Overview William Caruso & Associates (WC&A) has worked, and continues to work, with some of the most prestigious hospitality venues in the world. We are able to offer our clients knowledgeable solutions derived from over 20 years of experience working on hotels, resorts, casinos, restaurants, and country clubs. Often the goals of larger venues such as resorts and casinos are grandiose. They involve multiple kitchens, potentially a handful of restaurants featuring various types and styles of cuisine, as well as room service and catering. These venues also benefit from well-designed laundry systems to support their food and beverage system, as well as additional linens produced by the venue. Today’s country clubs have various needs that include more traditional dining and poolside snack areas, and more modern approaches such as café’s and bistros. Hospitality venue needs and strategies are based on location, client goals, and patron demographics. WC&A has completed over 500 hospitality projects in 13 countries. Our portfolio includes both large and small venues across the globe. This gives us an expansive knowledge base to draw from of what works and what doesn’t for different venue types, as well as trends and ideas that may be applicable for a project that may not otherwise be considered. Our Approach The hospitality industry is recovering from what has been a tough couple of years. With this recovery, comes an exciting new outlook and refreshing new concepts for design. Each day, new technologies arise that allow us to design foodservice facilities that are more sustainable, efficient, and cost effective. Whatever the end goals might be, we weave these three invaluable traits into our designs and recommendations to assure that the end result is something that the client can be proud of, as well as reassured that the design will grow with them into the future.
The Ideal Sustainable Kitchen Performance Items that underperform relative to the industry standard will not be considered. Part of what makes an item sustainable is its ability to perform at an optimal level over time. What good does it do to cut energy if performance goes right out the window? For example, an exhaust hood with an extremely low CFM that leaves the kitchen full of greasy smoke is useless. Resource Consumption vs. Industry Standard The consumption of energy and materials is the most talked-about and widely discussed component of the sustainable realm. Energy consumption gets attention because of the highly-visible financial and air pollution impacts involved. However, in a time when the Colorado River does not reach the Gulf of California and stripmining is still a prevalent practice, attention needs to be given to life-cycle cost of any piece of equipment. ROI Timeline The most significant element holding back the sustainable movement is the financial aspect. In a deal-driven process where the end user is not making the initial decisions, sustainable products are a hard sell. Unfortunately, the most innovative components are often the most expensive. Part of being financially sustainable is measuring the time it takes to pay back premium on initial investment.
Project Highlights Reefs Resort Hotel and Beach Club

WC&A was commissioned to design a major renovation for this famous resort’s food, beverage, and laundry facilities. Work included master planning and design for a new main kitchen, restaurant finishing kitchen, pool bar, and new laundry and housekeeping areas that were housed in a new service wing planned for the resort. A unique element of this project was the request to carefully design all exterior visual elements of the new receiving and loading (service) points adjacent to one of the main historical island roadways to ensure that no negative visuals could be seen from the roadway.
The Blake Street Tavern has been in Denver for 30 years. WC&A had the opportunity to design their new restaurant location in a 100-year-old building right in the heart of Denver’s famous Lodo (lower downtown) section of the city. The restaurant is a block from Coors Field and provides indoor and outdoor dining, a display cooking area, sports bar menu, games, and quiet area with a fireplace. It also has a unique presence with a grill and a bar right on the street.
Wild Horse Pass Casino Resort Phoenix, Arizona
WC&A was involved in the programming, design, and implementation of the food and beverage facilities of the Wild Horse Pass Casino Resort for the Gila River Indian Community. We were further instrumental in solidifying a contract with the foodservice facilities operator. Food and beverage consist of a variety of amenities throughout the casino and hotel, including a 40-seat round casino bar with built-in games, private player lounge bar, 3-meal restaurant, hotel lobby, and terrace bars, branded fast food market place, Ling and Louie’s restaurant, and Shula’s Steak House. The property also has meeting and banquet facilities for 2,000 seats. WC&A was involved in all phases of development, including the final phase which will have a signature hotel and spa on property.
The Duquesne Club

Distinguished as one of the finest city clubs in the entire Northeast, the 125 year-old Duquesne Club’s foodservice facilities, last updated in the mid 1960’s, was in need of major renovation – all while operating at peak quality for over 700 member meals per day. After an extensive review of major consultants, WC&A was selected to design the main kitchen, a new pastry production kitchen, and numerous pantries that service over 15 different dining spaces on five of the eleven floors. Along with design, WC&A helped coordinate the very complex construction phasing helping to bring the project to completion while remaining in operation.
