Overview Correctional facility projects offer a unique set of considerations that differ from any other type of project. Not only are the codes, specifications, and requirements both unique and extremely stringent, but the element of safety and security is a vital component of the planning and design process. These types of projects are almost always public agency oriented where William Caruso & Associates (WC&A) has worked on the local, state, and federal levels for many years. Because of this dynamic, there is often the challenge of large group buy-in on all major decisions. WC&A is able to ease the difficulty in decision-making because we are experts in all facets of food and laundry facility planning. We are the “style source� and are able to provide answers regarding electrical, plumbing, operational strategy, and whatever else is needed in regards to food and laundry facilities planning (as well as solid waste in relationship to food and laundry) within the facility.

Project Highlights Goose Creek Correctional Facility Point MacKenzie, Alaska

The Goose Creek Correctional Center is a new, $240 million, 1,536 bed, medium-security correctional center approximately nine miles from Port MacKenzie. The state of Alaska Department of Corrections selected WC&A to design the support/ visitation building which includes a full production kitchen with a series of dry, refrigerated and frozen storage units, a bulk cooking area, a bakery, and a serving kitchen. The serving kitchen houses a heavy-duty warewashing facility and a centralized cleaning system. The commercial laundry facility is sized to support the entire correctional facility. There is also a warehouse building that houses commercial heavy-duty storage units designed to hold bulk, palletized products for the facility.


South Placer Adult Correctional Facility Placer County, California

WC&A was commissioned to provide foodservice and laundry design services and was an integral part of the design/build team for the South Placer Adult Correctional Facility in Auburn, California. This 30,000 square food “food factory” facility was sized to provide over 9,000 meals on a daily basis using state-of-the-art cook/chill technology. Food facilities include a three tier palletized warehouse, test kitchen, full bakery production, bulk meal preparation and production, cook/chill system, tray assembly, and a meal rethermalization and distribution center.

Denver Justice Center Denver, Colorado

After a study conducted in 2008, WC&A determined that a central food production facility would be the most economical way to feed inmates and staff within Denver County’s correctional system. This downtown facility produces food in a factory-like setting and distributes to satellite kitchens throughout the county and to downtown correctional facilities. WC&A designed the entire food factory including space planning, food facilities design, and equipment selection and specifications. The facility provides optimal flow, efficiency, and safety for its users. The food factory’s meal production capabilities are 16,000 meals a day which feeds all inmates, staff, and officers at the Denver Justice Center and the Denver County Jail. WC&A also designed the projects’ commercial laundry facilities which operate eight hours a day, five days a week, and produce 300,000 pounds of laundry a month including uniforms, sheets, and towels. This process took over 18 months to complete and the facility opened in March 2010.
