IN THE MIDDLE OF THE ATLANTIC Ocean, surrounded by an endless dome of stars, filmmaker and adventurer James Levelle stands at the helm of the Bark Europa on nightwatch. “It was completely magical,” he recounts to Henry Morley, True Travel Founder, “the stars were brighter than I’d ever seen, even from the highest mountain tops, or remotest of regions. But with a perfect 360-degree horizon, they surrounded us— and the stars at sea level were just as bright as the stars in the middle of the sky.” He’s instantly transported to the memory. “From the helm, I looked back to see the treacle black waters of the dark night sparkling luminescently - a trail of phosphorescent green algae, disturbed by the rudder momentarily, slowly slinking off into the darkness”. A surreal sight that felt “like something from a movie.”
For Henry, it’s clear that moments like these are the heartbeat of adventure for James. His draw to these remote, untamed spaces began in childhood, on the edge of Dartmoor in Devon, where early memories of wild, open spaces shaped his path.
“When I think back to early memories of childhood, I remember the freedom,” James says. “Exploring woods, building treehouses, romping on the moors—it gave me a real, tangible connection with nature. And I suppose that’s something that’s never left me.” This connection defines James’s life as a filmmaker and environmental advocate, leading him on journeys to some of the world’s wildest places. His deep appreciation for nature, paired with an insatiable curiosity, underpins everything he does—from his early work documenting remote landscapes to his more recent focus on climate change and sustainable travel.
James’s dedication to exploring the world took an unexpected turn years ago when he was sent to South America for a project with the Discovery Channel called ‘Free Ride’. The assignment originally was to film American adventurer Rob Greenfield, who had committed to travelling over 6,000 miles with no money, relying solely on human kindness. “After being filmed meeting Rob

From South America’s vast landscapes to Europe’s cultural treasures, 2024 has been a year of discovery. Evie delved deep into Chile, from the towering peaks of Torres del Paine to the shimmering salt flats of the Atacama Desert, uncovering not only breathtaking scenery but also
the flavours of its vibrant wine regions. At Iguazu Falls, she felt the raw power of nature, moments like these shaping the way we design our South American itineraries. Across the Atlantic, Peter’s African adventures took him from the misty jungles of Rwanda and Uganda, where he trekked alongside gorillas, to the tranquil waterways of Botswana’s Okavango Delta. These journeys weren’t just about wildlife— they were a reminder of how travel can foster connection, conservation, and awe.
I am thrilled to bring you the fifth edition of the True Travel Times, and this is our best yet. 2024 has been another year of exciting growth, a chance to celebrate how far the business has come, and to set out what we aim to deliver in the future.
We have always obsessed about constantly delivering an improved level of personalised service and so I was bursting with pride, when in October we were voted the 5th Best Tour Operator in the world, by the readers of Conde Nast Traveller, beating many of the biggest operators in the travel industry; as well as winning their Top Specialists award both in the UK and the US. This is the pinnacle of recognition and it is down to the hard graft and passion our team pour into their roles on a daily basis.
As part of that focus on service, I am very excited to announce the launch of our own True Travel App, which will play a pivotal role in your True Travel journey, providing meticulous detail, excellent on-trip support and many other features.
In addition, we will soon be launching a Global Travel Manager service, enabling you to have an in depth trip planning consultation which can span a variety of Continents, ideas and bucket lists; a chance for you to learn about new destinations and the latest insights from the expertise of our team.
Turning to this edition, I had the pleasure of interviewing James Levelle. I learnt of his epic adventures and we discussed a new approach to travel (pages 1&4). In that spirit, Pete asks you to slow down with him on a journey through Southeast Asia (pages 22-23). Elsewhere, Molly takes you behind the scenes and into kitchens around the world (pages 8-9); and Evie recounts her time in Peru with our latest Foundation Project partner (page 21)

As we publish the fifth edition of True Travel Times, we are truly excited to highlight the remarkable progress our Foundation has achieved this year and the plans we have for 2025 and beyond.
SINCE ITS INCEPTION IN 2016, THE True Travel Foundation has embodied our belief that travel can be a powerful tool for positive change. By the start of 2024, the Foundation had already raised an impressive £115,585; supporting meaningful progress in ecosystem restoration, community empowerment, and educational access. Now, as we approach 2025, we are thrilled to be adding to that total another £73,926 from funds raised to date in this year alone.
Much of the progress in our ongoing projects reflects the generosity of our supporters in prior years, and the funds raised so far in 2024 will continue to drive these vital efforts. This year has also seen the exciting onboarding of two new projects, further expanding the Foundation’s scope and enabling us to make an impact in every region of the world we curate experiences.
This year, we have been reflecting on our commitment to delivering transformative travel experiences while leaving a lasting legacy in the communities and landscapes that inspire us. The Foundation sits at the heart of what we do, demonstrating how travel can create meaningful connections and drive real change. As a certified B Corp, we are proud to lead our industry and foster partnerships with likeminded organisations who share our vision for a better world. This recognition has amplified our efforts, opening doors to collaborations that allow us to extend the reach and deepen the impact of our work.
That is why we have set ourselves an ambitious goal: to raise £1 million by December 2030 Every milestone on this journey reminds us of the extraordinary potential of travel to inspire change and contribute to a better future. With your support, the True Travel Foundation will continue to make a meaningful difference worldwide.
Seawilding: Our partnership with Seawilding has delivered groundbreaking results. The funds have been used to support innovative rhizome planting techniques which have reduced the time needed for seagrass meadows to form, down from 8-10 years to just 2-3 years. This effort is regenerating vital marine ecosystems and significantly enhancing carbon sequestration.
Female Empowerment Programme: In Zambia, our ongoing support has enabled the introduction of digital literacy tools for adolescent girls, including a literacy app developed by Mwabu. These tools address teaching challenges in rural areas, improving literacy rates and equipping young women with the skills needed to break cycles of poverty and unlock brighter futures.
The Rucksack Project: Our most recent funding was used to fully support 300 boys in the shelter, providing essential resources such as school uniforms, counselling sessions, medical prescriptions, and local transport. This vital support ensures their well-being, stability, and access to education, creating opportunities for personal growth and a brighter future.
Looking ahead, we are thrilled to expand our reach with two exciting new projects:
Newman Holiday Trust: A UK-based voluntary organisation that provides summer holidays for children with additional needs. Each year, the Trust offers holidays to over 140 children aged 4–18, delivering a variety of fun activities in a safe and supportive environment. Our goal is to use funds raised in 2024 to sponsor enriching holiday experiences for four children in 2025.
Sol y Luna Foundation: Based in Peru’s Sacred Valley, the organisation provides education and holistic care for children from disadvantaged backgrounds. Its school offers a safe and nurturing environment, ensuring students receive quality education, nutritious meals, healthcare, and psychological support. Our goal is to use funds raised in 2024 to sponsor a child’s education and well-being for an entire year. (Read more about the Sol y Luna Foundation on page 21.)

for a chemistry test, Discovery came back to me and said, ‘We love the idea, but we want you to be in the film with him,’” James recalls. “I hadn’t planned on being in front of the camera, but like most things in my life, I thought, let’s just go for it.”
So he did, joining Rob on a journey that stripped away comforts and placed them at the mercy of strangers. “We were vulnerable—almost completely reliant on people we’d never met,” he says. “Every day, we had to trust in the goodwill of others. That willingness to help, from almost every person we met, was extraordinary. It’s given me the most unshakable faith in humanity.” Each day of this journey revealed new facets of human connection, reshaping his understanding of travel as a shared human experience rather than just a personal adventure. The experience taught him to see travel as a series of human connections, rather than as a transactional or predictable journey, and it reinforced his belief that people, across cultures, have a profound capacity for kindness.

In an exclusive interview, True Travel founder Henry Morley spoke to filmmaker and adventurer, James Levelle, about the transformative power of travel and the importance of environmental activism.
learning traditions first-hand, or stepping beyond the surface to engage with the heart of a place. It’s an ethos rooted in the idea that travel is most rewarding when it’s immersive and transformative, allowing the unexpected to unfold naturally.
Henry expands on this, noting, “I certainly believe that people are becoming safer when it comes to travel. The result is over-tourism in these really busy places because often people don’t want to take the risk and not follow the crowd. But the real magic happens when you take those risks, step off the beaten path, and embrace the unknown.”
James agrees wholeheartedly. “I think if you give life a chance, it will serve up more exciting things than you could ever imagine,” he says. “It’s really important to leave that space for life to work its magic. If you’re not aware and you’re closed off, you’ll miss it, but life is serving up opportunities all the time.” His journey with Rob solidified this idea, teaching him to let go of control and trust in the unknown—a philosophy he’s carried into his other adventures, including the fossil-free expedition that landed him on the Bark Europa in the first place for ‘Race for the Future’.
While his career was initially about capturing the natural world on film, James’s focus shifted sharply after experiencing firsthand the destructive power of climate change. Chasing hurricanes, he found himself on the frontlines of extreme weather events. “I got caught in one of the biggest hurricanes to hit the US, racing through town to find shelter,” he recounts. “I made it to a fire station just in time, only to have the roof tear off. It was terrifying.” In the aftermath, as he watched paramedics and volunteers risk their lives to help others, he began to question his own motivations. “I realised that I was doing this work for my own sense of adventure and
achievement, but there was something missing. I wanted to be of service, to tell stories that mattered not just to me but to the people impacted by these crises.”
This realisation ultimately led to ‘Race for the Future’, a 9,000-mile fossil-free expedition from the UK to Chile, created by James to amplify the voices of young climate activists and share their stories at the United Nations Climate Conference. Through this journey, James sought to turn his personal exploration into a mission with purpose, using what he knew of storytelling to inspire action on one of the most urgent issues of our time. Along the way, James encountered young activists whose lives were deeply intertwined with the realities of climate change. “When I got to South America, the biggest change was the visceral connection young people had with extreme climate change and its effects,” he reflects. “They weren’t just talking about it—they were living it every day.”
Each destination unveiled another facet of the crisis: droughtstricken regions where agriculture suffered, flood-prone communities rebuilding after devastating storms, and areas where rising temperatures threatened traditional ways of life.

shifting his perspective and broadening his purpose. “I saw how deeply they cared, and it made me feel a responsibility to amplify their voices, to share their stories with the world,” he says. For James, it was a powerful reminder of the urgency of the climate crisis and the role of collective action in driving change.
Henry reflects on the challenge of sustainability in travel, particularly the pressing issue of transport. “It’s one of the biggest offenders in terms of environmental impact,” he says. “But we’re always looking to learn from people like you—those who’ve embraced innovative, low-impact ways of moving through the world. What do you think the future of sustainable travel looks like?”
James agrees but doesn’t believe that stopping travel is the answer. “I’m a firm believer in the transformative power of travel,” he says. “Travel makes better humans. It brings us closer to new perspectives, which we need more than ever if we’re going to tackle the climate crisis together. So, first and foremost, I would always encourage anyone with even an inkling to get out there, explore, meet new people. We all need to be the best we can be to tackle these problems.” He continues, shifting to the idea of rethinking how we travel. “What we’ve all become so used to is jumping on a plane, arriving somewhere, and then hopping on another to get back,” he explains. “But if you can take the time to travel over land or sea, the experience becomes so much more fulfilling. It’s richer, more interesting, and if you’re not pressured by a tight schedule, you invite life to serve up unexpected adventures.”
For James, slow travel is not only a more sustainable choice, but also an opportunity to deepen the connection between the traveller and the journey. “Sailing has always been extraordinary, and cycling is one of my absolute favourites,” he says. “Horseback travel is still on my bucket list - I’d love to ride through somewhere like the Mongolian steppes that way.” He paints a vivid picture of what travel could look like
when approached with creativity and care. “The way we move matters, and slow travel lets us enjoy the adventure along the way, not just at the destination.” Henry agrees. “Amen to that.”
Henry’s curiosity turns to the places James has visited. “You’ve filmed all over the world,” he asks. “Is there one place that changed the way you see the world?”
“Every place I go to changes the way I see things,” James replies. “But my time in the Peruvian Amazon stands out.” Previously, James had only experienced rainforests through fleeting film projects, but this time, he spent weeks at a reforestation project founded by a friend, immersing himself in the environment. “I walked the forest with scientists who had incredible ways of explaining the interconnected nature of life in that ecosystem—things I’d never have noticed in the vast green chaos,” he recalls. “And then, I walked with indigenous guides, who shared myths and legends that captured the same magic from an entirely different perspective.” For James, the two approaches—scientific and cultural—created a profound understanding. “That time in the Amazon really changed how I see the interconnectedness of life.”
As their conversation draws to a close, Henry asks the natural final question, “If you could design your next adventure, what would it look like?”
“Honestly?” James considers. “It would be here at home. I think one of the most meaningful journeys we can take is within our own communities, making a positive impact in our own environment. That’s life’s greatest adventure—right under your nose.”
In a world that often rushes to the next destination, James’s journey is a reminder that sometimes, the truest adventures come from slowing down, embracing the unknown, and discovering connection and meaning in unexpected places.

With roots in Zimbabwe, Chef Tapiwa Karidza brings her love for local flavours to Singita Pamushana Lodge. Her dishes fuse traditional ingredients with refined techniques, showcasing the vibrant essence of Zimbabwean cuisine.
“MY JOURNEY AS A CHEF began in 2010 in South Africa, where I completed my diploma in culinary arts. My first job at a to-go café taught me resilience and consistency—qualities that have shaped my career and approach to cooking. But for me, food has always been about something much deeper: bringing people together, sharing stories, and creating joy around a table. I’ve always believed that a good meal can connect people and offer comfort, no matter where they come from.
Zimbabwe’s culinary heritage is simple yet full of soul, shaped by its landscapes, climate, and a respect for natural ingredients. Our food isn’t overly complicated; it’s about taking fresh, quality ingredients and letting them shine. I’m inspired by ingredients that reflect the land itself, like the vibrant oranges from Mazowe, which add a special flavour to my dishes. My signature creation, a citrus chicken drumstick served with a croquette, sugar snap peas, and onion purée, reflects this simplicity paired with elegance. This dish
lets the bright, fresh taste take centre stage in every bite.
At Singita Pamushana, our culinary philosophy is guided by sustainability, seasonality, and a commitment to the community around us. Every dish is crafted with care, focusing on ingredients sourced from local farmers and producers wherever we can. Working in a remote location like Singita Pamushana presents unique challenges though, particularly with sourcing ingredients. Fresh produce can be hard to come by, especially when certain fruits or vegetables are out of season. But with careful planning and seasonal menus, we ensure that every dish meets Singita’s standards of quality and sustainability. We explain to guests that some items may not be available due to our conservation efforts, and they’re always understanding and eager to try what’s fresh and in season. It’s wonderful to see how open they are to experiencing Zimbabwe’s natural abundance.
Singita Pamushana is a truly special place, not only for its breathtaking views over the Malilangwe Dam but also for the incredible sense of unity among the team. Every member of the kitchen staff brings passion and dedication to their work, and this energy translates into the dining experience we offer. One dish I particularly love to recommend is our local night’s Tilapia. Sourced directly from the dam, this fish is cooked to perfection, with a balance of flavours that’s both mouthwatering and unforgettable. It’s a true taste of Zimbabwe, giving guests a connection to the land and the waters they’re surrounded by.
For me, cooking at Singita Pamushana is more than a job; it’s an opportunity to share Zimbabwe’s rich culinary heritage with our guests. I feel privileged to work in such a beautiful environment and to play a part in preserving the traditions and flavours of this incredible country. Peruvian-born Chef María Fe García channels her deep passion for Andean ingredients at Puqio, transforming Peru’s rich biodiversity into innovative dishes that celebrate the country’s diverse culinary heritage and landscapes.
“ICAME TO COOKING LATER IN life, after a long career as a business administrator. But my love for food ran deep, so I eventually followed my passion and trained at Le Cordon Bleu. Soon after, I met Ignacio Masías, CEO of Andean, who invited me to bring my culinary perspective to his team. This opportunity marked a turning point, allowing me to immerse myself in the unique ingredients and techniques of Peruvian cuisine. Working in high-altitude regions like Puno presented new challenges but also pushed me to develop a profound respect for Andean ingredients and the regional techniques that define our culinary heritage. Peru’s biodiversity and the endless possibilities in our local produce fuel my creativity every day in the kitchen. Peru’s diverse landscape and rich history shape everything I create. Every region has its own culinary identity, influenced by indigenous traditions and colonial heritage. The Andes, with their unique varieties of potatoes and high-altitude herbs, play a vital role in my cooking. The coast, meanwhile, brings its own distinct flavours, and together, these regions tell a story of Peru’s diversity. Traditional dishes like rocoto relleno vary from one area to the next; in Arequipa, it’s made differently than in Cusco, and I hold a deep respect for these regional nuances. My goal is to give guests an authentic taste of Peru through each meal, sharing a piece of our culture and the depth of Andean cuisine.
Each day begins with careful planning, selecting only the finest local ingredients and working with nearby producers to keep our dishes fresh and authentic. My team and I brainstorm new ideas together, creating flavours, textures, and presentations that showcase the diversity of Andean ingredients. Sustainability is a core principle for us; we use every part of each ingredient, aiming to honour the environment and reduce waste. This approach not only respects the land but also celebrates the richness of our heritage.
While each dish I create holds meaning, some, like cuy (guinea pig), canilla de cordero (lamb shank), arroz con pato (rice with duck), and rocoto relleno (stuffed rocoto pepper), truly capture the essence of Andean cuisine. Each region’s unique ingredients add a special character, and I encourage guests to explore everything without hesitation. Peruvian cuisine is an adventure, with influences from Japan, China, Africa, and more, each layer adding to its depth.
High-altitude cooking has presented challenges, particularly in building rapport with my team, many of whom primarily speak Aymara. As a woman from Lima, I needed to earn their trust, and over time, I grew to appreciate the ancestral techniques they shared with me. Working in this environment has taught me to embrace local ingredients that thrive naturally at high altitudes, bringing out authentic regional flavours in ways that honour our traditions.
For me, cooking at Andean is an opportunity to celebrate Peru’s culinary diversity and history. Whether you’re local or visiting, I encourage you to dive into the full range of our offerings and enjoy the unique blend of cultures, flavours, and traditions that make Peruvian cuisine truly extraordinary.”

“IGREW UP IN A WORLD WHERE the scent of handmade food was as natural as the air we breathed. Raised in the culinary landscape of Villa d’Este, a five-star luxury hotel on Lake Como, I was surrounded by elegance in every dish. My family – my grandfather, my uncle, and my mother – are all master chefs, and they passed their passion for cooking down to me from a young age. From my earliest years, I was drawn to the kitchen, working alongside great chefs in both Como and Switzerland.
My career truly took flight in London. There, I spent four intense years that pushed my culinary boundaries. The energy of the city, the abundance of international flavours –it was exhilarating. I reached the role of Junior Sous Chef, working under Stefano Cavallini, the first Italian chef to earn a Michelin star in London. But it was my return to Italy that set my course. Joining Alain Ducasse as Sous Chef at Andana in Maremma, I found not only the place that stole my heart but also a way of cooking that felt like home. Tuscany has an authenticity, a boldness in its ingredients, that inspires me to merge local flavours with Provençal influences, a blend that’s both traditional and innovative.
In my hands, food becomes a language. I might not be the most expressive with words, but through my dishes, I tell stories that connect with people on a level words often can’t reach. Cooking is my way of bringing people together, making them feel at home.

A typical day at Castello di Vicarello starts simply. With my close-knit team, we begin with a quick check of storage and then head out to the gardens to pick fresh vegetables. Together with my second-in-command, we create daily specials, mixing the best of what’s in season with a little twist. Whether it’s fresh pasta, bread, or cakes, everything is made with a focus on high-quality, local ingredients. Of all the dishes I’ve crafted, two stand out for me: the “pumpkin cappuccino” and the linguine cooked in Malbec wine. The pumpkin cappuccino is a fusion of Milan and Maremma, bringing together pumpkin with Tuscan pecorino – a dish that speaks to my culinary journey. Then, there’s the linguine, cooked in the Baccheschi-Berti family’s own Malbec, served with goat blue cheese and caramelised nuts. It’s a dish I created especially for Castello di Vicarello, one that I feel embodies the essence of this place.
For me, everything starts with respect for local ingredients, for the land and its traditions, but above all for seasonality –an element I believe we’ve drifted from in modern cooking. I’ve learned that true culinary artistry lies in simplicity: a few highquality ingredients, carefully chosen and prepared. At Castello di Vicarello, my guests experience the excellence of local products in every dish, paired with flavours I’ve honed throughout my travels.”

Since its founding in 1998, the Sol y Luna Foundation has transformed lives in Peru’s Sacred Valley through vital contributions to education, healthcare, and community support. Currently, 163 children attend the Sol y Luna Intercultural School, with many living in local foster homes due to the remoteness of their own communities. The Sol y Luna Home provides a safe refuge for 19 children, while the Paqarí programme offers specialised support for 14 children with disabilities. Each day, the foundation’s canteen serves 191 healthy meals, creating a caring community for students, teachers, and volunteers. True Travel’s Latin America expert, Evie, witnessed the foundation’s impact firsthand during a recent stay and shares her insights:
DEEP IN PERU’S SACRED VALLEY, WHERE towering Andean peaks guard a landscape of lush terraces and ancient ruins, the Sol y Luna Hotel is a sanctuary in every sense. Framed by these dramatic mountains, the hotel feels like an oasis of peace—but as I discovered, there’s something more here, a sense of purpose woven into its very foundations. Unlike most hotels, which may support their communities and environment through added initiatives, Sol y Luna was born from the existence of the Sol y Luna Foundation as a way to fund and uplift the community programme created by Petit Miribel in 1998. This remarkable hotel isn’t just a place to stay; it’s a place dedicated to creating lasting change, and I was here to experience it firsthand.
My journey into the heart of Sol y Luna’s mission began with a walk just five minutes from the main reception, where the entrance to the Sol y Luna Intercultural School awaited. As I met with the foundation’s director, Kelly Limo, she shared the story of Petit and her husband, Franz, who moved to Peru in the late 1990s. Leaving behind their corporate lives, they set out on an entirely new path, driven by a vision to uplift children in the Sacred Valley through love and education. For Petit, this was personal. She wanted not only to address the symptoms of poverty but to lay the groundwork for lifelong transformation. When they realised that their dream required a sustainable source of funding, Petit and Franz decided to establish the Sol y Luna Hotel, using it as a means to support the foundation in a way that would last for generations.
As Kelly led me through the school, I realised this wasn’t simply a place for education; it was a sanctuary of support for nearly 200 children from the valley. Every child here receives more than classroom lessons—they have access to healthcare, psychological support, daily meals, and even transportation to ensure they arrive safely each day. When I heard that 84% of these children have all their costs covered by the foundation, it hit me how essential this work was. Here, children from families who couldn’t otherwise afford education and healthcare are given the opportunity to thrive.
One moment I won’t forget was meeting the children in the Paqarí Programme. “Paqarí” means “rebirth” in Quechua, and the programme’s focus is on children with disabilities, who are given personalised education and therapy in a compassionate setting. Paqarí lies at the heart of the school, a deliberate choice to ensure these children feel fully included in daily school life. As I watched the children playing, sharing meals, and learning alongside their peers, I saw the power of true inclusion. I joined in their activities and spoke with the teachers, whose passion for each child’s growth was undeniable. I left Paqarí with a sense of deep respect for the work being done to give these children the support they need to succeed.
The story of Sol y Luna became even more poignant when I visited the Sol y Luna Home, a safe haven for children who have faced abuse or abandonment. Kelly explained that this home was more than just shelter; it was a family, dedicated to providing stability and emotional support for each child who entered its doors. Petit had long believed that every child deserves to grow up in a safe, loving environment, and it was here in the Sol y Luna Home that this vision came to life. I met children who, despite their traumatic pasts, now felt secure, loved, and hopeful. The commitment to keeping siblings together, to rebuilding trust and confidence, was a testament to the foundation’s dedication to preserving a sense of belonging and stability.
Before I left, I was introduced to the Roots and Wings Programme, an initiative that supports Sol y Luna students in pursuing higher education. It was inspiring to learn that this programme is already creating a ripple effect, with some
graduates now studying in Lima or pursuing careers they once could only dream of. For Petit, Roots and Wings was a way to ensure that the foundation’s impact would extend beyond school, empowering young people to break the cycle of poverty and build fulfilling lives.
Reflecting on my time with the Sol y Luna Foundation, I was struck by the foundation’s holistic approach to support and growth for every child. It’s not only about meeting basic needs; it’s about helping each child feel valued and included, preparing them for a life filled with possibilities.
Touched by my time at the foundation and the hotel, I returned from Peru inspired and eager to bring the Sol y Luna Foundation’s work closer to True Travel’s mission. Seeing firsthand the profound impact they make in the Sacred Valley left an indelible mark on me, and I knew that True Travel could be part of this journey. ANDY FIDLER: What first inspired your love of travel? Was it something you experienced growing up, or did it come later in life?
GRAEME EVEMY: Growing up in the Kent countryside, I was captivated by stories of adventure like Around the World in Eighty Days by Jules Verne. They sparked an early desire to explore places that felt a world away from home. A fiveweek trip to Thailand and Cambodia during my university holidays was the turning point—it got me hooked. After graduating, I worked and saved, booked a one-way ticket to Mumbai, and spent nine months travelling through Asia. That journey solidified my passion for discovery. After a brief stint in financial services, I realised my calling was in travel and joined a travel company.
AF: You’ve worked in the travel industry for some time now. What’s the most significant change you’ve seen in how people travel?
GE: When I started, it was all about where you stayed—luxury was defined by the hotel, and options were fairly limited. Now, it’s the unique experiences that define a journey. It’s not just about seeing a destination; it’s about feeling it. We focus on offering experiences that bring a destination to life, from connecting with local communities to truly immersing in the culture.
AF: With so much change in the travel landscape, what trends do you see shaping the future of travel?
GE: The focus on sustainability and experiential travel will continue to grow. Travellers are increasingly aware of the
impact their journeys have—both positive and negative—and I see a future where we’ll celebrate the diversity of cultures and landscapes rather than seeking uniform experiences. It’s an exciting shift that prioritises authenticity and responsible exploration.
AF: Your job has taken you to some incredible places. What’s next on your personal travel wishlist?
GE: With a young family, we’ve put more exotic travel on pause for now, but a safari is definitely on my horizon. It would be an incredible experience to share with my family—witnessing stunning wildlife, connecting with local communities, and exploring truly remote landscapes. It’s the kind of journey that leaves an imprint on everyone, no matter their age.
AF: How do you think travel has shaped you, beyond your professional life?
GE: Travel has been a catalyst for both curiosity and gratitude. It’s expanded my horizons and given me a deeper appreciation for the life I have at home. It’s also fuelled my love of food, which is another way I explore the world. Even when I can’t travel as much as I’d like, I find joy in recreating recipes from far-off places—it’s like a mini adventure in the kitchen.
AF: Reflecting on your travels, is there a particular memory that stands out as a favourite?
GE: A trip to North India with my wife comes to mind. We experienced a luxurious rural retreat that was incredibly relaxing, took an overnight train (an adventure that’s definitely not for everyone!) and had a memorable tiger encounter. The journey concluded with the vibrant energy of Delhi. It was the perfect blend of new and familiar experiences, and the dal makhani and kebabs we enjoyed remain unforgettable.
AF: For someone visiting a new country for the first time, what’s the one thing they should keep in mind?
GE: Take the time to understand the local customs and learn a few words of the language—it makes every interaction richer and more meaningful. While iconic sights are often the reason we travel, I find it’s the unexpected, everyday moments with people that leave the deepest impression. Being open and prepared for those connections is what makes travel so rewarding.
AF: What drew you to True Travel, and what do you think sets the company apart?
GE: True Travel’s determination to harness the power of travel as a force for good really resonated with me. What excites me most is the genuine care and attention that goes into every trip we craft. These trips proved that even a short journey can leave a lasting impression.
Further afield, Henry explored Indonesia’s serene islands, from the quiet beaches of Lombok to Bali’s cultural heart, finding moments of calm and inspiration that reaffirm why these destinations remain beloved for travellers seeking relaxation and depth.

“My October trip to Sicily was all about experiencing the island’s traditions and landscapes at their most authentic. Visiting during the olive harvest we saw farmers hard at work in the groves and got to taste the oil fresh off the press. Walking through baroque towns without the crowds or intense heat felt like stepping back in time; and tasting pistachio granita in Bronte, the ‘Capital of Pistachio,’ was a highlight. The experience that stayed with me most though was visiting a Sicilian cart-making workshop in Ragusa, the last of its kind, where I saw firsthand the incredible artistry keeping this tradition alive. Pairing moments like sipping wine in the foothills of Mount Etna, with its volcanic backdrop, and exploring the Villa Comunale in Taormina, made this trip one of my favourites—both for its beauty and its stories.”
”My trip to Chile in April was nothing short of unforgettable. Travelling the length of the country in just under three weeks, I experienced everything from the towering peaks of Torres del Paine (left) to the stark beauty of the Atacama Desert (below) Visiting in April was a unique experience— it’s autumn in Chile, with stunning colours, quieter trails, and the chance to spot wildlife that’s harder to see at other times of the year, like pumas. It’s also the wine harvest season, which meant I didn’t just enjoy some incredible wines—I had the opportunity to get involved in the process too. Covering so much ground at this time of year was a great reminder of just how diverse this country can be, and I can’t wait to share those insights when designing trips for our clients.”
“One of the ultimate wildlife experiences is combining gorilla and chimp trekking with a traditional big-game safari; at the beginning of June, I was lucky enough to do just that. Trekking to see gorillas in their natural habitat was awe-inspiring—their sheer presence, intelligence, and familial interactions left me in quiet amazement. Tracking chimpanzees brought an entirely different energy: fastpaced, noisy, and alive with movement. These primate encounters, paired with the thrill of spotting lions and elephants on the plains, created a journey full of contrasts. Travelling at the start of the season added a sense of exclusivity, with fewer people and uninterrupted moments to observe and absorb. Having a private guide throughout made all the difference—and is something I’d definitely encourage for our clients.”
”Island hopping in Greece is a classic for a reason, but my May trip reminded me just how special it can be. Starting in Mykonos, with its glamorous vibe and beautiful beaches, I then headed over to Paros—a quieter, more authentic gem. Wandering its small boutiques filled with local fashion and enjoying evenings by the port felt refreshingly different. In Santorini, it was all about the incredible Caldera views, exclusive vineyard tours, and hidden culinary gems, like an intimate dinner in a 400-year-old cave paired with wine tasting. Between snorkelling, diving, and cruising the Aegean, there’s no better way to soak in the magic of these islands. Visiting in May made it even more rewarding: warm days, fewer crowds, and the perfect balance of energy and tranquillity.”
