hen I was playing music in the Gold Pan Saloon, I used to see all these young men and women coming into the Yukon.

They were either coming back from university, or up looking for work.

And I always told the women that if they planned on staying through the winter and were looking to possibly settle down and start a family, then they’d better start looking for a real man because those little “lumber-sexuals” they were snuggling up to would be as useless as a three-legged wheel dog, come winter.

I told them the first thing you look for in a good man is dirty fingernails and greasy hands, cause that means he’s not scared to take apart a water pump, the same water pump that could be supplying water to wash diapers for all those rugrats you want.

Second thing to look for is gnarled knobby hands, cause that

means he’s used to working in the cold and won’t be afraid to get under the hood and change an alternator at 40 below. And if you’re going into contractions in mid-February, he’ll make damned sure you make it to the hospital on time.

Another sure sign is blood on his hands, evidence that he’s just gutted a moose, meat that’ll feed your ever-growing brood. Also, look for sawdust in his boots, which means he’s just cut a cord of wood to keep you warm when winter rolls around. If he smells like gas, that means he’s just run his trapline and the fur he’s caught will pay for your mom to come visit you, next summer, when you need a break from all your kids.

Also, look for missing front teeth, cause that means he’s not scared to stand up for what he believes in. Being politically correct has its place, but when a guy

knocks over your jug of draught in The Pit and is not willing to replace it, then it’s time for some Yukonstyle diplomacy.

Also, make sure he’s driving nothing more than an ’85 F150.

That indicates a guy knows a good truck when he sees one, and has no need to waste money buying anything newer than that. And check if there’s a bungee cord holding the hood down (that just means he’s thrifty). And don’t be alarmed if it backfires. That just means it’s still got good compression and should make it through another winter.

Also, be sure he’s got a dog in the front seat—because that means he runs dogs too.

If the guy uses rubber boots all summer, count yourself lucky cause the guy doesn’t need to change his boots with the seasons, like them little lumber-sexuals who need to cont’d on page 3...

match their boots with the seasons. Also, check the insoles ... if they are made of cardboard, then you know a guy knows how to make something out of nothing.

I also tell the guys that if they are looking for a good Yukon woman, then forget about the bleached blonde with the tendollar latté. Cause there’s only one place you’ll find the best Yukon woman, and that’s at the dump, looking for parts. If she’s ripping the ball joint off an old Ford, then you’ve got it made.

If she can roll a cigarette in one hand and change a diaper with the other, you’ve hit the jackpot.

Also, get close enough for a good whiff. If her B.O. is worse than yours, bingo, she’s a keeper. Nothing worse than a high-end woman who spends all her time in front of the mirror. A good way to test out a potential female partner is a goodold arm wrestle. If she can hold you for at least a minute, even if you beat her, she can punch dough till the cows come home.

So there you go, boys and girls, you can take my advise—or leave it. But don’t blame me when your little lumber-sexual comes whining cause he doesn’t want to change your tire cause it’ll rip his nails, or that little bleached-blonde’s high heel just broke off and she can’t chop any kindling.

Most fishermen stand in front of fishing-tackle boards in the store and think, If I was a fish, I would go for that colour. Problem is, they may tell “fish tales,” but they don’t have fish vision. Fish have what is known as sensitivecolour vision. In the dark, this turns into “sensitive rod vision,” and colour is no longer a factor in attracting fish.

The best colour of bait depends on the depth of water you will be fishing in. It might surprise you that red lures lose colour faster than most other colours, as they go deeper into the river or lake, even in the clearest of waters. In clear water, below 10 feet only about 6.5 per cent of the red is visible to fish, and that decelerates faster with each additional foot.

As for orange lures, at a depth of 10 feet, only about half of the colour will remain; and with every 10 feet thereafter, the visibility of orange is cut by yet another 50 per cent.

At a depth of 10 feet, in clear water, yellow bait will retain about 73 per cent of its yellow rays. The winner of visible colour rays go to the greens and blues, though. At a depth of 10 feet, they retain about 85 per cent of their colour rays.

■ Size of fish

When you ask a fisherman just how big the fish was that they caught, the answer will depend on just how long the fisherman’s arms are!

■ The future of fishing in Canada

It is going to be an uphill battle for fishing in the future. Every day, human population grows (now in excess of 7-billion people).

Each day the demand for industrial growth means more pollution in waterways. Farming, as well as domestic law care, means that more chemicals are getting into waterways and leading to health problems for all aquatic life, including fish that are becoming

incapable of reproducing or are dying as fish habitats are contaminated.

There is a need for an awareness of these problems—or people may need to plan to give up fishing in the future. Figure out how many hours a year you go fishing.

Then figure out how many hours you give back in terms of hands-on projects that improve fish habitat?

When preparing stuffing, allow it to stand approx. 1 hour, allowing it to blend. If using herbs or spices, never season to the point that spices are “noticeable.” (Remember, you are cooking to taste the fish— not just the herbs.)

Basic wild rice stuffing INGREDIENTS

1 cup wild rice, cooked 1 tsp. thyme (or other herbs*) 1 Tbsp. white onions, minced 1 cup milk, warmed 2 Tbsp. clarified butter (alternatively a delicate oil) ½ tsp salt Pinch of pepper

Wild rice and mushroom stuffing (A dry to medium-dry stuffing)

METHOD

Toss wild rice and seasoning together. Sauté onions in butter (or a delicate oil) until translucent. Add to rice and toss well.

Sprinkle milk over stuffing and toss once more to blend. *Optional herbs: rosemary, chervil, thyme and parsley.

INGREDIENTS

1 tsp. white onion, grated 1 cup celery, finely diced ¼ cup mushrooms, diced 2 Tbsp. clarified butter 1 cup wild rice, cooked Salt and pepper, to taste

METHOD

Sauté onions, celery, and mushrooms in butter until a light golden colour. Then blend into the rice. Add salt and pepper. Toss to blend.

Stuffing fish, birds or game should never be overpowering.

When preparing stuffing, make it moist and fragrant. Lean meats, such as predator fish, generally tend to be dry and therefore require moist stuffing.

During cooking, stuffing will help keep fish moist. Fat and liquids are recommended in preparing this stuffing.

Fish that are on the fattier side need drier stuffing, so reduce fat and liquids.

Bread is used in most stuffing. However, when preparing stuffing for fish, use wild rice (always precooked to a dry fullness). Brown rice, as well as white rice, has no connection to wild rice. But, if used, they should be cooked the same as wild rice.

Richard’s Tire Tips

How do I know when to get NEW TIRES? Every new tire comes with special humps in between the tread blocks known as the wear bars, these bars are used to indicate to the user that the tire has reached 2/32’s of an inch. 2/32’s is considered to be at the end of the tire’s useful life and can no longer safely grip the road, especially in rainy conditions where you will find the tire to likely experience a hydroplane condition.

Therefore if your tires have reached these wear bars your tires are no longer safe to operate and are in need of replacement.

Watch out you wascally wabbits!

You don’t have to be a big-game hunter to enjoy wild meat. As a youngster, back in the 1930s and ’40s, I looked forward to a dish of rabbit. Basically, we got our cottontails with the use of a ferrite, but by age 13 we had also been trained to hunt with a .22-calibre rifle. I would say there are as many ways to cook rabbits as there are all other game recipes combined.

Rabbits and hares Rabbits, along with their larger counterparts, hares, should not be passed up for a tasty meal. Back in the 1930s, during the Depression, rabbit was popular at the dinner table. In the wild, the rabbit is hunted by every predator imaginable, including humans.

Despite their high mortality rate, the rabbit survives. Actually, rabbits breed before they are a year old and mate before their newborns are even a day old. It has been recorded that rabbits may have 4 to 5 litters a year.

Caution about rabbits …

Rabbits are known to carry just about every kind of tick, as well as carrying fleas and lice—so handle with care, and skin as soon as possible. Rabbit should be well cooked.

Sweet-andsour rabbit INGREDIENTS 1 large rabbit (or 2 small ones) (Batter) 1 cup all-purpose flour 2 tsp. baking powder ½ tsp. salt 1 egg 1 cup water (Sauce) ½ cup white vinegar ¾ cup brown sugar ¾ cup ketchup ½ cup cold water ½ cup pickles, chopped 1 tsp. salt ½ tsp. pepper 2 tsp. cornstarch METHOD Parboil rabbit until tender. Remove all bones. Chop up the meat and dip pieces in batter and deep fry.

(Sauce) Mix ingredients for sauce and bring to a boil. Pour over deepfried rabbit.

Standard fried rabbit INGREDIENTS 1 lb. rabbit, cut into sections 1 cup white wine Salt and pepper, to taste 1 Tbsp. flour 8 Tbsp. butter 2 cups milk

Pour wine over meat and marinate 1 hour. Drain and sprinkle with salt and pepper, then dredge in flour. Heat butter in heavy frying pan, browning rabbit quickly on all sides. Reduce heat and simmer for about an hour (no longer).

Place meat in heated, covered dish and drain off all but 1 Tbsp. of butter. Blend in 1 Tbsp. of flour and brown. Add milk. Season with salt and pepper and simmer until mixture thickens. Enjoy.

Roasted rabbit INGREDIENTS 1 large rabbit (or 2 small ones) ½ tsp. pepper 1 cup prepared mustard

Murray Martin shares some old style recipes to cook rabbit 2 white onions, peeled and sliced ½ cup butter, melted 1 bay leaf ¼ tsp. thyme leaves 1 tsp. parsley, minced 2 tsp. salt (Sauce) 1 Tbsp. prepared mustard 1 cup cream ¼ cup prepared mustard METHOD Clean and wash rabbit thoroughly in cold water and dry with a cloth. Rub inside and out with salt and pepper. Place rabbit in buttered baking dish or cast-iron frying pan. Spread with I cup pre-

pared mustard and cover with sliced onions. In a small pan, over low heat, melt butter and add bay leaf, thyme and parsley. Pour mixture over meat. Roast uncovered in a preheated oven at 375℉. for 45 minutes or until meat is a golden colour. Baste often. Place meat on a serving plate and keep warm (discard bay leaf).

Sauce: Stir 1 Tbsp. mustard and 1 cup cream into pan juices. Heat (do not boil). Pour over rabbit.

Check the quality of your canvas when purchasing, keeping an eye out for warping

’d like to share what I know about canvases that are available locally. It is the most important part of your painting.

It’s also known as the “support.”

Even if you are playing around, for fun, you just never know when a piece will turn into your favourite painting. The support

will allow for your image to appear clearly and to hang properly; and, if not already stretched, be easier to frame. During the creation of your piece, you don’t want that surface to be bending and drying with strange fold marks—a distraction to say the least.

These are canvases with some problems with odd fold marks that may affect your painting Living in the Yukon has us dependent on what local suppliers choose to sell. Not all canvases are created equal ... cont’d on. You may have to supply the raw canvas, which is available at Yukon Office Supply and Arts Underground. You can save a little cash by priming it with professional gesso (thin coats to start).

You’ll need about six coats altogether, in both fabric-grain directions.

Three- to fourstar canvases If the last suggestion scared you, you can get prepared canvas, but just watch out. Where is it coming from? If it is from China, give some thought as to what is happening with that wood frame in all of the climate changes in travel alone! Typically, anything from China is cheaply made. When you’re choosing prepared canvas, look at it carefully.

It may be warped (When you lay it on the ground, flat, is one or more corners lifting from the floor?). Having said that, China also has low-, medium- and highgrade canvases that are sometimes nicely made, but that are usually available only in a smaller format (the larger the format, the more warpage!). Check the quality of the canvas—the lighter the weight, the worse it is— paper-thin is not good!

One- to two-star canvases Non-stretched canvas boards are available at the retail locations I mentioned, but not at the framers. These are usually flat and economical; just take extra steps to do more coats of primer. Factory primer seems to be so thin that it has no “teeth” to adhere your paint job to. You’ll notice flecks of white canvas showing through, which are not easy to cover. I use these all the time in lessons and small studies; just look out for bent corners or damaged edges. There are allwood supports, too, which are wonderful, smooth, hard surfaces to paint on and can handle heavier mark making, but just do the floor test to check for warp.

Whatever you do, do not waste your time with stretched canvas that shows bending and folding canvas on the surface, in any form, right on the shelf (especially on the corners). A wellstretched canvas should be as tight as a drum! When you want your project to look good, you don’t need any weird cast shadows in the way!

Trout and salmon

Preparing trout for cookery: It is most important to prepare your trout royally before putting it in the pan. This is important, especially for lake trout, as they have a noticeable amount of fat along the abdomen as well as along the backbone. To get the best quality for the dinner table, remove as much fat as possible. Trim fat from both sides of the lower cavity and vent. Make sure all fat is removed from the backbone by cutting through the skin alongside the dorsal fin and folding it back.

Scrape out the fatty strip over the backbone and then replace the flap of skin. Next, remove the dorsal fin. Slip a filleting knife under the skin and

Salt and pepper, to taste 2 Tbsp. half-and-half (10–12% cream) (Sauce) 1 Tbsp. butter 1 Tbsp. white flour ½ cup half-and-half

When fishing for lake salmon, look for water temperatures from about 53℉ to 55℉., but not above 57℉. These are cool-water fish.

METHOD Clean fillets and pat dry. Melt butter in pan and sauté mushrooms until tender. Add garlic, and salt and pepper to taste. Add 2 Tbsp. of cream and simmer for 3 minutes.

Arrange salmon in buttered baking dish. Spoon mixture over. Cover and bake at 375℉. for about 20 minutes (no longer). When fish flakes with a fork, it is ready.

Sauce Melt 1 Tbsp. butter. Whisk in flour and remaining cream (½ cup). Whisk until smooth and thick. Drain liquid from cooked fish and stir into sauce. Pour over fillets and serve hot.

INGREDIENTS Butter, for broiling 2 salmon steaks, ½-inch thick 2 shallots, chopped 2 slices lemon 2 sprigs parsley Few drops lemon juice 1 tsp. olive oil Salt and pepper, to taste METHOD Preheat oven to 400℉. Place steaks in a small buttered roasting pan. Sprinkle with shallots.

Change oven setting to broil and cook for 7 minutes. Remove and season with remaining ingredients.

Watson Lake baked salmon in mushroom sauce INGREDIENTS 2 lbs. salmon, filleted 1 tsp. butter ½ lb. mushrooms, sliced Garlic, minced

INGREDIENTS 1-½ fresh salmon steaks, ½-inch thick Salt and pepper, to taste ½ cup dry white wine or dry sherry 1 garlic clove, peeled and sliced 2 tsp. vegetable oil 1 lemon, juiced METHOD Place steaks in baking pan.

Sprinkle with salt and pepper.

Combine wine ( or sherry), garlic, oil and lemon. Pour over fish. Bake at 400℉. for 20 minutes or until fish flakes easy with a fork (a must to ensure best taste).

Atlin trout en croustade INGREDIENTS 6 lbs. lake trout, filleted and skinned Water Dry white wine

1 tsp. salt Pepper, to taste (Wild-rice stuffing) 1 Tbsp. butter 3 green onions, chopped 1 cup cooked wild rice 1 cup mushrooms, sliced 2 pie-crust-sized pastries 1 Tbsp. clarified butter 1 lemon, juiced METHOD Place fillets on greased rack in poacher. Add water and wine, in equal parts (just enough to cover fillets). Add salt and pepper. Cover and bring to a boil. Reduce heat to low simmer and poach for 15 minutes or until the fillet flakes easily.

Remove fish and allow to cool.

(Wild-rice stuffing) Melt butter and sauté onions.

Combine with wild rice and mushrooms.

Roll pastry into a thin, oblong shape. Place one fillet on half of the area of the pastry. Sprinkle with salt and pepper and half of the lemon juice. Heap the wildrice stuffing on fillets and spread towards edge. Dab with butter.

Season the other fillets in the same way and lay them, seasoned side down, on the stuffing. Fold pastry over the fillets and pinch edges together to seal them. Place in foil-lined biscuit pan. Bake at 425℉ for approximately one-half hour until pastry is golden brown.

Carefully remove foil and plate fish on a warm platter. To complement the fish, serve with green peas and tossed salad.

Serves 4

Lean fish fillet in sour cream

Seldom does one recipe fit all types of fish, but here is the exception to that rule: INGREDIENTS 2 lbs. fillets Salt and pepper, to taste ½ tsp. curry 2 Tbsp. cooking oil

Salmon cooked just right is a Yukon favourite 2 small potatoes, slightly cooked 2 medium white onions, minced 6 medium tomatoes, sliced (Sauce) 2 Tbsp. lemon juice Pinch of cayenne ¼ tsp. sugar Pinch of thyme 2 cups sour cream METHOD Preheat oven to 300℉. With a damp cloth, wipe fillets and sprinkle sides lightly with salt, pepper and curry. Heat the oil in a large pan and sauté fish until lightly browned. Place in a large pre-heated, oiled baking dish to keep warm.

Put more oil in the pan. Now lightly brown the potatoes and onions and put them around the fillet. Finally, spread the tomatoes over the fillet.

(Sauce) Combine lemon juice, cayenne, sugar and thyme with sour cream. Mix well and pour over fillets. Sprinkle with paprika. Bake in a preheated oven for no more than 25 minutes (test to see that fish flakes easily with a fork).

Add remaining butter to the pan and fry almonds until golden brown, stirring frequently. Spoon almonds over the trout and garnish with lemon slices and parsley.

Broiled Arctic char steaks

INGREDIENTS 2 lbs. char steaks, thawed (Sauce) 1 Tbsp. white onions, chopped 2 Tbsp. lemon juice 1 tsp. salt Dash of pepper ¼ tsp. tarragon ¼ cup butter, melted (Garnish) Paprika and parsley, for garnish

INGREDIENTS 2 pan-sized trout Flour, seasoned with salt and pepper 2 Tbsp. clarified butter 2 Tbsp. slivered almonds 1 lemon, sliced Parsley, chopped

METHOD Place steaks on greased broiler pan.

(Sauce) Sauté onions with lemon juice, salt, pepper and tarragon in melted butter. Baste steaks with half the sauce, then broil fish about 4 inches from the heat until browned. Turn over and baste with remaining sauce. Broil 10 minutes per inch for fresh char. Finally, sprinkle with paprika and garnish with parsley.

METHOD The trout should be cleaned through the gills (remove gills but leave the head on). Dry and roll

hunting, fishing, harvesting, bonding The Yukon Outdoor Woman Program is a weekend to gain skills for sustainable living in the Yukon wilderness long weekend of new experiences.

Everyone is wandering around in the bush, locating their beds for the weekend, checking the schedule of events and training.

At first, like most things, you’re hesitant to talk to people. You’re all strangers, so you feel things out and go with the flow. Nansi Cunningham introduces herself to the group; this vivacious, experienced woman gives us an introduction to the weekend and we disperse to our respective programming.

Day 1 was split, with morning workshops in backpack hunting and GPS/compass training, and with afternoon workshops in hunting and wilderness first aid. My morning was spent with instructor Bernard Briggs, and several women, as we ventured into the bush to talk backpack hunting and overall backpacking and camping in the remote wilderness. Even though I have travelled, backpacked and camped in numerous situations and countries, it was very informative.

I realized that my pack of eight years was incorrectly adjusted for me, and I learned new techniques so I could be more environmentally conscious in the wilderness.

Lunch time was the first of several incredible meals provided by some incredible cooks, which ranged from gourmet moose cacciatore, to delicious ribs, to just amazing food. Don’t plan on losing any weight or bringing any snacks, as this will be the best food you will eat all year.

After lunch, a small group of women were introduced to a hunter-education and outreach officer, Jim Welsh, who was our instructor for the Field to Freezer course, which focused on the process of harvesting meat in the field.

The first step was to drive to a local farm and obtain our meat, a goat raised for harvesting. Jim shot the goat in the head and it fell to the ground, legs still flinging for minutes after. A bucket was placed under its head and one of the girls was instructed on how to slit the throat to get the blood out efficiently.

Jim was adamant in explaining that the goat had given its life to give us sustenance, so we expressed thanks for the goat and took the animal back to the workshop where we were ready to start the harvesting process.

Jim explained the process,

starting with the sternum cut. I was unsure whether it was from my first experience seeing something killed in front of me, or the fact that it was pulling something apart instead of putting it together. I had to sit down and observe for half an hour. I was concerned (and disappointed) that perhaps I didn’t have “the stomach” for this process, so I kept sitting, waiting and hoping that the feeling would pass. After half an hour, I started slowly moving closer and eventually taking the knife and skinning and cutting the goat.

It was an incredible experience—nothing like I thought it actually would be like. And after learning some butchering skills, I immediately wanted to keep going and practice. We packaged and labelled the meat in preparation for taking it home at the end of the weekend.

The persistent rain certainly didn’t dampen the events, as an outdoor camp. We persevered, and as dinner and evening arrived, we all started to get to know each other. Wine certainly helped as a “social lubricant,” and we sat by cont’d on page 15...

Day 2 After a late evening of drinking too much wine and having the midnight sun play tricks on us (as to when it was time to go to bed), it was a struggle to wake up.

But a delicious breakfast, coffee and being in the woods definitely helped.

Awaking from my nap to dinner was great … if only life could be me learning amazing skills, hanging around incredible women and being fed—I would be in heaven.

The evening was lively, with Nansi and my friend Nicole doing an outdoor-women’s fashion show.

One of the cooks came, as they were getting ready, and the group sat around the fire and someone said, “Nansi is truly an incredible lady, and each one of these outfits she has had for many years and has been on many special trips.

“Please give her all the love and support because she truly is a special lady.” We all nodded in agreement, after talking with this woman who has been on many adventures and wants other women to have the skills and motivation to go on adventures. We cheered as they walked up, showing the clothing, some of it decades old and still “going on adventures.”

The evening wound down, while women—from different backgrounds, countries, jobs, home lives and experiences— bonded. The last crackling of the fire was heard before everyone went to bed.

My choice was to do an all-day northern bushcraft survival workshop with born-and-raised Yukoner, Tami Hamilton, and Jim Welsh.

The morning focused on the necessary equipment to take into the backcountry to light a fire.

Surprisingly, it seems most of us would not manage to create a fire unless we had an ignition source such as a lighter. That afternoon we worked on survival shelters, gained valuable skills and heard some incredible experiences from our instructors.

After the day, half the group decided to opt for a nap, before evening, while the other half went for a hike to see a raven’s nest with two younglings.

The afternoon was with Lloyd Lintott, and we learned about bow hunting and archery. We practised our new skills on fake life-size animals (except the fish ... definitely not something to found in the woods) and used muscles we didn’t know we had.

er and, eventually, it was time to leave a weekend in the bush, having made new friends and having learned valuable skills.

Why women only?

I wasn’t too sure, when I arrived, how I would like being in a camp with just women. I am not the “girly” type; I generally tend to hang out with “the lads.” But, as the hours continued on, the form of discussion, support, and learning and teaching styles became apparent. There was nothing macho or competitive. It was an open, supportive environment to have fun in, be silly in and to “not know something” in—without being ridiculed or feeling incompetent. And we were encouraged to keep trying until we “got it.” cont’d on page 16...

Day 3 It was the last day, and time to say goodbye. Half of the group were heading to Jackson Lake to go fly fishing, and the rest were staying in camp. Already everyone was hugging, swapping contact information and saying goodbye.

five minutes up the North Klondike Highway, turn left up to a nondescript building, walk through the creaking door and you may feel like you’ve walked into an episode of Ripley’s Believe It or Not. There are buckets of boiled skulls soaking in oil. Bears posed in a lunging growl. To the left, a moose head stares out blankly at you as you approach. Straight ahead, you find yourself looking into the face of a caribou with one antler removed, leaning against the side of its disembodied head.

And hanging from a coat rack on the far wall, a lone duck, hung sideways, wings spread, trapped in flight.

You’ve just walked into Northfork Taxidermy.

“I hope it doesn’t smell too bad,” said Cindy Klippenstein, the 38-year-old owner/operator of the only full-time, full-service taxidermy shop in the territory. “It usually doesn’t smell at all,” she assures me.

Truth is, it doesn’t smell. At least not as much as a non-taxidermist might expect. The space is clean, if cluttered. The animals look exactly like what one might think a half-finished taxidermy project would look. And it all has the feel of a normal, rural business—just with carcasses, skulls and hides lying about.

Klippenstein is a small-business owner with a degree in fine arts degree, who spends her days fleshing, tanning and mounting hunting trophies as the Yukon’s only fulltime taxidermist.

And she couldn’t be happier.

“It’s a lot of hard grunt work,” she explains, as she moves from one bucket to another, checking on the status of various skulls.

“But I love it more now than I ever have.”

Klippenstein arrived in the Yukon about eight years ago without any real plans about what life held for her, long-term.

Most people know her as either a bartender from a local bar or as the woman who does taxidermy squirrel art.

But about five years ago, she started the journey that led her to Northfork Taxidermy. She took a trip down to Texas and took a taxidermy course.

After she got back, Klippenstein applied at what was then the two taxidermists in town. It took some time and some persistence, but about three years ago, Russ Giesbrecht hired her on to help out at Northfork.

She started out doing the grunt work.

But, over time, Giesbrecht brought her more and more into the fold, helping her learn the craft in anticipation of her taking over the business.

Then, about a year ago, he handed the business over to Klippenstein and she has been running it ever since.

That’s when the detail work starts and the animal starts to take shape.

“We like to leave them as they are,” said Klippenstein, pointing to a moose that was mounted and

lots of people have heard about, but few people know how it actually works.

For Klippenstein, she’s introduced to the animals when an outfitter or hunter pulls up and unloads a batch of animals. They come in various states of dress—frozen and barely touched, to fully gutted and ready for tanning.

She does about 200 animals a year with about half of those coming from local hunters and half coming from outside hunters who were in the Yukon on a guiding expedition.

hides and glass eyes.

Whether it’s for export or to be prepped and mounted for display, the animal goes through several stages.

First, the animal is “fleshed,” where it is basically turned inside out and the head, nose and every other piece is scraped and cleaned of meat, fat and everything else.

Next, the skull is boiled to get the rest of the meat off. Sometimes, if the skull is delicate, she sends the skulls over to a fellow taxidermist’s place to make use of his beetles, which eat the flesh off the skull but leave the incredibly delicate nose bones and other pieces fully intact.

Some taxidermists pretty the animal up and make it look like a perfect specimen. At Northfork, they like the animals to keep their distinctive features and their character.

“These are really personal things,” she explains. “Every animal is different. It’s really personal for my customers, too.”

Most animals that come through Klippenstein’s doors are moose, caribou, sheep or bears. But she also sees wolf, lynx and wolverine.

Throughout the day, it is clear that Klippenstein loves what she does. But the work itself is a long way from people’s romantic notions.

“The busiest day I ever had, two trucks pulled up to the shop one morning, dropped off something like fifty animals and pulled away,” she remembered.

So, she started the methodical task of hauling the carcasses in, tagging and cataloguing them and contacting each hunter, one at a time.

“I remember it being midnight and I almost broke down. There were five more of these things to move and I didn’t know if I could do it.”

But she did.

She found the strength and drive all successful small-business owners seem to have, reached down and hauled the last five into the shop before heading home.

As she starts packing up, closing the doors and preparing to leave, she muses about how long she will want to do this work.

“I guess I could hire someone to help out, but I don’t really want an employee,” she says. “This is what I want to do.”

If she ever does hire someone and finds free time, she talks about expanding her art beyond squirrels.

“Maybe a chicken on roller skates,” she muses with a smile.

“But really, who has the time!”

aptain Chad Clark has always been a fisherman, and it’s clear to see why (with his excitement and passion) as he takes you out on the beautiful waters outside of the Haines Small Boat Harbour. “This is the first time I have made a career out of fishing,” said Clark. “I am originally from Virginia, and we moved up to Haines for the fishing lifestyle.”

Since 2012, Clark has been working in charter fishing and was given the opportunity to purchase a retiring charter company in 2016. “The 2017 season was our first season chartering as Kraken Charters, and we quickly realized that our new business was not driven by the cruise ship industry but by the outdoor enthusiasts of Whitehorse.”

Charters in Haines typically start their season in May, trolling for king salmon. “Last year, Alaska Fish and Game limited the King Salmon Fishery to catch-andrelease only,” said Clark. “We now

offer sightseeing for wildlife, including whales, sea lions, bears, eagles and moose. We also take our spring guests crabbing. Each non-resident is allowed to keep three large male crabs per day.

We use crab rings instead of crab pots, as we can check them after 30 to 45 minutes with success.”

Kraken Charters also offers halibut fishing out of Skagway, if the Haines drive is too far. They harbour in Haines and use the Haines Skagway Fast Ferry (HainesSkagwayFastFerry.com) to bring guests back and forth from Skagway to their charter. It does add the ferry cost to the charter but is an option for Skagway visitors.

“We start targeting halibut in early June,” said Clark. “We have all the necessary gear on the boat, and even kids that have never seen a fishing pole before have reeled up 50-pound halibut.

NOAA [National Oceanic and Atmospheric Administration] does federally regulate the halibut fishery across the state, so we do have restrictions to the number and size of the halibut kept. Each person on the charter is able to keep one halibut measuring less than 38 inches or more than 80 inches.”

Kraken Charters offers two four-hour charters per day, one starting at 8:30 a.m. and the second starting after lunch at 1:30 p.m. “We can fish up to four people on each charter, returning to the harbour with a maximum of four halibut [total],” said Clark.

“If we have a group that would like to private charter the boat, we can take a group with as many as six on the boat, but only catch and retain four halibut.”

Like most things in Haines, the saying is “go big or go home,” whether you hike or ski the steep mountains; or compete by catching the biggest fish. It’s a quaint, epic little town. “At the end of each season, Kraken Charters re-

funds the charter cost to the winner of the current year’s Kraken Award,” said Clark. “Throughout the season we keep a running record of the biggest halibut caught.

“If you reel up this elusive ‘monster of the deep,’ we award you the bragging rights deserved and a refund of your payment as the year’s winner of the Kraken Award.”

Let’s go fishin’!

Northern Pike

On land we have voracious bears that will eat almost anything. In the rivers and lakes, without a doubt, the most voracious fish in North America is the northern pike. Pike are solitary fish that seldom travel with others of their species. They hide behind sunken logs or in weed beds and will eat anything that moves— from water insects to the smaller of their own species.

If you are fishing in waters that have both pike and muskellunge, be mindful of the season and allowable catch. Although these two species are similar, one stand-out feature is the number of scales on the cheeks and gill covers. Northern pike cheeks are fully scaled while “musky” cheeks are only half scaled.

Fishing with a thermometer can increase your chances of catching any fish. Northern pike are found in waters as cool as 50℉. and as warm as 70℉. As for hearing and sight, fish are exceptionally blessed with both.They have what is called “periscope vision.” In short, as a fish looks upwards, on a calm day, its vision will bend and reflect a person fishing on shore or standing in a boat. To cut down on lightrays reflection, wear greyish colours (this also goes for the colour of your rod).

When fishing brook trout, using a fly rod in a stream, stay back as far as possible or even get down on one knee; better still, crouch so the fish can’t pick up your image with their amazing periscope vision.

I spent two years observing and recording what pike eat. The fact is, they will eat anything that swims, flies or crawls—that includes turtles, muskrats, ducks and everything in-between. A little patience is needed to hook these ferocious feeders. Generally, they strike their prey broadside and then expel the water they have taken in, turn the “bait” and swallow it. your live bait, wait a second to feel the second hit. This is when the bait is going down the throat.

Making one good hook set is not the best way to set a hook. Make sure the line is snug, and then make several snaps on the line to set the hook deep into the pike’s skin.

Most fishermen, when purchasing fish hooks (on lures or single hooks), think that the hooks are already sharp. That’s why people lose so many fish. You should always carry a hook-sharpening stone in your tackle box, to cast a true, sharp hook that will easily penetrate bone matter or thickskin.

Atlin pike burger

INGREDIENTS 3 lbs. pike, filleted and coarse ly ground 8–10 unsalted crackers 1 large white onion, minced 2 eggs 1 tsp. salt 1 pinch of each: pepper, thyme, tarragon, dried parsley METHOD Crush the crackers and mince the onion. Add eggs and mix in salt, pepper and remaining spices.

Mix in coarsely ground pike and shape into patties. Add bacon fat and then add lemon to suit your taste buds. Present on hamburger buns and enjoy.

Tagish broiled pike fillets INGREDIENTS 2 lbs. pike, filleted ¼ cup butter, melted 2 Tbsp. lemon juice 2 Tbsp. salt Dash of paprika 1 tsp. chives, chopped 1 tsp. parsley Lemon for garnish, sliced Mint for garnish (optional)

Baste with sauce during broiling. When fillets flake (test with fork), the fish is cooked to optimum taste. Serve on a hot platter garnished with slices of lemon, parsley and (if you wish) mint.

Carcross pike fillets forestiere (of the forest)

INGREDIENTS 1 Tbsp. butter 1 Tbsp. vegetable oil 4 lbs. pike, filleted Salt and pepper, to taste 1 shallot, chopped ¼ lb. brown mushrooms, diced 2 potatoes, cooked and diced 1 lemon, peeled and diced METHOD Heat butter and oil in a large frying pan on medium heat. Place fish, skin down, and cook for 2 minutes. Turn fillets over, season and continue to cook another 2 minutes (according to size). Move fish to hot platter and set aside. Place frying pan on top of stove and add

shallots and vegetables. Season well with salt and pepper and cook 3 to 4 minutes over medium heat.

Stir in diced lemon and cool for 1 minute. Spoon over fillets.

Quebec fried pike

INGREDIENTS Pike fillets, deboned Eggs Milk Cornflakes, finely crumbled Lemon, juiced Pepper, to taste METHOD Debone pike fillets. Drag fillets through an egg and milk mixture. Then roll fillets in cornflakes (crumbled fine) roll fillets in the crumbs to get a good covering.

Season with lemon and pepper. Fry until fish flakes with a fork.

Ontario pike in wine sauce

INGREDIENTS 4 lbs. pike, filleted Salt and pepper, to taste 1 cup flour

3 Tbsp. cooking oil 1 cup peeled tomatoes, diced 1 cup white wine 1 cup white onions, chopped 1 cup mushrooms, sliced and sautéed 2 Tbsp. parsley, chopped METHOD Season fillets with salt and pepper. Roll in flour. Sauté fillets and onions in oil until browned on both sides and they flake with a fork. In a skillet, add tomatoes and wine to onions and cook no more than 5 minutes. Stir in mushrooms and parsley. Heat thoroughly, pour sauce over fillets and sprinkle with parsley.

Remove fish from the heat, keeping it warm in a skillet. Serve immediately.

Know your firearm Birds ‘on the fly’

After taking your hunter safety course, Murray Martin recommends getting to your local shooting range and asking for help to get to know your rifle

T

he first thing you should do after taking a hunter safety course is to go to the nearest shooting range and ask for help in getting to know your rifle. The rifle you choose for hunting is a debate that is never brought to a single conclusion …

So, let’s say you will hunt deer, bison, moose and caribou ... I have shot moose with many calibres but, once again, it’s debatable which rifle you should use. Personally, I chose a 30.06-calibre rifle and use only 180-grain bullets. Sited in at 25 yards and always using 180-grain bullets (the best combination), the bullet crosses the point of aim at 25 yards, considering trajectory, and is one-inch high at 100 yards, two-and-one-half inches at 150 yards, and right on the line of sight at 200 yards. At 200 yards, it will still maintain 20/20 foot pounds energy—and that is killing power. It is the two best matchups in rifle and bullet grain for all-round hunting.

Next is Lisa’s (my wife’s) mod. 70 Winchester 270-calibre rifle (I have killed moose with a 270, with one bullet). The matching grain is the 130-grain (all-round). Your foot pound energy at 200 yards is 1920.

Even at 300 yards, the 270-calibre, using the 130 grain, will have 1550 foot pounds killing power. Of course, there are other calibres, but we are not talking overkill or insufficient

killing power, only all-round killing power.

I strongly believe every hunter should have to qualify, finally, at a shooting range. It’s great to know about trajectory, bullet weights, killing power of bullets … but, in the final analysis, the actual shot (in the right place) is what makes a hunter and not a wanna-be hunter.

I practised for two years, on target ranges, and finally went moose hunting and killed my first moose with a bow and arrow, with the moose travelling just 60 yards after being hit.

This kill is registered in the Pope & Young Records of North America. When I was a conservation officer, back in Ontario, I found far too many deer that had been wounded and wasted.

Of course, hunter safety has improved greatly in their mandatory courses, but in the long run it is the person pulling the trigger at the right time for a positive kill.

Murray Martin serves up some tasty recipes for grouse

One of the best-tasting meats comes from game birds. Stripping the bird of all of its bones should be your first step … and the next step, after cooking, is to enjoy.

Upland wild grouse cacciatore

INGREDIENTS 1 large grouse 3 Tbsp. cooking oil 3 Tbsp. flour ½ cup white onion, chopped 2 cups mushrooms, sliced 2 cloves garlic, minced 1 16-oz. can whole, peeled tomatoes ¾ cup red cooking wine ½ tsp. Italian herbs

METHOD Strip the grouse of all of its bones and cut meat into small sections. Heat oil in a large pot, add grouse and brown on all sides. Remove the grouse and add onions, mushrooms and garlic. Cook until onions are soft. Return the grouse to the pot and add the tomatoes, wine and herbs. Cover and simmer for 30 minutes. Uncover and simmer for 15 minutes more.

Serves 4

‘Memory lane’ grouse with orange stuffing

INGREDIENTS 4 lbs. grouse 1 tsp. salt ½ tsp. ground black pepper 1 orange, juiced 1-½ cups stale bread, crumbled ⅓ cup onions, chopped 2 tsp. orange-flavoured liqueur 1 tsp. brandy ¼ tsp. rosemary

¼ tsp. basil Bacon slices 3 Tbsp. butter, melted METHOD Sprinkle cavities of grouse with salt and pepper. Combine the following in a medium-size mixing bowl: crumbled bread, onions, orange liqueur, brandy, rosemary and basil. Toss and mix well. Spoon stuffing into body of grouse. Tie the legs together with kitchen twine and place grouse on an open rack in a roasting pan. Cover grouse with bacon slices.

Cover with foil and bake at 375℉. for 1 hour. Remove foil and roast for 10 minutes or until bacon is crisp and the meat is tender when pierced with a fork or a sharp knife.

Satisfies 4 hungry upland bird hunters
