PALM CITY — The Park Avenue BBQ Grille chain is going to the worms for an innovative recycling experiment on Palm City’s western side that is revolutionizing the restaurant business. The restaurant owner, Dean Lavallee, founded the not-for-profit Sublime Soil about six years ago to experiment with turning restaurant waste into gold. Lavallee said too many businesses are locked in a mode of throwing away everything, or recycling some of their waste and feeling good about it even if they have no idea what happens to plastic bottles after the recycling truck comes by. “We don’t really want to be recycling,” Lavallee said. “We see a third alternative — design upcycle.” Sublime Soil recently received an award for its recycling experimentation from Palm City’s Keep Martin Beautiful. The award was created specifically for Sublime Soil, because the non-profit didn’t fit in any of the environmental stewardship organization’s annual award categories. County Commissioner John Haddox nominated Sublime Soil for another award. Sublime Soil has numerous facets, but they’re centered around two primary activities — worms and glass. Lavallee said his restaurant’s attempts at going green felt like

‘Fun shoot’ sees 4th year of marksmanship Mary Kemper

PALM CITY — It’s the year’s biggest event for Vietnam Veterans of America Chapter 1041, Sewell’s Point, and a big crowd of marksmen and -women turned out Feb. 5 to help haul in donations for the 4th year. The annual Veterans Fun Shoot was held at the Shooting Club of Palm City, with fresh, cool weather giving the participants an extra edge. This year, the shoot was held in honor of Chapter 1041’s Joe Howard, who died in a motorcycle accident last year. Lew Jones, chapter president, said that thanks to generous donors, Chapter 1041 was able to help purchase two large, wheelchair-accessible buses to transport veterans to the VA Medical Center in West Palm Beach. “(The funds) also go toward our $20,000 rapid response fund, which helps out veterans in need,” Jones said. In addition to shooters’ fees, funds were also raised through raffles of multiple items, including a Thompson submachine gun and a 2015 Royal Enfield motorcycle. Everything from trips to “buckets

of cheer” (metal buckets filled with bottles of booze) were on offer. There were so many shooters — just shy of 200 — that the estimated finish time of 11:30 was extended for an additional halfhour, when hungry participants flocked back to the main meeting area for a catered barbecue lunch. While everyone enjoyed their meal, Martin County Commissioner and veteran John Haddox gave brief remarks before awards were given out. There were awards for top female shooter — Jo Hanley, with a score of 85; top male shooter — Don Essen, with a score of 99; and firstand second-place teams, which, at scores of 361 and 362, were separated by a single point. The First Responders’ Cup was won, for the third year in a row, by the Martin County Sheriff’s Office. Chapter member James Dean pointed out that Chapter 1041 was named the most outstanding chapter in both the state and the nation this year, beating out 699 chapters across the country. Not that there was anything wrong with image — Lavallee is a businessman who wants diners to head to his restaurants for a variety of reasons. He doesn’t care which. Just, as a businessman he’s concerned about sustainability. He’s also an obsessive thinker. “We wanted to do something that was more than window dressing and create a more novel middle-level restaurant,” he said. Like all restaurants, Park Avenue has plenty of waste. Lavallee said he realized that was where his company could make the most progress in making more profit and saving the planet for future generations. “We dreamt about zero waste,” he said. So Lavallee did some research and discovered vermiculture. Uh, that’s worm farming. Vermiculture, in this case, is used to decompose food waste and turn it into nutrient-rich soil. The process reduces landfill waste, rebuilds soil, saves energy and even lessens water consumption. Lavallee had an idea to collect the food waste at Park Avenue, send it to a worm farm, let the

worms turn it into great soil, and plant crops that they then serve at the restaurant. “Everybody said we were crazy and it wouldn’t work,” Lavallee said. “I don’t respond to, ‘No.’” Lavallee found out there are some “No’s” you just can’t get around. There’s not a lot of land in South Florida zoned for vermiculture. He started it at home and his wife was the first to tell him he couldn’t open a worm farm there. Lavallee poked around South Florida startled that vermiculture wasn’t in anyone’s codes. He eventually found a friendly county staff in Martin that helped him find acres to try his ideas. “We kept this dream underground while we were testing formulas to get the food consumed by worms,” he said. Lavallee met Brian Sales, who’d founded the U.S. Green Building Council (South Florida chapter) Green Veterans Group, and made him a job offer to take his ideas and turn them into profitable realities. Sales is the farm manager. “He showed me the farm, and at the time I wasn’t looking for a job,” Sales said. But Lavallee kept at him. Sales said, he was intrigued by Lavallee’s idea to turn restaurant waste into worm food that becomes worm castings, a natural fertilizer prized by horticulturist

Sounding alarms for levels of service

D

ear Citizens of Martin County, Your Martin County Professional Firefighters and Paramedics are sounding an alarm regarding the current state of your local fire rescue department and how this may affect the level of service our community has built and become accustomed to. This letter is to inform you, with fact-based information, of some changes that are going to have an impact on the quality of the service that we provide. One of the most important factors in the emergency response for the citizens of Martin County is the level of experience in our people. The state of our department is in critical condition. Currently, we have a mass exodus of experienced employees leaving for other fire departments for better wages, benefits, and other terms and conditions of employment. We have employees leaving, some with 10 years or more of experience, who have obtained the knowledge, skills, and abilities that would be classified as the “gold standard” of our industry. The more alarming piece of this puzzle is the employee with 10 years of experience is being re-

placed by an employee with minimal to no experience for the same rate of compensation. In any business, especially the business of fire and rescue, there is just no substitute for experience. Experience saves lives through early recognition and reference to a knowledge base built in practical situations. Why are employees, some with a lot of experience, some with very little experience, leaving Martin County? Great question! Well, your local firefighters have been diligently working with our local county government over the past several years to actively manage the effects of the economic downturn that has impacted everyone. These same employees have overwhelmingly supported “givebacks” to the county for contractually promised pay as proof of their investment in the community in which they also live. Recent negotiations with Martin County, which would define pay and benefits for these employees, has become a catalyst causing people to look at neighboring counties and cities for better employment opportunities. pay a “professional negotiator” to settle the pay and benefits of our employees. (That’s enough to hire six new firefighters or even buy a new ambulance!) Your firefighters negotiate the contracts ... not attorneys. We base our proposals on neighboring counties and cities to avoid the exact situation that we are now experiencing. We have attempted to negotiate for more than a year and proposed a practical remedy to address this mass exodus. We have many experienced people — who were waiting to see what would happen in these negotiations — who are now considering other fire departments for employment. In the month of December, prior to the holidays, the professional negotiator hired by Martin County declared an impasse on your Martin County firefighters. Martin County’s reputation for the treatment of our firefighters has become an obstacle to attracting parents’ become falsely alarmed. I am a volunteer reading tutor with 4 years of experience teaching 3rd graders, in Title One schools, Martin County schools. Mr. Ferraro says he “learned” almost half of third graders are reading below grade level. This is not only false but statements

quality employees. I think most everyone would agree, that this is not the reputation you want to have. New recruits from fire school even know to steer clear of Martin County because of what has been happening to us. Many of our employees are retiring and many experienced employees are leaving. This is a perfect storm that will result in significantly greater overtime levels, driving wages to alarming amounts. Undoubtedly, these wages will be reported by the news media, but we encourage everyone to look a little deeper to see WHY this is happening. We are unable to retain employees to keep up with the demand of open positions. Even though the news outlets may paint the picture that ALL firefighters make $100,000 a year, this is the farthest thing from the truth ... just ask a local firefighter. In closing, we are asking you to contact your local elected officials and encourage them to save your fire department before it’s too late. Responding to market ‘correction’ come aware of the need to periodically review and rebalance your portfolio. Stocks, and investments containing stocks, often perform well before a correction. If their price has risen greatly, they may account for a greater percentage of the total value of your portfolio – so much so, in fact, that you might become “overweighted” in stocks, relative to your goals, risk tolerance and time horizon. That’s why it’s important for you to proactively rebalance your portfolio – or, during a correction, the market may do it for you. To cite one aspect of rebalancing, if your portfolio ever does become too “stock-heavy,” you may need to add some bonds or other fixed-rate vehicles. Not only can these investments help keep your portfolio in balance, but they also may hold up better during a correction. •If you’re retired — After you retire, you may need to take money from your investment accounts – that is, sell some investments – to help pay for your cost of living. A correction occurs when a key index, such as the S&P 500, declines at least 10 percent from its previous high. A correction, by definition, is short-term in nature and has historically happened fairly regularly, about once a year. Piper’s Landing is about to embark on a clubhouse renovation that will expand the 25,000 square foot center by 25 percent, expected to be complete by November.

renovated bar and lounge, an outdoor fire pit, and a new state of the art fitness center and aerobics studio for members. The clubhouse will also be widened and made more accessible by pocket doors that fold back for large parties and a raised floor and ceiling in the club’s alcove. When all is said and done, the 25,000 square foot center will be increased by 25 per cent, and will cost a little more than $7 million to build out. In addition, a new fire-lane will be added to the driveway, which will help make valet parking more efficient at the club. The construction will also entail repurposing their golf cart barn to make room for the fitness center, opening up their library, and installing a new air conditioning system. Sargent, a former president of the board of members, says the new clubhouse will make it easier for them to hold larger events. The renovation has been in the works for three years and after a 77 per cent approval by members, it is slated to begin April 1st and be completed by November. Jenny Yingling, president of the Chamber, says that Piper’s

Landing is one of the Chamber’s favorite places to hold events. “It’s a well-run club with excellent food and service, and is very topnotch. The renovation will make for a much better use of space.” Several of the Chamber’s events are hosted at the clubhouse, like their members’ inauguration gala every year and their annual golf tournament. They also hold many of their breakfast meetings at the club. “We feel like we’re partners with the Chamber of Commerce, because many of their events are here,” said Brian Reich, General Manager, to a packed house of chamber members. “We’re very excited to introduce this latest project to you.” Piper’s Landing collaborates annually with over 30 charity organizations many of whom organize events at the club, says Reich. Every year, Keep Martin Beautiful’s Environmental Stewardship Awards are held in the clubhouse, and Piper’s also hosts an annual golf tournament to raise funds for the Association for the Rights of Challenge (ARC). Titled “The Overthrow of the American Mind: Freedom of Speech and its Discontents,” Stevens will discuss the assault of free speech on college campuses today. Stevens is a Visiting Assistant Professor of Political Science at Ashland University, where he teaches political thought and history courses with fields of expertise in the American Founding, Abraham Lincoln, and political philosophy. He received his B.A. from Ashland University and his M.A. and Ph.D. (ABD) in politics from the University of Dallas, Institute of Philosophic Studies. Chris Pinkston, the project manager with Straticon Construction who will be overseeing the remodeling says, “(Piper’s Landing) is looking to the future and meeting the future’s needs. They’re building a space to fit what the market trends are moving toward.” Stacy Ranieri, a member of the chamber and president of Firefly Group, the public relations firm that represents Piper’s Landing, says that the best aspects of the club are the community atmosphere and the scenery. “It’s very close-knit, and in such a beautiful location.” With 600 acres, and only 270 single-family homes and 32 condos, the space allows for a relaxed, spread out style of living. Sargent says it’s satisfying to finally get the renovation on a roll. At first, he said, many members were skeptical of the overhaul, but “now we’re showing them the designs, and they seem to like it. I find that satisfying.” The club began discussing the renovation in 2012, when Sargent was chair of the board, so for him and many of the members who have enjoyed the club’s copious amenities, this is a highly anticipated improvement.

TREASURE COAST — Students from 12 high schools in St. Lucie, Martin and Indian River counties flexed their mathematical muscles last month in the annual Math Olympics hosted by the Indian River State College Math Department. Participants competed both individually and as teams from John Carroll, Lincoln Park Academy, Martin County, St. Edward’s, St. Lucie West Centennial, Sebas-

tian River, South Fork, Treasure Coast, Fort Pierce Central, Fort Pierce Westwood, Jensen Beach and Vero Beach high schools. Competition was fierce as individual opponents started the day with a 40-question written exam assessing mastery of algebra, geometry and trigonometry. MARTIN COUNTY — John Loesser, artistic director of the Lyric Theatre, can often be seen holding court at the Osceola Street Café. On the evening of March 3, he moved up to a real red and gold throne, rolled onto the Lyric stage by Kia Fontaine, the Lyric’s executive director. The event was the theater’s 90 birthday and it featured a roast of Loesser by local luminaries, actor Jim Brochu and comedian Steve Solomon, both longtime Loesser friends. The event began with a cocktail hour and silent auction, followed by a live auction led by celebrity auctioneer Tim Luke in a red sequined jacket. He had great items to work with, including a weekend for four in New York with John Loesser and featuring a Broadway show and backstage tour; a weekend for four in New Orleans, hosted by John Shoup, producer of the PBS and the Discovery Channel’s “Great Chefs;” a weekend tour for four in Washington, D.C., hosted by Knight and Ann Kiplinger; a five-day sailing adventure for two in Scandinavia, led by John Moffitt and Priscilla Baldwin and a fully catered private Super Bowl party at the Lyric for 100. Temple and Joe Temple of Sailfish Point won the weekend in Washington and explained why they bid on it. “The Kiplingers will give the finest tour we can imagine,” she said. “We know both Ann and Knight. We’ve heard him speak for years and we’re friends. We know it will be a spectacular weekend because he’s a wealth of knowledge and so articulate and brilliant. It will be far superior to a tour anyone else could give and that’s why we bid on it.” Others toasting and roasting Loesser included Bob Crandall, former president and chairman of American Airlines, Lyric Board president emerita Ethel Christin and auctioneer Elliott Paul. “You are what makes the Lyric Theatre the best and the worse, at at the same time, but you’re our guy,” Paul said. Loesser sat on his throne, without his trademark baseball cap but with his sneakers. As Solomon began the roast, with funny riffs on some of Loesser’s “shortcomings,” the honoree held up signs, including one that said, “Help Me.” A highlight of the evening was when a big box was rolled on stage. As Loesser lifted off the top, out stepped his daughter Gracie, who now lives in Seattle. It was a complete surprise to Loesser and

STUART — Fans of “A Prairie Home Companion” on NPR know the work of Pat Donohue. He is the long-time finger-picking guitarist and songwriter for the “Guys AllStar Shoe Band.” In addition to his work on “Prairie Home Companion,” Donohue has had a successful solo career, including the winning of a Grammy Award for his participation in “Pink Guitar,” a compilation of Henry Mancini tunes on acoustic guitar. Now Donohue has left the radio show and ventured into an entirely solo career. He appears at the Lyric Theatre March 17 and spoke recently from his home in St. Paul, Minnesota about his music and this new facet in his career. Donohue grew up in St. Paul and became interested in the guitar as a teen. His first instrument was the drums. “I started playing the drums and had a garage band as a drummer,” he said. “My older sister played folk guitar and was the guitar player in a rock band. I watched her and switched at 17 or 18.” The finger-picking Donohue has

won the National Finger Picking Guitar Championship. “Guitar players strum, with a pick, called flat picking, or with their fingers,” he said. “Not too many people do both. I wasn’t comfortable with the flat pick. I felt closer to the guitar with fingers.” For the championship, Donohue said that originality and execution were important. “If you do something nobody’s heard, that’s impressive,” he said. “I tried to do things I hadn’t heard others do.” Donohue writes much of his own music. He said there were a number of elements that went into a good song. “The song should be about something,” he said, “Preferably, it should be something that resonates with most people. The ultimate goal is emotion, to create an emotional feeling musically.” Donohue was known for parodies while on “Prairie Home Companion,” and he said those were fun to do. “I did a lot of that sort of thing,” he said. “I’d take an overused or familiar tune and make it about something totally different. The (original) songs will survive (the parodies.) It was a lot of fun to be in that band and when I play

I’m getting to inhabit some of the songs I wrote for ‘Prairie Home Companion’ and played once. I wrote them five or 10 years ago. The show is a pretty good selection of classic blues and jazz

with my own contemporary American music. My style is from the early American blues guitar players.
