Organic vs. Biodynamic: What’s the Difference?

You’ve probably heard the words organic and biodynamic before. What do these mean and is there a difference?

Actually, yes.

ORGANIC

An organic listing on a wine label means one of two things: It’s either made from organically grown grapes without the use of added sulfites, or it’s made from certifiedorganic grapes and avoids all synthetic pesticides.

BIODYNAMIC

Biodynamic wine refers to a technique similar to organic farming and avoids synthetic chemicals during winemaking. But biodynamic farming goes a step further and views the vineyard as an entire ecosystem (even paying attention to astrological signs and lunar cycles) to produce low-intervention wines, made with minimal manipulations and additives. Some even use wild yeasts in ferments.

Over 78 years ago, the group now known as Napa Valley Vintners recognized that the region needed an environmental protection plan to keep the lands fruitful for future generations. So, this organization of area wine producers created a “best practices” program, starting with managing the Napa River to keep it clear of pesticides and to control erosion. Within several years, the program, called Napa Green, extended to vineyards and wineries, offering certification for operations that conserve water and energy, maintain healthy

soils, and reduce their carbon footprint.

Today, there are 90 Napa Green certified wineries, representing nearly 40% of the certified sustainable wineries in California, and there are over 50 growers transitioning to Napa Green Vineyard certification. Collectively, these wineries have saved more than 27 million gallons of water, 14 million kilowatt-hours of electricity, and $4 million in energy costs.

The result? Napa Valley continues to produce some of the world’s finest wines — while taking huge steps in saving the planet. – Carey Sweet

Amainstay along Silverado Trail, Burgess Cellars reopened its doors in spring 2022. To honor the valley’s rich heritage, and to maintain the health of its vines and the magic of its wines, Burgess is committed to regenerative farming practices to preserve this land for generations to come.

While Newton Vineyard undertakes an historic transformation of its Spring Mountain property, it is currently hosting guests at its new tasting room located on Tubbs Lane in Calistoga. Newton has been utilizing sustainable practices since its founding in 1977 and has adopted a long-term, balanced approach to organic farming that’s beneficial for the grapes, the land, and the wildlife.

In Calistoga, Sterling Vineyards is planning a summer 2023 reopening. The winery is undergoing major renovations on its famous aerial tram which provides unparalleled valley views while transporting visitors to its hilltop location.

Need to Know: Napa Valley Fire Season

When our mettle is tested, we come out a stronger, more vibrant valley.

Let’s address the elephant on the page, shall we? Fire season. Just like hurricane season, fire season is a term that’s grown in familiarity and is linked largely to the period of time in California (June to November) when the weather is hot and dry, resulting in unfortunate and devastating blazes. Over the last several years, California’s wine country is no exception and has experienced the spark and rage of significant wildfires. But there is good news. While, undeniably, our valley has been affected by recent fires, the majority of Napa County’s 45,000 acres under vine were not threatened, and few visitors will witness the fires’ impact on our beautiful valley.

At our core, Napa Valley is a strong agricultural community where grapes have been grown and wines made for more than 150 years. Our region has faced many disasters and trying times — Prohibition, phylloxera, the Depression and recessions, earthquakes, floods, and fires — and has come back stronger at each turn.

And while we can’t outrun climate change, we can do our part to respect this beautiful land. We find hope in sustainability efforts, like those of Napa Green and our local businesses taking action for a greener future. Napa Valley is still here. Our spirit is unbroken, our land is bountiful, and the beauty of our region continues to inspire. We look forward to hosting you.

A New Kind of LEED-er

Juancarlos Fernandez gives a new meaning to “going green.”

As the leading proponent for Napa Valley’s sustainability practices, Anna Brittain is constantly looking for ways to improve and expand environmental and community efforts within the wine industry. Actions can be as simple as switching to more efficient light bulbs, she notes, or as dramatic as adapting to 100% organic farming and going solar. Already, the valley’s Napa Green certified wineries implement more than 120 sustainability and stewardship standards, from production to administration to hospitality.

As one of only four comprehensive sustainable wine-growing certification programs in the nation, Napa Green provides soil-to-bottle certifications for vineyards and wineries. Brittain explains that the program is constantly evolving to focus on the greatest environmental needs, such as climate action, regenerative agriculture, and social equity.

After guiding Napa Green’s growth for more than four years, Brittain was named executive director of the nonprofit. Under her leadership, Napa Green has established partnerships

with leading environmental groups like 1% for the Planet, an organization whose members contribute at least one percent of their annual sales to environmental causes. This partnership has increased Napa Green’s efforts to benefit local and global issues surrounding food, land, pollution, water, and wildlife.

Most recently, Brittain launched a new model called the Napa Green Vineyard Certification program. It’s the first wine industry sustainability certification that focuses on climate action, regenerative farming, and justice and inclusion.

“When our first land program launched in 2004, we used cutting-edge practices,” she says. “But there are issues, like climate change, that were not at the forefront then. We’re also looking at social equity and quality of life for people, via tangible changes like hiring farmworkers year-round rather than seasonally.”

“We’re proud to be leaders proving sustainability and environmental stewardship are synonymous with success,” Brittain says. “Now, we’re ready to explore expanding the scope of Napa Green beyond the wine industry and ultimately hope to promote and facilitate broader sustainability certification for the entire hospitality sector, including hotels, restaurants, and events.”

Architect Juancarlos Fernandez is perhaps best known as the designer behind the LEED-certified Odette and CADE wineries in Napa Valley. But the architect and partner at Signum Architecture — the firm that designed the award-winning Artesa Tasting Salon — is equally proud of a lesser-known project: the Nine Suns Winery (now called Realm Cellars) caves on Pritchard Hill in St. Helena.

“Usually, caves around Napa Valley are proposed because of their natural low temperature to store wine barrels during fermentation,” he explains. “But the unique conditions at Nine Suns — shallow, solid rock on the sun-exposed eastern side — meant high temperatures underground. Why Do Grapes Grow Here?

Napa Valley’s world-renowned grapes, and resulting wines, owe it all to Mother Nature.

GEOGRAPHY

At just 35 miles long and five miles wide, the region was formed over a period of 150 million years by tectonic plates and volcanic activity. Thanks to its location, situated between the Pacific Ocean and Central Valley, flanked between two mountain ranges, and bisected by the Napa River, the valley is the perfect blend of microclimates and terrain.

CLIMATE

The valley enjoys a warm, dry Mediterranean climate, with sunny days and cool evenings. This diurnal swing, or shift from warmest to coolest temperatures, allows grapes to ripen gradually. Cooler microclimates, like Los Carneros, experience marine breezes and fog cover from the Pacific Ocean and San Pablo Bay; northern regions, protected by the Mayacamas and Vaca Mountains, run a little hotter.

SOIL

Although the valley is one of the world’s smallest wine regions, it’s also one of the most diverse, with more than 100 soil variations that affect grape character. Deeper, fertile soils exist on the valley floor, resulting in larger, plump berries (a viticultural term for a wine grape). Rockier soils on hillsides and mountains produce smaller grapes with higher concentration in flavor.

The Grape Debate

With its optimal climate and unique terroir and topography, Napa Valley grows more than 40 varieties of grapes. (That’s a lot of grapes!) And while you can get a pour of just about anything you’d like, there are standout grapes that thrive particularly well here.

CABERNET SAUVIGNON

Comprising 55% of total vineyard acres planted, Cabernet Sauvignon is king of Napa Valley. Big on flavor and tannins, Cabernet Sauvignon hails from Bordeaux, France, and was one of the first varieties planted here in the late 1800s. While expressions vary, wines are fantastic young but age beautifully in the cellar.

• Primary notes: black cherry, black plum, tobacco, graphite, baking spices

• Pairs with: braised and roasted meat dishes, steaks, aged cheese

• Decant time: 1-2 hours

• Serving temp: 60-68°F

CHARDONNAY

As the second most planted grape variety in Napa Valley — it makes up 14% of all vines — Chardonnay thrives in cooler climates where it ripens slowly. The Burgundian variety was planted here in the late 1940s, and ranges in style from fresh and crisp to round and buttery.

• Primary notes: yellow apple, pineapple, vanilla, citrus blossom

• Pairs with: seafood, pork, poultry

• Decant time: less than 30 minutes

• Serving temp: 45-55°F

MERLOT

Another Bordeaux variety, Merlot is a relatively new addition to the valley having made its way here in the early 1970s. It’s used for blending, adding body, softness, and juicy fruit tones to the very structured and tannic Cabernet Sauvignon, but is also a showcased varietal with lovely aroma and texture.

• Primary notes: cherry, plum, bay leaf, vanilla, smoked cedar

• Pairs with: poultry, braised and roasted meat dishes, mushrooms, soft cheeses, berries

• Decant time: 30 minutes-1 hour

• Serving temp: 60-68°F

SAUVIGNON BLANC

First appearing in Napa Valley in the 1960s, Sauvignon Blanc thrives in warm weather, producing intensely flavored wines. Herbaceous and grassy with bright pops of acidity, most Sauvignon Blanc is fermented and aged in stainless steel tanks or concrete eggs.

• Primary notes: honeydew, guava, grapefruit, lemon, mango

• Pairs with: light summer fare, fresh salads, shellfish, goat cheese

• Decant time: less than 30 minutes

• Serving temp: 45-55°F

ZINFANDEL

Zinfandel is a versatile grape and was the variety of 19th-century winemaking in California. First planted in the mid- to late-1800s in the valley, which has a magnificent collection of old vine growth, Zinfandel has a jammy expression with traces of black pepper spice.

• Primary notes: blackberry, strawberry preserves, cinnamon, tobacco, licorice

• Pairs with: barbecue, turkey, salty cheeses, meaty pasta sauces

• Decant time: 30 minutes

• Serving temp: 60-68°F

FLAVOR EQUATION

While tasting wine is a fairly subjective experience, there are a few common markers that help put a finger (or tongue) on what’s tickling your tastebuds.

WHITES

Most white wine flavors can be classified under three different categories and can be a combo of two descriptive profiles.

Citrus: lemon, lime, grapefruit

Orchard: apple, pear, peach

Tropical: mango, pineapple, papaya

REDS

Red wine flavors are organized by color and have some crossover in fruit notes.

Red: cherry, raspberry, strawberry, currant

Blue: blueberry, boysenberry, plum

Black/Dark: blackberry, fig, black cherry, black currant

All About AVAs

As the first designated American Viticultural Area (AVA) in California, and the second in the United States, Napa Valley is a pretty special place when it comes to grape growing and winemaking (but you already knew that!). This is due in large part to Napa Valley’s unique appellations — there are 16 sub-AVAs — each with its own terroir, climate, and attributes. So what’s the deal with these growing regions, and do they really affect the way a wine tastes? Spoiler alert: They totally do.

The Essential Wine Guide: The Land

ATLAS PEAK

Rugged and high in elevation, Atlas Peak is known for its stark red, volcanic soils and low water retention. It also runs roughly 10-15°F cooler than other AVAs on the valley floor.

Cabernet Sauvignon, Chardonnay, Merlot

Tasting Notes: Ripe, dark fruit flavors with bold tannins and slight savory notes.

CALISTOGA

This northernmost appellation is the most geologically uniform AVA and has an extreme diurnal shift, peaking above 100°F during the day and cooling off to 40°F at night.

Tasting Notes: Bold, concentrated fruit notes with a mineral streak.

CHILES VALLEY

Chiles Valley, located in the Vaca Mountains, has some of the region’s oldest vines. This AVA tends to run cooler than others, resulting in slower fruit maturation.

Tasting Notes: Full-bodied with big berry notes and a balanced, elegant acidity.

COOMBSVILLE

This growing region is tucked into the foothills of the Vaca Mountains and has a moderate climate with volcanic, alluvial soil.

Cabernet Sauvignon, Chardonnay, Merlot Tasting Notes: Intense, aromatic reds and bright, balanced whites are fresh and well-structured.

DIAMOND MOUNTAIN DISTRICT

Named for the reflective shards of volcanic glass found in its fine-grained soils, Diamond Mountain experiences moderately warm temps across its varied topography and elevations.

Tasting Notes: Distinct structure and blue fruit characteristics with softer tannins.

HOWELL

MOUNTAIN

Located high above the fogline, and ranging in 1,400-2,600 feet in elevation, Howell Mountain is warmer and drier than other AVAs and has shallow, well-draining soil.

Cabernet Sauvignon, Merlot, Zinfandel

Tasting Notes: Big, inyour-face tannins with aromas of berry and dark currant, notes of earth, soft florals, black fruit, and mocha.

LOS CARNEROS

Thanks to the breeze and fog that roll in from the San Pablo Bay, Carneros is known for its cool temperatures and low rainfall.

Chardonnay, Merlot, Pinot Noir

Tasting Notes: Cool temps make bright, crisp, acidic whites and spicy, berryforward reds.

MOUNT VEEDER

Even though it’s the valley’s largest AVA, Mount Veeder’s rugged mountain terrain, sedimentary soil, and moderate climate produce low yields and wines that age well.

What Grows Here?

Cabernet Sauvignon, Chardonnay, Merlot Tasting Notes: Known for brambly or briarly flavors, Cabernet Sauvignon is moderate to bold in tannins with herbal and floral aromatics.

OAK KNOLL DISTRICT OF NAPA VALLEY

A cool marine layer lingers over Oak Knoll into the late morning, resulting in a long growing season. The AVA has two distinct, volcanically derived soils that divide the fan-shaped appellation.

What Grows Here?

Cabernet Sauvignon, Chardonnay, Merlot, Pinot Noir, Sauvignon Blanc, Syrah Tasting Notes: Rich, earthy and herbal reds are abundant, while whites elicit bright, citrus-forward notes.

OAKVILLE

Home to some of the area’s most famous vineyards, Oakville is centrally located with well-draining, gravelly soil. It can get quite hot, but morning and evening fog cools things off, helping maintain grape acidity.

What Grows Here?

Cabernet Franc, Cabernet Sauvignon, Chardonnay, Merlot, Sauvignon Blanc

Tasting Notes: Reds offer big, ripe fruit notes with rich tannins, and hints of spice and vanilla

flourish after aging in oak barrels. Sauvignon Blancs typically exhibit melon, apple, and pear flavors.

RUTHERFORD

This warm, sunny AVA is split between western and eastern sections. Each have their own soil compositions affecting water retention and fertility.

Cabernet Sauvignon, Merlot, Sauvignon Blanc

Tasting Notes: Cabernet Sauvignons are known for “Rutherford dust,” an expression of distinctive terroir with an earthy quality.

SPRING MOUNTAIN DISTRICT

On the steep eastern slopes of the Mayacamas Mountains, vineyards here mostly sit in sandstone and shale soils above the fogline and experience warmer nights and cooler days.

Cabernet Franc, Cabernet Sauvignon, Chardonnay, Merlot

Tasting Notes: Spicy and bright with plenty of tannins, black fruit flavors, like boysenberry and blackberry, are the star here.

ST. HELENA

The narrowest section of the valley floor, St. Helena enjoys warm weather from the heat reflection off the flanking hillsides.

Cabernet Sauvignon, Merlot, Petite Sirah, Sauvignon Blanc, Zinfandel

Tasting Notes: Super-concentrated fruit reigns supreme with secondary notes of cacao, coffee,

graphite, and soft florals.

STAGS LEAP DISTRICT

Steeped in winemaking history, Stags Leap was the first AVA in the U.S. to be created based on its distinct soil qualities. Nestled against a hillside, it stays warm all summer long.

Cabernet Sauvignon, Merlot, Sauvignon Blanc

Tasting Notes:

Typically inky-black in color, the reds are lush and opulent with a distinct minerality akin to slate or graphite.

WILD HORSE VALLEY

Due to its elevation and proximity to San Pablo Bay, this AVA is the valley’s coldest, often running 10°F cooler than Los Carneros.

What Grows Here? Chardonnay, Pinot Noir, Sauvignon Blanc

Tasting Notes: Though yields are low, fruit is uniquely intense with spicy, fruit-forward reds and fresh, slightly herbaceous whites.

YOUNTVILLE

Home to Napa Valley’s very first vineyard (planted by George Calvert Yount), Yountville is a moderately temperate climate with a cool marine layer influence and gravelly, loamy soil.

While Cabernet Sauvignon and Chardonnay are the king and queen of grapes, there are many other varieties that call Napa Valley home. Here’s a taster.

Cabernet Franc: Along with Sauvignon Blanc, Cabernet Franc is the genetic parent to Cabernet Sauvignon hailing from France’s Loire Valley.

Wine Talk

Ever heard someone describe wine and think: What the heck are they talking about? Here’s a quick guide of some commonly used terms to give you a leg up for your next tasting.

Acidity: That fresh, crisp zing that makes your mouth water. Wines without acidity are referred to as flat.

Balanced: When wine’s main components — acid, fruit, and alcohol — live in perfect harmony on your taste buds.

Body: Categorized as light, medium, or full, it’s the impression of the weight or thickness on your palate. Think about how skim, 2%, or whole milk coats your mouth.

Dry: The opposite of sweet, a dry wine is free from any residual sugar after fermentation.

Fruity: Also referred to as fruit-forward, it’s the intensity of fruit in a wine’s aroma and on the palate. And while fruity and sweet can often be conflated, a fruity wine isn’t always sweet.

Legs: The streaks of wine that fall down the sides of the glass. They are a measure of a wine’s viscosity. Slow, thick legs indicate the wine is higher in alcohol and/or residual sugar.

Minerally: A flavor or aroma descriptor used for wines that elicit metallic, rocky, or oceanic elements.

Mouthfeel: This is how a wine feels in your mouth. It can be described as soft, chewy, rough, round, complex, and more.

Oaky: Related to wine that’s been aged in an oak barrel, this shows up as vanilla in whites and smoky, toasty tones in reds.

Tannins: An important component of red wine, tannins add structure and are described as astringent, firm, or soft. When someone describes a wine as “dry,” they likely mean tannic.

Malbec: An altogether exciting variety made famous by the vineyards of Argentina, Malbec elicits dark fruit notes with rich, complex flavors, such as blueberry, tobacco, and sage.

Pinot Gris: A variant of Pinot Noir with grayish-blue hued fruit, Pinot Gris (or Pinot Grigio in Italy) typically has big aromas of citrus, pear, apple, and melon.

Pinot Noir: Primarily found in coastal California vineyards, Pinot Noir also flourishes in Los Carneros, producing earthy aromas, bright acidity, and silky textures.

Petite Sirah: Often confused with Syrah, Petite Sirah is commonly used in Bordeaux-style blends but can also stand alone, producing dense, inky wines with big, bold tannins.

Petit Verdot: Full-bodied and aromatic, this variety is high in tannins and spicy in nature. Another Bordeaux classic, Petit Verdot is almost exclusively used in red blends.

Syrah: Also known as Shiraz, this variety thrives in all climates. Warmer temps produce juicy and jammy wine with strong spice character, while cooler climes make lighter wines with earthy, gamey tones.

Sparkling wine is one of Napa Valley’s most surprising — and delicious — secrets.

As one of the first French-owned sparkling wine ventures in the U.S., Chandon is a household name that combines French tradition with top-tier fruit. Try the bright bubbles at Chandon’s Yountville tasting room.

Known for its Napa Valley Blanc de Noirs and California Brut, Paula Kornell is a St. Helena mainstay, with a prolific winemaking history dating back to the late 1950s. Tastings are by inquiry only.

FROM FIELD TO GLASS

After spending their whole life on the vine, only the choicest grapes end up in your glass. Here’s how it happens.

SNIP, SNIP

An often overlooked process, winter pruning of the vines is crucial for proper growth.

After harvest, skilled vineyard workers train vines to grow a certain way (an important element for specific varieties) and allow for precision and timing for harvest.

IT’S GROW TIME

Bud break, which takes place over a two-month period, is when the first young buds of the new season emerge. After about a month, tight bunches of flowers dot the vines (called flowering), which eventually turn into clusters of mature fruit.

HARVEST FEVER

After the grapes have been tasted and tested for sugar levels, it’s harvest time. Grapes are mostly hand-picked at night or in the wee hours of the morning. Cooler temps help stabilize sugar levels and ensure fresh fruit aromas and concentration.

WINE MAGIC

Once grapes are in their vessel, yeast is typically added. This converts the sugary-sweet juice into wine. Et voilà, fermentation.

When wine is done fermenting, it is then transferred to a barrel, cement egg, or steel tank to age and develop.

POPPIN’ CORKS

When wine has aged completely to the winemaker’s specifications and preferences, it’s time to bottle it up, where it can age for a few months or several years. After all that, you can finally pull the cork and pour yourself a gorgeous glass of Napa Valley wine.

Know Before You Go

Make the most out of your trip to Napa Valley with a little pre-planning. From reservations to refueling, here’s how to sip like a pro.

MAKE A RESERVATION. Many tasting rooms require reservations, so call ahead and book an appointment. And if plans change, do your best not to cancel the same day as your reservation.

(See p. 87 for a list of tasting rooms.)

STAY HYDRATED. With all your planned wine tasting, drink plenty of water throughout the day. Bring a reusable water bottle and refill it at tasting rooms you visit.

FUEL UP. Breakfast is definitely the most important meal of the day before wine tasting. Turn to our Culinary Guide on p. 123 to see where to eat.

When to Visit the Valley

Napa Valley has three distinct seasons. But no matter when you visit, there’s never a bad time to explore.

FIELDS OF GOLD: MUSTARD SEASON

January — March

It’s truly a magical time. A sunny blanket of yellow mustard flowers turns Napa Valley’s already picturesque area into something otherworldly. Fondly referred to as “the season between seasons,” mustard season hits its peak mid-February and makes for some spectacular photo ops. But it’s more than just a selfie backdrop: Mustard is hugely beneficial, maintaining soil health and acting as a natural alternative to harmful chemicals and pesticides.

SAVE FOR YOUR SIPS. Budget for tasting fees (and tips!), which range from $20 to $200 or more, based on the level of experience.

PACE YOURSELF. With so many fantastic wineries, it’s normal to want to visit as many as you can. Take it easy and plan for two to three visits a day. (Don’t worry, you’re going to drink plenty of wine!)

MAP IT OUT. While Napa Valley is a relatively small place, sometimes it can take a while to get to a tasting room, say, up on Howell Mountain from the valley floor. Look up your route ahead of your tasting and allow enough time to get around.

CRUSHIN’ IT: HARVEST SEASON

August — October

Without a doubt, harvest is the most exciting time of year in the valley. The air buzzes with anticipation as wineries and vineyards prep for the coming harvest season — a severalmonths-long push to pick, sort, crush, and ferment tons upon tons of fruit. Harvest begins with sparkling wine grape varieties, followed by whites and cooler climate reds like Pinot Noir, and ends with big reds. Considered peak season in the valley, harvest offers hot, sunny days and cooler evenings.

CABERNET IS KING: CABERNET SEASON

November — April

The post-harvest period is the coziest and least-frequented time of year for visitors to experience the very best of Napa Valley. Fewer people means you’re likely to have more personalized experiences — chat with a winemaker, or talk at length with tasting room experts about what’s being poured. Plus, the cooler weather and gorgeous scenery is second to none as row after golden row of vineyard vines illuminate the valley in a stunning display of fall foliage.

● Charbono: Originally from eastern France, Charbono produces medium-bodied wines with berry aromas, high acidity, and a slight smoky character.

● Ribolla Gialla: Bright and fresh with notes of orchard and citrus fruits, Ribolla is an ancient white variety from northern Italy.

● Friulano: This grape comes from Friuli, in northern Italy, and is often mistaken for Sauvignon Blanc. It makes citrusy, floral, minerally whites.

● Vermentino: Hailing from Mediterranean countries, Vermentino produces a complex, light-bodied white with fresh floral and citrus notes and a slight bitterness reminiscent of almond.

It’s a Matter of Taste

The flight is prepped, the wine is poured … now what? While drinking wine is a great time, when it comes to the actual tasting part, things can get a little fuzzy. Luckily, Napa Valley somm Amanda McCrossin has an easy threestep process to make wine tasting a little less daunting.

Sip Tips

Enhance your tasting experience with these tips from McCrossin.

● Hold your glass by the stem, not the bowl. Your hands emit heat, which changes how a wine smells and tastes.

SMELL Experiencing the aroma of a wine is a big part of any tasting. McCrossin recommends putting your nose in the glass and moving in a cross motion: top, bottom, left, right. This is so you smell the entire surface area of the wine, as well as pick up different aromatics in each nostril. (Did you know you have a dominant nostril?!)

SWIRL Once you’ve gotten a good sniff, it’s time to swirl. Swirling aerates wine, introducing oxygen, which affects aroma and taste. (Note: It’s important to swirl after you smell the wine, since aromas will change once you introduce oxygen.) Holding the glass by the stem, swirl your wine with a small movement of the wrist, or place the base on the table and move in a small circular motion.

SIP Now comes the taste. (Finally!) According to McCrossin, it’s important to “sip your wine in threes.” The first sip is your primer coat, allowing your palate to adjust to the new wine. The second sip allows you to identify the wine’s flavor and texture. And the third sip is when you form your opinion.

SWIRLING VS. DECANTING

They do the same thing: introduce oxygen to draw out new aromas and “wake up” the wine. Reds, whites, and even sparkling wines can benefit from a bit of oxygen, but you don’t have to over do it. Too much air can diminish flavor and eliminate subtleties, especially in older wines.

● Don’t drink water in between sips of wine. While you should stay hydrated, chugging water between tastings actually changes the pH of your mouth, in turn affecting how a wine tastes. If you do drink water, wait a few seconds for your mouth to neutralize.

● It’s OK to spit — it’s actually encouraged! This allows you to taste more wine without going overboard.

● Skip the perfume and cologne. It can overpower the aromas in your glass.

● Enjoy! No one expects you to come up with the “right” answer. It’s more important to remember a wine you like by connecting it to where you are and who you’re with.

Women are emerging in the wine industry in a big way. Napa Valley specifically has become a hot spot for women winemakers — trailblazers who are leading not just by example, but with the wine they make as well.

Many have heard about Lindsay Hoopes’ transition from the courtroom (she was a San Francisco assistant district attorney) to the wine cellar. But there’s nothing like hearing Hoopes tell it herself.

Amelia Morán Ceja President, Ceja Vineyards

Wines at Ceja Vineyards represent the Ceja family’s rich Mexican heritage, and at the center of all this excitement is Amelia Morán Ceja, the matriarch and living bridge between the current generation running the company and the older generation who created it.

At 12 years old, Ceja emigrated from Jalisco, Mexico, to America, joining her father in the vineyards. She and her husband bought their first vineyard in 1982 and have been making wine ever since.

The journey wasn’t easy, though. Ceja likes to say she faced what outsiders perceived to be three major challenges: She was Latina, she was an immigrant, and she was a woman. Haters said she’d fail. She’s proved them all wrong.

Today, a visit to the Ceja tasting room is a bilingual experience — a concerted effort to make native Spanish speakers feel more at home.

“We are breaking down those barriers of intimidation by allowing novices to explore wines on their own terms, not ours,” Ceja explained.

“People who visit us are coming because they know they can be who they are without judgment.”

Women in Wine: Priyanka French

Winemaker, Signorello Estate

Priyanka French has never been one to shy away from a challenge. So after Signorello Estate was damaged during the 2017 Tubbs Fire, she joined the team with the goal to rebuild the brand.

Construction on a new winery is underway, and French remains focused on attention to detail and quality in the vineyards.

French went to school in India, studied wine there, and came to the U.S. to sharpen her skills through internships and additional development.

Today, she has a Master of Science in Viticulture and Enology from the University of California, Davis, and was cellar master and enologist at Dalla Valle Vineyards before joining Signorello.

Perhaps her proudest work has come with the Bâtonnage Forum, an organization that empowers and provides opportunities for women in the industry.

“There is still a lot of ground to cover,” she says. “The bigger this tribe of women winemakers becomes, the more forward progress we can all make together.”

Creating menus for Solage Resort’s sophisticated Solbar restaurant and the new Picobar (featuring regional Mexican cuisine), executive chef Gustavo Rios has said that it’s a team effort, and he takes everyone’s input very seriously. Rios draws on his upbringing in Ensenada, Mexico, and also on his line cooks, most of whom come from Oaxaca, Michoacán, Mexico City, Morelos, and Puebla. The result is roast octopus in garlicky ajo blanco bread-almond broth at Solbar and Liberty Duck confit tacos draped in sumptuous mole at Picobar. For someone who initially planned to be an architect, Rios has quite the culinary resume, working at top spots like Yountville’s Bouchon Bistro and Ad Hoc. He joined Solbar as a prep cook in 2007, then rose from chef de partie to chef de cuisine. The resort holds an extra special place in his heart, too. He met his wife at Solage when she was a hostess and proposed to her on the property in front of his entire family — a process he said that makes running a restaurant look easy. – Carey Sweet

Indulge in the Cabernet and Earth + Sky Chocolates pairing at Chateau Buena Vista tasting room in downtown Napa; the bonbons are literal works of art. Anette’s Chocolates has locations in downtown Napa and Oxbow Public Market. Follow your nose down St. Helena’s Main Street to Woodhouse Chocolate (go to p. 49 for more). Watch artists at work through the open kitchen at Kollar Chocolates, and take home a sweet treat — that is, if it makes it home.

On Yountville’s Washington Street, the jewelcolored Bouchon Bakery is as pretty on the outside as its pastry cases are inside. Chef to Watch

When your childhood hobby is reading candy-making cookbooks and your favorite family outing is shopping at farmers’ markets, it’s a pretty good sign you were destined to be a chef. Following her dream, Northern California native Jammir Gray graduated from The Culinary Institute of America in Hyde Park, New York, in 2008 before heading back to the Golden State to cook at the then-Michelin-starred One Market Restaurant in San Francisco. Her career took her to Chicago, Philadelphia, Washington, D.C., then back to San Francisco as chef de cuisine at International Smoke. Wine country came calling in 2020, and she joined Napa’s Compline as executive chef. Gray’s Black and Filipina heritage, plus her global outlook, inspires innovative dishes with unexpected flavors, such as rich, earthy Turkish marash chile, a platter of winter crudités and beet hummus, Aztec-origin amaranth grains, or vegetable shepherd’s pie. The chef has said that she enjoys showing people new ingredients, and diners tell her they love learning through her creative presentations, like the Cornish hen kicked up with tart sumac and roasted persimmons. Gray shares her gift in unique ways, showcasing some favorite Filipino dishes such as Kare-Kare (an oxtail stew) and Brazo de Mercedes (a custard-filled meringue roll) at a benefit event for the Napa/Solano chapter of Girls on the Run, a nonprofit that teaches empowerment and team building through running. – C.S.

Darryl Bell Stateline Road Smokehouse

It takes a true talent to impress Kansas City food critics when you’re cooking with meat, but chef Darryl Bell did it in his first job as chef de cuisine at Benton’s Steak & Chop House, voted “Best Steakhouse” and “Best Brunch in Kansas City” by Kansas City magazine. He then wowed even bigger culinary names, working at Grant Achatz’s three-Michelin-star Alinea in Chicago and at Perry Hoffman’s Michelin-starred Étoile in Yountville. And after eight prolific years with Thomas Keller’s acclaimed Bouchon Bistro, he embarked on a new journey at St. Helena’s Press as chef de cuisine. Here, he beckoned diners with elaborate dishes like premium American Wagyu ribeye cap with oilseed radish, flowering broccoli and tamari glaze, or sweet-and-sour pig ears in espelette glaze. Despite Bell’s luxury leanings, his love of barbecue remains. His 816 BBQ Sauce is a favorite among Napa Valley vintners and chefs. The Hartunians always dreamed of living in Napa, and after they made the move, they never looked back.

“We love Napa as a community,” says Arthur. “It has a smalltown feel, but it’s an exciting place.” Here are a few of their favorite places to dine and drink in the valley.

A Spirited Bunch

With a passion for spirits and cocktails, Arthur and Lusine Hartunian are taking Napa Valley Distillery to new heights.

In 2009, Arthur and Lusine Hartunian decided life was too short to do work they didn’t enjoy. They’d always been passionate about craft spirits, so they got the idea to start a distillery, did about six minutes of research, and then dove in.

“We didn’t quite know what we were in for, but we let the passion drive us,” says Arthur. And, what a ride it’s been.

The couple began making Meyer lemon liqueur in their home kitchen — painstakingly peeling thousands of organic lemons by hand — and designed, bottled, packaged, and marketed the product on their own. Less than a month after its release, the liqueur won a Platinum Medal at the World Spirits Competition.

Fast-forward to today, and the Hartunians’ award-winning offerings extend well beyond their unique take on limoncello. From bourbon barrel-aged rum and geranium-infused brandy to velvety vodka and a grape-based rye whiskey, Napa Valley Distillery produces rare, distinctive spirits using old-world techniques.

As the only distillery in Napa since Prohibition, it’s the perfect place to immerse yourself in the craft cocktail culture of the valley.

“We’ve added another layer to Napa Valley’s offerings,” he says. “We complement the wine community and give people one other thing to explore.”

Get a taste by visiting the distillery’s location at Oxbow Public Market, where you’ll find a trove of artisanal bitters, syrups, shrubs, and vintage bar tools alongside premium spirits. And, for a behind-the-scenes look, book a tour at the main distillery on Stockton Street.

We’ve added another layer to Napa Valley’s offerings. We complement the wine community and give people one other thing to explore.

For the Hartunians, it’s important to provide experiences that can’t be found elsewhere in the area, a desire that inspired their latest downtown Napa concept, the ArBaretum — a botanical-themed craft cocktail bar and kitchen where guests can enjoy a prix-fixe cocktail and food pairing journey.

“What keeps us going is our guests enjoying what we’re doing,” says Arthur.

Running three locations, the Hartunians certainly have their hands full, but they wouldn’t have it any other way.

Quite a Ride!

Sure, you can tour Napa Valley by car or chauffeured ride. But the best way to see the valley? Use pedal power and bike along the car-free Napa Valley Vine Trail.

The Napa Valley Vine Trail, featuring a 12.5-mile (20 kilometer) paved path stretching from south Napa to Yountville, is a beautiful, safe, and family- and pet-friendly way to see Napa Valley. Enjoy beautiful valley views with stops along the way to eat or sip wine. Locals and visitors alike appreciate the wellmaintained, easily accessible path. In fact, it’s so popular that work is now underway to connect Calistoga and St. Helena, and ultimately the Vine Trail will stretch from the south at the Vallejo Ferry terminal all the way north to Calistoga, offering 47 contiguous miles (75 kilometers) of fun.

Chuck McMinn, who’s headed the effort since 2008, says the trail offers a fresh perspective on familiar ground.

“For visitors, it’s a wonderful way to get up close and personal with a brand new place,” he says. “There is no greater way to experience Napa Valley.”

A Maker’s Journey

Get to know the local creatives who’ve found their muse — and community — in Napa Valley.

Space to Create

Meet multimedia artists Melissa and Mercedes Baker, aka the Baker sisters. they grew up with animals and the great outdoors, not television and pop culture. “This gave us time to cultivate art, writing, and creativity, because we didn’t have other distractions,” Melissa recalls.

Melissa and Mercedes Baker are people-people. They’re also painters, musicians, designers, and performers, but the heartbeat of their work is collecting like-minded makers. From their sixacre ranch in St. Helena, the janes-ofall-trades founded the Ehlers Society, an eclectic network of artists who both inspire each other’s individual work and come together for largescale events.

The sisters are from Napa Valley. Their father was a veterinarian and

would play, people would create, and the community just started to form,” recalls Mercedes.

Inside their 1920s hay barn-turnedstudio, the sisters have built workspaces for themselves and others; Melissa’s art is primarily abstract, while Mercedes’ is representational. Steps away, small stages, large art installations, couches, wine barrels, metalworks, and other whats-its dot the property. The energy is palpable here, and so is the talent.

“There are people from all over the world here, and they have incredible collections in their homes and at their wineries,” Mercedes says. “It’s a small town, but we have access to all this visual art.”

This feed-and-be-fed approach not only fosters community, it’s what makes Napa Valley feel like home. “We grew up in barns tinkering around, and now here we are,” says Mercedes. “Adults … in a barn … getting to do art. What a life.”

Meet ceramicists Nikki Ballere and William Callnan III of NBC Pottery.

It happens all the time, and yet the wonder remains: Nikki Ballere and William Callnan III will deliver their latest order to one of Napa Valley’s finest dining establishments — say, The French Laundry.

“Chef will grab one of our pieces, plate it up, and we’ll all watch it come alive,” says Callnan. “We’ve been doing this for years, but that moment — when we see how our pottery complements, and even elevates, the meal — that is still magic.”

For this husband-and-wife team behind NBC Pottery, what started with an order from The Restaurant at Meadowood has exploded into a well-earned reputation as the valley’s source for custom ceramics. Their style is a bit rustic,

serendipitously organic, sometimes delicate, always handcrafted.

These collaborations are unique, says Ballere, who admits she’s still humbled by the caliber of her clientele, from the tasting room at The Terraces to art installations at Four Seasons Resorts and Residences Napa Valley to tableware at Michelin-rated restaurants.

“It doesn’t happen like this everywhere — wineries, resorts, and restaurants wanting to go back to handmade and supporting local artisans,” she says. “Visitors appreciate that. Ultimately, we’re all feeding each other.”

The scenic drive to NBC Pottery, located in Howell Mountain’s charming Angwin, is a treat in itself. And once

you arrive, the gallery-studio is a feast for the eyes: shelves of colorful pottery, a throwing space, retail goods, even a wall of cups. Throughout, works by other local artists are on display, a nod to the pair’s passion for supporting and reinvigorating their community. Regular happenings include hands-on workshops and seasonal events, and visitors can book a private class for an especially memorable outing.

“When people visit Napa Valley, they want to go home with a story,” Ballere adds. “Everyone here is proud of their work — of the grapes they grow or the art they make. It’s a joy to share it.”

Meet painter and instructor Nancy Willis.

ou can always recall your experience when you look back at work that you’ve made,” says painter and printmaker Nancy Willis. “You remember exactly where you were, the temperature of the air, the color in the landscape, the wind. What was the smell? Were the almond blossoms in bloom? All those things come back afterwards.”

Willis has been an artist in Napa Valley for more than 35 years. For travelers hoping to hang on to their Napa Valley vibes for longer, a session

with her can help time stand still. She offers small-group workshops at local wineries, print-making classes at her sun-drenched studio, and even painting trips both abroad and domestic.

Willis, who grew up in Ohio but got to California “as soon as I could,” explores themes of intimacy and social connection with series about the bed, the dinner party, and the chandelier, evoking a strong sense of place. During her time at The Culinary Institute of America, Willis taught how to see through the lens

of the visual arts. This experience inspired her exhibition Nourish, which aimed to “remind my community how artists have been involved with the rituals of dining for centuries,” Willis says. She’s also received grants to bring empathy for global conflict closer to home. In recent work, she explored the effects of the 2020 wildfires on the landscape and its renewal.

Curious by nature and an avid explorer, Willis says Napa Valley’s beauty helps her with the discipline of art, while opportunities to socially engage — from helping travelers shop her studio for the perfect souvenir to leading a group of friends in a private workshop — energize her.

“Artists are always looking at things a little differently,” adds Willis, who says she specializes in quelling fears. “As an instructor, that’s what I’m teaching: how to see, and not just to look. But how to see.” And in doing so, remember.

SAN FRANCISCO BAY FERRY

The ferry departs from San Francisco’s Ferry Building along the Embarcadero waterfront and is accessible by Bay Area Rapid Transit (BART) from SFO.
