Chamber Announces the Trussville Spring Carnival
The Trussville Area Chamber of Commerce (TACC) has announced dates for its annual spring carnival. The carnival will be held Thursday through Sunday, April 3-6, in the grassy field next to Holy Cross Episcopal Church and across from Veteran’s Park. The spring carnival is sponsored by John Amari. ‘We know the community looks forward to the carnival and are excited to have it back this spring” says TACC’s Melissa Walker. The carnival will feature rides and activities for all ages, as well as some of your favorite fun festival foods. Entrance at the carnival is free. A wristband may be purchased for $20 which is good for unlimited rides. Individual tickets are also available for purchase. Please note: transactions will be cash only. ATM service is not guaranteed.
Parking will NOT be available at the church, but options include Veteran’s Park and lots along Main Street. Please be considerate of residents and the church by avoiding parking in front of homes, on grass, driveways, or at the church.
Tentative hours are Thursday 5 to 9 p.m., Friday 5 to 9 p.m., Saturday 1 to 5 p.m. and 6 to 10 p.m., and Sunday 1 to 5 p.m. (Note: separate wristbands must be purchased for each session on Saturday.) Dates and times are subject to change due to weather conditions.

Exciting New STEM Camp Opportunities for Students & Families
Trussville City Schools is thrilled to introduce Sunday Family STEM Camps and Summer STEM Camps for our rising 1st - 5th grade students - offering engaging, hands-on experiences for students and families to explore science, technology, engineering, and math in fun and meaningful ways! Spots are limited, so be sure to fill out your application soon! We will email the status of your application by March 31st for Funko Pop 3D Design and by April 14th for all other camps. Application will close at midnight on April 11th.
Sunday Family STEM Camps, 2:00–4:00 PM at the BOE, Participants: up to 10 family pairs
Designed for family pairs (one child and one adult), these Sunday afternoon sessions provide unique opportunities to create and innovate together: Funko Pop 3D Design & Printing (April 6, 13, and 27) – Design your own collectible in Tinkercad and bring it to life with 3D printing! (This camp will run for 3 Sundays, with April 6th running from 2-4 pm and April 13th and 27th running from 2-5 pm)
Animated Art with Hummingbird Robotics (May 4, 11, 18, 25) – Combine creativity and robotics to build interactive, animated artwork with Hummingbird robotics kits.
Ocean Rescue with VEX Go (June 8, 15, 22, 29) – Engineer and code solutions to ocean conservation challenges with VEX Go robotics kits. Summer STEM Camps 8:00 AM–12:00 PM, Monday-Friday at a local school, Participants: up to 20 students
These weeklong summer camps are for students only and provide immersive experiences in STEM:
Move It! Shake It! with VEX 123 Robotics (June 9-13) – For rising 1st and 2nd graders, this camp explores movement and coding through fun introductory-robotics challenges using VEX 123 robotics.
Village Engineering Construction & Mars Math Expedition with VEX Go (July 7-11) – For rising 3rd, 4th, and 5th graders, this camp combines robotcreation, coding, and a little old-fashioned problem-solving to spark young innovators’ curiosity using VEX Go robotics.
Submit your application to attend the April Funko Pop experience by March 28th and we will communicate with you by the end of the day on March 31st. For the remaining STEM Camp opportunities, submit your application by April 11th, and we will communicate with you by the end of the day on April 14th. Applications will close at midnight on April 11th.

Cahaba Open House Showcases Student Success
Families recently visited Cahaba for Open House on Thursday, March 6, exploring classrooms and connecting with teachers. Students proudly shared their goals and achievements through school projects and data notebooks, highlighting their hard work. They explained their progress in reading, math, and science, showing off writings, artwork, and hands-on projects. Many enjoyed demonstrating what they’ve learned, from solving math problems to presenting research. Students were also able to share their accomplishments on the Wall of Fame. It was a great night for family/ school connection.

Chamber Hosts Ribbon Cutting for Valley Dental

Dark Chocolate Blackberry Cupcakes
For the cupcakes:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, melted
¾ cup brown sugar
2 large eggs
1 tsp vanilla extract
½ cup buttermilk
½ cup hot coffee (or hot water)
½ cup fresh blackberries, mashed
For the frosting:
½ cup unsalted butter, softened
2 cups powdered sugar
¼ cup blackberry puree (strained to remove seeds)
1 tsp vanilla extract
1-2 tbsp heavy cream (if needed)
Directions:
Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
In a bowl, whisk flour, cocoa powder, baking soda, and salt.
In another bowl, mix melted butter and brown sugar until smooth. Add eggs and vanilla, then stir in mashed blackberries.
Alternately add dry ingredients and buttermilk, mixing gently. Stir in hot coffee until just combined.
Fill cupcake liners ¾ full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
For the frosting, beat butter until creamy. Add powdered sugar, blackberry puree, and vanilla. Beat until fluffy, adding cream if needed.
Pipe frosting onto cooled cupcakes and enjoy!
Tip: Garnish with a fresh blackberry or a drizzle of melted chocolate for an elegant touch!
Ranch Dressing Homemade
1/2 cup buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
1/8 tsp ground black pepper
1/4 tsp sea salt
3/4 tsp garlic powder
1/4 tsp onion powder
3/4 tsp dried parsley
1/2 tsp chopped chives
1 tsp dried dill
In a large mixing bowl, combine the sour cream, buttermilk, and mayonnaise. Stir in 1 1/2 tablespoons of fresh lemon juice.
Using a whisk, gradually add each of the herbs and spices, whisking well to ensure everything is thoroughly combined. Add additional lemon juice to achieve your preferred consistency. Transfer the mixture into jars or squeeze bottles and refrigerate.
Good for 1 week.

Pork Schnitzel with Dijon Gravy
Crispy pork cutlets topped with rich, creamy mustard gravy
You will need:
4 boneless pork chops
1/2 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon paprika
salt and pepper to taste
3 tablespoons olive oil
For the gravy:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
Pound the pork chops to about 1/4-inch thickness and season with salt and pepper. Set up three bowls: one with flour, one with whisked eggs, and one with breadcrumbs mixed with Parmesan and paprika. Coat each pork chop in flour, dip in egg, and press into the breadcrumb mixture. Heat olive oil in a skillet over medium heat. Cook each pork schnitzel for 3-4 minutes per side until golden and crispy. Remove and keep warm. In the same skillet, melt butter and whisk in flour, cooking for 1 minute. Gradually add chicken broth, whisking constantly, then stir in heavy cream, Dijon mustard, and Worcestershire sauce. Simmer until thickened.
Pour the creamy gravy over the schnitzels and serve hot.
Potato Puffs
3 cups Mashed potatoes
1 cup Shredded cheese
¼ cup All-purpose flour
2 Tbsp Parmesan cheese
2 Tbsp Chopped chives
1/3 cup Sour Cream
Salt to taste
2 Eggs, beaten
1. Combine Ingredients: In a large bowl, mix mashed potatoes, shredded cheese, flour, Parmesan, chives, sour cream, and salt.
2. Add Eggs: Beat eggs into the potato mixture.
3. Shape Puffs: Form mixture into small balls or patties.
4. Cook:
Baking: Preheat oven to 400°F (200°C). Bake puffs on parchment-lined baking sheet for 15-20 minutes, or until golden brown and crispy. Frying: Heat oil in a skillet. Fry puffs in batches until golden brown and crispy. Drain on paper towels.
5. Serve: Enjoy warm with your favorite dipping sauce.
Cook’s Corner
Peacekeeper Cookies
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped pecans, toasted
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract, ensuring the ingredients are well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Gently fold in the toasted chopped pecans.
Drop heaping tablespoons of dough onto the prepared baking sheets, making sure to leave enough space between each cookie.
Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges but still soft in the center.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Peanut Butter Sheet Cake
2 cups Sugar
1 teaspoon Baking Soda
2 cups Flour
1 teaspoon Salt
2 sticks Butter
1 cup Water
1 cup Peanut Butter
½ cups Milk
1 teaspoon Vanilla
2 whole Eggs
1 stick Butter
½ cups Peanut Butter
6 teaspoons Milk
1 pound Powdered Sugar
In a large bowl, mix together sugar, baking soda, flour and salt. Set aside.
Combine butter, water and peanut butter in saucepan and bring to boil. Pour over flour mixture.
Add milk, vanilla and eggs. Mix. Pour in large cookie sheet or jelly roll pan. Bake at 400F degrees for 20 minutes.
Frosting:
Bring butter, peanut butter and milk to boil in saucepan. Add one pound of powdered sugar. Pour warmed frosting over cooled cake.
