MWe are overwhelmed of how well the first edition of the guide has been received… 80 thousand issues distributed throughout the 3 Californias – went so fast… All your wonderful letters of how much you loved it – makes all the long-hours it entails – well worth it! We sought to bring the Best of Baja to international travelers and readers in the same fashion that, for the past 15 years, we’ve been doing with BajaTraveler® and we exceeded our own expectations!

With masses of hard work behind us at Traveler Publications, we present to you a second issue of the guide unlike you’d seen for Baja – before… A complete guide of the

Think just-off-the-hook or vine, organic, sustainable, and creative and you capture some of the basic concepts that help define what is sometimes known as Baja Med. (Even Baja Med is a misnomer as it is not uncommon to see Mediterranean plus Asian ingredients done in a distinctively Mexican way.) Add phrases like farm-totable, slow food, and informal-style dining, and you get a fuller understanding why Baja cuisine is pushing boundaries in redefining the table.

Viaje: Ricardo Arjona’s Latest Travels with Music and Self-Discovery

Images of Ricardo Arjona’s travels on his latest music video, Viaje, flash on train tracks and taxis, airplanes and boats, water and sky, mountains and plains, jam-packed arenas and rural schools, spring and winter, solitude and multitudes. Concert tours for Arjona are all about traveling–taking trips abroad and touching the lives of fans–around the world from Japan and China to Nashville and New York to Baja and Iceland. The journeys are not only about the physical. They are about constant selfdiscovery and purpose. His trips and his personal journey these days are about his fans.

That’s about 2 million fans. “Nothing compares to the way fans lift me,” says Arjona. He wanted to do more than transport them to different worlds with his lyrics and music. His vision to show his gratitude took on massive proportions. “This was complete craziness, but a precious craziness.”

Tijuana, the largest city on the Baja California Peninsula, with a population of approximately 1.3 million, is the world’s most visited border city. It’s a dynamic and growing urban center that has close socio-economic ties to the U.S., especially to San Diego, its immediate neighbor to the north. The city is a bastion of culture and commerce, and is currently witnessing a revival in arts and tourism. Be sure to check out the Tijuana Cultural Center and the numerous independent art galleries while you’re there. Shopping in Tijuana is notable, and the city is also the epicenter of the relatively new Bajamed cuisine – a fusion of Mexican food with Mediterranean and Asian influences that relies heavily on locally sourced vegetables, cheeses and sea foods –typically paired with Bajaproduced beer and wine.

Where to Eat

Tijuana has many five-star restaurants, and the variety of food choices in the city is astounding. You’ll find everything from the most modern-fusion cuisine to modest but unbelievingly delicious street tacos. To many people’s surprise, the Caesar salad was created in Tijuana, so don’t be surprised to see it on many menus.

Night Life

Tijuana is renowned for its nightlife, with many discos and nightclubs to choose from. You’ll find late-night dancing and clubbing in the Zona Río and Plaza Fiesta regions, whereas Calle 6 (Calle Sexta) is home to numerous hip bars and restaurants. You’ll also find karaoke and sports bars throughout the city as well as wine bars that feature the excellent local varietals of Baja California.

Activities

Tijuana offers spectator sporting opportunities that you’ll not find in many other cities. You can watch live greyhound racing at the Hipódromo Caliente, or traditional bull fights at the Toreo de Playas de Tijuana (Bullring by the Sea). In addition, the Jai Alai Fronton Palace, which housed live Jai Alai (Basque ball) for many decades, and which is now a cultural events forum, provides striking architecture and the possibility of viewing the old courts.

Culture

Tijuana has myriad cultural activities from which to choose. The most well known spot for art, and a perfect place to start, is at the Tijuana Cultural Center (CECUT) – the only institution of the National Council for Culture and the Arts outside of Mexico City. CECUT has in fact become the primary symbol of the city of Tijuana. It hosts fine arts, literature, music, dance, theater, folk, and visual arts exhibits and festivals, and has an Omnimax theater and planetarium. The Museo de las Californias and the Cubo Gallery, both housed inside, are not to be missed.

Nearby Trips: Playas de Tijuana

Just on the west of the city you’ll find Playas de Tijuana – the Beaches of Tijuana... Here is where you’ll find the only Bullring the city has left (the original one in downtown Tijuana was demolished several years ago). Here is also the beginning of the TOLL Road which goes all the way to Ensenada.

Shopping

Tijuana is a shopper’s mecca, with offerings ranging from handmade Mexican folk art to designer clothing housed in modern, high-end department stores. Worth checking out are Plaza Río Tijuana and Pueblo Amigo. Mercado el Popo and Mercado Municipal are two worthwhile stops for enjoying Mexican popular culture.

Medical Tourism

Tijuana is a popular destination for health care services. Many Americans cross the border to frequent the city’s professional and well-priced pharmacies, physicians and dentists.

Rosarito, located just 30 miles south of San Diego, is the perfect place for R&R. From slow, delicious world-renown “Puerto Nuevo style” lobster dinners, to miles of sandy Pacific-front beach on which to lounge to its numerous wellness spas, Rosarito is a place for relaxation. But don’t worry, there are plenty of opportunities for recreation as well. Surfing is good here, especially in the winter, and sports fishing is also readily available, as is horse-back riding on the beach and nearby golf. Away from the water you can rent ATVs or dune buggies and check out the semi-arid inland geography.

Rosarito has a robust nightlife. There are numerous restaurants and bars, ranging from elegant and quiet, to karaoke bars to those with beach volleyball or even mechanical bulls. Papas & Beer is a Rosarito institution, with 50,000 sq ft of sand it’s the largest beach club on the West Coast. Festival Plaza hosts concerts throughout the year that draw large crowds.

Rosarito hosts many annual events, the most popular being the Rosarito-to-Ensenada bike ride, a 50-mile route primarily hugging the stunning Pacific coast. In fact, it’s so popular there are now two per year. Other possibilities include the International Mariachi & Folklorico Festival, the Baja Blues Fest, the Rosarito Art Fest and the Wine & Lobster Festival in nearby Puerto Nuevo. Rosarito has a growing art scene, with more galleries opening each year and an increasing number of open studios run by individual artists or collectives. If film is your passion, you’ll be glad to learn that Baja Film Studios (previously Fox Studios) is in Rosarito… Many films or parts of – have filmed there, such as Titanic, Master and Commander: The Far Side of the World, Pearl Harbor, Deep Blue Sea and most recently, All is Lost with Robert Redford. Ensenada is one of the most important ports in Mexico, the second largest cruise port in all of Mexico and the only commercial port in Baja California. You’ll find a vast variety of restaurants and bars on Calle Primera (First Street).

Hussongs, at the end of Calle Primera, on Avenida Ruíz; is the oldest and has been open since 1892 and is still owned and operated by the Hussong family. This is the very birthplace of the Margarita cocktail, created in 1941 by a Hussong bartender for Margarita Henkel, daughter of the German ambassador in Mexico.

Activities

La Bufadora (the blowhole) is located on the Punta Banda, about 20 miles south of Ensenada. La Bufadora is a marine geyser produced by air trapped in a sea cave due to the ocean waves, which becomes pressurized and is then released upward in a large, often thunderously loud, spout, sometimes up to 100 feet in height. Spectators are often the recipients of the spout’s spray, which is most welcome on a sunny afternoon. It’s a spectacle of nature you won’t see many other places.

Ensenada is home to many museums, among them the State Center for the Arts (CEART), the Municipal Institute of Art and Culture (IMAC) and Esteros Museum. Also of note are the Riviera Cultural Center, Civic Plaza and the historical Former Maritime Customs building, considered one of the very oldest still operating in the state (since 1887).

Just a few miles out of town you’ll find the beautiful Baja wine trail. A full 90% of Mexico’s wine are produced here in the Valle de Guadalupe region, and there are numerous wineries with tasting rooms for your sampling pleasure. Especially fun is the Fiestas de la Vendimia held in August, which is a two week celebration of the harvest, with wine tastings, gourmet meals, workshops and concerts.

For a unique shopping experience, don’t miss out on the Black Market, Ensenada’s large seafood market, which has been in operation since the 1950s. Visitors get a glimpse of contrast in San Quintín—from the calm waters and sailboats bobbing on calm waters to a vision of a volcano in the distance. There are historical and contemporary lodgings, flora and fauna not found in other areas of Baja, miles of beaches and bays and sand dunes on shore, a sea lion sanctuary in the depths of the bay and a National Observatory at the highest mountain peak. helped built a mill and later a fishery. The Mision de Santo Domingo de la Frontera was the second built on Camino Real, Highway 1. It thrived from 1775 through 1839. Now ruins, it once cultivated olives, grapes, figs, pear, prickly pear and more. Mama Espinoza offers the famous lobster burritos, but also houses a museum which exhibits ancient artifacts, photographs, and fossils from the region.

La Lobera is the nearby sea lion sanctuary, with caverns made from years of water washing against the rocks offering a lovely haven.

Sierra San Pedro Martir National Park features the highest peak around—Picacho del Diablo at more than 10,000 feet. Founded in 1947, the park area spans 170,000 acres and houses the National Observatory, a wildlife refuge and various species of conifer, as well as observation point for viewing California condors and a chance to see both the Pacific Ocean and the Sea of Cortés. A paradise for hiking, backpacking, mountain biking, ita has numerous trails and campsites. The walk to Dome Mountain is worth it. Several telescopes give an even more astounding view of the natural habitat that graces the mountain range.

Activities

The Historic District, with its neoclassical architecture, has buildings dating from the beginning of the 20th century. The mission, Misión de Nuestra Señora del Pilar de La Paz Airapí, was built by the Jesuits in the early 1700s. In 1995, many of the islands, mountains, oceans and sea beds around La Paz were inducted into the Global Network of Biosphere Reserves. This area of the Sea of Cortés was declared a UNESCO World Heritage Site in 2005. Of the 40 species of terrestrial mammals, 40% are unique to the islands. Of the 120 species of cacti found in the islands, half are unique to the Gulf of Cortés islands.

La Paz was founded by the Spanish in 1535, but Jesuits built the community. In the town square – the Zocalo – visit the Cathedral – Misión de Nuestra Señora del Pilar de La Paz Airapí – or learn to play the local bingo game, Loteria.

There are galleries and museums like the Museum of Anthropology and the Whale Museum, which has completely reconstructed whale skeletons. Located only twenty miles from La Paz, Isla Espiritu Santo formed from black lava and volcanic ash but resulted in an amazing transformation. The rugged shoreline and off-shore islands feature spectacular deep, white, sandy bays while the east coast has enormous towering cliffs, unique rock formations and intriguing sea caves. It is a paddling and snorkeling paradise. Visitors can swim with sea lion pups, hike intriguing volcanic arroyos, watch manta rays leap out of the water, follow a school of dolphins, and explore hidden inland lagoons and sea caves. A variety of whales – Orcas, California Gray, fin, sperm and humpbacks, and the amazing blue whale – migrate into the Sea of Cortés in February and March.

An indigenous culture –including the Guaycura and Pericu tribes –inhabited Todos Santos for nearly 1,000 years, but it’s now long gone. East Cape, where anglers and outdoor aficionados congregate is sometimes referred to as the “other side of Cabo,” is the relatively large region that begins just east of San José del Cabo and runs northward along Baja’s legendary Sea of Cortés for about 100 miles as far as Bahia de Los Frailes. It is also known as one of the world’s premiere spots for big game fishing, with consistent catches that include blue and striped marlin, sailfish, dorado, wahoo, yellowfin tuna, roosterfish, amberjack, grouper, mahi mahi and more. Though fishing season peaks from May through October, fishing is still considered great all year. Many major airlines fly to both Los Cabos International Airport and the International Airport in La Paz. Major car rental agencies service both airports, but transportation can also be arranged in advance through the shuttle taxi company, T.T. Cabo del Este.

East Cape is where you can be as active or as laid back as you choose. With miles of unspoiled beaches and pristine Prussian blue waters teeming with sea life, sport fishing, scuba diving, snorkeling, swimming, kayaking, and wind and kitesurfing are ever popular. Birding is fast becoming popular, as is hiking, horseback riding, and mountain biking. ATVs are available for off-road exploration. There is even a zip line canopy for the adventurous.

Nearby, in San Bartolo you’ll find regional Mexican candy – papaya, mango and guava are some of the most favorite ones. San Bartolo is also famous for their machaca burritos – they are delicious.

The Booming Baja Wine Award-WinningWinesCountry ...Are a Way of Life

The Baja California Wine Country is located a little less than two hours south of San Diego, in a coastal area known as Guadalupe Valley. In a valley about two-thirds the size of Napa, this is a region boasting Mediterranean-like micro-climates that have proven to be extremely conducive to producing award-winning wines. Today, it is home to 93 official wineries ranging from boutique and small independent wineries to large-scale commercial wineries.

But it didn’t happen overnight but over a rather long, nurturing period that was fed by immigrant knowledge of Old World wine-making (notably Italians and Russians) as well as the dedication and commitment of expert oenologists. Because of this concentration of talent and a land blessed by the elements, Mexico now produces some of the best, most outstanding wines in the world. Guadalupe Valley is no longer a secret among wine aficionados: But there is a catch.

Since approximately 10 percent of Mexico’s wines are exported, it is necessary to travel to Mexico to sample many of these outstanding wines. Popular varieties t Chenin Blanc, Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Cabernet Franc, Tempranillo, Malbec, Merlot and Barbera.

In the last two decades, vineyards and vintners have debuted their wines to an eager public, creating Baja’s own wine route in the process. Two in particular, are well worth the visit.

L.A. Cetto

One of Mexico’s largest wine producers, L.A. Cetto is a vineyard and brand that is popular with locals as well as tourists. Producing great wines for over 80 years, the vineyard is located at the northeastern end of Guadalupe Valley, nestled up against the foothills. With warm summer days and cool summer nights, the climate is sometimes compared to Napa/Sonoma.

Viña Liceaga

Initial plantings included Merlot, Cabernet Sauvignon and Cabernet France and was expanded over time to include Grenache and Syrah varieties.

Today, his wife carries on the legacy of Viña de Liceaga as one of the most recognized award-winning wineries in México. As a boutique winery that produces 4,000 cases a year, Viña de Liceaga is committed to making excellent Mexican wine a symbol of the Baja California culture. But that is the catch as you must go to Mexico to taste their award-winning wines. Their goal is for every visitor to their vineyard to leave with a memorable experience based on quality wines and quality service. Gabriela Melchum

It was inevitable that Chef Gabriela Melchum would return to her native Ensenada to fulfill her passion for cooking when, in 2008, she opened Hotel Hacienda Guadalupe with a small kitchen, offering food only for hotel guests. Two years later she broadened her horizons with Restaurante Hacienda Guadalupe, which is open to the public.

In this new space, Chef Gabriela takes over her kitchen to guide a group of cooks, most of them graduates of the School of Enology and Gastronomy at the University (UABC) in Ensenada. Here, she offers a sustainable regional style fare with a Mediterranean touch. Most of the fresh ingredients are grown locally, always supporting the small and medium producers in the Valle de Guadalupe and the region. She was fulfilling a dream long nurtured while she lived in California, where she and her family owned a gift store.

In 1989 she had moved to Orange County and, during holiday trips to Ensenada, the idea was born to create a new Project in the Ruta del Vino (the Wine Route). During that time, Gabriela discovered her passion for cooking and wine. Deciding to prepare for a new lifestyle, she enrolled in Orange County Culinary Art Institute, where she perfected her cooking expertise.

To learn about business administration in the hotel and restaurant industry, she also enrolled in Orange Coast College. By 2008 the construction for their development finalized and, together with her husband and daughters Carolina and Paulina, they returned to Ensenada to begin the new adventure in Hotel Hacienda Guadalupe – and a winery in the Ruta del Vino in the Valle de Guadalupe.

Throughout the years, Hacienda Guadalupe has been among the top restaurants in the region, participating in prestigious events – and boasts one of the most complete cellars of Mexican wine, including their own Melchum label.

MyrnaLiceaga

Myrna Liceaga became head of Viña de Liceaga after the death in August 2007 of her husband, Eduardo Liceaga Campos, who was the founder of the company. A visionary man with a strong desire to produce high quality wine, Eduardo Liceaga established Viña de Liceaga in the valley region near the city of Ensenada, Baja California.

In 1982, he acquired a property in San Antonio Las Minas, a strategic location for growing varieties of wine grapes, for its soil richness and close proximity to the sea. The first harvest was ready in 1983, so Viña de Liceaga started with its first label, Merlot, with Enrique Ferro as primary winemaker until 2010. His former assistant, Juan Pedro Mendevil, is currently the enologist.

“Initially, the vineyard was established with previously selected plants that were ideal for the climactic conditions and soil properties of the land where the grapes were grafted. At first, the vineyard was planted with Merlot, Cabernet Sauvignon and Cabernet Franc varieties,” explains Myrna.

“Over time, the vineyard expanded to include Grenache and Syrah varieties. Located 10 Km from the Pacific Ocean at 250 meters above sea level, our vineyard is truly blessed with a unique microclimate that includes Mediterranean weather, humid winters and dry temperate summers that are caressed by the sea breeze.”

After twenty years, Viña de Liceaga is one of the most recognized wineries in Mexico, producing high quality wine at an international level. Its location and unique microclimate are ideal for slow maturation of premium grapes, leading to the honor of being The Fine Wine of Mexico for its 1999 Merlot Reserva, as well as countless other awards.

A trip to the dentist is rarely an event we anticipate with a great deal of pleasure – unless that dentist is someone who is passionate about his profession. and uses techniques designed to alleviate possible discomfort to the patient. Meet Dr. Oscar Ceballos of Odontologia Integral, Cosmetica E Implantes.

Born in Mexico City on March 30, 1959, his interest in medicine was engendered by the unrealized aspirations of his father, who had wanted to become a doctor but who was forced to drop his studies when his own father needed help.

Realizing the importance of a higher education, he pursued his dream by attending UNITEC, a private university in Mexico City that is well recognized by the World Health Organization in the United States.

“I received really good training as a dentist at UNITEC, but I wanted something special, so I became part of the first Dental Implant Study Club by Loma Linda University, pioneers in the area of dental implantology,” he reveals.

Back in 1986, everything in dental implantology was new, so Ceballos had to move fast and stay abreast of the pace. No university in the United States offered a specialty in this field so, thanks to this study club, he began to navigate this new world of artificial teeth.

The second most significant move was to complete his training in Cosmetic Dentistry. In the course of his career he has continued his education attending lectures and international congresses and has earned honors and awards.

Great news – a new dermatology and cosmetic clinic is slated to open soon in Cabo San Lucas: Dermatológica Láser & Cosmetic. Although new to Baja Sur, Dermatológica Láser & Cosmetic has been providing firstrate dermatologic service in Mexico since 2006. The first clinic opened its doors that year in Tijuana, and additional clinics have since opened in Culicacan and Hermosilo.

Like the existing locations, the Cabo clinic will provide a wide variety of dermatological and aesthetic services, including an acne and rosacea clinic; psoriasis treatment; laser, photofacial, skin tightening and permanent hair removal services; microdermabrasion; body sculpting; and Botox injections, to name a just few, all using cutting-edge technology and performed with the highest level of professionalism. The staff will be made up of a combination of dermatologists and cosmetologists, and the clinic will be the providers of dermatology and cosmetic laser procedures for the One World Hospital Group of Saint Luke’s in Los Cabos.

A visit to the cave paintings of the Sierra de San Francisco is truly inspirational. Then there’s off road racing which became popular after the first Baja 1000 back in 1967. Carlos Ibarra

“Loreto is a magical and historical place!” exclaims Chef Carlos Ibarra, who opened the Agave Café Restaurant and Bar a year ago. This Latin fusion restaurant puts a strong emphasis on using the best of native Baja ingredients.

“When I first arrived here I could see the influence of the Spanish and French cultures on the local cuisine,” he states. “Loreto is a very rich area that must be seen with your own eyes, felt with your own senses. You can taste and smell the historical influences in the food.”

A lover of fusion style, Chef Ibarra likes to combine many ingredients based on familiar traditional Mexican cuisine, while he is influenced by the many other styles that he has experienced during his years in the hotel and culinary industry. Diners consider a number of his dishes “signature dishes.” These include Thai Sweet and Sour Fish, Yellowtail Serranno Sashimi, Tuna Tartare and Lobster Chile Relleno in Poblano Sauce.

Born in Cuernavaca, Morelos, Chef Ibarra was raised in Guanajuato, which he considers his home town. Due to his adventurous mother’s work, he was able to sample different dishes and flavors in the many areas they visited, finding that the best food in every town was obtained from local markets.

“My mother started several restaurants herself; that’s where my unique experience and passion for creating my own style of cuisine was born,” he says. His early career as a tourism administrator began in Playa del Carmen, where he worked in topnotch hotels learning new cooking styles.

“From my grandmother I learned about the rich culinary culture of Mexico and, from my mother, the love of food, travel and new flavors,” he says. Having lived in Ensenada, Mazatlan, Los Cabos and Belgium, he was constantly in touch with local restaurants and their food, realizing that he wanted to follow this path.

Larbi Dahrouch

“I do my cooking from the heart,” joyfully exclaims Executive Chef Larbi Dahrouch of One&Only Palmilla’s Agua restaurant. Naming it “Mexiterranean,” for the past ten years, he has created a rich, flavorful hybrid of Mediterranean cuisine that decidedly reflects his heritage, yet includes native Mexican and Indian influences.

This year marks the 10th anniversary of the opening of the One&Only Palmilla in Los Cabos. As part of the celebration, the resort has re-launched its beloved Agua restaurant as “Agua by Larbi” in recognition of Chef Larbi. Dahrouch has been an integral part of the resort since its opening in 2004. His restaurant has long been a favorite of guests at Palmilla for its lively atmosphere and nightly rotation of live entertainment; its stunning view of the Sea of Cortés and the lights of San José del Cabo.

Born in Tangiers, Morocco, in l959, he moved to Bordeaux, France, with his family when he was 11 years old. Beginning in Gascony, at age 16 he became an apprentice under guidance of the legendary French Chef Jean-Louis Palladin at a four-star restaurant, La Table des Cordeliers, in Condom. He also attended the Academie de Toulouse S.A. in Gers, alternating two weeks with each for three years, learning French cooking and culture. In 1976 he graduated with a Chefs des Services Administratis certificate before leaving to conquer the culinary world.

Over the years, he worked extensively with prominent chefs in Gascony, Paris, Los Angeles, Washington, D.C. and Philadelphia, which was his last stop before heading to Mexico. “I do my cooking from the heart,” he says. “I use the freshest ingredients available and like to satisfy my guests with excellent food, yet with simplicity.”

Family is also an important factor in Dahrouch’s life. He and his wife Silvana, whose family comes from Naples, have two sons: Altair and Casimir.

Trend setting – Bar Esquina, is located at Medano Beach in the heart of Los Cabos and here is where you will find Chef Rogelio Garcia working his magic. The menu features a unique twist on international creative cuisine: Mexican influenced Mediterranean flavors using locally-grown organic produce, fresh fish from the Pacific and Sea of Cortés, and top-quality meats cooked on a mesquite grill.

With live music and an energetic crowd Bar Esquina delivers a wonderful experience for a romantic occasion or a group setting. The Chef names Italian, Japanese and Mexican foods as his favorites. As for his dream meal, that would be fresh ingredients with lots of flavor – and surrounded by family and friends. He most enjoys working with seafood, spices and vegetables.

Born in Ciudad Altamirano, Guerrero, Chef Rogelio began as a waiter in a small family business with his mother and grandmother, later as a cook in classic local cuisine, followed by the culinary institute in Acapulco. He worked in different Mexican restaurants then traveled to Cuba, the Dominican Republic and Venezuela. After six years away he found the opportunity to return to Mexico and begin his new adventure at Bar Esquina, where he works with passion, dedication and love for his profession.

Miguel Angel Nava Valdez

Featuring a million dollar view and a mouth-watering menu, Belio Restaurant in Ensenada offers the perfect combination of scrumptious food and breathtaking views, especially at sunset. Chef Miguel Angel Nava Valdez is the beneficiary of this setting, overseeing the creations that Belio’s has offered since opening its door four years ago.

With its peaceful setting and Mediterranean climate, Belio Restaurant uses the variety of marine species prevalent in the Pacific Ocean as the main menu features. According to Chef Miguel, who’s called this area home since he was 17, “We use fresh local catch as well as locally grown ingredients, including the wines.” His signature dish: Blue tuna medallions sealed with sesame and spicy peanut butter vinaigrette. The chef’s dream meal is the one he creates today. Other tasty menu items include a Caesar salad mixed tableside for two, ox tail soup, charred corn soup, Cornish game hen, and a shrimp crown entrée which is a delicious bacon-wrapped shrimp in puff pastry and topped with a scrumptious cream sauce and baby corn.

This upscale and trendy restaurant also features menu items like marlin lasagna, marlin quesadillas, and seared tuna, to name a few. “My cooking styles include classical, Mediterranean, fusion, and a style called cocina de autor – my own creations,” shares the chef, who was born in the state of Chihuahua and studied at the Culinary Institute in Mexico City.

“I had a strong influence from my father, a man who always supported and guided, helping me to become the person I am today,” shares Chef Miguel. A lot of that influence is reflected in the creative manner in which he performs his culinary duties day in and day out.

Jesus Alberto & Magnolia Ayala

There was something magical about the location of the Casa Magnolia restaurant before it even opened its doors in August 2013. With an old world charm, the wood building was one of the first homes built in downtown Ensenada and is protected as a historic landmark dating back to 1916. Despite it being almost 100 years old, owners Jesus Alberto Ayala Urias and his wife, Magnolia de Ayala, were determined to save it, preserve its essence and build Casa Magnolia around its magical qualities.

Putting in many hard hours, they were able to adapt it so that it could function as a restaurant. Located on Costero Blvd., clientele seem most to admire the conservation efforts that give it an aura of historical beauty, as well as a peaceful ocean view and signature dishes created by innovative chefs. Now the Ayalas focus on the magic of Casa Magnolia itself. “At Casa Magnolia you’ll find top-quality delicious food with a very tranquil atmosphere and an amazing ocean view.”

The Ayalas have their own favorite dish – swordfish covered in a crab sauce – but their dream meal would be: natural scallops, grilled beef ribs and for dessert, strawberries flambé with cognac.

What the Ayalas like best about being located in Ensenada is that it is accessible to both Californias and offers tourists a variety of sights and activities.

Marcelo Raul Romby

Where the Sea of Cortés meets the Pacific Ocean and the beauty of these waters contrast with the desert terrain, Chef Marcelo Raul Romby found tranquility, scenic beauty and the best of life’s comforts, including a culinary haven. He settled in Cabo San Lucas, far from his homeland, Argentina, but found a way to stay connected to his roots by opening his restaurant, Chamuyo with his long-time friend Gonzalo Mantiñan.

Romby offers traditional Argentine cooking from empanadas to a signature dish called “Costilla Chamuyo,” to fine cuts of meats slow-grilled over low flame coals. At the full service bar visitors can unwind, enjoying a glass of wine or cocktails with friends.

Since he was very young, Romby enjoyed both cooking and architecture. He studied architecture at the National University of Cordoba – in Argentina. And even after graduating, food kept haunting him. One day he decides to visit his long-time friend, Gonzalo – who had since moved to Cabo San Lucas and they both decided to start in the Restaurant business… He returned to Argentina for 3 months – finalized a project he was working on – and returned to Cabo. He hasn’t looked back.

“There are two very influential mentors – culinary geniuses – who inspired me. First, a great chef named Gato Dumas. We coincidentally shared the same interest with architecture as our first careers before we switched to the culinary arts. The other was Francis Mallmann, classically trained at a French culinary school but who modernized Argentine dishes using indigenous ingredients.” He learned from them and his passion grew. “I tried to capture the essence of their flavors and give them my own twist.”

His creative talent goes beyond his kitchens. “It’s impossible to leave my passion for beautiful architecture behind. It became an intrinsic part of me.” He designed his restaurant inside and out, and hopes to open more in the next five years, bringing a taste of Argentina to Cabo and beyond.

“In this diversity of eco-systems you find a large variety of products, such as organic vegetables from local growers, exquisite carefully selected fresh fish and seafood caught daily from the Pacific Ocean and Sea of Cortés by the local fishermen, and exquisite regional cheeses from the city of Constitucion,” he explains. “We also offer the best cuts of beef, cooked in a grill over mezquite fire.“The gastronomical selection is world class.”

Born in Buenos Aires, Argentina, he initially considered studying medicine, but realized his passion was in cooking and began to study at the Colegio de Cocineros Gato Dumas. Following this came the chance to work closely with excellent professionals in some of the top restaurants in town, such as Au Bec Fin, Splendid and Le Biblo.

Later, he decided to travel and examine other cultures-discovering new ingredients, techniques and trends

In 2003 he arrived in Mexico and started to work for Starwood, which offered him the opportunity to develop personally and professionally in different kitchens worldwide, such as Tokio, Paris and London. But wherever his travels take him, he regards Los Cabos as his home and considers Baja California a very safe destination.

“Definitely,” he exclaims. “Here is where my second son was born and is the place where I truly feel kids can be raised safely – close to nature and far away from the bad influences found in large cities.”

Chef de Luca’s vision is that visitors to his restaurant will find the finest gastronomical experience, accompanied by superior service – and a spectacular view of the Sea of Cortés.

Chef Rogelio Dominguez, at Hotel Boutique Guaycura in Todos Santos, is delighted with the opportunity to become the chef at El Mirador Restaurant at El Faro Private Beach Club & Spa by Guaycura Hotel and continues to learn every day--”Loving what I do!” he exclaims.

“Throughout the year, we are very lucky that the Sea of Cortés and the Pacific Ocean provide us with fresh fish and fancy seafood,” Chef Rogelio explains. “Most of the vegetables and herbs we use are organic and grown locally.” His style of cuisine is international in origin with a touch of Mexican.

At the moment his signature dish is Pescado en Hoja Santa, which is fish wrapped in Saint Leaf. This is an herbal plant that is used in Mexico. The chef’s favorite foods include Hare Stew with hand-made flour tortillas, or Deer Machaca – shredded beef-style; both of which are local dishes.

As for his dream meal, he would like to try ancient dishes from Mexican ancestral cultures, such as the Aztecs, so that he might be able to integrate them later on into his own dishes. Among the ingredients he most likes to use are Mexican herbs and spices, such as Hoja Santa. He says generally he most enjoys preparing fish and seafood.

Born in Todos Santos thirty years ago, he began to cook when he was eight, when he made Fish Machaca, which was a family favorite. He learned with his father who, although a fisherman, was a great cook and highly passionate about it. After further excellent instruction from a Swiss chef, he continued his career at the Hotel California until he joined Hotel Guayacura, an elegant boutique hotel with a private beach club and spa and two restaurants some 40 minutes from Cabo San Lucas.

“I am passionate about my culture and my town, Todos Santos,” he says. “I invite BajaTraveler’s readers to visit us and we will be waiting for you at Guaycura!”

Being the chef at El Rey Sol French Restaurant, in Ensenada delights Chef Luis Carlos Carbajal – pictured here with the Ambassador from France. The owner of Mexico‘s oldest French restaurant, Jean Loup Bitterlin, is the son of the founder, Virginia Geffroy de Bitterlin, nicknamed Pepita, whom Chef Luis Carlos regards as an icon in fine gastronomy.

“El Rey Sol is considered a top international restaurant that offers an authentic French menu and fusion cuisine,” Chef Luis Carlos explains. “It is renowned across the country, as well as throughout the world. Mrs. Pepita earned the Five-Star Diamond Award, among many others, during her 67-year legacy; it is an honor and a responsibility to maintain her legacy and to be the chef here.”

In addition to serving French fare, the extensive and distinctive menu includes traditional Mexican and seafood dishes. Pastries are also a speciality, plus an extensive wine cellar of the best regional wines. Rather than naming a signature dish, he says he likes to serve food that is “beautiful to the eye, delicious to the palate and great for the digestion.” Besides French cuisine that includes fines herbs, the chef likes spicy dishes such as Greek, Oriental and, of course, Mexican. As for his “dream dish,” Chef Luis Carlos says it would be one that all nationalities, religions and countries would enjoy together.

Born in Hermosillo, Sonora, he attended university there and, over a period of twenty years, has had the opportunity to work in Five-Star resorts, as well as learn from great teachers including, he says, Mrs. Pepita –whom he didn’t have the honor of meeting – but has been able to learn from the cooking legacy she left behind. His mother is also an excellent example of being a great cook, with the necessary love that makes life enjoyable.

Octavio Hernandez

Bringing more than a decade of experience at awardwinning hotels and restaurants to Hacienda Cocina y Cantina in Cabo San Lucas, Chef Octavio Hernandez oversees all culinary activities at the restaurant, including private events and catered affairs.

This signature restaurant at the Hacienda Beach Club and Residences at Medano Beach merges traditional Mexican architecture with casual beachfront dining for an elegant, relaxing experience. Chef Hernandez has trained with notable chefs in Spain, France and Mexico City. Visiting various regions of Mexico including Oaxaca, Puebla, Guerrero and Veracruz, he studied the unique flavor profiles and recipe variations from the coastal and interior regions of Mexico.

The menu at Hacienda Cocina y Cantina showcases the different regions and flavors of Mexico through expertly crafted authentic dishes, using the finest local ingredients. Signature entrees include Arrechera (marinated grilled skirt steak), Fideo Seco (traditional Mexican pasta, fresh cheese, cream and avocado), Carnitas (slow roasted pork) and Pollo con Mole de Puebla (chicken breast, dark mole, white rice and plantains). The mouthwatering desserts include Churros de la Casa (Mexican street doughnuts with chocolate and caramel sauces), Pastel de 4 Leches (four-milk cakes) and Flan de Cajeta (traditional Mexican custard).

The kitchen was the heart of his home in Acapulco, where Chef Hernandez spent his childhood. Spending time with his mother and grandmother, he learned to make tamales, pozole and sopes, prepared using traditional methods. Every day after school he ate Fideo Seco, which is considered Mexican “comfort food” and now appears on the menu at Hacienda Cocina y Cantina, reflecting his pride in traditional home-style Mexican cuisine. In sharing each dish with his guests, he hopes it will tell the story about its origin and impart a deeper connection with his homeland of Mexico.

Sometimes you need to travel halfway around the world before discovering you’re finally home. Such was the case for Chef Dany Lamote who’s served as executive chef at La Coronela Restaurant at Hotel California in Todos Santos for the last dozen years. Originally from Kinshasa, Congo in Africa, he eventually found his way to Calgary, Alberta, Canada before coming home to Todos Santos in 2002.

“I went to university to study economic sciences, but soon realized that I needed to do something more hands on,” explains Dany. “After studying culinary arts at the prestigious CERIA Culinary Institute in Brussels, Belgium, I moved to Montreal, then eventually to Calgary before heading south to Todos Santos and specifically the Hotel California.”

In addition to serving as La Coronela’s executive chef, Dany is also the owner/chef of Santo Vino, an eclectic bistro and wine bar. The menu features locally-produced fruits and vegetables. The focus is on seafood and the cooking style that’s reflected in the French chef’s background.

The chef has his parents to thank for his diverse background. “The most influential figures in my life are no doubt my parents,” says Dany. “They not only showed me the world, but my mother also shared her passion for cooking traditional and exotic foods.” Today, a few of Dany’s signature dishes include duck breast with mango and ginger; tuna or yellowtail carpaccio/sashimi with habanero chiles; and avocado, white chocolate, and tequila milk shake.

Initially founded as a mission in 1723, Todos Santos is today a blend of quaint and quiet that offers a mix of history surrounded by all the modern conveniences. “I’ve raised my three kids here, and this is a wonderful place to visit as well as return,” Dany reflects. He adds that there are few places with such beauty and serenity, yet without the crowds and traffic, which is why Dany Lamote calls Todos Santos his home.

Even though Tecate Beer is world renown, Tecate also features an array of wineries. “Puerta Norte” was so named in its grand reopening in March 2012 in honor of the northern entrance to Baja’s Wine Country. It offers first class service and the most prestigious wine selection from the region.

In Puerta Norte’s kitchen, Lira trusts his instincts to experiment as he did in his mother’s kitchen while growing up. His classical dishes have a touch of the innovative. “Passion and love is the signature that every dish must have,” says Lira. His dream is to create a dish with a fusion of flavors stemming from Mexican, Japanese and French influences, perhaps using his favorite ingredients to cook with – pepper, salt, aromatic herbs and organic products.

Born in Mexico City, Lira’s love of cooking started at the age of six. He initially wanted to be a baker. “With time, I started to develop a taste for cooking. I would help my mom prepare dishes in the kitchen, learning her seasonings and cooking techniques.”

After studying tourism at the Roosevelt Institute in Mexico City, Lira worked at the Kristal Hotel in the Zona Rosa as a cook, which fueled his passion.

His professional mentors include Chef Gabriel Leon, who started him on his culinary career, and internationally recognized Chef Rafael Bautista. “They shared with me their techniques, their dedication and their love – which are the three major ingredients for both Mexican and French dishes.”

Abraham Vizcarra

As the chef at UVE in Ensenada, Chef Abraham Vizcarra feels that, as one evolves in the way of thinking about food and cooking, the passion for the art deepens over time.

“A chef’s style flourishes with the conviction that every plate carries a signature; it is a reflection of who we are,” he explains, “so, for me, cooking is my life--it is what I am!” Menu items highly popular among its clientele are the Spicy Onion Soup, the aged Rib Eye, a Lobster Sandwich paired with a glass of champagne, and all of the fresh Blue Fin Tuna dishes.

Opened since September 2013, UVE selects the highest quality regional products that include lobster, blue fin tuna, heirloom and organic tomatoes and local berries among others, offering a complete and attractive menu. The restaurant ages imported USDA prime beef and brings in shrimp from the Gulf of California, which is ranked with the best in the world.

“Since we are from Ensenada, we are passionate about wine,” declares Chef Abraham. “UVE’s wine cellar offers hundreds of labels, both national and international. We have been very careful in creating a unique contemporary menu that can only be complemented by our urban style building--which stands out in Baja because of its vertical gardens.” He feels Ensenada is famed for its wine industry as well as it’s amazing array of culinary options. It also exports highest quality seafood, fruits and vegetables to the United States, Canada and Japan.

Born in the State of Sonora, the chef moved to Ensenada when he was three years old. He began working in the kitchen for a living when he was 16 and, later, realized that he’d been dedicated to gastronomy for years.

“I believe ingredients and flavors are very much like feelings and emotions,” he philosophizes. “They are by nature clear and close to our core, I see no reason to over-complicate them.”
