Food and Laundry Facilities Planning and Design Worldwide

WC&A HEALTH CARE PROJECT HIGHLIGHTS * including multi-level congregate care facilities. Bullhead City Community Hospital – Bullhead City, Arizona* A detailed food service program and master plan was followed by cafeteria, main kitchen, and galley reheat system design for this 60-bed regional health care center in northern Arizona. The design implemented traditional cook-serve procedures with insulated tray service to patient rooms. The work was cited for its operational and cost effectiveness over the course of the project's design and planning services. California Health Care Facility – Stockton, California The California Department of Corrections commissioned WC&A to program and design the largest correctional healthcare facility in the world (a budget of $3 Billion). The program provided phased construction of facilities to support 10,000 medical beds for the California DOC correctional system. The first phase of the project required 3,500 beds of varied acuity levels at the Stockton location. The design provided for a 5,000 sq. ft. warehouse, a central 30,000 sq. ft. state-of-the-art cook/chill production kitchen and multiple food staging areas, multiple satellite re-thermalization pantries (located at medical housing units), and a staff dining area with on-site cooking and serving. The facility is programmed and designed to accommodate meal production for unique medical diets. Casper Memorial Hospital – Casper, Wyoming WC&A headed up a series of major renovation projects undertaken for this 300-bed Wyoming medical center. Included in the scope of work was a detailed master plan of future dietary operations, as well as the redesign of a dining area that serves the hospital’s staff, guests, ambulatory -, and bed-ridden patients. Colorado State Hospital – San Carlos Special Needs Unit – Pueblo, Colorado WC&A was commissioned to provide programming and design services for this unique facility to accommodate the special needs of inmates requiring customized care and food service programs. These inmates cannot be incorporated into the general prison population and thus, necessitated this special care facility. Denver Health Medical Center – Denver, Colorado WC&A was commissioned to program and design a cafeteria servery for the Denver Health Medical Center. This work included the renovation of an older, existing facility and the development of a new menu and serving concepts to ease traffic congestion experienced by the hospital over a number of years.

The Highland Hospital – Oakland, California The Highland Hospital project, a 196-licensed-bed replacement facility consisted of an acute bed tower and an addition to the existing medical office building (MOB), known as the satellite building. WC&A was brought in to assist with programming and development of the patient meal production and delivery system, as well as to design the food court/marketplace in the MOB building. The facility is designed with the latest patient meal delivery system in place (room service) to maximize guest and medical staff participation in the food court area. Hospice & Palliative Care Center of Western Colorado – Grand Junction, Colorado This center includes in-house residences, a state-of-the-art training center, medical center, library, meeting and conference facilities, and a multi-denominational chapel. WC&A was commissioned to provide both the programming and design for the food service facilities. These facilities furnish meals to the patients and staff of the center. A café style outlet for guests was also planned to generate revenue by offering food services to staff in adjacent buildings. Littleton Assisted Living Center – Littleton, Colorado* WC&A was commissioned to plan and design this assisted living center in Littleton, Colorado. This 150-person capacity facility combined both residential and congregate care services. WC&A’s work included operational/design master planning, food and laundry facility design services, and operational programming documentation. Long Island Jewish/Hillside Medical Center – New Hyde Park, New York* WC&A provided the key direction for the master planning of this major 15,000 sq. ft. central commissary project that called for a complete production facility and system renovation. Major additions to this famous hospital required expanded service to its 800 patients and additional visitors and staff. A complete restructuring of its operating and production systems to include cook-chill technology were implemented, along with a state-of-the-art transportation system to accommodate product transport to remote system operating facilities. Lutheran Medical Center – Wheat Ridge, Colorado* WC&A was commissioned to conduct a comprehensive review of the food service operations at the Lutheran Medical Center Hospital, Lutheran Home Assisted Living Center, and the West Pines Treatment Center. The evaluation determined the operational and financial feasibility of centralizing the individual food service operations at the noted facilities into a single production kitchen. WC&A developed design options for the central production facility, as well as design and operational programs to illustrate required modifications necessary at the remote satellite areas to accommodate the transport re-thermalization and serving functions of the operation.

Mary Crest Assisted Living Center – Arvada, Colorado* WC&A developed a detailed operational program complete with space programming, capital cost estimates, and design options for this multi-level congregate care/assisted living center. The campus-wide operational program and design programs consisted of a central production commissary preparing and transporting meals to four (4) remote residential buildings serving up to 300 residents. The varied levels of care offered by this facility was an important consideration in the work developed by the project team. Care levels include independent and assisted living as well as an MS care unit, an Alzheimer's wing, and an AIDS residential treatment center. Mountain View Hospital – Idaho Falls, Idaho A benchmark in outpatient focused, doctor-owned hospitals, Mountain View’s owners requested design services from WC&A in conjunction with Convenience Kitchen Systems. WC&A provided a quick service kitchen facility to serve the medical center and utilized approximately 950 sq. ft. in doing so. North American Baptist Association (Nursing Homes) – Central Baptist Home – Chicago, Illinois* WC&A was commissioned to complete a detailed operations review that consisted of the following: equipment review, operations analysis, review of caterer contracts; included in WC&A’s report was a detailed list of recommendations for improvements. Portneuf Medical Center – Pocatello, Idaho WC&A was chosen from a list of national design firms to provide programming expertise and design for the Portneuf Medical Center replacement hospital. This facility is the regional trauma center for the state. Food service amenities, such as room service/meals on demand, a marketplace food court and a 24/7 café enhanced the nutritional service program. In addition, the design provided for to-order “action stations” in the marketplace food court to not only entertain, but also to provide a platform for education and fresh meal service. South Dakota State Veteran's Home – Hot Springs, South Dakota* The Veteran's Administration called on WC&A to provide operational program design services for the renovation of this historic facility, which was constructed in 1890. The food service program and design had to be very sensitive to the unique limitations of the utility and structural systems of the building. The design solution consisted of centralizing the kitchen and dining services for ambulatory residents while providing delivery of meals to non-ambulatory residents through a tunnel system that connects the central kitchen with other residential buildings on the campus. The design and equipment selection developed for the kitchen addressed the unique requirements of this type of facility, including special and modified diets for health and religious purposes, as well as menu/service flexibility to accommodate the varied needs of the veteran residents who served in the armed forces.

Staten Island Hospital – Staten Island, New York Feasibility and master planning analyses were provided to the dietary department of this metropolitan New York health care center. An evaluation and restructuring of an existing cook-chill-freeze program that had been instituted some five years earlier occurred. Detailed analysis recommended both modification to the production process as well as alterations and redesign of the staff cafeteria, reconstitution, and tray assembly lines as well as the floor galley reheat systems. University of Pennsylvania Medical Center – Philadelphia, Pennsylvania WC&A was the food service consultant involved in the master planning and design for the University of Pennsylvania Medical Center. This facility has a variety of patron amenities within the building; including a beauty shop, convenience store, and other retail elements. WC&A provided design expertise for mobile thematic kiosk units, as well as an employee dining facility in the Darla Moore Complex. This facility is equipped with a variety of hot and cold made-to-order and grab-and-go menu items. The searing station consists of a grill, cold and hot food stations, as well as a deli and beverage area. University of Texas Southwestern Medical Center – Dallas, Texas WC&A was commissioned by University of Texas Southwestern to assist in developing a world class nutrition services design for the University of Texas Southwestern Medical Center Campus. The 300-bed facility augments existing healthcare facilities owned by University of Texas Southwestern. Our work included the design of a 14,000 sq. ft. main kitchen, a 4,000 sq. ft. marketplace food court, and a 1,000 sq. ft. entrance lobby coffee café. Veteran’s Administration Medical Center – Aurora, Colorado WC&A was commissioned by H+L Architecture and SOM to provide programming and design expertise for the Veterans Administration Medical Center in Aurora, Colorado, which is just outside of Denver. The Hospital is part of the 75-year-old Fitzsimons Medical Campus. The dietary/nutrition services portion of our work included receiving, a main production and patient meal service kitchen, a food court/servery, and retail outlets. The food service program provides state-of-the-art food service complete with the latest in cook/chill technologies. West Chester Medical Center – West Chester, Ohio WC&A was commissioned to program and design the Westchester Medical Center in Cincinnati. Our work included the satellite receiving, a main kitchen, a marketplace food court, and an entrance lobby coffee café. The nutritional service program includes room service/meal-on-demand, patient dining, and limited grab-and-go meals at the coffee kiosk. The marketplace food court provides separate food stations that consist of a deli, short order grill, pizza/Italian station (with a wood assist pizza oven), island salad bar, and grab-and-go stations. The adjacent dining area seats 200 people.

Yuma District Hospital – Yuma, Colorado WC&A was selected to design the food service facilities for the Yuma District Hospital. This 50-bed rural hospital provides state-of-the-art care in the far reaches of northern Colorado. The food service facilities utilize cook/chill technology and provide the latest in “room service” patient dining. The food service facilities also include a full service café with a “made fresh” to order menu as well as prepackaged items for the “grab-andgo” customer. The laundry facilities include the latest in pass through/barrier type washing equipment to eliminate contamination possibility.
