MILAN URBAN FOOD POLICY PACT WRITTEN BY CAMILLA AKERS-DOUGLAS

The Milan Urban Food Policy Pact, signed in 2015, is a declaration of optimism about the ability of cities to reinvent themselves and develop more sustainable food systems. It is a voluntary commitment by the mayors of more than 100 cities worldwide to promote healthy diets. Its goal is healthy and affordable food for all city dwellers, while minimising waste and conserving biodiversity. The pact promises to shape local food supply chains and aims to encourage cooperation between all layers of a city’s food system, be they municipal, regional, national or international.

“As a Milanese, I am very proud that Milan has initiated the Urban Food Policy Pact to save waste, promote sustainable food systems and promote healthy diets,” says Anna.

It is a vision endorsed by the veteran Italian food writer Anna del Conte. She grew up in Milan and experienced the culinary hardships imposed by World War II. In 1949 she moved to England and through her books helped transform Britain’s understanding and appreciation of Italian cooking.

ORANGE & ALMOND CAKE PREP TIME 1 HOUR. BAKE TIME 45 MINS. SERVES 6-8

INGREDIENTS 1 large orange 250g ground almonds 3 eggs 100g RARE I QUIT SUGAR RICE MALT SYRUP 1 teaspoon baking powder 1 teapsoon vanilla extract

SYRUP Juice and zest of one orange RARE I QUIT SUGAR RICE MALT SYRUP

METHOD Place the orange into a pot and cover with water. Bring to the boil then reduce heat to medium and cook for 1 hour. Blend the orange into a puree and allow to cool. Whisk eggs until thick and creamy. Add egg mixture and the rest of the ingredients together and mix until combined. Pour into a greased and lined 20 cm round springform cake tin and bake at 180 degrees C, gas mark 4, for 45 minutes or until a skewer inserted into the middle comes out clean. Remove from the oven and prick all over with a skewer While the cake is baking make the syrup by combining the orange zest, juice and malt syrup in a small pot. Cook over low heat until it thickens slighty. Set aside. Pour the syrup over the cake and allow to cool before serving. Serve with coconut yoghurt or crème fraiche flavoured with orange juice and orange zest – pomegranates for extra decoration.

ROASTED PEPPER, CRANBERRY & FETA SALAD WITH RASPBERRY DRESSING INGREDIENTS 450g trimmed fine green beans 250g loose lettuce x6 romano red peppers 300g dried cranberries 200-300g organic feta x2 tablespoons of flax seeds RARE LUCY’S RASPBERRY DRESSING METHOD Slice the peppers into fairly thin bite size slices and high bake them in an oven until slightly chargrilled. Boil the beans until al-dente, 5 mins. Then cool completely. Arrange the washed loose lettuce in a salad bowl. Sprinkle the feta and cranberries over the salad evenly. Cut the beans into bite sized pieces and then sprinkle evenly over the salad. Sprinkle the peppers and flax seeds over. Finish with RARE LUCY’S RASPBERRY DRESSING to taste.

STONE FRUITAPPLE DATE BRUNCH CAKE PREP TIME 30 MINS. BAKE TIME 1 HOUR. SERVES 8 INGREDIENTS FOR THE CAKE: 3 apples peeled and chopped small 1 cup dates chopped small 1 tsp bicarbonate of soda 1 1/4 cup boiling water 1 egg lightly beaten 1/2 cup coconut oil melted 1 tsp vanilla essence

1 cup almond flour 1/2 cup RARE THE GROOVY FOOD CO. coconut flour 1/2 tsp nutmeg Pinch of salt FOR THE TOPPING: 2 plums sliced 2 tbsp honey 1 tsp ground cinnamon

METHOD Preheat oven to 175°C (350°F). Generously grease a round 20cm (8 inch) cake tin with coconut oil. In a large bowl, mix together the apples, dates, bicarb of soda and boiling water, set aside to cool. In a small bowl, stir the coconut oil and the vanilla essence into the beaten egg. In another large bowl, stir the almond flour, coconut flour, nutmeg and salt together and then add the apple mixture and the oil and egg mixture alternately to the flour mixture until combined. Place the slices of plum in a circular design on the base of the cake tin. Drizzle the honey evenly over the fruit, then sprinkle on the ground cinnamon. Gently spoon the cake mixture onto the fruit, and smooth out carefully until level. Bake for 60 minutes or until a tester comes out clean. After 15 minutes of baking, gently rest a piece of silver foil over the cake for the rest of the cooking time to stop it from browning too much. Allow the cake to cool completely before turning it out, or it may break apart and the topping will be left behind.

THE VEGAN COLESLAW THAT’S FIGHTING FOOD WASTE INGREDIENTS 2 large carrots ¼ large white or red cabbage or both 1 medium white onion 2 tbs chopped chives 3 tsps of RARE AQUAFABA RUBIES IN THE RUBBLE VEGAN MAYO or more “to taste” Juice of ½ a lemon METHOD Grate the carrots, cabbage and onion. Place in a bowl and add the chives. Mix in the mayonnaise. Add the lemon juice and mix. Add some extra chopped chives on top for colour.

Spring has to be my favourite time of the year. After what feels like an especially long winter (or is that my age?!), it is so heartening to see plants, only recently crushed by snow come into life again. Our senses are revived with an explosion of sight, sound and colour. Blossom is arguably one of the most iconic heralds of spring. Whether on hawthorn or fruiting trees, these flowers are shortlived so it’s best to enjoy them before the white and pink petals fall like confetti. So, outside of the UK, where might you see one of nature’s finest floral displays?

Curitiba which opened in 1991 and draws inspiration from the gardens of Versailles. It was Japan where the practice of hanami (the custom of observing the fragile beauty of flowers) began. Whilst abundant throughout Japan, Kyoto is a good bet at the start of April. Here, you’ll find the Philosopher’s Path, following a canal lined with hundreds of cherry trees, and Maruyama Park, famous for its large weeping cherry tree. The University of Washington in Seattle received 31 trees from the Washington Park Arboretum, from a collection originally gifted by Japan to Seattle in 1912. The University trees are now so famous that they have their own Twitter account.

A RARE PATH WRITTEN BY EMMA SCHWARZ

Ever wanted to hike a breath-taking section of coastline in Europe and feel like you are walking high in the sky yet in clear view of crashing waves below? Well, the Sentiero degli Dei or “Path of the Gods” on the Amalfi coast, Italy is for you! The actual length of the entire Amalfi coast is 40-50km from Salerno to Sorrento. The official “Path of the Gods” route is one mere section (about 10km) of this coastline, running between Bomerano and Nocelle; all the guides say start in Bomerano and end in Nocelle! The path literally travels across the sheer cliffs of this part of the Amalfi coastline and the views are simply incredible. Another wonderful fact about this particular route is that the inclines and descents are moderate, most of the path is easy to walk, with only a few hairy bits when the ropes and posts guarding the footpath can be a bit sparse! But, in general, this path is great for all ages and safe for children as long as they are not walking miles ahead or behind you! Most people take about 2-3 hours to walk this route, and there are plenty of tips online on many walkers’ sites including www. pathofgods.com/into-the-path/inside-the-path-of-the-gods/ You can reward yourself at the finish in Nocelle with some homemade lemon Granite. Don’t miss it!

If you’re tempted to walk more of the Amalfi coast, then a good base is either Positano or Amalfi town itself; both can be reached by bus or boat if you have travelled from Naples to Sorrento or you may have come from the coast of France. There are many routes documented and signposted. Another Rare one is a walk through the hillside above Amalfi, through the lemon groves and wooded pathways dotted with derelict Paper Mills. Handmade paper production was a medieval artisan tradition in that part of the Italian coast, long before Limoncello! If you do this walk, don’t miss the Museum of Paper to learn more about this aspect of Italian history. Driving Italy’s Amalfi coastline is glamorously depicted in many films and media but walking it is by far the best way to appreciate the beauty of this rare part of the world. Nocelle

Rachel Smith-Bingham made the move from management consulting and media into fashion to establish BUNKS, her swimwear brand for men and boys, that combines unique design, exclusivity and a respect for our oceans. BUNKS launched in Spring 2017… I am not from a retail or ‘fashion’ background so I have needed to learn a lot too. One point that’s really important is that I have set up BUNKS to be a brand that is related to memorable holidays and travel rather than as a fashion brand. I am proud that the BUNKS product has some unique attributes, such as the environmentally friendly packaging, the swing tag/ luggage label and the UV protection in the fabric. Also, BUNKS does not add any more plastic to the world’s oceans and that there is an exclusivity to BUNKS – the production runs are small – which adds to the uniqueness of the brand. UV protection is a standard for most swimwear brands so it was a ‘given’ that the fabric has to be UPF50 protective (especially since BUNKS started with boys sizes).

LittleLeaf is a family-run business based in Hampshire. With four children of our own, we know how important it is that the fabric you’re putting next to your baby’s skin – and your own – is the kindest and softest it can be. As a family, we think we are fairly environmentally aware: we have a smallholding, grow as much organic veg as we can, keep chickens, have invested in “green” technology in our home, such as rainwater harvesting for our washing machine and for flushing loos, and diligently recycle as much as we can.
