One of the nicest ways you can serve seafood on a hot summer day is raw: it’s delicious, refreshing, and an easy crowd-pleaser. There are many types of fish and shellfish that suit this. Kingfish, for example, can be thinly sliced and served alongside oysters and prawns, and raw scallops can be served ceviche-style: sliced and placed back in their pretty shell.

2 Remove the shells and wash thoroughly for serving. Thinly slice the raw scallop meat and refrigerate until you’re ready to serve. 3 When ready to serve, toss the scallop meat in a little freshly squeezed lime juice, a good pinch of salt and a drizzle of extra virgin olive oil. INGREDIENTS 375ml wildflower beer 2 cups brown sugar ½ cup honey 1 orange, juiced and rind peeled 2 tsp cloves 3-4 bay leaves 10kg whole leg cooked ham from Chop Butchery METHOD 1 Preheat oven to 200°C. Combine all ingredients in a saucepan and bring to the boil, stirring until sugar is dissolved. Simmer glaze for 2 minutes over high heat to combine, then remove from heat and set aside. 2 To glaze your ham, brush a layer of glaze over the ham to start the process, then glaze every 5-10 minutes during cooking until all the glaze is used. Continue to cook, basting ham with the glaze and juices that accumulate in the base of the pan – it’s ok to get it nice and sticky and caramelised, the little crunchy bits are the best. 3 Serve the ham, with some of the pan-glaze juices for spooning over.
