During the 4-5 hour seminar, he discussed a variety of topics, including The Philosophy and Understanding of Service, The History of the Concierge Profession, The Dynamics of Les Clefs d’Or International, Social Media Etiquette, Attention to Detail, Verbal and Written Communication, Telephone Etiquette, Grooming; Posture and Personal Presentation including The Perfect Handshake, Name Recognition, Pre and Post Arrival Process, among many other topics.
Michael shared that, “The training seminar ‘Creating Service Magic’ is a way of giving back to our concierge community. It is offered complimentary to our members, colleagues, and regions of the world to assist in the development of concierge as well as a refresher and instruction for current members both junior and senior. In many ways it is an outreach program that assists the particular location and concierge community directly.”

With her romantic and sexy voice, Laura Pausini has captivated the hearts and emotions of audiences everywhere she has performed. That voice has made the Italian-born singer and songwriter renowned the world over and has brought her to the realization of her childhood dreams.
Furthermore, it has led to her international tour “Similares US and Latam Tour 2016,” which began in Italy in June and will include Canada and the United States, Mexico, followed by engagements in Latin America, and coming to a conclusion by appearing in a number of European capital cities by the end of October. Laura has been working endlessly to prepare for the tour, which main attraction will be her undeniable talent accompanied by her exceptional band, led by Paolo Carta. Following her demanding schedule, she will be joining Season Two of La Banda to judge aspiring young artists, helping them to grow and develop artistically. La Banda is a Latin American singing competition series created by Simon Cowell and produced by Ricky Martin. A multiple GRAMMY and Latin Grammy winner, Laura joins Martin as the second La Banda judge.

Born in Solarolo, Italy, at just eight years of age she decided to become a singer, although her dreams only extended to becoming a piano bar club entertainer. Tijuana, the largest city on the Baja California Peninsula, with a population of approximately 1.3 million, is the world’s most visited border city. It’s a dynamic and growing urban center that has close socio-economic ties to the U.S., especially to San Diego, its immediate neighbor to the north. The city is a bastion of culture and commerce, and is currently witnessing a revival in arts and tourism. Be sure to check out the Tijuana Cultural Center and the numerous independent art galleries while you’re there. Shopping in Tijuana is notable, and the city is also the epicenter of the relatively new Bajamed cuisine – a fusion of Mexican food with Mediterranean and Asian influences that relies heavily on locally sourced vegetables, cheeses and sea foods –typically paired with Bajaproduced beer and wine.

Tijuana has many five-star restaurants, and the variety of food choices in the city is astounding. You’ll find everything from the most modern-fusion cuisine to modest but unbelievingly delicious street tacos. To many people’s surprise, the Caesar salad was created in Tijuana, so don’t be surprised to see it on many menus.

Night Life
Tijuana is renowned for its nightlife, with many discos and nightclubs to choose from. You’ll find late-night dancing and clubbing in the Zona Río and Plaza Fiesta regions, whereas Calle 6 (Calle Sexta) is home to numerous hip bars and restaurants. You’ll also find karaoke and sports bars throughout the city as well as wine bars that feature the excellent local varietals of Baja California.
Activities
Tijuana offers spectator sporting opportunities that you’ll not find in many other cities. You can watch live greyhound racing at the Hipódromo Caliente, or traditional bull fights at the Toreo de Playas de Tijuana (Bullring by the Sea). In addition, the Jai Alai Fronton Palace, which housed live Jai Alai (Basque ball) for many decades, and which is now a cultural events forum, provides striking architecture and the possibility of viewing the old courts.
Culture
Tijuana has myriad cultural activities from which to choose. The most well known spot for art, and a perfect place to start, is at the Tijuana Cultural Center (CECUT) – the only institution of the National Council for Culture and the Arts outside of Mexico City. CECUT has in fact become the primary symbol of the city of Tijuana. It hosts fine arts, literature, music, dance, theater, folk, and visual arts exhibits and festivals, and has an Omnimax theater and planetarium. The Museo de las Californias and the Cubo Gallery, both housed inside, are not to be missed.
Nearby Trips: Playas de Tijuana
Just on the west of the city you’ll find Playas de Tijuana – the Beaches of Tijuana... Here is where you’ll find the only Bullring the city has left (the original one in downtown Tijuana was demolished several years ago). Here is also the beginning of the TOLL Road which goes all the way to Ensenada.
Shopping
Tijuana is a shopper’s mecca, with offerings ranging from handmade Mexican folk art to designer clothing housed in modern, high-end department stores. Worth checking out are Plaza Río Tijuana and Pueblo Amigo. Mercado el Popo and Mercado Municipal are two worthwhile stops for enjoying Mexican popular culture.
Medical Tourism
Tijuana is a popular destination for health care services. Many Americans cross the border to frequent the city’s professional and well-priced pharmacies, physicians and dentists.

Rosarito, located just 30 miles south of San Diego, is the perfect place for R&R. From slow, delicious world-renown “Puerto Nuevo style” lobster dinners, to miles of sandy Pacific-front beach on which to lounge to its numerous wellness spas, Rosarito is a place for relaxation. But don’t worry, there are plenty of opportunities for recreation as well. Surfing is good here, especially in the winter, and sports fishing is also readily available, as is horse-back riding on the beach and nearby golf. Away from the water you can rent ATVs or dune buggies and check out the semi-arid inland geography.

Rosarito has a growing art scene, with more galleries opening each year and an increasing number of open studios run by individual artists or collectives. Rosarito has a robust nightlife. There are numerous restaurants and bars, ranging from elegant and quiet, to karaoke bars to those with beach volleyball or even mechanical bulls.
Papas & Beer is a Rosarito institution, with 50,000 sq ft of sand it’s the largest beach club on the West Coast. Festival Plaza hosts concerts throughout the year that draw large crowds.

Rosarito hosts many annual events, the most popular being the Rosarito-to-Ensenada bike ride, a 50-mile route primarily hugging the stunning Pacific coast. In fact, it’s so popular there are now two per year. Other possibilities include the International Mariachi & Folklorico Festival, the Baja Blues Fest, the Rosarito Art Fest and the Wine & Lobster Festival in nearby Puerto Nuevo. Just 15 minutes south of Rosarito you’ll find the charming village of Puerto Nuevo, which boasts 30-plus restaurants, all selling the same thing! Yep, you guessed it, langostas – pan-fried lobsters – or steamed if you prefer. Apart from the lobsters, you’re in for incredible ocean views and the opportunity to shop for Mexican trinkets at the many gift shops.

Rosarito is most well known for its handmade, rustic furniture. Primarily made of carved wood, wrought iron and marble, the pieces are solid and impressive. Many of the furniture stores will custom-make pieces to your specifications. Don’t miss the large, outside mercado, with close to 100 stalls selling mostly Mexican-made handicrafts.

Ensenada is one of the most important ports in Mexico, the second largest cruise port in all of Mexico and the only commercial port in Baja California. You’ll find a vast variety of restaurants and bars on Calle Primera. Visitors get a glimpse of contrast in San Quintín – from the calm waters and sailboats bobbing on calm waters to a vision of a volcano in the distance. There are historical and contemporary lodgings, flora and fauna not found in other areas of Baja, miles of beaches and bays and sand dunes on shore, a sea lion sanctuary in the depths of the bay and a National Observatory at the highest mountain peak. Contrast is seen in the flora with a variety of pine trees and conifers next to blue palm trees and cactus. The agricultural lands are vast and varied and fertile, making San Quintín one of the highest producers of exported tomatoes and strawberries. Only 190 miles south of the U.S. border, San Quintín has the largest protected bays on the west side of Baja, and is the last coastal tourist town as the vast Baja “frontier” begins...

helped built a mill and later a fishery. The Mision de Santo Domingo de la Frontera was the second built on Camino Real, Highway 1. It thrived from 1775 through 1839. Now ruins, it once cultivated olives, grapes, figs, pear, prickly pear and more. Mama Espinoza offers the famous lobster burritos, but also houses a museum which exhibits ancient artifacts, photographs, and fossils from the region.
La Lobera is the nearby sea lion sanctuary, with caverns made from years of water washing against the rocks offering a lovely haven.

Sierra San Pedro Martir National Park features the highest peak around – Picacho del Diablo at more than 10,000 feet. Founded in 1947, the park area spans 170,000 acres and houses the National Observatory, a wildlife refuge and various species of conifer, as well as observation point for viewing California condors and a chance to see both the Pacific Ocean and the Sea of Cortés. A paradise for hiking, backpacking, mountain biking, ita has numerous trails and campsites. The walk to Dome Mountain is worth it. Several telescopes give an even more astounding view of the natural habitat that graces the mountain range.

The Historic District, with its neoclassical architecture, has buildings dating from the beginning of the 20th century. The mission, Misión de Nuestra Señora del Pilar de La Paz Airapí, was built by the Jesuits in the early 1700s. In 1995, many of the islands, mountains, oceans and sea beds around La Paz were inducted into the Global Network of Biosphere Reserves. This area of the Sea of Cortés was declared a UNESCO World Heritage Site in 2005. Of the 40 species of terrestrial mammals, 40% are unique to the islands. Of the 120 species of cacti found in the islands, half are unique to the Gulf of Cortés islands.

Located only twenty miles from La Paz, Isla Espiritu Santo formed from black lava and volcanic ash but resulted in an amazing transformation. The rugged shoreline and off-shore islands feature spectacular deep, white, sandy bays while the east coast has enormous towering cliffs, unique rock formations and intriguing sea caves. It is a paddling and snorkeling paradise. Visitors can swim with sea lion pups, hike intriguing volcanic arroyos, watch manta rays leap out of the water, follow a school of dolphins, and explore hidden inland lagoons and sea caves. A variety of whales – Orcas, California Gray, fin, sperm and humpbacks, and the amazing blue whale – migrate into the Sea of Cortés in February and March.

East Cape, where anglers and outdoor aficionados congregate is sometimes referred to as the “other side of Cabo,” is the relatively large region that begins just east of San José del Cabo and runs northward along Baja’s legendary Sea of Cortés for about 100 miles as far as Bahia de Los Frailes. It is also known as one of the world’s premiere spots for big game fishing, with consistent catches that include blue and striped marlin, sailfish, dorado, wahoo, yellowfin tuna, roosterfish, amberjack, grouper, mahi mahi and more. Though fishing season peaks from May through October, fishing is still considered great all year. Many major airlines fly to both Los Cabos International Airport and the International Airport in La Paz. Major car rental agencies service both airports, but transportation can also be arranged in advance through the shuttle taxi company, T.T. Cabo del Este.

East Cape is where you can be as active or as laid back as you choose. With miles of unspoiled beaches and pristine Prussian blue waters teeming with sea life, sport fishing, scuba diving, snorkeling, swimming, kayaking, and wind and kitesurfing are ever popular. Birding is fast becoming popular, as is hiking, horseback riding, and mountain biking. ATVs are available for off-road exploration. There is even a zip line canopy for the adventurous.

MyrnaLiceaga

Myrna Liceaga became head of Viña de Liceaga after the death in August 2007 of her husband, Eduardo Liceaga Campos, who was the founder of the company. A visionary man with a strong desire to produce high quality wine, Eduardo Liceaga established Viña de Liceaga in the valley region near the city of Ensenada, Baja California.
In 1982, he acquired a property in San Antonio Las Minas, a strategic location for growing varieties of wine grapes, for its soil richness and close proximity to the sea. The first harvest was ready in 1983, so Viña de Liceaga started with its first label, Merlot, with Enrique Ferro as primary winemaker until 2010. His former assistant, Juan Pedro Mendevil, is currently the enologist.
“Initially, the vineyard was established with previously selected plants that were ideal for the climactic conditions and soil properties of the land where the grapes were grafted. At first, the vineyard was planted with Merlot, Cabernet Sauvignon and Cabernet Franc varieties,” explains Myrna.
“Over time, the vineyard expanded to include Grenache and Syrah varieties. Located 10 Km from the Pacific Ocean at 250 meters above sea level, our vineyard is truly blessed with a unique microclimate that includes Mediterranean weather, humid winters and dry temperate summers that are caressed by the sea breeze.”
After twenty years, Viña de Liceaga is one of the most recognized wineries in Mexico, producing high quality wine at an international level. Its location and unique microclimate are ideal for slow maturation of premium grapes, leading to the honor of being The Fine Wine of Mexico for its 1999 Merlot Reserva, as well as countless other awards.

Sabastián Suárez

“The vineyards of the Guadalupe Valley, San Vicente, San Antonio de las Minas and Tecate are the most important sources of grapes for the wine that is produced at L.A. Cetto winery,” says Sebastián Suárez, Cetto’s winemaker.
“These three large areas can enjoy microclimates and different soils that benefit from the winds and sea breezes; great vineyards that are not only recognized for their beauty, but because they have allowed us to obtain high quality wines. The area measures around 1,200 hectares and the vines are up to sixty years old,” he explains. “L.A. Cetto is undoubtedly the Mexican company leader in the production of quality wine. With 88 years of experience for three generations, their wines today are in Mexico and 27 countries worldwide.”
Suárez describes the reason for his love of working for a vineyard in Mexico. He enjoys the challenge of continuing to develop magnificent wines with his own seal. He is always seeking to highlight the expression of the grapes, especially the varietal characteristics, where fruit and wood are balanced, vivid colors and great aroma developed. He describes his journey into winemaking.
“I started in the world of wines from a very early age, because the high school I attended had an oenological orientation,” he relates. “Later, I studied agronomy, oriented also to oenology. As I developed an interest in the subject, I studied a Masters in Viticulture and Enology. At that time I was living in France, the cradle of world viniculture, which opened my vision and desire to expand and grow in this area.”
Born in Buenos Aires, Argentina, he grew up in Mendoza. After studying in Argentina and France he came to Baja California for the first time in 2002, where he decided to settle down. Asked if he had favorite restaurants in Mexico, he emphatically names two chefs that he considers renowned culinary geniuses who highlight the virtues of Baja California products:
Chef Miguel Angel Guerrero, owner of El Taller, La Querencia and Almazara, who created a cuisine he calls “Baja Med.” Also, Chef Javier Plascencia, from a prominent culinary family in Tijuana, owner of Mission 19 and the elegant Villa Saverio’s.
The wines of which Suárez is the winemaker are available in Cetto’s boutique stores in Baja California including Tijuana, Ensenada and their boutique in Mexico City. As co-founder and CEO of Winery Chateau Camou, Fernando Favela-Vara continues to fulfill the wishes and dreams of his father. Nestled in the heart of the Valle de Guadalupe, against a breathtaking backdrop of scenic mountains, the winery was established with the vision of creating a great Mexican wine.
“Team Work” is his philosophy. All members of the team are equally important; he hires the best people and lets them work. “Promoting visitors to the wine region – and having testimonials from satisfied customers that can become ambassadors to our area – creates a positive impact on the perception of potential visitors,” he says. “It is our duty to make sure the experience that our visitors have is the best.” Originally conceived as a dream of a having place to retire, with time it became a quest to make the best wines in the area. “Founded in 1993, we had our fist crop in 1995. We take care of small details in order to differentiate our work from others in the area.” Since 2001, his family have been the sole owners. Today, one of Favela’s sisters and his eldest son work with him.
Of more than 115 national and international awards and accolades, two stand out to Favela-Vara: La Grand Medaille D’Or at the Concourse Mondial Brussels and the Best Imported Red Wine at The Atlanta Wine Summit. The legacy of Chateau Camou lives on with every new wine produced, expanding its international reach and honoring Favela-Vara’s deep connection to Ensenada. The solid values and hard work from his father have been passed down to a new generation –Favela-Vara’s eldest son Fernando has come on board to keep their mission alive. “What better way to become a native than working the land to make it produce great wines?”BT
“We are always looking for ways to improve in the vineyard – and in the winery itself,” he explains. “Striving to evolve with time, we are working on the new oenology and image of the winery. This year, we will celebrate twenty one years of wine-making in Baja California. We can say we are one of the pioneers, and keep working to stay true to our values and goals. As our motto says: ‘The art of creating fine wines.’”
Born in the city of Durango, he moved to Mexico City when he was four, due to his father’s work. There he attended school and graduated from the National University (UNAM) as an electrical engineer. In 1980, he moved to Ensenada to pursue a masters degree in applied physics, later graduating summa cum laude from CICESE in Ensenada. After spending eleven years doing seismic instrumentation, he was invited to start a technological business incubator for the center he was with and the science and technology federal office (CONACY), supported by NAFINSA, an official financial office. After a year of being responsible for the northwest region, he decided to go into his own businesses. He started a metal fabrication company in 1993 and Chateau Camou in 1994. At this point, the winery became his most important occupation. And who influenced him most in life?
“Definitely, my parents!” he claims. “From my father I learned hard work; from my mother – to help those in need who have not been as fortunate as we have. That is why I was also in the Boy Scouts and later became a Rotarian.
”

As Chief Executive Officer of Vinicola El Cielo in the Valle de Guadalupe, Gustavo Ortega has created a destination that offers a unique wine-tourism experience that is comparable to that found anywhere else in the world. Latitude 32 Steakhouse, the winery’s official restaurant, is designed so that diners may delight in the magnificent view of the Valle from any table.
“Here, our vision is to create a place where the people who visit us can enjoy the freshness of the Guadalupe Valley, to breathe in the peacefulness, the clean air, along with all of the wine-tourism experiences to be found in the region,” Ortega explains. They will soon find comfortable rooms, a spa, organized private events –such as weddings or business meetings – and the opportunity to enjoy all the area attractions.
El Cielo is the first consolidation of a young company. Currently, it is a vineyard that expands every day, with more than 54 acres of vines already planted. The micro-climate in the Valle, responsible for producing grapes that create the award-winning wines, results in the richness of the soil and the prevailing moisture-laden sea breezes.
“At the moment, we have eleven different labels, with three more premium high quality wines that will be released during 2016,” Ortega predicts. The winery has received national and international awards, with its wines being served in the best hotels, restaurants and wine shops throughout the country.
Finally, the hotel, which is a highly important part of the El Cielo project, is estimated to be ready by the end of this year. It will include fifty-eight suites, a boutique, spa and convention center, and will complete the enological, culinary and tourist facilities envisioned by the company. “I enjoy being at the winery, greeting the visitors, telling them our story and sharing with them what we do.” He speaks enthusiastically about his pleasure in coming to Baja California.
“When my wife and I came to Guadalupe Valley, we fell in love with the climate, the views, and the wines from the region,” he says. “And we realized what the Mexican wines could give to all the people who visit the Valley.”
Born and raised in Mérida, he attended high school at Colegio Montejo, followed by taking Business Management at Universidad Iberoamericana in Mexico City. He also studied in America, taking a one-year MBA course at Harvard, and a hospitality program at Cornell University. He also earned a Diploma in High Management at ANAHUAC University, which he says defined the direction of his life in many aspects with “The Seven Habits of Highly Effective People,” by Stephen R. Corvey, which philosophy he says he applies daily.

Born in Mexico City on March 30, 1959, his interest in medicine was engendered by the unrealized aspirations of his father, who had wanted to become a doctor but who was forced to drop his studies when his own father needed help.
Realizing the importance of a higher education, he pursued his dream by attending UNITEC, a private university in Mexico City that is well recognized by the World Health Organization in the United States.
“I received really good training as a dentist at UNITEC, but I wanted something special, so I became part of the first Dental Implant Study Club by Loma Linda University, pioneers in the area of dental implantology,” he reveals.
Back in 1986, everything in dental implantology was new, so Ceballos had to move fast and stay abreast of the pace. No university in the United States offered a specialty in this field so, thanks to this study club, he began to navigate this new world of artificial teeth.
“After 30 years in this field, I can tell you that I did the right thing,” he declares. Today, my patients are receiving top of the line implant dentistry because of implantology.” The second most significant move was to complete his training in Cosmetic Dentistry. In the course of his career he has continued his education attending lectures and international congresses and has earned honors and awards.
“We are, in California, the land of physical perfection, so one way is an implant – but much more important is a beautiful implant, so my studies go in this direction.” As a self-described proud Mexican, he is always working to improve the image of his country by giving his personal best in everything he does.
“I know that if everybody would put a little effort in this direction, we will find it a much better place to live. Any person I am in contact with is immediately going to feel welcome and can be sure that, if it is in my hands, I will help,” he concluded.

Great news – a new dermatology and cosmetic clinic is now open in Cabo San Lucas: Dermatológica Láser & Cosmetic. Although new to Baja Sur, Dermatológica Láser & Cosmetic has been providing first-rate dermatologic service in Mexico since 2006. The first clinic opened its doors that year in Tijuana, and additional clinics have since opened in Culicacan and Hermosilo.
Like the existing locations, the Cabo clinic provides a wide variety of dermatological and aesthetic services, including an acne and rosacea clinic; psoriasis treatment; laser, photofacial, skin tightening and permanent hair removal services; microdermabrasion; body sculpting; and Botox injections, to name a just few, all using cutting-edge technology and performed with the highest level of professionalism. IN BAJA’S GUERRERO NEGRO

One of the most popular activities in Baja California Sur is the annual ritual of whale watching. Many visitors make the annual trek to Mexico’s Baja coast in order to get up close and personal with these majestic creatures. Malarrimo EcoTours in Guerrero Negro provides unforgettable whale watching opportunities annually from December through April.
Each year, about 1,500 of these magnificent mammals, including newborn calves, make their way some 6,000 miles from Alaska en route to the warm waters of the Pacific Ocean off the Baja coast. Their specific destination is Scammon’s Lagoon near Guerrero Negro where females will give birth to their new born.
According to company owner Luis Enrique, Malarrimo Eco-Tours’ whale watching fleet consists of well-maintained 23-foot outboard boats that can hold up to 10 passengers. “The four-hour excursions depart daily during the whale watching season,” says Luis, whose company has provided this unique service to the public for more than three decades. Other amenities offered by Malarrimo Eco-Tours include a full-service restaurant, hotel, and RV park.
In addition to viewing gray whales, visitors will often see a variety of marine birds, dolphins, and sea lions. “During the ride in one of our com-
fortable vans to Scammon’s Lagoon takes about 30 minutes,” says Luis. “While traveling through town and along the scenic road to our destination, the English-speaking guide explains about the whale watching experience, offers interesting facts about the whales, and shares government and local programs aimed at preserving the whales.”
A few notes about Guerrero Negro: Once you cross the 28th parallel a mile north of town, you are in Mountain Standard Time, an hour ahead of Pacific Standard Time. Just look for the 140-foot tall eagle monument made out of steel. This is also the demarcation between Baja north and south.
In addition to whale watching, other tours offered by Malarrimo Eco-Tours include the salt works mine, bird watching, and the incredible sand dunes of Dunas de Don Miguelito, a five-minute drive from the Malarrimo complex. The ever-changing sand dunes are mostly devoid of vegetation, and seemingly melt into the Pacific Ocean. In addition to photographing the whales, this area, too, is especially popular for photographs at dawn or dusk. Also popular are the Cochimie trails cave painting tours. These 4,000-year-old pictographs have UNESCO World Heritage status.

Carlos Ibarra

“Loreto is a magical and historical place!” exclaims Chef Carlos Ibarra, who opened the Agave Café two years ago. This Latin fusion restaurant puts a strong emphasis on using the best of native Baja ingredients.
“Most recenly we relocated to a Mexican old casa atmosphere in downtown, there’s a beautiful patio under the stars with mango and pistacho trees,” he states. “Loreto is a very rich area that must be seen with your own eyes, felt with your own senses. You can taste and smell the historical influences in the food.”
A lover of fusion style, Chef Ibarra likes to combine many ingredients based on familiar traditional Mexican cuisine, while he is influenced by the many other styles that he has experienced during his years in the hotel and culinary industry. Diners consider a number of his dishes “signature dishes.” These include Thai Sweet and Sour Fish, Yellowtail Serranno Sashimi, Tuna Tartare and Lobster Chile Relleno in Poblano Sauce.
Born in Cuernavaca, Morelos, Chef Ibarra was raised in Guanajuato, which he considers his home town. Due to his adventurous mother’s work, he was able to sample different dishes and flavors in the many areas they visited, finding that the best food in every town was obtained from local markets.
“My mother started several restaurants herself; that’s where my unique experience and passion for creating my own style of cuisine was born,” he says. His early career began in Playa del Carmen, where he worked in topnotch hotels learning new cooking styles.
“From my grandmother I learned about the rich culinary culture of Mexico and, from my mother, the love of food, travel and new flavors,” he says. Having lived in Ensenada, Mazatlan, Los Cabos and Belgium, he was constantly in touch with local restaurants and their food, realizing that he wanted to follow this path.

Larbi Dahrouch

“I do my cooking from the heart,” joyfully exclaims Executive Chef Larbi Dahrouch of One&Only Palmilla’s Agua restaurant. Naming it “Mexiterranean,” for the past ten years, he has created a rich, flavorful hybrid of Mediterranean cuisine that decidedly reflects his heritage, yet includes native Mexican and Indian influences.

Perched on a bluff and overlooking the Sea of Cortez, the popular local and guest favorite, Agua by Larbi, has been newly redesigned with an earth-to-sea tone design scheme by New York based designer David Mexico. The re-imagined venue combines a tropical bar with indoor/ outdoor restaurant seating that takes advantage of the sweeping ocean views. Agua by Larbi has long been a favorite of guests at Palmilla for its lively atmosphere and nightly rotation of live entertainment; its stunning view of the Sea of Cortés and the lights of San José del Cabo.
Born in Tangiers, Morocco, in l959, he moved to Bordeaux, France, with his family when he was 11 years old. Beginning in Gascony, at age 16 he became an apprentice under guidance of the legendary French Chef Jean-Louis Palladin at a four-star restaurant, La Table des Cordeliers, in Condom. He also attended the Academie de Toulouse S.A. in Gers, alternating two weeks with each for three years, learning French cooking and culture. In 1976 he graduated with a Chefs des Services Administratis certificate before leaving to conquer the culinary world.
Over the years, he worked extensively with prominent chefs in Gascony, Paris, Los Angeles, Washington, D.C. and Philadelphia, which was his last stop before heading to Mexico. “I do my cooking from the heart,” he says.
Family is also an important factor in Dahrouch’s life. He and his wife Silvana, whose family comes from Naples, have two sons: Altair and Casimir.

Frederic Tadd Chapman

When Fredric Tadd Chapman, Corporate Chef and founder of Tadd Chapman restaurants, first visited San José del Cabo in 1998, he immediately fell in love with the city, its ambience and the Mexican culture.
The first of his three current restaurants, Habanero’s Gastro Grill and Tequila Bar, opened in October 2004, specializing in Mexican Fusion Cuisine. Chef Chapman’s flagship restaurant Don Sanchez, which opened in January 2010, features world class Modern Mexican/Baja Contemporary Cuisine and San José’s premium wine list.
A fun and casual restaurant-sports bar, the Retro Burger Bar opened in November 2012 fulfilling the chef’s third solid concept. This restaurant also provides live Latin bands playing rock and salsa music. Focusing on comfort foods such as burgers, truffled Mac and Cheese, chicken wings and various other snacks, Retro has become the “go to hang out” spot in San José when getting together with friends for a drink or catching your favorite game while enjoying delicious & nutritious food.
Our fourth and most recent project started last year when Tadd and his partners purchased a 6 acre mango farm. “We started off composting all of our organic waste and recently have begun planting and producing vegetables and fruits for our restaurants,” explains Chapman. “Eventually, we plan to open a signature event restaurant highlighting Mexican culture with a focus on permaculture, farm-to-table, local ingredients and traditional Baja cuisine.”
Each of the three restaurants is an industry leader in its own style. For “foodies” the chef suggests a must visit to Don Sanchez –labeled the Best Restaurant in Los Cabos by the Director of Tourism of Mexico. Although his true cooking style is grilling, he feels it restricts his versatility: “As of late, my main focal point is on local sustainable ingredients, with a focus on farm-to-table and boatto-table cuisine, working with what’s fresh and seasonal,” he says. Chapman finds it impossible to name one single signature dish, because his goal is to make every dish earn that title.
Born and raised on Vancouver Island, he began his culinary studies at age 15, working in a variety of restaurants. From his mother he discovered a passion for food and a sophisticated palate; from his father he learned the value of hard work and perseverance. After High School he attended the culinary arts program at VIU, studying under master chefs and graduating top of his class. Today, that’s where he sits in Cabo’s restaurant scene.

With the impressive title of Executive Celebrity Chef/ Restauranteur, Juan Eumir Flores Sotelo works his culinary magic at El Espontáneo, located in the historic Art District of San José del Cabo, inside the courtyard of El Encanto Suites Hotel.
Opened on March 20, 2015, El Espontáneo features indoor and outdoor dining areas, as well as an open kitchen, Tapas Bar Menu, a daily spontaneous menu and a la carte options. A beautiful courtyard and chapel offer ideal locations for weddings or charity events. Chef Juan feels that the downtown Art District of San José is a must to visit because it is also going to become a Food, Art and Music Hotspot in this upcoming high season.
Referring to his cooking style as “Spontaneous International,” he says his signature dish is “anything that comes out of the oven!” He prefers to cook with local and non-processed ingredients; his favorite foods are meats and seafood. Asked to name his dream meal he replies “having to cook for family and friends at my house.” And how did he choose his career path?
Chef Juan was born in Hermosillo and raised in Tijuana. When he was ten years old he says that one of his uncles, who was studying psychology at the time, gave him a test.
“One of the questions was ‘What do you want to be when you grow up?’ My answer was ‘Have a chain of restaurants,’” Chef Juan explains. “I guess I always knew what I wanted to be.” And who has been the most influential figure in what he has become? His emphatic reply was “My mother!”
When he has the time, he enjoys visiting his favorite places, which he says include Mexico City and any other beach or port in the area. As for Baja California, he considers it to be a highly safe destination.
“I have been living here for nine years and that’s why I moved down here to Cabo – for the quality of life, security and wellness,” Chef Juan states. “I invite every reader to visit El Espontáneo and have a wonderful dining experience. It would be my pleasure to cook for you!”

Perched on a glorious quarter-mile of beach overlooking the iconic rock formations of Land’s End, Cabo San Lucas, Hacienda Cocina y Cantina is the signature restaurant at the Hacienda Beach Club & Residences at Medano Beach. Master-minded by Executive Chef Uziel Torres, Hacienda blends traditional Mexican architecture with casual beachfront dining. Featuring openair indoor dining, outdoor dining on the terraza, a beachfront palapa bar and the ever-popular tables-in-the-sand, the restaurant promises all of its guests an elegant, relaxing experience.
In his menu, Chef Torres showcases the different regions and flavors of Mexico. Expertly-crafted authentic dishes that use only the finest locally and regionally-grown produce are served. Mexican specialties from the Oaxaca, Puebla, Guerrero and Veracruz regions are offered. In Mexico, the word “casero” means “homemade,” the type of food to be found in households throughout the country that “nourishes your body and feeds your soul.” This distinctive way of cooking best represents Hacienda Cocina y Cantina, which opened in November 2009.
“I am proud to have been here from the start, working with the opening staff, helping test recipes and create the menu,” Torres says. “It’s a team effort and we put a lot of love into the work we do here.” Chef Torres considers his signature dish to be Carnitas.
“We make them in the traditional style with the best homemade accompaniments; it’s something my Grandmother used to make when I was growing up – a dish to be shared and savored,” he explains. Chef Torres says that his cooking style is Mexican with Spanish, French and Mediterranean influences.
Born in La Paz, Chef Torres has lived in Baja California Sur all of his life. He considers Executive Chef Larbi Dahrouch, Executive Chef at the One&Only Palmilla, with whom he worked some years ago, to have been the most influential figure in his profession. Sometimes you need to travel halfway around the world before discovering you’re finally home. Such was the case for chef Dany Lamote who’s served as executive chef at La Coronela Restaurant at Hotel California in Todos Santos for the last dozen years. Originally from Kinshasa, Congo in Africa, he eventually found his way to Calgary, Alberta, Canada before coming home to Todos Santos in 2002.
“I went to university to study economic sciences, but soon realized that I needed to do something more hands on,” explains Dany. “After studying culinary arts at the prestigious CERIA Culinary Institute in Brussels, Belgium, I moved to Montreal, then eventually to Calgary before heading south to Todos Santos and specifically the Hotel California.”
In addition to serving as La Coronela’s executive chef, Dany is also the owner/chef of Santo Vino, an eclectic bistro and wine bar. The 30-seat seasonal cozy restaurant is open from November through May, with the menu featuring locally-produced fruits and vegetables. The focus is on seafood and the cooking style that’s reflected in the French chef’s background.
The chef has his parents to thank for his diverse background. “The most influential figures in my life are no doubt my parents,” says Dany. “They not only showed me the world, but my mother also shared her passion for cooking traditional and exotic foods.” Today, a few of Dany’s signature dishes include duck breast with mango and ginger; tuna or yellowtail Carpaccio/sashimi with habanero chiles; and avocado, white chocolate, and tequila milk shake.
Initially founded as a mission in 1723, Todos Santos is today a blend of quaint and quiet that offers a mix of history surrounded by all the modern conveniences. “I’ve raised my three kids here, and this is a wonderful place to visit as well as return,” Dany reflects. He adds that there are few places with such beauty and serenity, yet without the crowds and traffic, which is why Dany Lamote calls Todos Santos his home.

Situated within the breathtaking courtyard of the Villa Valentina complex in San José del Cabo, Lugareño Cocina is where we find Chef Luis Alberto Jimenez performing his culinary magic. “Lugareño” means “Villager,” which alludes to the concept of creating a cuisine that merges produce from the regional agricultural fields to the vast Sea of Cortez. Here, he uses Mexican cooking techniques and traditions rooted in generations of perfecting a craft.
The chef finds it hard to pinpoint his cooking method because he has been inspired by a number of styles. He might define it as Mexican at its soul; hones – as to never over-decorate or overdo a recipe; and creative – always being in tune with what is happening in the world regarding new techniques and tendencies. And his signature dish?
“I would say the Chileatole de Langosta in a heartbeat, it’s a pre-hispanic dish with contemporary harmony,” he replies. “Think of Lobster Bisque with a base of ground tender corn, paired with a dried pepper assortment that perfectly complements the richness of the Pacific lobster tail.” However, he particularly enjoys working with pork, because it provides such variety in preparing many dishes. But, perhaps surprisingly, he chooses street food as a favorite.
“The creativity involved in reducing a menu to its essentials in such a restricted space has a magic that few brick and mortar restaurants have,” he explains. “It’s sometimes on busy street intersections inside a stand or truck, with no more than seven square feet to produce!” Yet his dream meal takes him far away to Noma in Denmark.
“Mr. Redzepi has been an inspiration throughout my young career that I can’t dismiss,” he exclaims. “Eating at his restaurant would be like winning Gold at the Olympics!” He also cites Chef Enrique Olvera as a pioneer in reviving and transforming cooking techniques, bringing them to a contemporary level.
Born in Morelia, Chef Jimenez decided to make food his career when he was in high school, working part time in a restaurant and becoming attracted to the pace and rush of cooking. Later he attended the Universidad del Valle de México in Querétaro, where he studied Gastronomy and had internships in Lanzarote, Spain, and Montreal, Canada. After graduation he practiced in several restaurants around Spain, Rumania and the United States. The pleasure of living and working abroad only served to strengthen his passion for Mexican cuisine and put into perspective roots and traditions when confronted with different ways of life and cultures.
Being located in San José del Cabo, Chef Jimenez strongly feels that he is blessed to be able to have a restaurant in a truly unique region, surrounded by pristine beaches and a majestic desert landscape. He enjoys the warm, sunny weather and laid back lifestyle.

Located at ground level of the Cape, a Thompson Hotel on the iconic monuments beach, is Manta, the third restaurant by Enrique Olvera. This is where you’ll find Chef Alex Branch preparing contemporary Mexican coastal cuisine with Asian and Peruvian touches.
“We focus on fresh, locally sourced ingredients, with simple yet precise preparations in a modern, chic and contemporary setting, with the best view in Cabo of the historic Cabo San Lucas Arch,” Chef Alex says. He has been part of the team since Manta opened a little more than a year ago.
Cabo San Lucas sits on the southernmost tip of the Baja Peninsula, just where the Sea of Cortez and the Pacific Ocean meet. The contrasting desert and ocean provide an unparalleled ambiance and rich diversity of farm, ranch and sea products. Maximizing on this, Manta serves the freshest and highest quality of foods in the area, and is definitely a must to visit. The chef explains his cooking style.
“I am classically trained and use a straightforward, common sense philosophy in the kitchen,” he explains. “I mainly specialize in Mexican food and try to give it a fresh new flavor with the use of different, less conventional techniques. I consider my signature to be Anticucho de Pulpo – Octopus Anticucho Skewer.” The chef says that his preferred ingredients when cooking include fresh seafood and tomatoes.
As for his favorite foods he says he loves Mexican and Creole dishes and fried chicken. His dream meal, he states, would be a mix between fresh sashimi and fried chicken!
Born in Mexico City, he attended a hotel administration school there, but he personally did not decide to cook – he says the kitchen seduced him!
“I started cooking because I needed a job after finishing high school; the chef there mentored me and made me fall in love with the hustle and bustle of a busy kitchen,” he relates. “I was hooked and always looked to learn more, to work more, and earn more responsibilities.” He declares that the people most influential in his life have been his past chefs and, of course he emphasizes, Executive Chef Enrique Olvera.
He enjoys visiting other parts of Mexico, such as Guadalajara (for the best barbacoa tacos, he claims!), Oaxaca, Veracruz and, naturally, Mexico City. Chef Alex also firmly considers Baja California to be a safe destination. “I frequently forget to lock my front door and roll up my car windows,” he laughs.

Born and raised in Paris, France, multi-skilled Executive Chef Eric Scianimanico of the steakhouse, SEARED at One & Only Palmilla Los Cabos, has spent more than thirty years in the hospitality industry. In 2013 he was invited to join Executive Chef Sebastian Agnes at Market by Jean-Georges, a unique dining concept for Palmilla, where he worked as Executive Sous-Chef for three years. After the reopening two years later, Chef Eric continued working at the newly opened SEARED.
At an early age, he began his career at Novotel La Défense in Paris. During the following nine years, he moved to three different hotels in the French capital, later becoming Chef de Partie at Gorges de Pennafort Vars, a 1-star Michelin restaurant in the south of France. Moving on to Hotel Presidente in Mexico City in 1998, Chef Eric was appointed Executive Sous-Chef and then, three years later, he moved to Las Ventanas al Paraiso, a Rosewood Resort, as Pastry Sous-Chef.
In understated elegance, SEARED features signature dishes that include a variety of the finest steaks, as well as the freshest Atlantic and Pacific seafood, accompanied by delicious sauces and side dishes. In addition, the country’s most extensive wine list is offered for diners’ pleasure.
A new glassed-walled meat cellar features a variety of different cuts of meats from around the world, including grass-fed to dry aged meat, including Wagyu and A5 Certified Kobe Beef. This selection is presented table-side for those guests who wish to hand-pick their preferred cut, with the experienced staff ready to assist, based on desired taste and appetite.
Included in the extensive menu are chilled Seafood Platters, Hamachi Sashimi with Yuzu Dressing and Beef Carpaccio with Black Truffle Fritters. Diners will also find an impressive array of local Spiny Lobsters and Whole Red Snapper, perfect for the grill, and find delight in the vast array of flavors and choice quality presented.
Chef Eric has worked closely with the team at SEARED to bring the best to the table. Here, he demonstrates his immeasurable culinary experience, knowledge and skills, which led to his promotion as Executive Chef in May 2016. He also delights in his life in Baja.

In bringing together two very different cuisines at Suviche Restaurant, Chef Yoshiaki Akaike has created a fresh and appetizing blend of flavors. Located in the One&Only Palmilla Resort in San José del Cabo, he serves a blend of traditional Japanese sushi with the traditional Mexican ceviche, which has been enjoyed by increasing numbers of diners.
“When it first opened in 2008, it started out as a small, casual sushi bar for guests to sit and enjoy a small meal if they were not in the mood for a larger one,” Chef Yoshiaki explains. “With time, it became more and more popular, so we turned it into a full restaurant. It’s been amazing to see the evolution!” When it comes to a cooking style he likes to stay true to his Japanese culture.
“I was born and raised in Japan and I love the food we have,” he says, “but I enjoy mixing it with the Mexican flavors, such as chiles, adding a modern twist to an already exciting cuisine.” As for a signature dish, the chef enjoys making sashimis, finding them very fresh and appetizing.
“I have one that is a Hamachi Sashimi with Yuzu Sauce and Chipotle that truly blends the best of my two favorite cultures,” he says. Among his favorite ingredients is included anything from the citrus family; he finds it a dds a delicious touch, especially to his type of cuisine. As for his favorite places to visit in Mexico, it is Oaxaca.
“I absolutely loved it!” he exclaims. “They have extraordinary meals, very traditional, and you find so much history and the true Mexican essence. I love visiting there for inspiration – and to find time for myself.” In conclusion Chef Yoshiaki invites you to stop by Suviche when you visit Cabo.
