Here at Fodder, we love local food and are truly proud to bring our valued customers quality, local food. That’s why our ethos is to ensure everything we do has Yorkshire at its heart, with 100% of our meat coming from Yorkshire farms, working with over 450 Yorkshire farmers and producers, championing farming and food from our stunning countryside.

All our profits go back to the Yorkshire Agricultural Society, a registered charity helping to support and develop an environment where farming, food and the countryside thrives and grows. Fodder is located on the Great Yorkshire Showground where the Great Yorkshire Show takes place annually. The Show, organised by the Yorkshire Agricultural Society, is a part of our joined objectives to celebrate all things farming, food and the countryside. Fodder is the only farm shop and café in the country where 100% of profits go to a charity at the heart of agriculture.

When you visit our café and buy a slice of cake, this funds two farmers to have free health checks and a roast dinner pays for a child to attend Countryside Days, an educational event where children can learn more about where their food comes from and the importance of protecting the countryside. Meanwhile, a double egg sandwich pays to support a farmer exploring innovation and diversification options to help build a more sustainable future.

Yorkshire Free Range Herb Fed Turkeys

Herb Fed of Shires Farm, located in Easingwold, just north of York, is a family-run farm that takes a traditional and sustainable approach to rearing their turkeys. Emma and Edward, the dedicated farmers behind the operation, rear their free-range Bronze Turkey breed in small flocks, ensuring the birds have ample space to roam freely across the Yorkshire countryside. These turkeys are not only free to forage in the pasture, but they also enjoy a unique diet.

Twice a week, bundles of herbs arrive from Herbs Unlimited, Edward’s aunts farm in the nearby village of Sand Hutton. Herb Fed turkeys enjoy a variety of ten different herbs including chillies, mint, thyme, oregano, tarragon, fennel, marjoram, parsley, coriander, and chives. The use of this herb-rich, sustainable feed is what makes Herb Fed turkeys truly unique.

The result of this herb-infused diet is a bird that is both moist and succulent, offering rich, aromatic flavours that make it the perfect centrepiece for any Christmas dinner.

Soanes of Yorkshire Wolds

Our whole chickens are supplied by the Soanes family from Church Hill Farm in Middleton-on-the-Wolds. They use four generations of arable farming expertise to grow the finest wheat to feed their chickens and use their animal husbandry experience to produce exceptionally tasty chicken.

Red Tractor accredited, Great Taste awardwinning grain fed chickens are reared in light, airy barns with bales to perch on and toys to encourage their natural behaviour and to develop social interaction.

The result of this welfare rich life is awardwinning, firm-textured, tasty and succulent chicken.

Fresh Fabulous Fodder

Our beef is carefully sourced from a range of trusted farms and suppliers throughout Yorkshire, each committed to high standards of animal welfare and sustainable farming practices. One of our closest and longest-standing partners is the Cowling family farm, situated just 3 miles from us. We have proudly worked with the Cowlings since the very beginning, forging a strong and mutually beneficial relationship.

The Cowling farm is a family-run operation that prides itself on quality and care. Throughout the year, they maintain a herd of around 300 cattle, which includes a small suckler herd, ensuring that their livestock is raised with plenty of space and attention. In addition to their cattle, the Cowlings cultivate 280 acres of cereals, which they grow on-site and feed directly to the animals, ensuring a natural, farm-to-table approach.

This close connection allows us to ensure the highest quality beef for our customers, while supporting local agriculture and reducing food miles, resulting in fresher, more sustainable meat on your plate. It’s a true farm-tofork partnership that we’re proud to be part of.

The Longthorp family have been farming for four generations and are passionate about pigs. Originally a purely arable farm growing crops, pigs were added to the mix some thirty years ago to make better use of the grain and straw they produce.

They set up breeding their pigs outside from the very beginning. Their pigs have been fully free range since 2007 and are outside from start to finish.

The Liddle Family

The Liddle family are proud fourth generation Yorkshire lamb farmers, and have farming in their DNA. Dad, John, has lived on the land in Stainburn his whole life and has taught his children, Christina, William and Alice the family trade.

The way the lamb is farmed accounts for the standard and taste as the family use traditional methods centred around finishing lambs on grass in a high welfare system. Keeping the flock 100% grass fed, instead of grains, is the most sustainable way of producing lambs.

Chef’s Top Tips for your Festive Feast!

1. Toss the blanched greens with butter, toasted almonds, or crispy pancetta just before serving for added flavour.

2. Add an extra layer of flavour to mashed potatoes by infusing the milk or cream with herbs like bay leaves, thyme, or garlic before adding it to your potatoes.

3. Use two trays to give your veggies space and rotate them halfway through cooking for even browning.

4. For a festive touch, glaze your carrots and parsnips with honey, add a knob of butter, a splash of orange juice, and a sprinkle of cinnamon or thyme for a sweet and savoury flavour combo. Add the glaze in the last 10 minutes of cooking to avoid burning the sugars.

We now sell sixty-seven different Yorkshire cheeses, and can provide advice to ensure you pair up the right cheeses to suit the occasion. We actively encourage you to sample the cheese before you buy; even more reason to visit!

The deli offers a slice of Yorkshire for everyone. Our selection of fresh salads and soups are all made in-house with tasty seasonal produce and sold alongside our delicious deli meats roasted in the Fodder kitchen, our award-winning pies and our scrumptious Original Baker sausage rolls. The Boxing Day Sandwich

There is an unwritten rule that all Boxing Day food should be easy, relaxed and yet, still decadent enough to hold up to the previous day's festivities!

This is one of them, you are paying tribute to yesterday's excellent serving, and creating a sandwich that will turn into an annual tradition. Move aside bubble and squeak, leftovers have got competition this year.

INGREDIENTS

• Leftover slices of cold cuts (chicken, turkey, pork etc)

FOR THE STUFFING

• 400g Fodder sausage meat

• 1 white onion

• Zest & ½ juice of 1 lemon

• 3 sage leaves, finely chopped

• 2 Garlic Farm garlic cloves, grated

• 6 Shepcote fat dried apricots, finely diced

•• Salt and pepper

FOR THE CRANBERRY SAUCE

• 400g cranberries

• Zest & juice of 1 orange

• 2 tbsp Shepcote golden caster sugar

• 300ml cranberry juice

• 2 cloves

• ½ tsp Quay cinnamon powder

• Pinch of salt

TO FINISH

• Sliced bread

• 100ml True Foods Christmas Day gravy

• 250g Brie De Meaux

METHOD

1. Start by making your stuffing. Preheat your oven to 180/160°c fan and line a bread tin with parchment paper.

2. Finely chop your white onion and add to hot frying pan with a generous glug of olive oil. Fry for 10-12 minutes until soft and golden. Remove from the heat and add the cooked onions into a large mixing bowl to cool.

3. Once the onions have cooled, add the zest & juice of the lemon, the diced dried apricots, chopped sage leaves and finally, the sausage meat. Season with a good pinch of sea salt and black pepper. Mix with your hands until thoroughly combined.

4. Place the meat into the lined baking dish and bake for 35-40 minutes until golden brown. Allow to cool slightly.

5. To make the cranberry sauce, add all the ingredients together into a heavy bottomed pan, and set the heat to low/medium. Stir continuously until thickened. This should take 10 minutes, remove the cloves. Spoon into a bowl and pop into the fridge.

6. Toast three slices of bread for 1 person. Warm up the gravy in a pan and pour into a bowl.

7. Once toasted, butter two sides which will form the top and bottom, leaving the middle layer. Soak that slice of bread in your gravy for only a few seconds.

8. Layer your sandwich as follows; bottom layer of buttered toasted bread, with your homemade stuffing, brie, gravy-soaked bread, your cold cuts, cranberry sauce, topping off with your last slice of buttered toasted bread. Serve immediately.

Roast Potatoes

Serves 4-5

Everyone claims to have “the” best recipe for roast potatoes, and that is fine but they are of course wrong, because we do. Don’t believe us?

Try this recipe and pretend it’s yours when people come asking for it.

INGREDIENTS

• 550g potatoes

• 4 tbsp cold goose/duck fat

• 1 ½ tbsp cornflour

• 8g fresh thyme

• 2 Garlic Farm garlic bulbs - halved

• Salt and pepper

METHOD

1. Start by peeling and quartering the potatoes.

2. Add them to a large pan of water and add a pinch of salt. Bring to a boil. Cook until you can just push a knife into a potato. Drain and allow to sit for 10 minutes in a bowl with cornflour, salt, and pepper. Toss around to evenly coat.

3. Meanwhile turn on your oven to 210/190°c fan. Add the duck fat to a deep casserole dish and place into the oven to melt.

4. Carefully, add the halved garlic, and a few sprigs of thyme to the duck fat. Add the potatoes, and roast for 30 minutes. Toss around and then bake for a further 40 minutes until golden brown and crispy.
