Every meal is a festival of food.” With so many local restaurants that have each developed their own signature dish, Kerns said the restaurant dining experience is set apart from any other area. “I love the food and everything else about the area. It turned out to be a wonderful place to raise a family and work,” she said. It didn’t take Kerns long to learn how to prepare those special Cajun dishes. Kerns attributes much of her success in Cajun cooking to the many good cooks in the area who are willing to share their knowledge and recipes in hopes of keeping the Cajun cooking tradition alive. preparation “New Iberia has plenty of fresh ingredients to offer,” she said. Succulent seafood from the nearby waters, wild game, glistening sugar processed from the areas’ sugar cane fields, the freshest of local fruits, vegetables straight from the fields and locally made seasonings and hot sauce have all contributed to the unique taste of the area’s cuisine. Many of the fresh products straight from the fields and other homemade specialties can be found at the Farmer’s Market held twice weekly in downtown New Iberia. Kerns said the Iberia Parish Library has a large collection of cookbooks that offers much information on the food of the area and sometimes chefs are often willing to share their expertise. Copies of the 2010 Cajun/Creole Cookbook and some previous issues are available at the Daily Iberian office at 926 E. Main St.
