber Command on Feb. 1, 1942, at Langley Field, Virginia, and soon moved to England under its parent unit, 8th Air Force. Later that month on Feb. 22, 1944, the United States Army Air Forces reorganized its air headquarters in Europe with 8th Air Force becoming the United States Strategic Air Forces in Europe and on the same day, the VIII BC officially became known as 8th Air Force. From its first air combat bombardment mission conducted on July 4, 1942, through the present use of standoff precision munitions, 8th Air Force has decisively taken the air battle into the enemy’s airspace and homeland. “Eighth Air Force has an extensive history that dates back to World War II,” said Maj. Gen. Andrew Gebara, 8th Air Force and JointGlobal Strike Operations Center commander. “Our contributions and role during the war undeniably set the bar for airpower.” By mid-1944, Eighth Air Force had reached a total strength of more than 200,000 people, and at its peak strength, Eighth Air Force could dispatch more than 2,000 four-engine heavy bombers and more than 1,000 fighters on a single mission. For these reasons, 8th Air Force became known as "The Mighty Eighth." The Mighty Eighth compiled an

But the Eighth Air Force of today is not just bombers anymore. In October 2016, the 595th Command and Control Group located at Offutt Air Force Base realigned under the Mighty Eighth. This addition brought about the E-4B aircraft, aircrew and maintainers, as well as two strategic communication and operations squadrons into Eighth Air Force. In the near future, the Eighth will boast their newest capability — the B-21 Raider — a longrange strike bomber, named after the surprise attack against Japan during WWII in 1942 — the Doolittle Raid. The B-21 Raider will be capable of penetrating the toughest defenses to deliver precision strikes anywhere in the world. “I am extremely proud to be part of a unit with such a unique and responsive mission,” said Gebara. “From the beginning, 8th Air Force has played a major role in our nation’s defense and security, and we will continue bridging that legacy into the future.”

CHOCOLATE from Page 1 It’s not a distant dream. Belgian chocolates are world-renowned, and can be found in Belgium – just a short trip away! But with hundreds of chocolatiers and thousands of shops across Belgium, how do you know which one to pick? As with most things, the answer isn’t necessarily simple. What better mystery to unravel, however, than one involving chocolate? Choosing the best chocolate According to Georges Doutrelepont, a Nimy, Belgium-based master chocolatier who has honed his craft for two decades, there are a few key items to consider in choosing the best chocolate. The first, he says, is freshness. Chocolate oxidates, so the quality of chocolate treats declines quickly. Ideally, you would buy and consume them within 10 days. So if you can’t access artisan chocolates, it is important to find a chocolatier that moves a lot of product. A great Belgian chocolate shop, for example, can be found in the often-crowded kiosk at the mall. Even then, take care to select your own chocolates and avoid buying pre-packaged boxes. The second consideration has to do with the quality and origin of the ingredients. Doutrelepont, for instance, chooses his ingredients carefully, as they are an essential part of creating masterful chocolates. For example, his hazelnuts come from the Piedmont region of Italy and his almonds are from Portugal — among the world’s best. But unless you are inclined to start up an ingredient origin conversation with a chocolatier (which is encouraged — you’re guaranteed a lively discussion), then you may have to rely on the third, and perhaps most important, indicator of quality: whether or not you’re buying from an individual artisan. — are acutely aware of the tradeoffs between growth and quality, and often choose to focus on the latter. For fabricants, chocolate-making is not a growth business. It’s a life’s work. Doutrelepont told me it took him five years to get the blends, ingredients, sources, and processes just right. He likens chocolate-making to athletic endeavors — it requires agility (as anyone who has ever tried to make chocolate at home knows) and a level of precision that can be breathtaking when done correctly. And while hand-crafted chocolates in and of themselves don’t guarantee anything, passionate Belgian fabricants often produce excellence. I’ve conducted taste tests — admittedly unscientific — that bear this out. There is a significant positive difference between fabricant chocolates and all others. But we’re still talking about chocolate. Trying a little bit of everything and seeing what you like is part of the fun. However, if you’re searching for quality, remember Doutrelepont’s advice, “A (good) chocolatier is like an artist,” he says. “It’s not so easy to find.” Looking for one, however, is definitely worth the effort.
