[ MESSAGES ]

FROM THE CHAIRMAN

FROM THE CEO

On behalf of the Board of Directors, we welcome you to the spring edition of Focus. Over the past month we were honoured to support our nation's farmers through the ‘Parma for a Farmer’ campaign with the donation of $1 from every Parmigiana and Schnitzel sold across Wests Group Macarthur over the month of August. Our efforts aimed to raise enough money to purchase a full semi-trailer load of hay to support struggling farmers in NSW via the Rural Aid initiative ‘Buy a Bale’. We are delighted to announce our success in reaching our truck load target. Our trailer of hay, worth over $9,500, will be supplying emergency feed for livestock in the worst affected drought stricken areas of Australia to save cattle, sheep and horses. We sincerely thank all who purchased a parma in support of the campaign. Here at Wests Group Macarthur, we are driven by our employee’s performance and commitment and through our rewards program BRAVO, we aim to recognise our helpful staff through a variety of initiatives and on-the-spot rewards. We recently awarded our most prestigious annual award, an overseas study tour, and just last week we farewelled 14 staff, inclusive of Senior Managers, Duty Managers and Floor staff, to Las Vegas Nevada, USA. This is just another reason we are recognised as an employer of choice, and we wish the team a safe and fulfilled trip to America and look forward to hearing their ideas. The ClubsNSW Chef ’s Table Competition was recently held at Ryde Tafe where we entered three teams. We are beyond proud of each team and overjoyed to celebrate with our Country Club Chef ’s, Luke and Guy who were awarded Bronze. The cook-offs had some fierce competition with the duos’ entrée scoring top marks out of all dishes on the day. Our team from Lakeside placed in the top 10 and our team from Wests were recognised for the only apprentice team in the comp – congratulations to all our teams. Sport in our local community is of significant importance to Wests and we were thrilled to hold the Annual Wests Sports Council Awards Dinner in June this year. The Awards Dinner gave an opportunity for local sports stars to be recognised in five key areas including junior, youth, senior, team and sprit, along with the Elite Sportsperson and Elite Sports Team of the year. Congratulations to all nominees and we wish the best of luck to all winners in their chosen sporting fields.

As the warmer weather approaches and the winds have settled, we are pleased to be on track with our development plans at Country Club Gledswood Hills. Welcome to the spring Edition 4 of Focus where you can read about our most recent awards, achievements and exclusive member specials. Our present leading project at Country Club Gledswood Hills is shaping up to be a sensational first-class social facility, fit with modern features, contemporary fixtures and dedicated service. We look forward to our members and guests enjoying the new outdoor terrace with timber panelling, comfortable furniture selections and open-roofed slats, along with an island bar to relish the sunset view over the Camden Valley. A new communal area for the growing number of families in the Camden region will be constructed, coupled with a dedicated toddler section, a soft play facility catering to those aged between 5 and 10 years, as well as an arcade centre. We are enthusiastic to reveal a collection of new dining outlets inclusive of an Italian woodfire pizza oven, American BBQ smokers and burger station, shared alongside our signature Brasserie and Café. We are also very pleased to offer restaurant quality meals at affordable prices for our members and guests. From inside to out, Country Club will expand the carpark to 352 on-grade car spots to accommodate our growing patronage to the best of our ability. Further, we will be also opening an outdoor beer garden with a large LED screen. We encourage members to visit the Country Club where our plans are on display, with hopes to complete construction before Christmas. There are also a number of additional development projects across Wests Group Macarthur in the works, which we hope to be able to share with our members very soon. We pride ourselves on offering our local community with exceptional experiences via our four growing destinations, with one membership journey; ultimately guided by our values of customer focus, teamwork, respect, integrity and progressive movements. Last but not least, in efforts to reward our current and potential members, and afford them the ability to try out our existing and new dining channels, any member who renews or joins by 31 October will go in the running to win one of three $100 dining vouchers every month for 12 months! Members will receive one ticket per year of membership and enjoy the winning vouchers at any dining outlet across the Group each month.

Chef's Table Bronze

WINNERS

This year’s ClubsNSW Chef’s Table Competition saw club chefs from all corners of NSW, cook it out for top spot. Wests Group Macarthur was proud to have three teams as finalists in the race to chop it like it’s hot, with Bronze awarded to our team from Country Club Gledswood Hills. The Chef ’s Table Competition is a ClubsNSW initiative, created to challenge, reward and recognise the many talented chefs, cooks and apprentices employed by NSW clubs. In 2018, the teams were challenged to utilise each of the 'Mystery Box' ingredients to make their entrée, main and dessert, with

[8]

Wests Group Macarthur

each team only having an hour to plan their menu. The Competition was intense, with the teams hoping to show off their skills and creativity in the kitchen. Showcasing their culinary talents in the Mystery Box Challenge were our very own three teams of Chefs including Shane

Pavitt and Emily Andrew [pictured centre] representing Wests League Club, Luke Risby and Guy Billitteri dropping the knife for Country Club Gledswood Hills [pictured far right] and Petah Jensen and Caitee O’Donnell stepping up for Lakeside Golf Club Camden [pictured bottom left].

[ STAFF ]

The Cook-offs were held at Ryde Tafe on Wednesday 4 July where all teams were surprised with the Mystery Box ingredients. The competition was scored by Judge Chairman and experienced Executive Chef, Julio Azzarello, along with Masterchef contestant, Courtney Roulston, Corporate Executive Chef, Adam Moore, and owner and founder of The Red Spoon Company, Nenad Djuric. The scoring was based on menu structure, techniques, creativity, presentation, flavour balance and innovative use of all Mystery Box ingredients with a variety of prizes on offer for the winning teams including domestic trips and tours, educational masterclasses and mentoring programs. When it was thyme to turnip the beet, each team did not disappoint, cooking up a three-course menu using the supplied ingredients. Country Club Chefs Luke Risby and Guy Billitteri blew the judges away with their pork, rhubarb and fennel ravioli with celeriac puree, zucchini flower and sage butter. The Ravioli [pictured, opposite, bottom centre] was the ONLY dish out of 123 that received a perfect score from all three of the tasting judges.

Their score from their entire menu culminated in a Bronze award for the Duo! Luke and Guy have won an Italianinspired series of masterclasses in Wagga Wagga culminating in a hands-on experience with Italian Chef Melina Puntoriero from Manuelina Culinary Italy. The duo will be taken on a culinary journey of Italy, covering the art of ravioli and gnocchi. Members and guests of Country Club Gledswood Hills look forward to more of Luke and Guy’s delicious cuisine, with Italian inspiration drawn from their Masterclass experience. Petah Jensen and Caitee O’Donnell represented Lakeside Golf Club Camden in the Competition and were successfully placed in the top 10, along with Emily Andrew and Shane Pavitt representing Wests League Club who were given a special mention as the only team of Apprentices in the Competition. On behalf of Wests Group Macarthur Directors, Management and Staff, we would like to pass on our Congratulations to all teams involved and are very proud of each Chef's effort, commitment and overall results. Well done.

“We are so proud of Luke and Guy’s results in this competition, however, we are not surprised considering our Members, Guests and Staff get to enjoy the beautiful and creative meals these two Chefs create every day at the Country Club Brassiere”. … Wests Group Macarthur CEO, Tony Mathew

Helping Macarthur's hidden

HOMELESS

This Do Something Day, we partnered with Macarthur Homelessness Steering Committee and One Meal in efforts to support the growing number of hidden homeless in Macarthur, with our Group acting as a drop off point for supplies, donating a further $5,000 and volunteering our time to those in need. Wests Group Macarthur recently partnered with Macarthur Homelessness Steering Committee (MHSC) to support 100 families in the local region suffering from homelessness or living in temporary housing. The campaign encouraged staff, members and guests to donate much needed household items from Wednesday 27 June to the official Do Something Day, Wednesday 25 July. A cheque for an additional $5,000 was also presented to MHSC on the official Do Something Day to go towards those less fortune and in need. The MHSC is a subcommittee of One Door Mental Health in the Macarthur Region and is established as a network of community

services and Government Organisations. It is dedicated to address the vicious cycle of homelessness with the desire to alleviate the plight of homeless people and has become the key objective of the Group. Wests Group Macarthur staff also gave their time and volunteered to assist One Meal in supporting the homeless by serving up hot meals created by our Chefs for 40 people in need in our local community. One Meal is a not-for-profit community organisation that help to feed, clothe and support the homeless and underprivileged in the local region. Homelessness across Macarthur does not always present in the obvious way. There are the hidden homeless including couch surfing,

overcrowding and families living in vehicles for extended periods. When all other avenues have been exhausted the MHSC and One Meal organisations are there to support those who are homeless or at risk of becoming homeless in Macarthur. The campaign was an overwhelming success with donated items collected including blankets, bed linen, warm clothes, living essentials, towels, kitchen essentials such as toasters, utensils, dinner sets, cutlery sets, glassware or even tents, plus a total of 15 hours’ worth of combined volunteering time. All items and time were gratefully received and distributed to families when they are homed from homelessness. Wests Group Macarthur [ 27 ]
