Without your dedication, commitment, enthusiasm, and generosity we would not be able to announce that we have achieved our Danish Sisterhood Archival Project fundraising goal of $43,000. This last year has shown us all that anything is possible even a lofty fundraising goal. I am so proud and thankful.

While we have reached our goal, I encourage all of you to continue to make donations to the Archival Project fund as restoration and preservation of our Sisterhood heritage is a continuing and ongoing effort and will be for years to come.

We are constantly adding items to the project, and these things take time and care.

In other great news I reached out to Benedikte Ehlers and Connie Schnell who both have been instrumental in putting together our trips to Denmark. While I do not want to reveal too much, plans for August 2022 are underway, so start saving your money and mark your schedule Out of Office. We are going to Denmark! More information will come out in a couple of months, but I could not contain myself, and say nothing. I hope you are planning on coming with us.

I am also very happy to see that lodges are starting to meet again and posting these notifications on the National Foundation for Danish America’s website. Please remember that we are still in a pandemic, so please continue to follow your state and local guidelines, but where you can, let us get the word out that we are here and ready to talk, hear, show and taste, all that is so wonderfully Danish.

While being Danes, we all celebrate our adoptive or native countries as well, so I wish you all a very Happy Canada Day and a Happy 4th of July.

Dear Sisters, I've been seeing many wonderful Danish festivities returning this year and have enjoyed the photos, videos and stories I've heard from each of them. And there are many more to come throughout the summer and across the country.

Some festivities continue to be offered online-only, but they are no less fun or creative!

I hope that all of you are able to partake in some fun, celebrating our shared heritage no matter if it is an online seminar, a parade, a luncheon or some other fun activity.

I recently had a lovely cookout with some friends and we ended up talking about each of our family's heritage. I was able to share some things about my family history and Danish traditions, while they shared their own histories and traditions. It is wonderful to hear stories of other people's heritage and to note the differences that make them unique as well as the commonalities that can help us all relate to one another. I highly encourage getting to know more about your friends' history, heritage, culture and interests as talking with others and learning from them is the best way to build a community.

Remember, in between having fun this summer, to send along some lodge updates, stories, recipes, photos and more to share with you DSS sisters!

Donation Thank yous

Lodge #100 Anniversary Dinner

Thank you to the following for recent donations to the Danish Sisterhood Funds

Nine ladies plus guests gather at Liberty Lanes in Sandusky to celebrate the 114th Anniversary of our Lodge on June 13, 2021.

A short business meeting took place with the treasurer's report being received and a motion passed to donate $50 to Eva's Place, a local shelter for women and children. It was also decided to being items to donate to Eva's Place to our next meeting.

Joyce Houck and Janice Bradley offered to host the meeting at Bush's Restaurant, on Lakeshore Rd., near Lexington on August 18 at noon.

Correspondence was gone over concerning the MOO District Convention in Greenville on Aug. 14th, the donation to the Danish Cultural Center in memory of Nels Hansen, and the Canadian border still being shut down.

A picture of the members was taken and we departed for our homes after enjoying a nice meal and visited with each other.

A Remembrance of Nels Hansen When I opened my June issue of the Danish Sisterhood News I thought how ironic that the article of the passing of our dear friend Nels Hansen and the article of Ole Amble was on same pages. Nels was born with music in his soul and shared his talents with so many people. He could sing, dance, play the piano, the accordion, and was a church organist. He was a friend to everyone.

As Annette Lind wrote of her family connection to Ole Amble my family had similar memories.

My Danish ancestors are buried at South Sidney.

In the center of the cemetery stands the little white clapboard church called Amble Memorial Sanctuary. It was named after Rev. Ole Amble. My mother would tell about getting up early to go with her dad to build a fire in the stove so the church would be warm for Sunday services. I too have my grandparents’ marriage certificate hanging on a wall dated 1915 and signed by Rev. Ole Amble. The church closed in the 1960’s and since then it is only open for Memorial Day Services and for special occasions such as weddings. For the last twenty years or so Nels played the old pump organ and sang along with some of his children. He also played the organ for Memorial Services at North Sidney Church as the

We have reached our $43,000 goal for the Danish Sisterhood Archival Project at the Museum of Danish America. Each and every donation was precious to us, and helped us reach this important milestone.

Thank you to each individual, lodge and organization who contributed to this incredible project!

The archival of our Sisterhood heritage is a continuing and ongoing effort. We will provide updates to you on the progress, and encourage you to keep the project in mind for future donations.

churches are only a few miles apart. In each of these cemeteries the majority of the tombstones have Danish names and many of them were immigrants.

Nels formed the Danish Cultural Center in Greenville about 10 years ago and had turned the upper floor of the Brotherhood Hall into a museum.

One of his favorite displays is a little chapel that includes a pulpit, altar, church pew, the old pump organ from North Sidney Church, pictures (one of Ole Amble) and a Danish Bible & hymnals. All of these things were donated from various area people. Nels loved history and especially his Danish ancestry. He made many trips to Denmark often taking one of his kids the year they graduated from high school.

Along with holding down a full time job he and his wife Lori raised eight great kids and now there are eight grandkids.

Nels passed away in April from COVID and many of us still have a hard time believing he is gone. He is missed by so many and our hearts go out to Lori and family. He was laid to rest in the South Sidney Cemetery he so loved.

Historian’s Corner

Big Birthdays

by Donna Christensen Thomas, National DSS Historian Now that it is officially summer and we have had plenty of days of high temperatures to prove it, I thought this topic would be very appropriate and should be celebrated.

The young family of Peder Daniel Nielsen (1868-1946) and wife Ane Margrethe Madsen (1862-1928) immigrated from Vedslet, Skanderborg, Denmark in 1893. They immigrated with two young sons, living in Wheatland, Portage county, Wisconsin for a few years where several more children were born for a total of seven children found. The family adopted the NELSON surname.

Eventually they ventured west to Onawa, Iowa, a small town on the Iowa/Nebraska border between Omaha and Sioux City. The father operated an ice cream plant as well as a confectionary shop. The family sold the plant to another man, under whom it failed.

The second son, Christian Kent Nelson (1893-1992) grew up and attended the University of Nebraska, studying chemistry, after which he became a high school teacher. He also worked at the family confectionary business, eventually taking over from his father. According to one source, a boy came into the shop and was undecided about choosing chocolate or ice cream. This quandary led to the idea of a combination of the two which had never been done before. Christian worked for a few years to figure out how to achieve the challenge of covering ice cream with hot chocolate without it melting the ice cream. He is purported to have had "only nineteen cents in his pocket and an idea." He visited a number of ice cream plants and promoted the idea. "Ridiculous! " Laughing naysayers were quick to say that it couldn't be done, but he was persistent and in 1921, he partnered with Russell Stover (18881954) here in Omaha. Stover, a Kansas native and graduate of Iowa State University, was a chemist and entrepreneur who partnered with his wife Clara to form their candy company. The two men prevailed and accomplished the feat with addition of coconut oil to the chocolate syrup, heated to 115 and cooled to 90 degrees Fahrenheit which formed a hard shell of chocolate on the ice cream Danish Sisterhood News, July 2021

brick. They patented the product. He considered the name of "I-Scream" for the product, but eventually settled on the name of "Eskimo Pie." They sold the license to produce the patented item to a number of cities across the USA. It was made popular through a very aggressive newspaper advertising campaign across the nation. Nelson became president of the Eskimo Pie Corporation which was sold in 1924 to U.S. Foil Co. Mr. Nelson retained his affiliation and continued to invent new products and ways to store and deliver the frozen treats. He retired as vice president in 1961.

More than one million Eskimo Pies were eaten per day in 1922. Royalties earned a nickel for each dozen of the treat manufactured. The weekly earnings were split between Nelson and Stover and were about $30,000 per week. Sales were easily in the millions of dollars annually even one hundred years ago! Throughout his life, he travelled to various places that produced the ice cream treat.

In March of 1926. Myrtle Rhoda Skidmore (1901-1991) who was originally from Kentucky, married the "Mr. Eskimo Pie Man" in Louisville, KY. Her family had been in the USA for several generations. No known children were born to this union.

His parents ended up in Laurens, Otsego county, New York along with some of the younger children, but most of the family ended up in Orange county, California after the parents had died.

He employed some family members. A number of them lived there either in their home or in the area.

So Happy 100th Birthday Eskimo Pie!! I am still trying to locate where they are sold here to provide them to Danish Sisterhood friends as well as other Scandinavian groups to celebrate the anniversary as I share the story, "the legend"!

Red Fruit Pudding (Rødgrød med fløde)

6 c. fresh strawberries 3/4 c. sugar 6 c. water Heavy cream

4 Tbsp. cornstarch, mixed with water

Heat berries, sugar and water. Add constarch mixture. Cook until thick and clear. Serve with heavy cream.

Gingered Pear-Danish Cheese Salad (Oste Salat med Ingefær Pære)

1/2 c. mild Danish cheese, such as Fontina, Creamy Havarti, or Swiss 2 Tbsp. fresh lemon juice 1 tsp. Dijon-style mustard 1/2 tsp. finely grated gingerroot

3 Tbsp. olive oil 1/4 c. water Salt and freshly ground pepper to taste 2 ripe, firm pears 4 stalks celery, thinly sliced

Cut cheeses into small cubes; Set aside.

Dressing: Whisk together lemon juice, mustard and gingerroot. Gradually whisk in olive oil, then water. Season to taste with salt and pepper.

4 c. rye flour 4 c. water 1 cake compressed yeast 4 Tbsp. lard 4 Tbsp. sugar 4 tsp. salt White flour Mix together. Add enough white flour to stiffen. Bake at 350 degrees for 1 hour. Makes 4 small loaves.

Just before serving, peel, core and slice pears lengthwise.

Arrange sliced celery on plates; then place prepared pears atop celery. Drizzle with dressing. Top with cheese cubes, dividing equally. Garnish with celery leaves and watercress.

Makes 4 servings.

Note: Canned pears in light syrup, well-drained, can be substitued for fresh pears. Or substitute fresh sliced apples.

California District Planning Continues Representatives from California lodges and district leaders met for a second planning meeting to continue discussion on the needs of our district. We had productive conversations about the role of our district leadership and how to support local lodges and our members. Smaller action teams were established with the following goals: • Offer two virtual presentations or programs this year for our district members on topics such as arts and crafts, Danish culture or Danish history • Centralize ways to share programming resources and materials with lodges in the district • Establish a quarterly newsletter with an events calendar, district planning summary, and articles such as lodge history, scholarship announcements, etc.

• Develop and provide guidance on how to support out-of-state member participation through Zoom and in-person.

Our team’s plan also includes drafting updated bylaws and standing rules to be discussed/voted on at the next convention. These new documents would provide modernized district leadership responsibilities and changes to convention standing rules, both designed to strengthen our organization and create sustainable leadership and annual convention plans.

We will continue with our large group meetings again in the fall. Each action team will work on their respective tasks and report to the larger group with an update in the Fall. Within our group is also a small team to guide the overall planning. This structure is working well for us as we also begin discussions on how to plan for our future conventions. Our goal is to create a sustainable plan for convention that will 9

Tivoli-One Man's Vision

If you have been to Denmark, chances are you have been to Tivoli. On my first trip there I was 13, and I vividly remember the afternoon and evening I spent there with my family, most of whom I had only met a few days earlier. Every time since that first trip this enchanting place has been on the list of what to see in Denmark. I spent my 27th and 70th birthdays in Tivoli. I am sure if you are lucky enough to have spent time there, you also have wonderful memories of the lovely gardens, the rides, the restaurants, and the buildings of this the second oldest amusement park in the world.

While I have so many happy memories, I knew nothing of the history of how Tivoli came to be. It is quite a story, one worth checking out. Georg Carstensen got the idea of creating an amusement park for the Danes just outside of Copenhagen after being inspired by the parks and gardens he had seen while traveling abroad.

He needed a charter from the Danish King Christian VIII. It is said to help convince the King he told him that “When the people are amusing themselves, they don’t think about politics.”

Apparently it was the right sales pitch for the King because Carstensen was granted a five year charter and the use of around 15 acres on the grounds outside the city on the ramparts of an old military base accessible through Vesterport. When the army moved the city defense lines, the grounds became part of Copenhagen proper.

Johan Bernhard Georg Carstensen was born August 31, 1812 in Algiers. He spent most of his childhood in the Near East. His career was with the Military Guards where he rose to the rank of lieutenant. After traveling widely, in

1839 he settled in Copenhagen where he had a periodical publishing business. Then he had an idea, and what an idea it was. He spent the years developing Tivoli.

The amusement park was first called “Tivoli and Vauxhall.” Tivoli alluded to the Jarden de Tivoli in Paris. The Parisian Tivoli was named after the gardens of the Tivoli Villa d’Este near Rome Italy.

The Jarden de Tivoli or Grand Tivoli in Paris was created in 1766 by Simon Gabriel Boutin, the son of a wealthy farmer. He had several houses constructed in an area of approximately 20 acres. Gardens were created by planting rare plants from English, Italian and Dutch gardens.

The park contained a bowling green and several man-made follies, including false ruins, rocky promontories and even a waterfall. He called it Jarden de Tivoli, but it became known as Folie Boutin.

Boutin was guillotined on July 17, 1794 and the private park was opened to the public It became a favorite entertainment spot in Paris. In 1797 Boutin’s heirs recovered the property. Sadly Napoleon bivouacked his troops in the gardens and so much damage was done they were forced to close the park on August 30, 1810.

While this first one closed, a second Tivoli opened the same year known as Folie-Richelieu.

The second Tivoli closed in 1825.

name, came from a pleasure garden in Kennington. Situated on the south bank of the Thames, it was accessible by boat from London until 1810 when the Vauxhall Bridge was built.

Originally it was known as “New Spring Gardens.“ It is believed the site first opened around 1660. It consisted of several acres where the public could wander the walkways amid trees and shrubs.

In 1785 the name of the gardens was changed to Vauxhall Gardens. It became more than a lovely garden in which people could leisurely stroll. Soon there were tightrope walkers, hot air balloon ascents, concerts and fireworks as well. Vauxhall Gardens closed in 1840 when the owners declared bankruptcy. New owners reopened it in 1842, but by 1859 it was permanently closed. In the 20th century part of the original site again opened as a public park now named Vauxhall Pleasure Gardens

On August 15, 1843 the gates of Tivoli opened for the first time. Among those who visited that first day was Hans Christian Andersen.

Some say it was Tivoli who inspired him to write the famous fairytale The Nightingale. Surely those first visitors must have been in awe at the beauty of Tivoli as they walked through the entrance which at the time was just a wooden gate with a ticket booth on each side.

From the beginning there were a lot of attractions for the visitors. There were buildings in an “imaginary” style of the Orient. There was a theatre and band stands, restaurants and cafes, and, of course, flower gardens. There was a merry-go-round and a scenic railway. There was even a “roller coaster” of sorts which gave those who dared to ride 7 seconds of excitement.

But from the beginning, Tivoli was not a place destined to remain exactly as it had been when it opened. To celebrate his birthday and the beginning of the second season of Tivoli, George Carstensen gave himself a birthday present and founded the Tivoli Boys Guard. This was the world’s first boys guard and was referred to as the “Lilliputian military.”

Now called the Tivoli Youth Guard it is a year-round music school for boys and girls (since 2015) ages 8 - 16. They give concerts, march in parades, stand guard at the garden's buildings and monuments on special occasions, and represent the gardens at various events.

To become a part of the Youth Guard it is necessary to pass an admissions test, and applications always out number those selected.

Around 20 new members are selected each year.

The first year is spent learning the drums and fifes and being trained in marching and music theory. After about a year the students get their uniform, including the well-known bearskin hat.

During busy times the Guard can spend as much as 20 hours a week in parades, concerts, band auditions, private tutoring, practice and appearing at special events. The Youth Guard is well-known around the world. They often travel abroad to represent Tivoli and Denmark.

DSS Angel Member Status The Danish Sisterhood has a new and very special member status, the DSS Angels. This status belongs to those members that wish to gift their funeral benefit back to the Sisterhood. We have had some members in the past make the Sisterhood their beneficiary. We believe this is a generous and significant gift, and wish to honor them while we can, keeping a list of our current “Angels” posted. A couple of options are available: • A change of beneficiary to: Danish Sisterhood of America or, • A change of beneficiary to one of the national scholarship funds. Be specific, ie: Betty Hansen Scholarship, Past National Officers, Camp Grant, etc.

If you wish to change your status, please contact your lodge or the National Secretary for a Beneficiary Change Form. Your benefit does not need to be fully paid yet, and you'd be expected to maintain your payments, as the Sisterhood will not receive the benefit until your passing. Those that do not have a funeral benefit as part of your membership category can participate by donating $1,000 to the Danish Sisterhood of America.
