Overview Healthcare foodservice has evolved to new heights in recent years! Many facilities are offering state-of-the-art, appealing dining options providing patients, staff, and guests with both health oriented and traditional food and beverage fare. While dietary needs and requirements form a basis for much of the patient services design, the commercial spaces include cafes, marketplaces, scramble system services, and more. They are sleek, modern, and are programmed to provide the highest-quality meals and services available. Similarly, the healthcare laundry facilities we plan and design range from very large to small. They may utilize simple commercial washers and dryers or large complex tunnel washing machines, lint collection systems, and hot air systems. We do it all…we serve our clients in healthcare both on the management advisory and design levels, with equal expertise.
Our Approach Before William Caruso & Associates (WC&A) begins working on operational recommendations and preliminary design sketches, we sit down with our clients to better understand what types of solutions will best suit their needs. We ask questions; what does the client envision for the food and beverage options within a building, what is the bed capacity, what types of patients are being served, what type of meal service will be offered, what operational ideas or options would the client like to provide, what specific design and operational needs should be considered, what are the specific food and beverage elements relative to local health department and other governing agencies, and what are the sustainability goals of the project? We assure that we are a part of the team and share the visions and goals of the project. First and foremost, that is what will determine our success on the project level.

WC&A was chosen to complete the design for the planned expansion of the existing Denver VA Medical Center. This addition expands the campus by 13 buildings including a community living center, parking, research, and treatment facilities. The foodservice design includes a cafeteria, concourse service, a coffee shop, and a small patient cafeteria. The largest addition WC&A designed is a main food storage facility with refrigeration, freezer, and dry storage capabilities. The main kitchen in this building provides patients with room service and a large menu offering variety. The variety of food and beverage options available to patients, staff, and guests has upgraded the services of the Denver VA beyond the typical healthcare facility.
WC&A was designated as the foodservice consultant for the major Highland General Hospital expansion project. The expansion included a satellite cafeteria for patients, patrons, and staff. Additionally, a new acute tower offers room service amenities for its patients.
UT Southwestern Medical Center Dallas, Texas
WC&A was commissioned to design the café food options and patient meal service program for the new UT Southwestern Medical Center in Dallas. The new structure will be over one million square feet in size and will house 535 beds. The Medical Center will serve as a teaching hospital for University of Texas medical students and the new hospital will replace the existing one in 2014.
Portneuf Medical Center Pocatello, Idaho
WC&A was chosen from a list of national design firms to provide programming expertise, as well as design for the Portneuf Medical Center replacement hospital. This facility is a regional trauma center for the state of Idaho. Foodservice amenities include room service/meals on demand, a marketplace food court, and a 24/7 café. The design provides for to-order “action stations” in the marketplace not only to entertain, but also to provide a platform for education and fresh meal service.
