Joseph's cut pasta and sauces are made from scratch using traditional culinary methods. Our incomparable cut pasta starts with custom-milled 100% stone ground semolina flour and Grade A whole eggs. We slowly knead the dough and roll it five times to achieve a rough texture that holds sauces perfectly. Our gnocchi appear as though formed with a fork. They are extremely light and tender.
To make our delicious sauces, we follow the culinary tradition of using the finest, freshest ingredients and slowly reducing our sauces. We saute fresh vegetables, caramelize sweet onions, slowly roast fresh garlic, and combine this with our stocks and reductions that are prepared in-house. Our savory sauces are the perfect accompaniment.
