Remembrance at Vancity Theatre Probably the least seen Studio Ghibli masterpiece (at least in North America), Grave of the Fireflies is also one of the most affecting animated films out there.

Roger Ebert described it “as an emotional experience so powerful that it forces a rethinking of animation,” adding, “it belongs on any list of the greatest war films ever made.” Set in Japan during WWII, the film focuses on Seita and his little sister Setsuko. After their mother is killed in an air raid, and with their father serving in the navy, they are forced to fight for survival in the devastated Japanese countryside. Food and shelter are scarce, and even their own relatives are too concerned with their own survival. Eastside Boxing Club fights back after fire

A

s firefighters sprayed foam on the equipment of the Eastside Boxing Club, their focus would not have lingered on the pair of vintage Reebok boxing shoes lying ruined on the floor. But for Anna Farrant, they represent everything the not-for-profit boxing club lost on Nov. 2.

A two-alarm blaze tore through their two-storey building at the corner of Commercial and Pender, Saturday around 5am. No other buildings were damaged and no injuries were reported.

But the space, which they have occupied since April, has been rendered unstable by smoke and water damage.

The Eastside Boxing Club provides affordable athletic programming to youth at risk in the East Side of Vancouver.

Boxing coach David Schuk started the club after Vancouver’s historic Astoria Boxing Club shut down in 2012.

“A lot of people that box seem to have a colourful past and a lot of life experience — it’s relatable for kids. We all work out together, there’s a lot of discipline and a lot of respect. It’s not just going in and punching each other; you learn a lot about integrity and

Nearly 30 kids from the neighbourhood, steered by the Network of Inner City Community Services Society and Urban Native Youth Association, have found their place there. Many actively compete as boxers.

The club recently also launched a women’s-only program in conjunction with newSTART for women dealing with violence and abuse.

The group was able to secure the location above Woodland Smokehouse and Commissary thanks in large part to two very successful Aprons for Gloves fundraisers — fights featuring the stars of Van-

couver’s hospitality scene — which raised $100,000 for rent and equipment.

“We had been gaining so much momentum in the last couple months,” she says, ruefully. “That gym is built from a community coming together.”

Fire investigators are focusing their investigation on the office area of Woodland Smokehouse on the ground floor below the gym.

Woodland Smokehouse was insured. The gym was not, so their equipment is gone.

“We’re in fight season right now. It’s of the utmost importance to us to get back on our feet and provide the programs these kids are relying on.”

Farrant was allowed in on the weekend to look for personal belongings, and that’s when it truly sank it.

“It’s so stupid,” she says, her voice cracking with emotion.

“They’re just this pair of vintage Reebok boxing boots that I’ve had since I started.

They’re the ones that I always wore. I’ve had them resoled three times. And they were like… yeah,” she finishes quietly.

Roundhouse Radio wants to tune into a city’s needs

It’s called the art of conversation and Roundhouse Radio thinks there needs to be more of it in Vancouver.

It’s recently put forward an application to the CRTC for a new independent commercial radio station that would be 80 per cent talk and 20 per cent music. Vancouverites have until November 28 to add their voices of support.

“It’s a place for us to connect, to talk about the food we like, poetry, the weather, each other...,” says operations and program director Shelley Zavitz. “It’s going to be a fresh voice. We want to hear from the left, the right, the middle. That’s how we learn about one another.”

She thinks CBC Radio does a fantastic job of giving voice to issues in Vancouver, but the station also includes national and international news.

Roundhouse Radio — which has nothing to do with the Roundhouse Community Centre except for the concept of a place where lines converge — would focus solely on Vancouver. “Where we view ourselves as different is we are going to be talking about all the things that feel and taste important to us [as Vancouver residents].”

When the idea for a new station was first bandied about, the original concept was “Pride FM style.” But then the Vancouver Foundation released a study that explored Vancouverites’ sense of isolation. People wanted to feel more connected with their fellow residents but didn’t know how or where they could make the links. “We thought, ‘Maybe we need a radio station that speaks to

that,’” Zavitz says.

Everyone they talked to as part of their research into a business plan echoed this sentiment.

Roundhouse Radio might be the first applicant to quote Seth Godin in its bid. “In We Are All Weird, Seth Godin argues that ‘many factors are pushing us to get ever less normal, at least when it comes to cultural choices and what we buy, what we do and who we do it with. The bell curve that for so long defined mass is melting, with the outliers gaining in number, credibility and impact.... When you give people a choice, they will take it.”

Zavitz doesn’t want to say too much at this point about who’s behind the bid. The application says “the members of our group are proud British Columbians committed to making a difference to local broadcasting in one of Canada’s most diverse markets.... Our ownership group and management team consist of Canadian entrepreneurs from media, entertainment, law, business and finance... [with] a history of community service, social involvement and public engagement.

BELLA GELATERIA: GOLD — BEST GELATO

J

ames Coleridge has climbed to the peak of some of the world’s tallest mountains, defying death in an oxygen-starved, hostile environment.

He has helped a brother who is blind see the world in a whole new way.

He makes sure that each of the 86,400 seconds we have in a day is filled with as much vibrancy as he can muster rather than watch life pass him by day by day.

He values each breath, each view, each moment he has been given.

It’s in all of us to do the same, he says.

It’s not quite the conversation one expects to have at Bella Gelateria, Coleridge’s thriving gelato business at the corner of Cordova and Burrard. But it’s the message our threetime Best in the City gelato winner most wants to share.

“Dare yourself to fail. Don’t be comfortable with normal. Have a quest to be great. Dare to dream big dreams,” he says, trying to turn the interviewer’s questions away from his success and more towards the potential that each and every one of us has to reach such heights.

This is the gospel according to the Father of Gelato Pioneers and he’s using Bella Gelateria to spread the word with each divine mouthful.

“I’m the messenger,” he says. “The message was

crafted a long time ago. It’s about protecting the integrity of Italy’s gift to the world.”

The interview took place on October 31. “Three years, 10 months and five days ago, I clicked an online button for a gelato school in Italy,” he says.

His approach to his new venture was a lot like his approach to mountain climbing.

(If you go to the Royal Canadian Geographic Society’s webpage, that’s him waving a Canadian flag atop our highest mountain.)

“When you climb a mountain, you plan, you prepare, you map out your route, you gather a team,” he says of why he decided to study at the Gelato University in Italy — yes, there is such a place — rather than just buy some equipment and start making gelato. “Business is like that.

I was very well prepared for this industry.”

Part of it is his naturally competitive spirit. He’s lucky to have the physical ability and natural energy that allow him to push his limits but it’s the mental challenge of figuring out how to become the best that he thrives on.

He started life on a Canadian Armed Forces base in Germany. He has two older brothers, with a sixyear gap, and then there’s another brother who’s

That brother was born blind so young James became his “seeing eye dog.” They did everything together as their Air Force father made the world their home. Everything except help his mother in the kitchen, which was James’ domain alone. “Love is a really good word in our family,” he says of his upbringing and how it molded him.

Growing up he ate a lot of bad ice cream, he says. But he believes that bad is a force for good: “The only way we understand good is when we try bad.”

Likewise, “there is a place for cheap in this world,” he says. It’s just not at Bella Gelateria.

He doubts he could have had the from-day-one success in any city other than Vancouver. “It’s one of the most culinary capitals of the world,” he says.

“We embrace our multiculturalism and diversity. Our influences come from around the world. Being an Italian gelato champion in Canada, it’s about this city, not me.”

On any given summer day, Bella Gelateria will serve up to 3,000 people, making it the second busiest gelato store in the world. Coleridge used to worry when the line-up would snake all the way to the convention centre; now, when customers’ patience is rewarded with each addictive mouthful, he takes their silent contemplation of the rich, creamy

confluence of flavours as a benediction.

(It’s hard not to use religious terminology when referring to his gelato.)

This single location can go through 500 litres of milk a day. (His favourite supplier is Avalon.) Only in Vancouver would people support someone who spends $35 a kilo on 99 per cent chocolate and searches out the sweetest, ripest fruit only when it’s in season.

“It’s about a relationship with a city that understands food,” he says.

Given how he sticks to his principles of only the best, freshest products and using traditional methods to make gelato, he sees himself as “a custodian of an old-world product, protecting it in an industrialized world of faster, cheaper.”

Do not underestimate how much attention Vancouver’s gelato scene is getting, he says. Not only is there his success — he’s attained maestro gelatiere status, won top awards at the Firenze Gelato Festival and is the only person in the world who has the Father title bestowed upon him — but with 35 gelato stores in the Lower Mainland, we’re known as a place that takes gelato seriously.

“I have a big quest in front of me and I’ve just started,” he says, hinting at some important announcements to come next spring.

Asked about his next goal, he says, “I will be at this for a while. I have a whole world to dominate.”

t’s not just home chefs who have learned to trust Armando Bacani as their go-to person for some of the finest cuts of meats. Restaurateurs such as David Hawksworth and Harry Kambolis have been known to drop by Armando’s Finest Quality Meats to see what he’s got stocking his counter and fridge.

Many of Armando’s customers are devoted to the Granville Island butcher. Not only can you rely on his beef, lamb, pork and poultry to make your dinner sing, but, better yet, he is a font of knowledge when it comes to how to cook it. How hot should the oven be? How long should it cook? Spicing suggestions? Follow his advice and you could fool yourself into thinking you’d just eaten at Hawksworth or RainCity Grill.

“I’m not a professional cook but I try to understand as much as I can,” he says about his constant quest to know what’s cooking in the culinary world. “We don’t stop at cutting meat. I have a lot of friends in the industry and we exchange ideas and try to stay current with what’s happening in the restaurant business.”

Since opening his store 30 years ago this past September — he started at Denman and Comox in 1983 before becoming a fixture at the market — Bacani has sourced

out some of the region’s best suppliers, knowing who’s got the best of the prime grades and certified organic choices. He also knows his market — people who are planning that special dinner that calls for a special cut of meat; people who drop by on their way home from work, looking to him for instant inspiration; and people who care about where their food comes from.

Most customers are people who love to cook but they also appreciate the work that he puts into the cuts beforehand to ensure they have to do as little as possible to prepare.

Born in the Philippines, he’s the third generation in his family to work in the meat business and many of the people who have worked with him also measure their experience by the decade.

His son Allan works alongside him and as much as Bacani is leaving the decision whether to take over the store to Allan, he loves the thought of the next generation carrying the traditions forward into the future.

nyone who dreams in donuts deserves a storefront to call their own, but it’s a testament that Cartems Donuterie earned top spot in this year’s voting before they had even moved in.

Returning their business incubator at Carrall and Hastings to leaseholder Sean Heather, and packing up their commissary at Woodland Smokehouse, coowners Jordan Cash, Rajesh “Rags” Narine and Craig Terry have now taken over 2,800-sq.ft. of patisserie heaven at 534 W. Pender, which opened on Oct. 24.

“We’re excited to challenge taste buds and see what people are willing to put into their mouths,” says Narine — the perpetually cheery head chef — of the future of fine donuts.

“Finding a location was difficult, and making it what we wanted with time and budget constraints was a little stressful, but we persevered and are really happy!”

And a beauty space it is: the return of their Canadian Whiskey Bacon (and 19 other sweet, savoury and vegan donuts made from locally sourced ingredients) is heralded by an eye-catching triangular marquee, and adroitly presented in a 24-seat, bricklined communal space.

Add to this the wafting aroma of Matchstick Coffee and (very soon) milk on tap, and you can practically see satisfied smiles popping up in red and white thought bubbles all the way down the street.

I

n a country where food is at the heart of its culture and economy, Alsace is France’s culinary epicentre. It is said there are more Michelin-starred restaurants in this easternmost region than anywhere else in the country.

At the top of the list (at least alphabetically) is Au Crocodile, a fabled restaurant in Strasbourg named after a stuffed crocodile that a local general brought home as a souvenir from Napoleon’s campaign in Egypt.

Michel Jacob grew up in Strasbourg and at 14 started his training there as a chef. One day, the entire brigade was taken for a meal at Au Crocodile. It was a revelation. Young Michel had never tasted anything as good as that meal and he never forgot it, nor the words of advice from its culinary mastermind, Emile Jung.

After travelling through Europe and Britain as a chef, it was in homage to Au Crocodile that 30 years ago next week, Jacob named his new Vancouver restaurant Le Crocodile.

All these years later, it’s as if everything Jacob valued about classic French cuisine has been preserved. It’s here that you’ll find foie gras, lobster and truffles as unabashed standards, given stellar treatment on their own or as co-stars of another dish. Cream? C’est naturel. And sauces? Their richness comes from stock that is reduced down to its foundations of flavour.

For years, diners have chosen Le Crocodile as their favourite French restaurant. The key, Jacob says, is consistency. If you loved the leg of lamb that you had last night, “I guarantee that when you come back in six months you’ll say, ‘Wow, it’s as good as I remember.’”

And while Jacob’s cuisine has been nourished with the influences that come from living on the West Coast, you won’t find him following any trends or trying to be the most talked about restaurant in Vancouver. “You don’t want to be ‘in’ because when you’re ‘in,’ you’re ‘out’,” he says. Far

better for him to be a place where he’s now serving the grandchildren of some of his original guests.

French cuisine can be its own worst enemy. People might think it’s chi chi or be intimidated by the weight of traditions. In the old days, waiters were known to tell patrons that Chef knew best and the only way he was going to serve his meat was rare.

French cuisine also comes with high expectations, even when we’re not sure what those expectations are. (For those who expect frog legs to be on the menu, Le Crocodile doesn’t disappoint.)

For many years, French cuisine fell out of favour and there were few French restaurants in Vancouver.

Today, thanks in part to the influence of Asian diners, who have their own high standards of cuisine, French food is enjoying a revival with restaurants such as Les Faux Bourgeois, Café Regalade and Salade de Fruits packing in the crowds.

“Twenty years ago, Montreal and Toronto were way ahead of us,” Jacob says of the Canadian food scene.

“Now, Vancouver is number one.”

As Le Crocodile celebrates its 30th anniversary, Jacob is still looking ahead, with no immediate plans for retirement. “It’s my passion and my life,” he says. “What else do you want me to do?”

I

t’s not just customers who are loyal to White Spot. The staff love being there as much as the diners.

“My brother and I started here as summer jobs and it lasted forever,” says Frank Mandarino, the general manager of the popular West Georgia location. He’s celebrated 34 years with the company; his brother has been with them for 35 years.

In fact, White Spot has the longest-tenure employees of any chain restaurant in Vancouver, he says.

“The Toigos are a great family to work for,” he says of the people who own the BC-based restaurant chain (as well as the Vancouver Giants.)

Knowing the staff and having them know you is an important part of what makes people return to White Spot again and again. People don’t eat at home as often as they used to, but they still like to feel like family when they sit down for a meal.

Many customers don’t even need to crack open a menu — they already have their favourites. Of course, chief among them is the burger with its Triple O sauce.

“The taste has been around since 1928,” Mandarino says, laughing when he remembers how they once tried to add lettuce and tomato to what’s traditionally served with only the Triple O sauce and a dill pickle on the bun.

Customers quickly let him know — “You just don’t touch the burger!”

He encourages people to explore the other favourites on the menu, including the highly popular quinoa bowls and, his favourite, Tuscan chicken pasta. “I just had the cheese-stuffed ravioli,” he says. “It’s fantastic.”

rowing up on the Sunshine Coast, Dylan McCulloch’s and Ryan Johnson’s childhood memories included family outings to watch the arrival of spawning salmon.

When they wanted crab for dinner, they simply went out in their boats and pulled up their traps.

Over time, however, they noticed changes in our ocean’s fisheries, changes they didn’t like.

And when they decided to quit their day jobs in construction and open a business together, they wanted to be a force of positive change.

The Daily Catch Seafood Company was the first in Vancouver to be 100 per cent Ocean Wise.

That means every fish they sell has to be caught in an ethical way (all their salmon is hook-and-line caught), not in danger and resilient to over fishing.

“We have a very close relationship with our suppliers,” says McCulloch who, with Johnson, makes daily trips to the Port of Vancouver to choose that day’s selection. “We know when each fish was caught and where it was caught and how it was caught.”

They decided to open their store on Commercial Drive because they knew people in the neighbourhood shared the same values. McCulloch says their research showed that the Drive had the highest percentage of vegetarians and since many vegetarians still eat fish, they’d have a captive market.

There’s more to be done to protect our fisheries, McCulloch says. More than 80 per cent of the catch is sent overseas, and the millions of dollars spent on supplying the world’s demand for fish means that not everyone shares their commitment to sustainability. Fish by fish, choice by choice, they’re hoping to be part of a changing ethos.

“Supporting each other is a big part of the whole community which we gladly take part in,” he says of his love of being on the Drive.

Modeled after La Bodeguita Del Medio in Havana, the restaurant is a trip to the Crocodile Isle complete with the best in-flight meals imaginable, yet it’s not known for actually attracting too many turistas.

He named it Margherita, and chose green basil leaves, white mozzarella and red tomatoes to symbolize the colours of the Italian flag.

Willoughby Town Centre already thriving in Langley

Willoughby Town Centre celebrated its grand opening on Sept. 21, but the neighbourhood has been extremely popular with Langley residents for much longer than that.

operating, while other businesses will soon open up shop.

“This is very much a growing community,” says Hugh Carter, vice-president of community and commercial development for Qualico, one of the driving forces behind Willoughby Town Centre. “There are not only major tenants, but also a good collection of independents as well.”

Eventually there will be a variety of shops and services available, including a building devoted mainly to medical and dental offices, as well as a pharmacy, yoga studio and a variety of boutiques.

Willoughby Town Centre will also include a residential

component. The first phase is Kensington, a 65-unit apartment building. Other projects are planned for the future.

Willoughby Town Centre joins South Surrey’s Morgan Crossing and West Vancouver’s Park Royal as “lifestyle centres” with residential and commercial space.

“We believe in these walkable communities,” Carter says.

“There’s a broader appeal here that I think is unique in the marketplace.”

“The whole idea is to be pedestrian-friendly,” says Diane Zarola, sales and marketing manager for Qualico. “We want it to be a gathering place.”

John Johnson, owner of Town Centre Liquor, is very happy with his decision to open up shop in Willoughby Town Centre.

“It’s a real country setting with a downtown flavour,” he says, adding that he’s happy that the store can be in the neighbourhood from the beginning.

“This area is growing so quickly. It’s really quite amazing.”

Balanced conditions continue in Greater Vancouver housing market

H

ome buyer and seller activity continues to mirror historical averages in the Greater Vancouver housing market. These trends have helped keep the region in a balanced state for the last nine months.

The Real Estate Board of Greater Vancouver reports that residential property sales in Greater Vancouver reached 2,661 on the Multiple Listing Service® (MLS®) in October 2013. This is a 37.8 per cent increase compared to the 1,931 sales recorded in October 2012, and a 7.2 per cent increase from the 2,483 sales recorded in September 2013.

New listings for attached, detached and apartment properties in Greater Vancouver totaled 4,315 in October 2013.

This represents a 0.2 per cent decline from the 4,323 new listings reported in October 2012, and a decrease of 14.2 per cent compared to the 5,030 new listings this past September.

Last month’s sales were 2.8 per cent above the 10-year sales average for the month, while new listings for the

month were 1.9 per cent below the 10-year average.

“We continue to see fairly typical activity when it comes to monthly home sale and listing totals,” REBGV president Sandra Wyant said. “Today’s activity is helping to keep us in balanced market territory, which means that prices tend to experience minimal fluctuation.”

The total number of properties currently listed for sale on the MLS® in Greater Vancouver is 15,257, a decline of 12.2 per cent compared to this time last year, and a decline of 5.3 per cent compared to September 2013.

The sales-to-active-listings ratio is currently at 17.4 per cent in Greater Vancouver.

The MLS® Home Price Index composite benchmark price for all residential properties in Greater Vancouver is $600,700. This represents a 0.5 per cent decline compared to this time last year.

Sales of detached properties reached 1,067 in October

2013, an increase of 35.1 per cent from the 790 detached sales recorded in October 2012 and a 9.5 per cent increase from the 974 units sold in October 2011. The benchmark price for detached properties decreased 0.5 per cent from October 2012 to $922,600.

Sales of apartment properties reached 1,098 in October 2013, an increase of 36.7 per cent compared to the 803 apartment sales recorded in October 2012, and an increase of 14.6 per cent compared to the 958 sales in October 2011.

The benchmark price of an apartment property decreased 0.9 per cent from October 2012 to $365,600.

Attached property sales totaled 496, an increase of 46.7 per cent compared to the 338 attached property sales recorded in 2012 and a 29.8 per cent increase compared to the 382 attached property sales recorded in October 2011.

The benchmark price of an attached property is $458,000, which is virtually unchanged from October 2012.

A lulu of a story I live up in the mountains in Merritt and I have a quick comment in regards to the Lulu’s wall paintings. (WE Vancouver, Oct. 24.) Because Merritt was trying to become Canada’s country capitol for music, we had a very well known artist spray murals all over our town on certain buildings. It was great; we all loved it. However (!!!), I’m sorry to say that there are still bad people with paint cans who just spray to be heard and they don’t care what it is they spray on. We had some of our murals painted over by some tool with a spray can, so just because the Lulus are upclass folks (I hate those words) they shouldn’t think for one second that someone won’t come and spray over anything they put on that wall. Let’s not have another memorial bridge To the SUV driver who angrily honked at the other driver who had stopped at a marked crosswalk on the Granville Bridge to let a pedestrian cross, think before you let the rest of the world know that you are inconvenienced by their presence. As a person who walks across the bridge often, I’m dismayed by the number of drivers who totally disregard the safety of others, especially those who are working on the bridge’s seismic upgrades and are exposed to the stupidity of others on a constant basis.

nce again, readers have had their say in our Best of the City issue, choosing their favourite

BC wineries. The best part is how, through a three-way tie for third place, you’ve managed to turn the top three into a top five, offering a wider variety of recommendations! Here’s my take on your favourites:

Burrowing Owl Vineyards It seems like it was just yesterday that Burrowing Owl came

storming out of the gates as the hot new winery that raised the bar for the Okanagan Valley’s potential to make big, bold fruit-forward wines that managed to be powerful, yet full of finesse and approachable while featuring layers of complexity.

Their Chardonnay is a perennial example of a lovely waltz shared by lively fruit and well-integrated French oak, while their Syrah and Cabernet Franc have become two of BC’s most iconic reds.

About a decade ago when the majority of local wineries were slapping on obnoxious scaffoldings of oak and pushing the limits of later harvests in order to make big, behemoth wine styles, Heidi Noble and Michael Dinn came at BC wine from the other direction. Fresh and lively whites were their hallmark, embracing the generous acidity and minerality our region lends in spades, and allowing their fruit to sing its own song. Bright and cheery, their ‘Noble Blend’ of Gewurztraminer, Riesling, Pinot Blanc and the like, is tailor-made for our abundant West Cost seafood, while their Rosé, composed from Pinot Noir and Gamay, has been instrumental in (rightly) bringing more food-friendly pink wines to Vancouverites’ tables.

This is the fun side of Okanagan viniculture featuring juicy, expressive wines that are easily quaffable and will have you liberally topping up your glass. Their ‘Hatfield’s Fuse’ is a jamboree of grape varieties from Sauvignon Blanc to Viognier and Riesling, bringing orchards of fruit and sunshine to your table, where their ‘Big Bang Theory’ is the red wine cousin that juggles Merlot, Malbec, Syrah and more. Always a delight.

Mission Hill Family Estate Winery No Best of BC list could be complete without a nod to Mission Hill Family Estate Winery, Anthony von Mandl’s iconic ode to the Okanagan Valley’s potential. While their bell tower rings atop their elegant, sprawling estate, out of earshot are a handful of their vineyards, some of the best in the Valley found everywhere from Naramata to Osoyoos, taking advantage of our many micro-climates. Everything from their pristine Martin’s Lane Riesling to the ultraluxury-level ‘Oculus’ red blend are standouts.

Right in the heart and a little up the hill on the infamous Naramata Bench is Ross Hackworth’s Nichol Vineyard, home to the first Syrah vines in Canada, a peach and grapefruit-laden Pinot Gris that has a lovely, rosey hue, and (my personal favourite) a light and quirky blend dubbed ‘9-Mile Red.’ The wine is a combo of Pinot Noir and St. Laurent, itself a member of the Pinot family and highly aromatic. Grab a bottle, give it a little bit of a chill and enjoy its Italian plum, Kalamata olives, fresh herbs and a handful of minerals.

ne day last week, there were 7,765 different items in the Legacy Liquor Store. Not 7,765 bottles; there were 7,765 types of beer, wine and spirits available to anyone who walked through the store’s Olympic Village doors. That included 1,200 choices of beer, 250 choices of single malt and 280 choices of vodka (including bacon-flavoured.)

“I don’t think [demand for such variety] will be a niche market for very much longer,” says Darryl Lamb, Legacy’s encyclopedic product specialist.

“It will be the culture.”

As someone who has travelled to every province in Canada and journeyed around the world, Lamb says there’s something very special going on here.

“We have the best developed palate in the country,” he says of fellow Vancouverites.

In the chicken-and-egg debate on whether demand from consumers or supply through private outlets such as Legacy is causing this quiet revolution, Lamb throws a generational influence into the mix.

“There’s a big depreciation in Boomer brands,” he says, referring to the same top sellers which lined liquor store shelves for decades. “Millennials and Gen Xers don’t want to do what their parents did. We’re building a culture.

People are spending more, drinking less and enjoying it more. It’s a movement; it isn’t a fad.”

The more demand there is for such things as artisanal vodkas, the more smallbatch brands become viable. The more brands there are, the more we want to experiment and explore.

There have been other influences, of course, especially in a city like Vancouver.

When people move here from other countries, they don’t want to leave behind their favourite drinks. Legacy staff will research immigration trends and also respond to requests to import specific brands. For instance, Legacy now stocks Riga Black Balzams Liqueur. “There might only be a few hundred people here who know what it is, but we’ll give them access to it.”

The world is also a much smaller place

now that we’re all travelling more and being as adventurous in our food explorations. Back at home, we want to keep experiencing those discoveries.

But it’s not just Vancouverites who want access to a world of drinking opportunities.

A big part of Legacy’s business is online purchases which are mailed across the province. “There might be one only person in Hope who loves grappa but they can now get it,” Lamb says.

As for his travels, he’s always dismayed when he returns to his home province of Ontario and finds nothing much has changed in its government-controlled wine and liquor world. “It’s like going back in time,” he says. “Those poor, poor bastards.

s part of the Distinguished Restaurants of North America (DiRONA) conference at the Wall Centre recently, David Hawksworth spoke as part of a panel tackling “The Future of Fine Dining.”

Until recently, the term fine dining connoted a bit of stuffiness: you always felt you had to be on your best behaviour if you were to be allowed back. But places like Hawksworth Restaurant are redefining just what it means to have a taste of the best.

“No one wants to open a ‘fine dining’ restaurant any more,” he said.

“We try to have it more relaxed but if you want a ‘88 Lafite or $9 glass of Shiraz, you can.”

But chefs also know they have a more knowledgeable, well-travelled diner seated at their table. “You can’t get away with anything because someone will know.”

And that someone, it appears, is our readers. They know what it takes to create Vancouver’s best restaurant and they believe that Hawksworth is it.

your own person.” He loved them just the same but was willing to discover what they’d become on their own.

He wasn’t expecting Dang to recreate a dinner at Coi 1,500 kilometres down the coast (and chosen by Michelin as one of the 100 top restaurants in the world.) He noted that he would have cooked each dish differently — he’s known for using far more citrus and vinegar than most chefs would be confident with — but enjoyed them for what they had to say for themselves.

The one dish that caught him by surprise was the carrots roasted in coffee beans (page 70 of the cookbook.) At Coi they would have served it before the

main course. Dang cut back on the salt, brought out the carrots’ sweetness and served it as the penultimate course, the one after the aged Yarrow Meadows Duck (page 188) and before the Beehive pastry (page 266.) Restaurant and wine director Knowlton Owen surprised Patterson even more with his pairing of Chateau d’Armajan Sauterne.

“It reminds me to always be open to possibilities,” a delighted Patterson said.

“For this point in the meal it was perfect and went incredibly with the wine.”

hen you’re a chef who sends his recipes out into the world in the form of a cookbook, you want to know you’ve done all you can to make sure they can thrive without you. You nourish them, giving them everything they need to be independent. No longer must it be your hand on the whisk.

At a Monday night dinner at West, Michelin-starred chef Daniel Patterson sat beside Barbara-Jo McIntosh, the Vancouver bookstore owner to whom he’d entrusted his new cookbook, Coi. Named after his San Francisco restaurant, it not only provides chefs a guide with which to make his famed offerings, but also his thoughts and philosophies.

As Patterson relaxed amid the animated bustle of the South Granville restaurant, West’s chef Quang Dang and his team prepared a 10-course dinner based on the book. Dang wasn’t trying to replicate the meal; he, like others who will use the cookbook as a map to explore new tastes, was more of an interpreter.

As each dish was placed before him, Patterson recognized his offspring but more in the way that, after a long absence, you say “My, how you’ve become

ow! How exciting! Thank you so much, WE Vancouver readers, for voting me as Best Food Blogger in the city. What an honour.

I am overwhelmed with the city’s support. Congratulations to my fellow winners and everyone else featured in WE’s Best of the City food edition.

I am grateful for the award but I was a bit apprehensive since I have expressed my difficulties with the word “best”.

I also don’t feel like “the best” because I still have so much more to learn and try.

Whether it is developing my writing, palate or culinary education, I have a lifetime of work to do. The “best part” is that I’ll never know it all, so thank you for challenging me.

This is our journey, and a delicious one at that.

How lucky we are to live in a city where eating locally is as exciting as dining internationally. With so many talented chefs from different backgrounds, responsible growers, farmers and artisans, there is little to complain about, yet we still do. Caviar problems.

As much as I am honest about my experiences, the chefs have taught me so much and I thank all of them for sharing their craft. Without them I wouldn’t have work.

It’s funny how the “food blogger” category didn’t even exist two years ago. With the explosion of food bloggers and social media in the last five years, it was only about time.

Credit to WE for recognizing and respecting it.

“foodie” and there are hundreds of food blogs, but food blogging is still rather new. It is often given a bad reputation and it is hard to get respect as a food blogger. Since anyone can start a food blog and there are no official rules to guide it or censor it, it is important people read with a critical eye.

Deciphering the personalities and sources is important.

Know who you are reading and the source of their information; always do further research for validation. Human error exists in every industry, and in food writing, on and offline.

What you value and your personal interest play a big part. If you don’t like something, be proactive, start a discussion, question it, or simply don’t read it.

I started food blogging four and a half years ago purely out of passion. (The word “passion” is so overused but I can’t find a replacement.) I didn’t do it because food was getting “popular”; I have always taken a keen interest in food and culture. I had no other motivation than to learn about food and share my experiences.

Since writing for WE as its food columnist, not much has changed. There is a learning curve but honesty has always been my philosophy. I still want to have fun with it, but I do take my blog and column very seriously. I put a lot of heart into it and it is a labour of love.

Sometimes I spend 20 hours straight writing on one restaurant. I want to give the chef’s work and dish justice. I don’t expect people to read most of my work — well, not word for word at least because they are pretty long and heavy — but the fact that they even visit my site is appreciated.

As much as I write for myself, I don’t want to let readers down, but it can be tricky.

Quite often the articles that take the most effort get the least traffic, whereas a “best of” list or “top 10” piece will go viral. I try to avoid doing those, or if I do, I put them into context because I like reason and substance.

News and recommendations have their place, but I’d rather drive the food scene with culinary education and curiosity more than with competition and lists. All of it has importance but I love the topics stimulating long-term discussion rather than shortterm hype.

Many people read for entertainment or leisure, so heavy topics or foreign food posts don’t get as much attention.

People tend to like things they know or can relate to, and I can respect that, but it is challenging to find a balance.

In a sense, I feel like a chef.

Cooking what you want to cook versus what people want to eat is comparable to writing what you want to write versus what people want to read.

There is a bit of give and take, but I would never sacrifice ethics or values for a high traffic piece.

This special WE edition celebrates the “Best of the City” which is always political.

There are many people who didn’t make it on the list and, not to take away from the people who did, it’s hard to recognize all the culinary talent in 52 pages.

There is always pressure being #1, and I don’t want to compete with anyone, but I want to be better than my last article. That is my commitment and responsibility.

Besides trying all the places that made it on the lists, I also recommend trying places that could possibly beat them.

Make those on the list work even harder to stay on it and, in return, I’m sure they’ll work

hard to prove why they’re on it. Vancouver deserves nothing but “the best”, so let’s give it to them!

Market by JeanGeorges at the Shangri-La Hotel has gone through a few culinary incarnations since it first opened in 2009, but the newest (and youngest) chef to take over so far just might be the best. Chef de duisine Montgomery Lau was the former executive sous chef, so he has a good understanding of the JG menu philosophy, but is working on his own unique flavours and twists, such as the sweet potato macarons pictured here.

This is being served as an amuse during the fall months, and is a good indicator of Lau’s gastronomic leanings. The sweet potato filling is both salty and sweet, with light cinnamon and nutmeg notes, plated over crushed hazelnuts that were also salty-sweet. The “twig” is crispy, dehydrated yam skin that has been rolled up to create a twist on a traditional pretzel stick. Other items to try include the pan-seared sea bream with corn, chanterelles and silky carrot, and the spiced rum toast for dessert, with raisins and brown butter ice cream.

hen Steve Edwards phoned Lauren Mote to ask her for suggestions about who could shake things up at the Uva Wine Bar, he thought he’d be tapping into her vast knowledge about the cocktail scene, both here and across North America.

He was delightfully shocked when she said she’d be interested in the job.

After establishing herself as one of Vancouver’s top mixologists, Mote’s career had veered towards establishing Bittered Sling Bitters with her partner, chef Jonathan Chovanek. But as she travelled from event to event as a supplier, presenter and competition judge, she and her fans realized the same thing: they missed having someplace to enjoy her cocktail creations.

Last Friday, Uva unveiled two new themes: Uva by Night, with Mote’s new cocktail list, and Uva by Day, with a new lunch-time menu and tasting options. With Uva’s already vast alcohol list, and Mote’s palate, the possibilities are, quite literally, endless.

Next door at Cibo, part of the Italian corner at Seymour and Smithe, Edwards has been making some changes of his own. He’s added a grappa bar to entice people to explore what he calls “the best after dinner drink.”

“It makes me feel lighter,” he says of the grapebased pomace brandy. It is indeed a digestif, something that aids in the digestion, hence being able to enjoy a full meal and walk home feeling nourished but not heavy. The restaurant also has a lighter look with several cosmetic changes.

Blue is the warmest colour Discover why December is the best time to visit Iceland

inter is hardly the time that Vancouverites start fantasizing about darker and colder climes, but last year, with a week’s worth of vacation days remaining on the books, I found myself playing the 20 Travel Questions game.

And the one question I couldn’t seem to satisfactorily answer was, ‘What is Iceland like in December?’

Surprisingly, however, booking the impromptu trip would be the easy part. It was telling family and friends my plans that would prove unexpectedly contentious, with people having more opinions about the sanity of going to Iceland than they do about names for newborns.

I soldiered on, the scant literature confirming that the lead up to Christmas is when most Icelanders feel tourists should visit. But am I — a girl who has a space heater going even in the summer — the tourist they picture blustering about on the wintery tundra in the dark?

There was only one way to find out. I managed to convince my boyfriend and father to come with me, and we returned home not with reasons why doubting snowbirds should go, but with reasons why we would rush back: Firstly, if you don’t believe the radio ads, believe me. You can fly to Iceland for around the cost of a trip to Calgary. Think about it…. In seven hours you can find yourself straddling (or snorkeling) the fault line of the North American and Eurasian continental plates. Or you could be in line at Cowboys.

The seats on Icelandair aren’t known for advancing comfort technology; however, the airline more than makes up for it by lobbing cultural whiz bangers into your in-flight experience. I’ve never felt so welcomed into a country before getting there. You will disembark at the space station-esque airport absolutely pumped to go hang out at all the cool places you learned about on the plane.

Which leads me to point number two (otherwise known as point number awesome): Iceland looks like the moon, but with weather

Which is almost disappointing, until you realize that the capital city has a walkability score of ‘do NOT rent a car’; then you’re loving leaving the Canada Goose Chilliwack bomber in the room in favour of locally made lopapeysa sweaters and ankle boots.

Oh right, the moon. Iceland, the geologically youngest country in the world, is so sparsely populated and removed from outside influence that Old Norse can still be read by most, and genetically modified food is just the boogeyman. So, naturally, winter is the best time to feel the powerful loneliness of the treeless lunar landscape, broken only by volcanic sentries in the distance.

The Blue Lagoon was accidentally formed in 1976 by a nearby geothermal power plant. In the years that followed, people began bathing in the water and applying the silica mud to their skin. Today, it is recognized as one of the wonders of the world.

fields. We headed to the Ishestar Riding Centre to explore the terrain on Iceland’s most precious treasure — the Icelandic horse. The horses are so special to the people of Iceland that, not only is the ratio of horses to humans a world record, but they are the only horses allowed on the island. Be sure to get yours into a tölt — a three-legged glide unique to the breed.

As for darkness, due to its location at the confluence of the North Atlantic and Arctic Oceans, the December sun stretches along the horizon like a lazy supermodel for about four hours each day, dusting every black volcanic lump, patch of frost and sprig of moss with a pinkish grey light. And Reykjavík is not a city that requires a good night’s sleep, so there is something to do at almost every hour, dark or not.

When you first arrive, you might find yourself, like us, turning the phonetically challenging language into a game of Telephone. Poor pronunciation would compound until we had narrowed street names down to common denominators like Busty, Erik and Frankenburger.

I’ll give you a helpful hint: ð is pronounced ‘th’. As soon as we learned that we were giving and getting directions with the best of them, and our cultural explorations could begin in earnest.

As we toured the colourful corrugated iron-clad town, we were guided not by throngs of tourists, but by warm light in windows, melodic chords of laughter, rows of houses and billowing blue steam.

One of my trip goals was to spot

the Huldufólk (hidden people that more than half the population believe in) but I found something even better: Christmas.

Instead of one Santa, Icelandic children believe in 13. These yuletide lads are, perhaps reflecting the harshness of winter, all slightly perverse little criminals — some lick spoons, others slam doors or peep.

And rather than stringing lights along exterior eaves, locals place white, minora-like votives in their windows. Conversely, Christmas trees are affixed to the outside of buildings, high above the sidewalks.

It wasn’t just the festive atmosphere that made our visit magical, though. Every visitor should be so lucky as to meet the people we did.

For example, the day after we landed was by far the roughest weather of the trip. As we headed out on our Glaciers, Volcanoes, & Waterfalls tour with Arctic Adventures, our plans got waylaid due to the possibility of the van being blown off a cliff.

So, admittedly, there were some outrageous storms, but inside our cozy supervan, our guide kept us entertained with a selection of songs he had just discovered during the Iceland Airwaves music festival (one of which ended up being the song I walked down the aisle to), while he planned amazing alternate activities.

And the trophy-winning tour guides continued the next day with Trausti, our trusty day-tripper from Kensingston Tours. He runs private Golden Circle day tours (Thingvellir National Park, Gullfoss waterfall, Geysir geothermal area), and knows more about Iceland than I could keep track of without getting car sick. You have to spend a few hours hitting the highlights with him to understand the amazement-perminute ratio he delivers.

In the following days, Trausti not only gave us a midnight wake-up call to apprise us of Northern Light activity, but initiated us to the local tradition of swimming in the ice-cold ocean then plunging into thermal hot pools. And he patiently confirmed that yes, sheep’s head is something locals eat, not some trick they play on tourists at the bus station. He even more patiently explained that my home-cooked pasta wouldn’t taste like sulphur if I filled the pot with cold water, instead of hot water that’s heated by the earth.

Then there was Ellert, proprietor of the spectacularly central Luna Apartments. He tipped me off that

you could tag a trip to the Blue Lagoon onto your return bus trip to the airport. So instead of travelling 45 minutes out of town and back, you could parlay some soothing spa silica into a deep sleep on your flight home.

Speaking of... Near the end of the trip, my boyfriend had plans to propose to me, so while we wandered around Reykjavik (he, looking for the perfect spot; me, hunting for Sægreifinn restaurant and the world’s best lobster bisque), my dad made scarce and went snorkeling in the pristine 2°C waters of the Silfra fissure — part of the ever widening gap between the continental plates.

A wintery week in Iceland puts a few things in perspective. We are blessed in Vancouver by natural beauty, but it’s almost superficial compared to the elements harnessed by these Atlantic islanders into energy, architecture and design.

I will go back again and again to relive the magic, and I’m not the only one: Tourism is up 30 per cent over 2012 — its previous best-ever year — which, I can wholeheartedly confirm, was the best year ever.

Lifetime Collective comes to Little Mountain Last week, local clothing company Lifetime Collective opened its first flagship store in Vancouver’s Little Mountain neighbourhood. With clothing the main focus, the store is also part gallery in keeping with Lifetime Collective’s collaborative spirit. Surrounding a tight-knit group of artists, musicians and friends, the store will be a place to host events and introduce partnered projects to their Vancouver audience. The film is based on the true story of Ron Woodroof, a homophobic, drug Thor Diakow addicted party animal who contracted AIDS in 1986 and was given 30 days to live.

Refusing to succumb to such a death sentence, Woodroof did exhaustive research on the alternative treatments, many illegal in the US because they lacked FDA approval. The ailing man soon finds such outlawed drugs are prolonging his life so he decides to start a special club (one of many that had already formed in the country) to provide other sufferers with much needed medicine for a membership fee.

McConaughey is almost unrecognizable, shedding 50 pounds for the role, as his spindly body and gaunt face serve as a haunting reminder of the ravages of the disease; yet he remains perpetu-

Perhaps the most stunning aspect of McConaughey’s portrayal of Woodroof is his brilliant transition from close-minded bigot to champion for the cause; it makes for truly riveting viewing and marks a career high for the increasingly versatile actor.

In the interim, we’re subjected to watching the God of Thunder fail to find a spark with his love interest (Natalie Portman) and Tom Hiddleston struggle to rediscover the magic as scene-stealer Loki when the snide spirit is willing but the material is weak. Rather than Loki’s quips, what The Dark World cries out for is an infusion of the infamous trickster’s anarchic influence. Far too much of the running time is devoted to drudgery such as rudimentary worldbuilding or presumptuous set-up for a third instalment.

Consequently, an over-the-top dimension-hopping climax proves a double-edged sword. While it largely redeems this otherwise bland affair, it leaves you wondering what dizzying escapist heights might’ve been reached if the movie’s three screenwriters had got their act together two acts earlier.

Veterans’ rights examined in People Like Us Jessie-nominated performer Sarah Louise Turner tackles the most trying years of Rourke’s life alone on stage. But Gerry, her husband, is never far from thought.

While struggling to secure an official diagnosis for Gerry, who she suspects is suffering from the multi-symptom syndrome, and afford basic necessities on a fixed budget, Rourke becomes a champion for other families whose complaints of medically unexplained illnesses were being ignored.

“It was really thrust upon her. It wasn’t something she chose, so you’ve got, on one hand, the desire to survive, and protect her husband and her family and herself,” explains Turner, “and then her journey of discovering that she can be this support for a huge community of people for whom there is no support.”

Following the 2pm performance on Sunday, Nov. 10, there will be a free panel discussion on Post Traumatic Stress Disorder and Canadian veterans featuring Oliver Thorne from the Veterans Transition Network, and BC-based documentary filmmaker Judy Jackson who made War in the Mind, a film about PTSD and the Canadian Forces.

magine not being able to be intimate with your husband because his semen burns the both of you. Or watching your partner slowly, painfully, pull on a diaper because he can’t contain his bodily waste and bodily wasting.

These are just two of the harrowing symptoms reported by sufferers of Gulf War Syndrome, and presented in People Like Us — a Firehall Arts production about the human costs of war.

Written by Salt Spring playwright Sandi Johnson, People Like Us was inspired by an unnamed but very real Nova Scotia couple who “suffered loss of health, intimacy, financial security, and faith in the military.”

Told from the solo perspective of Kate Rourke, the wife of a military policeman who becomes an advocate for veteran’s rights while battling bureaucracy on behalf of her dying husband, the play coincides not only with Remembrance Day and Veterans Week, but with a vitriolic period in veteran’s affairs in Canada.

Just last month, Canada’s veterans ombudsman warned that current legislation is failing some of our most severely wounded and disabled soldiers, and that the government must address its “urgent shortcomings.” In his report, Guy Parent highlighted serious issues with the level of financial support given to veterans, especially those who were permanently disabled in Sarah Louise Turner stars in People combat.

A vehicle doesn’t have to be exorbitantly expensive, have mega horsepower or a fancy Italian badge on it to be fun to drive.

There’s a new breed of hybrids hitting the streets that are closer in performance and price to their gasoline counterparts.

Ford Fiesta ST- $24,499

Jetta Hybrid

Yes, it’s a subcompact but it doesn’t feel like it when you’re working through the gears of the 6-speed manual transmission. Ford’s newest mini powerhouse comes with a whopping 197 horsepower and 202 lb-ft of torque.

It’s not just the first Volkswagen hybrid; it’s the first hybrid with a turbocharged gas engine and a rapid-shift 7-speed dual-clutch automatic gearbox. A compact lithium-ion battery pack also takes up less trunk space.

Premium brands are in demand no matter what the state of the economy. This trend is good for all levels of the market as non-premium car makers try to offer a better bang for your buck with the workaday wheels. Loaded top-of-the-line flagship models frequently nip at the heels of their premium brand siblings.

The Toyota Corolla is the third best selling car in Canada but Toyota believes this new model can take the overall sales crown away from the Honda Civic. This new 2014 model is made, and partly designed, right here in Canada with our needs in mind. The biggest change is the introduction of a continuously variable transmission for a greater range of gears, improved economy, and a smooth drive.

Mazda3 Sport- starts at $15,995

Honda Accord Hybrid

Mazda completely overhauls their number-one selling sedan and hatchback: the 3. Expect more mature (but not dated) styling, a driver-focussed cabin and a host of technological gadgetry that makes staying “connected” behind the wheel more user friendly.

Its unique two-motor powertrain operates in three distinct driving modes in which the Atkinson cycle engine is completely de-coupled (EV) used as an electrical generator (Hybrid) or drives the wheels (Engine). The result is incredibly good fuel economy in a fully equipped, big sedan.

For Fiat fans, if the 500 was too small, here’s your answer: the 500L. The longer wheelbase cutie is more practical than the pint-sized version and has more room. And two more doors!

It can be plugged into the electrical outlet to recharge its battery. Stored e-power pulled from the grid allows it to be driven farther (about 34 km) in a pure electric-vehicle mode.

Toyota Corolla - starts at $15,995

Available in both rear-wheel drive and what Infiniti calls Intelligent All-Wheel Drive, precise handling is provided by its 4-wheel independent multi-link suspension and an innovative Direct Adaptive Steering with five handling modes.

2014 Mazda3 The outgoing car was already one of the best handling cars and now with a lighter and sexier looking body, this new car is both eye catching and solid on the road. It starts at $15,995 and runs up to $29,895.

2014 Toyota Corolla

It is wider and longer than the last Golf but also significantly lighter and safer. The base engine will be a new turbocharged 1.8L engine with 170hp but don’t worry the TDI diesel is carried over. The sportier GTI trim is fantastic, with an estimated 225hp thanks to a new 2.0L turbo engine.

2014 Jeep Cherokee The Cherokee is back and it looks nothing like the boxy truck of old. In fact, this new, small SUV is based on the same Alfa Romeo platform used in the Dodge Dart. It is smooth and quiet and a pleasure to drive.

No, you’re not reading that wrong. I did include the 2014 Toyota Corolla on my list. Yes, it’s like automotive bread and butter; you always know you’re getting and it’s very predictable. But with a complete overhaul for 2014, you could say the Japanese manufacturer has added some jam on top to make it sweeter.

2014 Nissan Rogue

Kia Soul- starts at $16,995

2014 Mercedes CLA The Coupe-Light A Class starts at under $34,000. It sits on the less than sport B250 hatchback platform but this sloping roof coupe-style four-door sedan is all fun.

A 2.0-litre turbocharged four-cylinder engine, matched to a 7G seven-speed dual clutch transmission generates 208 horsepower for the front-wheel drive machine.

2014 Audi S4 Sedan The supercharged 3-litre TFSI V6 pumps out 333 horses and, with the aid of six-speed manual dual-clutch transmission, pushes the AWD S4 to 100 km/h in 5.1 seconds.

Infiniti Q50 It has the fingerprints of four-time F1 champ Sebastian Vettel on it though, I am told, not nearly as many dabs as the highly-anticipated Q30 due later next year. The 6.7 litres/100 km highway fuel economy is an eyebrow raiser.

Porsche Panamera S e-Hybrid A four-door, four-seat supercar with a lavishly luxurious interior. The “e” denotes that it’s a plug-in hybrid and it has more than double the electrical power (95 horsepower) of its hybrid predecessor, plus a new li-ion battery pack.
