A blend of wine vinegar and concentrated or slow-cooked grape must (20% min - 70% max), that is aged in wood from 2 months to 3 years. Protected Geographical Indication (IGP/PGI) is the certification given by the European Commission, ensuring Balsamic Vinegars are produced in a traditional manner, within the Modena region of Italy.

Only Balsamic Vinegar of Modena with the P.G.I (or I.G.P.) Certification Seal should be considered authentic Balsamic Vinegar of Modena. The di erent qualities of Balsamic Vinegar of Modena P.G.I. are produced for specific culinary needs. The percentage of grape must used for each blend indicates the density and quality of the finished Balsamic Vinegar.

Known in the market as “White Balsamic Vinegar,” created by chefs who require the flavor profile of Balsamic Vinegar of Modena without the dark color. This condiment is also slightly fruitier and less acidic than Balsamic Vinegar of Modena.
