The Goddesses Springtime Salad ½ cup dandelion greens, cut into small pieces ½ cup chopped or torn rocket leaves ½ cup spring onions or chives 1 cup red or oak leaf lettuce, torn into pieces 1 tablespoon chopped fresh mint 1 or 2 organic eggs, preferably free-range, hard boiled a few baby radishes, sliced thin 1 carrot, sliced thin or grated 3 or 4 small red potatoes rocket(arugala) flowers,nasturtiums,and/or chive blossoms (optional)
Dressing ½ cup walnut oil juice of 1 juicy lemon ½ teaspoon good, grainy mustard fresh chopped dill, 1 or 2 sprigs 1 tablespoon honey or agave nectar 1new garlic clove, chopped fine 2-3 tablespoons apple cider vinegar sea salt to taste Combine all ingredients for dressing in a jar with a tight lid and shake. Taste to adjust the seasoning, then put aside. Can substitute olive oil for the walnut, but make sure it’s extra virgin and cold pressed. Meanwhile, submerge potatoes in water and bring to a boil; cook until tender to the fork. Run potatoes under cold water to stop them from cooking and let cool. Combine all the salad ingredients in a big bowl, slice eggs and potatoes, and lay them on top. Pour the dressing over all, and sprinkle with the flowers. Enjoy!
