by Nate Cairney contributing writer The words “Belgian chocolate” stir the imagination in a way that few other phrases do. You picture rows of delicate pralines and truffles behind pristine glass, and lose yourself in the idea that bliss lies inside each one of those small, delicious pieces. It’s not a distant dream. Belgian chocolates are world-renowned, and have been for years. Strict quality standards and unique production processes have helped create a brilliant chocolate culture throughout the country. But with hundreds of chocolatiers and thousands of shops across Belgium, how do you know which one to pick? As with most things, the answer isn’t necessarily simple. What better mystery to unravel, however, than one involving chocolate?

Choosing the best chocolate
According to Georges Doutrelepont, a Nimy, Belgiumbased master chocolatier who has honed his craft for 17 years, there are a few key items to consider in choosing the best chocolate. The first, he says, is freshness. Chocolate oxidates, so the quality of chocolate treats declines quickly. Ideally, you would buy and consume them within 10 days. So if you can’t access artisan chocolates, it is important to find a chocolatier that moves a lot of product. My favorite Leonidas shop, for example, is the often-crowded kiosk at the mall. Even then, I take care to select my own chocolates and avoid buying pre-packaged boxes. The second consideration has to do with the quality and origin of the ingredients. Doutrelepont, for instance, chooses his ingredients carefully, as they are an essential part of creating masterful chocolates. For example, his hazelnuts come from the Piedmont region of Italy and his almonds are from Portugal — among the world’s best. But unless you are inclined to start up an ingredient origin conversation
with a chocolatier (which is encouraged — you’re guaranteed a lively discussion), then you may have to rely on the third, and perhaps most important, indicator of quality: whether or not you’re buying from an individual artisan. The power of fabricants
Individual fabricants — preferably master chocolatiers with only one shop — are acutely aware of the tradeoffs between growth and quality, and often choose to focus on the latter. For fabricants, chocolate-making is not a growth business. It’s a life’s work. Doutrelepont told me it took him five years to get the blends, ingredients, sources, and processes just right. He likens chocolatemaking to athletic endeavors — it requires agility (as anyone who has ever tried to make chocolate at home knows) and a level of precision that can be breathtaking when done correctly. And while hand-crafted chocolates in and of themselves don’t guarantee anything, passionate Belgian fabricants often produce excellence. I’ve conducted taste tests — admittedly unscientific — that bear this out. There is a significant positive difference between fabricant chocolates and all others. But we’re still talking about chocolate. Trying a little bit of everything and seeing what you like is part of the fun. However, if you’re searching for quality, remember Doutrelepont’s advice, “A (good) chocolatier is like an artist,” he says. “It’s not so easy to find.” Looking for one, however, is definitely worth the effort.

Pralines While nearly all Belgian chocolate shops carry caramels, chocolate-covered fruits, and molded chocolates (think chocolate eggs at Easter), the two traditional powerhouses are pralines and truffles.

Pralines Though “pralines” the world over contain nuts (often hazelnuts) and sugar, Belgian pralines are chocolate-covered and available in an array of shapes, fillings, and flavors.
Truffles Typically round in shape, truffles are often made without nuts, are chocolate-forward in taste, and are usually filled with a delicious ganache (whipped filling of chocolate and cream).

Not your typical Greek island

Story and photos by Nate Cairney contributing writer Thassos, a Greek island in the north Aegean Sea, is like something from a dream. It is April, and the sea is warm enough for swimming. We are on Paradise Beach, standing on a vast swath of white sand lapped by turquoise water. Our children race into the surf and giggle with excitement. I swivel my head in both directions. We are alone. On a beautiful beach in Europe? A miracle. But Thassos isn’t your typical Greek island. There are few blue roofs, suntanning glitterati, or towering rectangular seaside
hotels. Instead, there are long stretches of remote coastline and mountains — big ones — in the island’s interior. A few hours after Paradise Beach, I am standing on a rugged peak. A verdant valley, filled with olive trees and wandering goats, lies far below. Beyond the island, the sea sparkles in the late afternoon sun. Were it not for the sound of tinkling bells drifting up from the distant goat herd, I might have thought I had the entire island to myself. In the scheme of things, I kind of did. Thassos in spring is a sparsely populated revelation, which means it is fantastic for visitors who are seeking adventure spiced with a bit of solitude.

From then until now Accessible by ferry and located a short drive from Thessaloniki, Thassos’ distinct feel begins with its fascinating history. The island has been famous for millennia for its pure white marble, which was used by many ancient cultures — including Greeks and Romans — to build statues and monuments throughout the region. Today, visitors can see white marble literally everywhere. Huge slabs lie along coastlines, in mountainside quarries, and along trails. Through virtue of its position near the European mainland, the island has seen a myriad of cultures and conquerors during the past 2,000 years. As a result, most century-ago residents of Thassos chose to live inland, far from the coast, where they could farm and herd in relative peace from marauding maritime visitors. Nowadays, that historical lack of coastal development means that Thassos has a wealth of charm. Gorgeous, remote beaches can be found at various points around the island. Cozy coastal cottages can be had for great bargains, especially outside of the summer high season. Rugged trekking is available: Mount Ypsarion towers nearly 4,000 feet above sea level and offers views to Turkey on clear days. Other than having to occasionally dodge very aggressive small trucks, the driving is fantastic — twisty narrow roads, impossibly located mountain villages, and beautiful views of mountains, forests, monasteries, and the sea. One of the best parts of Thassos, though, is knowing you are on an island. When you sit on a boulder overlooking the sea and watch the sun set on the mainland, it is good to know you are a world away from regular life and responsibility. For me, Thassos wasn’t just a place to find adventure. It was just plain good for the soul.

PLOVDIV, BULGARIA: Ancient city on the rise
by Nate Cairney contributing writer It is rare — and kind of awesome — to be in the presence of something truly ancient like the Egyptian pyramids or millenniaold yew trees in random rural Scottish churchyards. It is rarer still to be somewhere that has been continuously inhabited for more than 6,000 years, where diverse cultures have blended over time into something truly unique. It is invigorating to immerse yourself in a place where new, old, and really, really old nestle comfortably side by side. It’s even cooler when this is located somewhere unexpected — and a two-hour plane ride from where you live. Welcome to the world of Plovdiv, Bulgaria. As the 2019 European Culture Capital, a designation given to one city each year to showcase outstanding cultural life and development, Plovdiv is a place on the rise. A university city, Plovdiv bustles with a youthful energy and is reminiscent of Prague 20 years ago or Ljubljana a decade ago: it feels like Europe’s next big thing. Modern art and exotic architecture can be found
everywhere. Morning art markets blossom outside the city’s central park and the sweet scent of banitsa — a tasty Bulgarian pastry — fills the air. Ancient wooden Orthodox churches, museums, and a beautiful mosque, all within close proximity to one another, testify to the city’s diverse population. Boasting one of the longest pedestrian plazas in Europe, Plovdiv also offers excellent shops, restaurants, bars, and gelaterias. All are great deals for budget travelers. Though Bulgaria is part of the European Union, it has yet to adopt the euro. This means that your dollar (or euro) will go about twice as far when you’re using the Bulgarian lev. The city’s history, however, is where

Plovdiv really shines. Situated in a valley and surrounded by beautiful mountains, the location attracted ancient Thracians, who settled there thousands of years ago and never left. Over time, the city had a lot of visitors/conquerors, including Macedonians, Romans, and Turks. Each culture left its mark, and the results are fascinating. The Roman ruins are particularly wonderful. The ancient stadium of Philippopolis lies in the heart of the city and is beautifully illuminated at night. Perhaps the most impressive piece of architecture, however, is the Roman Theater, which was accidentally unearthed less than a half-century ago by a landslide. In pristine condition, the theater seats nearly 7,000 spectators and is still used for concerts today.

Bulgaria’s Cold War past is evident, as well. One can find concrete block buildings and anodyne cultural monstrosities. But you forget them almost as quickly as you notice them. The life and color that streams through the city captures your attention instead. If you want an amazing, authentic cultural experience without having to travel too far, Plovdiv is a strong choice. It is also a really good jumping-off point to explore the rest of Bulgaria — which has adventure to spare.

Trier to Koblenz: Eco biking adventure

Eco adventures are the combination of adventurous activities with environmentally responsible awareness. Destinations and activities vary widely and can be anything from floating on a raging river in South Africa to soaring through the tree canopy in the Ozarks! One thing all eco adventures have in common is the goal of appreciating and enjoying natural beauty with minimal physical impact to the area. There are hundreds of packages offered for destinations all over the world with a lot of traveling, and very steep price tags. However, being an eco adventurer is very easy to do on your own without wasting the green things in our wallet. Spending years as a backpacker taught me a lot about saving money on gas, wear and tear on my car, decreasing pollution and avoiding the stress of chaos on the roads during peak seasons. German public transportation is an amazing way to go hiking, biking, climbing and more. The German rail system Deutsche Bahn (DB) has cars that allow bikes, enough room for your equipment, and provide a variety of options for one-day or weekend adventures. There are countless adventures that
begin at or near the train stops, and also have connecting transportation such as shuttle buses, trollies, etc. to get you back and forth. One of my favorite eco adventures is taking the train to the Mosel River with my bike and spending three days riding from Trier to Koblenz. This 126-km ride is amazing and can be a bit rough to do in one day if you have spent the winter indoors and are not prepared. The most prominent villages along the route are BernkastelKues, Traben-Trarbach, and Cochem. However, most of my best rest stops were in the tiny villages that you can ride through in only a couple of minutes. This adventure is full of opportunities such as pitching a small tent at one of the many campgrounds or a bike and bed so that you can spend a day exploring the villages, as well as the biking and hiking trails through the vineyards overlooking the Mosel River valley. If you fancy water sports many of the villages offer canoe and kayak rental with endpoints that have return public transportation back to your starting point. There is no need to weigh yourself down with too m a n y supplies as there are ample stores, markets, wineries, restaurants and bistros along the route to get what you need for every stop. Do keep in mind that plastic is not accepted everywhere and you should have some euro cash on hand, and an EC card, or ATM card, which you can use at local banks. From spring to late fall you will come upon banners along the ride promoting village festivals. I highly suggest stopping to check one out. Over the years I’ve
ended up staying in a small village way too long because of a local fest that lasted until every beer keg and wine bottle was empty, every wurst and steak was eaten, and fun was had until the rise of the sun. If you become too tired and weary along the route, you can cheat a bit and give yourself a break by boarding one of the inexpensive cruise ships with your bike and gear. They offer the best Riesling wines and local food specialties so that you can sit back and enjoy the views of the steep vineyards, half-timbered houses, and castles along the route. Reaching Koblenz at the Deutsches Eck, where the Mosel joins the Rhein, was an incredible end to this eco adventure. The water where the rivers intersect change from green to blue and the city of Koblenz is a must visit while in Germany. Be sure to cross the river to visit Ehrenbreitstein Fortress. After an overnight stay in Koblenz with an amazing breakfast or a traditional afternoon cake and coffee continue the journey via train back to Kaiserslautern which takes approximately 1.2 hours. Northern Wales: Small place, big adventure

by Nate Cairney contributing writer Let’s begin in the ivy-shrouded tea room at river’s edge. Located near one end of the ancient stone bridge that spans the river from the valley village of Llanwrst, it looks like a hobbit house or something from a fairy tale. But this place — the Tu-Hwnt-I’r Bont tea room — is sturdy and real. We duck through solid wooden stable doors and nestle up to a worn table near a crackling fire. Biting rain swirls outside, and no matter. Here, in the coziest spot in northern Wales, we take a cup of tea, a warm plate of bread and melted cheese known as Welsh rarebit, and get down to discussing the wonders that surround us.
Take the mountains. They’re everywhere, and are remarkable in their diversity. Jagged peaks loom in the heart of Snowdonia National Park. Wild moors, golden and windswept, cover treeless hills as far as the eye can see. Emerald forests swallow valleys and stretch along ridges. In Wales, one doesn’t hike these hills. One walks them. And they make for quite the walk. On a March morning at dawn, for instance, an hour of lung-busting uphill walking has brought me to the top of Ro Wen, a bold, bald ridge that towers above the village of Dolwyddelan. The sky is clear and snow covers distant peaks, testament to last night’s weather. I can’t admire the view for long, though. Hundredkilometer-per-hour winds scream
in from the sea: they are strong enough to topple me. I crouch behind an ancient stone wall and register the brilliant colors — golds, greens, whites, and blues. I would love to linger, but the wind has no intention of relenting. It is time to descend. Then there is the sea, which is never far from even the most hidden mountain valley. This proximity to the water is a feature that makes northern Wales special, locals say: you can find so much natural beauty in one compressed spot. The Welsh coast con-
tains multitudes. There’s Conwy, for example, a safe harbor that is home to a magnificent castle and the UK’s smallest house. Less than an hour to the west, one can visit the wild, steep

fortable as coming in from the wild. Some of the best tea rooms in the world are found in northern Wales, like Tu-Hwnt-I’r Bont or Ty Hyll, located in the woods near Betws-y-Coed and now known by English speakers as the (very inaptly named) Ugly House.
No matter your preference — comfort or the wilds — you can find it in northern Wales, where the food is hearty, the tea is grand, and the scones with jam and cream are sublime. Adventure beckons. Answer the call. You won’t be disappointed.

Backpacking during spring and summer breaks is a great way to experience Europe on a budget for many students around the world. Staying at hostels or campgrounds with the ability to prepare your own meals versus expensive hotels allows you to cut down on major expenses and use the extra cash for self-led adventures with the added benefit of meeting other people from a multitude of backgrounds and cultures. Out of all the years spent trekking around Europe and Asia, backpacking through the Swiss Alpine regions has always been my favorite. To me there is nothing better than arriving in the Bernese Oberland and being welcomed by some of the most amazing scenery, welcoming locals, low-cost accommodation, and the ability to take day trips and go on outdoor adventures. My favorite start point has always been Interlaken, Switzerland. After arriving by train, there are many hostels and campgrounds within hiking distance from the two main stations. The facilities are above and beyond what most travelers think of a hostel and include ammenities such as communal kitchens stocked with utensils, cookware and appliances, movie rooms, reading and meditation rooms, pools, spas, recreation activities as well as laundry facilities, coffee shops, area information kiosk, and a place to enjoy nightlife. Within a short walking distance are various outdoor adventure facilities where you can book the adventure of your choice which can be a bit pricy, shop for souvenirs, groceries, or spend the day exploring the village. Instead of spending lots of euro on booking trips and shopping we decided to go low budget and high yield. Below are a couple of suggestions that will make your backpacking adventure an experience of a lifetime.

The Harder Kulm (pictured below) is considered the top of Interlaken. It is over 1,300 meters high with a view overlooking much of the region to include Interlaken, the Thuner See (lake) and Lake Brienz which flank the city below. The ascent upwards is not an easy trek with a large backpack and can be difficult when the trails are wet. There are several resting spots along the way with overlooks equipped with benches and tables to take a break before reaching the top. Once you arrive at the top of the Harder Kulm not only are you taken away by the view of the Jungfrau, Monk, and Eiger peaks, but you can relax and enjoy the views at its high altitude restaurant that offers local food and wine specialties. If you bring the kids along keep in mind that there is also a funicular that takes only 8 minutes to reach the top.
Schynige Platte (pictured above) was just a few minutes away from our hostel located in Matten, Switzerland. We took the city bus to Wilderswil and the historic cog train up the mountain where there were stunning views of the region in every direction. After about 45-50 minutes we arrived at the top and decided to take the long hike to the village of First. Before hitting the trail we stopped at the LOWA hiking boot center where you can demo their boots for free and return them to a location at the end of your journey. This hike is not for inexperienced hikers or kids. Although it was mid July we stumbled across rocky terrain with patches of ice, and took time out for a snowball fight while crossing some of the meadows at 3,400 feet before stopping at an alpine cabin for a much needed bowl of goulash soup and some pear schnapps. The final descent took us to the village of First four hours later where we made our way back to Interlaken to barbeque, reflect on the journey and plan our next adventure. Our next adventure was exploring the Lauterbrunnen valley, land of 72 waterfalls. This is a totally flat hike that takes you from the train station in the middle of the village towards the Trummelbach Falls. Although you are in a valley, the surrounding views are astonishing. The trail begins at the parking lot behind the church and just below the largest waterfall in the valley. It is surrounded by fields of wildflowers and flanked by high peaks where you will often see base jumpers freefall and fly over the fields in squirrel suits. The sound of cowbells and the glacier-fed swift water in the stream along the route were enchanting enough to make everyone in the group put away their earphones for the entire hike. The photo opportunities are spectacular because you also have a clear view of the snowcapped Jungfrau in the distance. A must-see natural wonder along this trek are the Trummelbach Falls. These waterfalls are the world’s only glacier waterfalls that you can access via an underground lift taking you to a series of tunnels, paths and viewing platforms. The falls are fed from the melting glaciers of the Jungfrau and flow at up to 20,000 liters per second. If you plan on spending the night in the Lauterbrunnen valley, there is a hostel and a campground along the route.

Once the chute is deployed you have an even better view of the Alps and surroundings because you are descending at a slower speed while gliding back to the landing zone. Another great experience was my tandem instructor allowing me to take the toggles and get the feeling of steering the chute before taking over again and guiding us onto the landing zone. The landing was excellent and required us to trot a few meters before the chute dropped behind us and we came to a stop. Once we were all back on the ground and gathered as a group with our instructors for a quick reflection of the experience, we turned in our gear and headed back to the campground for a bucket list party and barbeque that lasted so long that we had to forgo anything other the next day besides making a very unhealthy breakfast, sleeping in hammocks till the later afternoon and another barbeque while showing our pics and videos of this epic outdoor adventure. Do not put this one off, get out there and do it.

equipment instructions, what to expect and what it really feels like to skydive. After we boarded the plane and settled in there was feeling of uneasiness with everyone that quickly switched to excitement as we looked out the windows and took in the scenery of snowcapped alpine peaks in every direction as well as lakes, rivers, farmland and villages below. Once the plane leveled off and our instructors started doublechecking equipment and moving the first jumper to the door, the mood again became a bit somber knowing that you would be next. “Time to fly, ready mate,” was the last thing you heard at the door before spilling out of the plane with your instructor and freefalling at over 100mph. Hearing the ‘yeehaw’ in the distance cranked everyone up in the group to jump next and fly like an eagle at 14,000 feet. Contrary to what you would anticipate, the free fall was not a sick feeling of falling uncontrollably but was a very exhilarating feeling like floating on water with your hand stretched out in front of you which is beyond fun and feels very safe. The view was crazy amazing and the instructors took us on a couple of spins allowing an amazing real-life 360-degree view of the Swiss Alps that you can only get while skydiving. With all of the bucket list things to do in our lives skydiving is rated amongst the top 10. Many reasons include the adrenaline rush, adventure, a dare, bragging rights or to be like the Jones.’ However, when reality sets in many people opt out for something they consider less insane and safer to do. This is one of my favorite outdoor adventures that will not only accomplish the above reasons to jump from a small plane, but can also be very addictive. My first jump was over Interlaken, Switzerland, several years ago while on a pick-youradventure weekend camping trip. Our small group sat around the fire until the wee hours of the morning discussing other options such as white water rafting, canyoning and a few more. The consensus was to go big and not go home without checking skydiving off the list with the added bonus of flying over the Swiss Alps. After signing up at the campground adventure center there were a couple of folks suffering from buyer’s remorse but the group as a whole kept everyone’s spirits uplifted until it was time to board the van and head for the airfield. Once we arrived we were met by the tandem instructors who kept us motivated by talking about the safety of the sport, safety and

Going as a small group: In my experience going with a small group that you get to know instead of booking for yourself increases your level of confidence and decreases your fear and apprehensions. This is a great teambuilding bucket list adventure that will not only allow you to be motivated by others but will also give you peace of mind. Skydiving with a group that you know or get to know during an adventure trip will decrease your doubts and fears. Anticipation: Anticipating that sick stomachdrop feeling is one of the major fears of this sport. The reality is that you are in an airplane flying at approximately 100mph so that when you jump, there is a quick transition from flying to dropping at 120mph which alleviates that sickening feeling because you are riding on air molecules which feels like floating in water or flying. Safety: Of course, the question of how safe skydiving is in comparison to other outdoor activities, will cross your mind. Do your research ahead of time, and you will find that skydiving can be safer than everyday activities such as driving a car, riding a motorcycle, or even cross-
ing a busy street while walking to work during rush hour. There is always an element of risk when it comes to high-adventure activities. However, it is vital to check an organization’s safety records, certifications, training programs, as well as reviews from former participants. Health, level of fitness and age: As with any outdoor activity these are issues that haunt so many adventurous people and stop them in their tracks without knowing what they are actually capable of doing. When in doubt consult with your doctor in order to get a green light to take that jump. These days skydivers upwards of 90 years jump out of airplanes around the world while laughing at Millennials who are hyperventilating before their jump and stressing out all the way to the drop zone. Body weight can also be an issue. Make sure that you discuss this with the skydiving company prior to booking. Most issues can be addressed and corrected based on conditions and available equipment. Seasonal opportunities: Skydiving like many other adventures is seasonal because of weather conditions. End of March through October is prime season.
What to bring: • Food, water and snacks or you can eat at the bistro. • All equipment will be provided on-site. Test yourself first: Indoor skydiving in a wind tunnel is an excellent way to try out how skydiving feels beforehand and get yourself ready for this sport. The wind tunnel airflow simulates the realistic freefall portion of a skydive as well as allowing you to do turns, go forward, backward, slow down and speed up your fall rate all of which build your precision levels and confidence. The indoor flights are actually longer than outdoor flights. Not only was it fun and gave me that adrenalin junky fix, it is also very safe and can be done with a group of friends or the whole family at one time. Preparing your garden for Spring By FindItGuide.com While driving around lately, you may have noticed the German road crews giving anything and everything a crew cut. They have all sorts of cool connectors that go on their work vehicles that trim, cut and shave off just about any type of vegetation in its path. There are even trimmers that rotate around the road markers like magic while the maintenance truck cruises next to it. You should take this as a sign it is time to get your own bushes, grass and garden areas ready for spring. Generally, when it comes to bushes and hedges, you should not be afraid of cutting off too much (better to cut off too much than too little). In a lush growing area like Germany, where moisture is aplenty, if you are not aggressively cutting back, you can quickly get overrun. Weeding and clearing dead leaves is also a must. Here are five tips to help you get your garden in shape.
• Pull those weeds. Probably the least favorite job to do for everyone, weed pulling can get rid of those nasty critters that choke out the development of all the beautiful plants you actually want to grow. Pulling them now
will make the work easier because the ground is soft from the winter. • Prune shrubs that flower. Now is the time to prune shrubs that bloom late in the summer. Shrubs have flowers that bloom from wood, so if you prune them now, you will not risk cutting off the buds. • Don’t forget to fertilize. Now that the ground is fully thawed (we hope!), spread fertilizers around shrubs, trees and perennials. Be careful when using weedkillers later
in the season as the EU has laws regulating what can be used. If you PCSed over with products purchased in the U.S., be sure to see if they are approved for use in Germany. • Look for broken limbs and branches. Winter storms can result in trees and bushes that have broken or splintered due to high winds, snow, ice, rain and anything else the German winters can throw at you. Cut off just before the broken area to help the vegetation regrow. If your evergreens suffered any dead ends from winter, cut off the tips.

• Get rid of the dead perennial leaves. Clearing away the foliage that is still there, promotes growth to flowers and grass. If any perennials have pushed their way up out of the ground due to the recent frost, push them back in so they will prosper.

by Amanda Hayward contributing writer Egg painting, festivals, bonfires, Easter games and feasts all partially sum up a traditional German Easter weekend. Many Easter traditions first began in Germany, and to this day, Easter is one of Germany’s most celebrated holidays. In fact, the first chocolate Easter bunny was made in Germany in the 1800s. Celebrated alongside chocolate bunnies and the resurrection is the coming of spring. Colorful decorations begin popping up in some German villages like spring fl owers and painted eggs hanging from tree branches. Celebrating Easter in Germany gives you the opportunity to incorporate a few of these German traditions and add an interesting twist to your Easter holiday weekend. Here are a few ways you can celebrate Easter like a German.
—Decorate—
It is traditional for Germans to decorate a tree in their yard with handpainted eggs. It is also common to cut branches from trees and bring them inside and decorate them. To prepare the eggs for hanging, insert two small holes on either side of an egg with a small needle while carefully breaking up the yokes inside. Next, gently blow out the insides through one of the holes until only the shell is left. Decorate your eggs to your liking, and with a glue stick, dab glue next to each other
so you can glue both ends of a ribbon to form a loop. Hang your eggs on your tree or branch and you’ve officially decorated like a German.
—Days of Easter— Green Thursday (Gründonnerstag): Although some celebrate Green Thursday more than others, it is a tradition for Germans to eat something green on this day, such as spinach, leeks or peas. Green Thursday is a regular working day for most, and in recognition of its other meaning, the Last Supper, some Christians also attend an evening church service to have their feet washed. Good Friday (Karfreitag): Everything is quiet and Germans are off work through Easter Monday. Families share a relaxing day out like going for a long walk. They also tend to avoid meat throughout the day, so a fish and/or vegetable dinner is quite traditional. Some Christians attend Mass in remembrance of Jesus dying on the cross. During Mass a candle is lit then kept until Easter morning so it can be lit again at the breakfast table. Good Friday is a day to relax and prepare for Easter morning. Saturday: Easter markets are a great way to spend Easter Saturday, while some families prefer a quieter day that includes exchanging decorated eggs or making Easter “nests” (baskets) for the children.
Family, friends and the Easter bunny periodically drop gifts in the nests until Easter Monday. Some smaller, more religious German towns will attend a Saturday night service and then a bonfire. A tractor and wagon drive through the villages gathering tree branches people have left out in front of their houses. The branches are brought to one pile for a bonfire and residents gather to acknowledge not only the rising of Christ, but the end of winter and coming of spring. Easter Sunday (Ostern): While the sun is still down, some celebrate the Easter rising by re-lighting their Good Friday candle, followed by a breakfast with sausage, eggs and Easter bread. The day is spent going to Easter morning church service, going on Easter egg hunts and playing games. Every now and then children will peak to see what goodies have appeared in their nest from family and friends. A traditional Easter dinner is lamb, potatoes and vegetables followed by a traditional lamb or bunny-shaped cake (Osterlamm), which is made with flour, eggs, butter and powdered sugar (see the recipe on page 22). Easter Monday (Ostermontag): Easter Monday is a nonworking holiday and a time to relax. On this day, family and friends usually take turns visiting each other. Now, be proud that you celebrated your Easter holiday like a German!

150g flour 1 tsp baking powder 100g peeled, ground almond 6 drops of bitter almond extract 6 spoonfuls of milk Powdered sugar to sprinkle Lamb cake mold

Preheat oven to 200 degrees Celsius or 400 degrees Fahrenheit. Stir the butter until fluffy. Add the sugar, vanilla sugar and salt and mix until creamy. Add the eggs and continue to stir until a light cream is formed. Mix in the flour and the baking powder. Mix in almonds, bitter almond extract and the milk. Spray the lamb mold with cooking spray or lightly coat with butter and lightly sprinkle with flour. Place the lamb cake mold onto a baking sheet. Gradually pour the dough into the center of the mold so the dough does not run along the edge. Place in a hot oven for approximately 55 minutes until golden brown. Remove from the oven and allow the cake to cool completely before gently removing it from the mold. Sprinkle with powdered sugar.
