1 Preheat oven to 200°C (180°C fan). Place brie in the centre of a medium, oven-proof fry pan. Lightly score the top of the brie with 2cm squares.
2 Top brie with walnuts, grapes, and chili, then drizzle honey over the top.
3 Bake for 10 minutes. Top with fresh rosemary and honeycomb. Serve with crusty sourdough.

SLOW-ROASTED LAMB SHOULDER WITH CHIMICHURRI
Prep time 25 minutes
Cook time 4 hours
Serves 6-8
INGREDIENTS
2 brown onions, thinly sliced
4 celery stalks, diced
1.8kg lamb shoulder, bone in
4 white potatoes, cut into wedges
4 rosemary sprigs, roughly chopped
1 tablespoon cumin
1 teaspoon harissa spice
500ml chicken stock
40ml extra virgin olive oil
Sea salt and pepper
1 lemon, wedges to garnish
FOR THE CHIMICHURRI
1 small Spanish onion, finely diced
3 cloves garlic, minced
1 bunch parsley, finely chopped
1 teaspoon dried oregano
1 teaspoon dried chili flakes
1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar
Sea salt and pepper to taste
METHOD
1 Preheat the oven to 180ºC (160°C fan). Layer onions and celery in a large, shallow, oven-proof dish. Place lamb on top. Arrange potatoes around the lamb.
2 In a medium bowl mix the rosemary, cumin, harissa, chicken stock, olive oil, salt, and pepper. Pour over the lamb and add 3 cups of water into the
pan, on the side. Cover with baking paper and foil. Cook for 3 hours.
3 Remove the baking paper and foil. Cook for another hour, making sure potatoes are not covered so they crisp up.
4 To make the chimichurri, place onion, garlic, parsley, oregano, chili flakes, olive oil, vinegar, salt, and pepper in a bowl. Mix and set aside.
5 To serve, drizzle some of the chimichurri over the lamb. Serve remaining chimichurri on the side.

PAN-FRIED GNOCCHI WITH PUMPKIN, PINE NUTS AND SAGE
Prep time 20 minutes
Cook time 25 minutes
Serves 4
INGREDIENTS
700g butternut pumpkin, cut into 2cm cubes
250g fresh gnocchi, store-bought
80g unsalted butter
⅓ cup pine nuts, raw 60ml extra virgin olive oil
12g sage leaves, plus extra for garnish
80g pecorino cheese, grated
METHOD
1 Boil salted water in a large, deep casserole pan. Add pumpkin cubes and simmer for 10 minutes. Add gnocchi and cook until they float (approx. 4 minutes).
2 Drain the gnocchi and pumpkin, then return to the pan. Create a space in the middle, add 60g butter, then add pine nuts. Toast for 1 minute and combine with the rest of the ingredients.
3 Add 40ml extra virgin olive oil, salt, and pepper. Pan fry for 8-10 minutes stirring intermittently, with a spatula to lift ingredients and achieve the brown crust on the gnocchi and pumpkin.
4 Place 20g butter and 20ml extra virgin olive oil in a small pan. Add sage leaves and fry for 1-2 minutes until crisp.
5 Serve gnocchi with fried sage leaves a few spoons of the butter and olive oil, and top with finely grated pecorino.

SIDE OF SALMON WITH LEEKS AND TRIO OF CITRUS

1 salmon side, deboned
3 lemons, 2 zested and juiced, 1 thinly sliced for garnish
2 limes, 1 zested and juiced,
1 thinly sliced for garnish
2 oranges, 1 zested and juiced,
1 thinly sliced for garnish
2 garlic cloves, minced
½ tablespoon seeded mustard
5 tablespoons extra virgin olive oil
Salt and pepper to taste
1 small fennel bulb, sliced with a mandoline, plus fronds for garnish
METHOD
1 Preheat the oven to 200°C (180°C fan). Line a baking tray with parchment paper and place the salmon, skin-side down. Set aside.
2 In a bowl, combine the zest and juice of 1 lemon, 1 lime and 1 orange. Add garlic, mustard, 3 tablespoons of extra virgin olive oil, salt, and pepper.
3 Pour the citrus dressing over the salmon.
4 Bake for 25-30 minutes, until the thickest part of the salmon is cooked through.
5 While salmon is baking, place the fennel and fennel fronds in a medium bowl and mix with 1 lemon zest and juice, 2 tablespoons of extra virgin olive oil, salt and pepper. Mix well.
6 To serve, top half of the salmon with thinly sliced citrus and half of the shaved fennel and fronds. Season with salt and pepper and serve with remaining fennel on the side.

POACHED PEARS IN SPICED RED WINE SYRUP
Prep time 15 minutes
Cook time 35 mins
Serves 4
INGREDIENTS
2 cups dry cabernet sauvignon red wine
2 oranges, juiced, plus peel of one ¾ cups caster sugar
1 cinnamon stick
2 whole star anise
1 vanilla bean, cut in half lengthwise
4 firm pears
Clotted or double cream to serve
METHOD
1 In a saucepan, place the red wine, sugar, orange peel and juice, cinnamon, star anise, and vanilla bean. Stir and set aside.
2 Peel pears with the stem left on. Carefully place pears into the red wine mixture and simmer on low heat for approximately 20 minutes, rotating the pears gently after 10 minutes with a slotted spoon.
3 Remove the pears and set aside to cool. Strain the poaching liquid into a separate saucepan.
4 Reduce the syrup over medium heat for 15 minutes, until it thickens and reduces by half.
5 To serve, dollop clotted cream in a coupe or bowl and gently place a pear on top. Generously spoon the red wine syrup over the pear.

For more than 10 years, Three Beans has been fueling customers at St Ives before and after their weekly grocery shop (it’s directly opposite Woollies). We asked Andrew, café manager, for his three tips on celebrating Mother’s Day at Three Beans. Book ahead: “We do get a lot of people coming in specifically for a Mother’s Day breakfast, so it can get quite busy.”
Top menu picks: “I’d recommend the smashed avocado (with grilled haloumi or native macadamia and finger lime bush dust), or we do a nice chilli scrambled eggs too.” Think outside the box: “We offer gift vouchers, and we also get a lot of dads and kids who come in just to get coffees for mum.”

JJ’S EATERY
A mainstay at the Village since 2009, Victor, manager and owner of JJ’s, has seen his share of Mother’s Day Sundays. “We have quite a few people that book just for Mother’s Day lunch –especially our regulars,” he says. As for what’s a hit with the Mother’s Day crowd? “Our salads are quite popular, especially our prawn salad and chicken mango salad, while men tend to go for the beef pot pie.”
