MAIZE GRAIN SPECIFICATION
Introduc on
This standard has been developed to take into account:
a) The needs of the market for the product;
b) The need to facilitate fair domes c, regional and interna onal trade and prevent technical barriers to trade by establishing a common trading language for buyers and sellers;
c) The structure of the CODEX, UNECE, USA, ISO and other interna onally significant standards;
d) The needs of the producers in gaining knowledge of market standards, conformity assessment, commercial cul vars and crop produc on process;
e) The need to transport the product in a manner that ensures keeping of quality un l it reaches the consumer;
f) The need for the plant protec on authority to cer fy, through a simplified form, that the product is fit for cross-border and interna onal trade without carrying plant disease vectors;
g) The need to promote good agricultural prac ces that will enhance wider market access, involvement of small-scale traders and hence making farming a viable means of wealth crea on; and
h) The need to ensure a reliable produc on base of consistent and safe crops that meet customer requirements.
1. SCOPE
This dra Standard specifies requirements, sampling and test methods for maize grains of varie es grown from common maize grains, Zea mays indentata L. and/or Zea mays indurata L. or their hybrids intended for human consump on.

3. TERMS AND DEFINITIONS
For the purposes of this standard, the following terms and defini ons shall apply
3.1. Maize (corn) grain: Shelled grain or kernel of the species Zea mays indentata L. (dent maize) and/or Zea mays indurata L. (flint maize) or their hybrids
3.2. Pest damaged grain: Grain which shows damage or owing a ack by rodents, insects, mites or other pests
3.3. Stained grain: Grain/kernel whose natural colour has been altered by external factors, such as ground, soil or weather. This may include grain which has dark stains or discoloura on with a rough external appearance.
3.4. Ro en and diseased grain: Grain affected by mould growth or bacterial decomposi on or other causes that may be no ced without having to cut the grains to examine it and renders it unsafe for human consump on
3.5. Discolored grain: Kernel which is damaged by heat, frost or water
3.6. Mouldy grain: Grain with visible mycelial growth on its p or surface
3.7. Immature and shriveled grain: Grain which is underdeveloped, thin and papery in appearance
3.8. Broken kernels: Pieces of maize which pass through a 4.50-mm round hole metal sieve
3.9. Other grains: Edible grains, whole or broken, other than maize, that is, cereals, pulses and other edible legumes

3.10. Foreign ma er: All organic and inorganic material other than maize grain, broken kernels and other grains
3.10.1. Inorganic ma er: Stones, glass, pieces of soil and other mineral ma er
3.10.2. Organic ma er: Any animal or plant ma er (seed coats, straws, weeds) other than grain of maize, damaged maize grain, other grains, inorganic extraneous ma er and harmful/toxic seeds
3.11. Harmful/noxious seeds: Seeds such as Crotolaria (Crotalaria spp.), Corn cockle (Agrostemma githago L.), Castor bean (Ricinus communis L.), Jimson weed (Datura spp.) which can have a damaging or dangerous effect on health, sensory proper es or technological performance
3.12. Filth: Impuri es of animal origin
3.13. Defec ve/damaged grain: Pest damaged, discoloured, stained, ro en and diseased, immature and shrivelled grains and broken grain
3.14. Food grade packaging material: Material, made of substances which are safe and suitable for their intended use and which will not impart any toxic substance or undesirable odour or flavour to the product
3.15 Flint maize (corn): Form of corn whose mature kernel has a smooth, vitreous, appearance and a rather round shape
3.16 Dent maize (corn): Form of corn whose mature kernel has the shape of a horse's tooth with a depression in the crown
4. CLASSIFICATION
4.1. Colour
Maize shall be classified as yellow, white, red or a mixture of these colours as follows:
I. Yellow maize shall contain not more than 5% by weight of maize of other colours. Maize grains which are yellow and/or light red in colour are considered to be yellow maize;
ii. White maize shall contain not more than 2% by weight of maize of other colours. Maize grains which are white and/or light pink in colour are considered to be white maize; and
iii. Red maize shall contain not more than 5% by weight of maize of other colours.

4.2. Shape
Maize may be classified as flint or dent or their hybrids or mixtures thereof as follows:
a. Flint maize includes maize of any colour which consists of 95% or more by weight of grains of flint maize;
b. Dent maize includes maize of any colour which consists of 95% or more by weight of grains of dent maize; and
c. A mixture of flint and dent maize includes maize of any colour which consists of more than 5% but less than 95% of flint maize.
5. QUALITY REQUIREMENTS
5.1.
General requirements
Maize grain shall be prac cally free from foreign odours, moulds, live pests, toxic or noxious weed seeds, other edible grains and other injurious contaminants as determined from samples representa ve of the lot.
5.2. Specific requirements
Maize grain shall comply with maximum limits given in Table 1 when tested in accordance with the test methods specified therein.

6. CONTAMINANTS
6.1. Pes cide residues
Maize grain shall comply with those pes cide residue limits established by the Codex Alimentarius Commission for this commodity
6.2. Other contaminants
6.2.1. Maize grain shall comply with those limits for heavy metals specified in CODEX STAN 193 established by the Codex Alimentarius Commission.
6.2.2. Maize grain shall comply with the maximum limits for mycotoxins given in Table 2 when tested in accordance with the test methods prescribed therein.

7. HYGIENE
Maize grains shall be produced, prepared and handled in accordance with CAC RCP 1.
7. WEIGHTS AND MEASURES
Maize grains shall be packaged in accordance with the weights and measures regula ons of the des na on country.
9. PACKAGING
9.1. Maize grains shall be packed in food grade packaging material which will safeguard the hygienic, nutri onal and organolep c quali es of the products.
9.2. Each package shall be securely closed and sealed.
10. LABELLING
10.1. Labelling of retail containers
In addi on to the requirements in EAS 38, each package shall be legibly and indelibly labelled with the following:
a) product name as “White Maize Grains, Yellow Maize Grains, Red Maize Grains or Mixed Maize Grains”;
b) grade;
c) name, address and physical loca on of the producer/packer/importer;
d) lot/batch/code number;
e) net weight, in kilograms;
f) the declara on “Food for Human Consump on'';
g) storage instruc on as “Store in a cool dry place away from any contaminants'';
h) crop year;
I) packing date;
j) instruc ons on disposal of used package;
k) country of origin; and
l) declara on on whether the maize was gene cally modified, where applicable.

10.2. Labelling of non-retail containers
Informa on detailed in 10.1 shall be given either on the container or in accompanying documents, except that the name of the product, lot iden fica on and the name and address of the processor or packer as well as storage instruc ons, shall appear on the container
However, lot iden fica on and the name and address of the processor or packer may be replaced by an iden fica on mark provided that such a mark is clearly iden fiable with the accompanying documents.
11. SAMPLING
Sampling shall be done in accordance with EAS 900.
