Talkin’ Trash

In its fourth year, the Sustainable Seafood Dinner is throwing out its ‘Trash Fish’ branding. But its focus on sustainability is as fresh as ever. NICK FRIEDMAN A+E MANAGING EDITOR

For the past three years, Sarasota’s foodies, socialites and ecologically minded diners have eagerly anticipated the annual Trash Fish Dinner. The event features a handful of the area’s most respected chefs preparing an upscale dinner using bycatch and other less-soughtafter seafood species, otherwise known as “trash fish.” Selling out every year, it’s considered one of the highlights of the summer social scene.
