J&H Running Co.
A local favorite purveyor of outdoor goods is expanding its footprint on Moore Drive with a running-specific store. Introducing J&H Running Co., coming to us two doors down from its flagship shop, J&H Outdoors. The store will feature shoes, apparel, nutrition, and, according to social media posts, a community room and recovery zone.
Old School Coffee
Local coffee shop Old School Coffee opened its third location in Landsdowne Shopping Center. It’s open seven days a week, serving up a variety of caffeinated sips, including lattes, cold brew, and macchiatos. The menu features school-themed drinks like fan-favorite “The Teacher,” featuring honey and vanilla. Other locations for Old School Coffee can be found inside Fayette Mall and Dudley Square.
Black-Type Brewing
The team behind Mt. Sterling’s Sterling Brew has expanded into Lexington, opening a taproom and pizza joint near campus. Black-Type Brewing is located on Virginia Avenue across from Gateway Lofts and features eight craft beers on tap and eight varieties of handmade pizza, which can be made on cauliflower crust or into a calzone. The owners said the drink menu will eventually double and feature other local brews and ciders. (Lexington Herald-Leader)

Lexington’s second Publix location will celebrate its grand opening at 7 a.m. on Tuesday, June 4. Located in the Fountains of Palomar, this iteration of the Lakeland-based, employee-owned grocery chain will be nearly 56,000 sq. ft. with about 140 teammates. (Lexington Herald-Leader)

The popular Beaumont restaurant, which closed at the end of 2024, celebrated its grand reopening last month under new owners Bernie and Sylvia Lovely. Azur Restaurant & Patio is also led by new head chef Nathan Vazquez, who plans to build on favorite American menu items while blending in some of his Puerto Rican specialties. Think: Khan Khan Fried Chicken, Woven Shrimp, and Deviled Salmon Cakes.
RD1 Spirits
Bourbon … neat. Cheers to RD1 Spirits for opening its new $5 million, 10,215 sq. ft. “brand destination” property at The Commons. Considered a research and development distillery, the space will offer a variety of experiences for guests, including tours, tastings, blendings, and custom bottling.
The Summit at Fritz Farm
The upscale shopping center has a new owner after Wisconsin-based Hendricks Commercial Properties purchased the development in mid-May. The property was opened in 2017 by Bayer Properties, who then sold it to Swift Creek Real Estate Partners and Centennial Real Estate Management LLC in 2022. According to ShoppingCenterBusiness.com, Origin Lexington Hotel and Legacy Reserve at Fritz Farm senior community were not a part of this most recent sale.

Wildfire Yoga in the Warehouse Block has expanded to create Wildfire Wellness in its neighboring spot at 835 National Ave. Now, you can hang post-yoga in its cozy lounge area or try one of its wellness-focused offerings, including red light therapy, cold plunge, and infrared sauna. Summer heat brings with it a whole different set of necessities when it comes to living our healthiest life, and a peek inside this month’s features will have you looking and feeling your best. What are some good shade-loving perennials that I can put in my garden that gets very little sun throughout the day?
While most things will grow and thrive in the full sun, not everything will work in the shade. In fact, DRY SHADE is the most di cult issue for a gardener, most will agree. And folks, if the location is super shady, then don’t expect flowers, just be happy with foliage. However, there are some great textures and shades of green that will make for a lovely shade garden.
Ferns of all types generally prefer some shade, including my favorites: Autumn Fern, Ostrich Fern, Wood Fern, Ghost Fern and the di cult, but almost magical Maidenhair Fern. My joke about them is that I’ve had summer flings that have lasted longer than a Maidenhair Fern in my garden!
But seriously, the secret to gardening (and relationships, dogs, business, life in general) is watching, studying the situation, and making the proper changes for the better. The “Pandemics” as people called them, were the best of times for me, not constantly entertaining and having the time to study my garden.
Hostas are shade loving plants that bring big, bold shapes to your garden. From the biggest down to the smallest, here are my faves:
Empress Wu is ENORMOUS and FABULOUS. Sum & Substance is large, in charge and that acid green which makes a garden. Guacamole is a mix of dark and light greens all swirled together. June is a pale yellow with a stripe and is a crowd pleaser. Mouse Ears are just like the name, tiny but almost become a ground cover.
Can I still plant summer annuals through the month of June and enjoy their bloomtime through the end of summer?
YES! If you haven’t had time to go out to your local nursery and pick up annuals that will give you months of blooms and pleasure, you still have a chance in June. May has to be the busiest month in Kentucky with Keeneland, the Kentucky Derby, graduations, Mother’s Day … it is always a blur. In fact, the old rule of thumb to be safe to plant annuals in Kentucky is after Mother’s Day, so June is just the beginning of the season. Just remember, rains will be less frequent and days will be hotter, so make sure you water the plants, especially in the beginning to get a good start.
If you are planting in the ground, add extra water. The nearby trees and shrubs will control the water when things get dry, as they have been there longer to create large root systems, and annuals just have a small container of roots. If you are planting in containers, then it is much easier because you can “create” the perfect soil that is suited for blooming annuals. And also, killing frosts don’t arrive sometimes until Halloween or even Thanksgiving!
Some of my favorite annuals that are in my garden right now are: Sunpatiens, Angelonia, Angel Wing and Dragon Wing Begonia, Guara, Diplodenia, Sweet Potato Vine, Bocopa, and Petunia.

Young adults are drinking less across the board than previous generations, and they’re changing the way we all socialize. By choosing alcohol-free options, they’ve made drinking less of an obligation at happy hours and other celebrations.

Fitness and social clubs are very on-trend, and we couldn’t be more glad! People are seeking new ways to connect with others, and clubs are a wonderful opportunity to do just that.
Bye, Bye Soda
Recent years have seen a strong trend away from traditional sodas, and that’s continuing this year. Prebiotic sodas remain a favorite, but CBD-infused drinks are on the rise.
Lymphatic Drainage
This form of gentle massage has been on the radar for several years, but it’s becoming more widespread. Originally intended to help relieve excess fluid buildup caused by lymph vessels, this term has come to broadly encompass techniques for relieving bloat and puffiness. There are a number of tools designed especially to encourage lymphatic drainage, including gua sha. You can also seek targeted lymphatic drainage massages, designed just for this purpose. 1 2 3 4 5 6

Rage Workouts
To vent frustration, anger and anxiety in a healthy manner, many people are turning to their local gym. Whether it’s a run on the treadmill or boxing, people are getting their hearts pumping while releasing pent-up energy in a productive way. These “rage workouts” are often supplemented by a heart-thumping playlist that really gets you in your feels so you can get it all out on the mat.

As research shows us just how many of our inner systems are connected to the vagus nerve, folks are exploring how this internal central highway might be beneficially exploited. Researchers are still exploring the efficacy of “stimulating” this nerve, but holistic practitioners tout the use of acupuncture, ear seeds and aromatherapy for this purpose. We do know that deep belly breathing can activate this nerve and provide relaxation.
Forest-Bathing
Inspired by the Japanese practice of Shinrin-yoku, this trend invites you to immerse yourself in nature for your well-being. Studies have shown that a trip to the woods can reduce stress and lower blood pressure while offering mental clarity. While hiking and backpacking have been on-trend for some time, forest-bathing invites you to take it slowly and soak up your surroundings through mindfulness meditation paired with a gentle hike, yoga or simple relaxation.

Fiber Matters
Some 90+% of people in the United States aren’t getting their daily recommended amount of fiber. While most of us are familiar with the most common benefit of fiber (ahem), many aren’t as familiar with why fiber matters outside of the bathroom.
Fiber helps support cholesterol levels, weight, blood sugar levels and, ultimately, you high in fiber is linked with a lower risk of dying of cardiovascular and cancer-related issues –that’s something to celebrate. If 2024 was the year of hearing folks talk on and on about their protein intake, then 2025 will be the year you get sick of hearing about fiber! •
That’s how much the right playlist can increase your workout endurance, according to an American Council on Exercise report. The best tempo for running is 120-125 BPM (beats per minute) while 140-145 BPM works better for more intense activity. Why? Your body will naturally try to synch up to the beat, making your workout more efficient.

Our mission is to enable healthy brain aging for all adults in Kentucky and beyond. As home to one of the world’s largest brain banks, we investigate the causes of Alzheimer’s disease and related dementias, advance early detection tools and personalized treatments, and train future scientists — translating discoveries into real-world solutions to help reduce the burden of cognitive decline and improve health outcomes for patients and families. SBCoA is leading the way in the development of interventions that maintain brain health and halt the progression of dementia. We are, as our name indicates, a center on aging. We have enabled breakthroughs in treatments, lifestyle understandings, and health equity that have changed people’s lives in Kentucky and around the world. More than any center of our kind, SBCoA has integrated a virtuous circle: from bench scientists to clinicians engaged with the community, back to bench scientists. Our scientific advances have propelled SBCoA to a leading position nationally and internationally for understanding neuropathological changes in the brain as we age, genetics associated with different types of dementia, and clinical research to test the safety and effectiveness of new medications and interventions.
Our Alzheimer’s Disease Research Center has contributed to our understanding of risk factors for the onset and progression of brain disease. Many studies have revealed the importance of lifestyle interventions such as exercise, diet, music, and sensory modalities to reduce the risk and delay the progression of dementia. We care not only for our research participants and patients but for the loved ones walking beside them— offering support, education, and compassion every step of the way. Therefore, we are committed to making an

We have developed online training for certified nursing facility staff and an online activities programming resource, Brain Health Activities, for those with cognitive impairment and their caregivers. CONNOR PERRY shines bright

Connor Perry, the current Miss Kentucky USA, carries Kentucky with her everywhere she goes. It’s written across her pageant-winning sash, displayed in the roses of one of her many gorgeous gowns and held close to her heart as a woman in pageantry.
But despite her recent success, Perry had never competed in a pageant before the Miss Kentucky USA competition.
“Of course, stepping into something so unfamiliar came with hesitation, but I knew that regardless of the outcome, I would grow through the experience, and it would be invaluable. And I did — it was transformational in ways I could
have never imagined,” she said.
She associates the feeling with her time at the University of Kentucky, from which she graduated in 2023 as a neuroscience major.
“Just like at Kentucky, I walked in with no expectations. I stayed present, gave it my all and soaked up every moment. I made lifelong friendships and had the time of my life,” Perry said.
She said what first drew her into pageantry was seeing other women use their platforms to improve their communities.
“I’ve always admired women in pageantry for their poise, eloquence, confidence and presence — but more than anything, I was inspired by how they use their platforms
to create change and give back to their communities and turned their passions into their purpose,” she said.
For Perry, after many hours of practice and “pouring everything [she] had into it,” pageantry became like second nature. Only two months after winning Miss Kentucky USA, Perry traveled to Los Angeles to compete in the Miss USA competition, where she became the first Kentuckian to be crowned first runner-up and won Best in Swim at her second pageant ever.
“As someone brand new to pageantry, I was figuring everything out on the fly. My focus was on refining my walk, sharpening interview skills and finalizing my wardrobe — packing

was an adventure in itself, especially with a gown that wouldn’t even fit in a suitcase!” she said.
Though she is new to competing, Perry does not attribute her recent pageant wins to beginner’s luck. A combination of hard work, faith and a strong support system helped guide her path. While she is still learning to manage the stress of high-pressure situations like the Miss USA pageant, knowing she is well-prepared helps her handle the competition with grace.
“It’s definitely a challenge — and I’m still learning — but preparation is key. Knowing I’ve done everything I can to be ready gives me peace of mind,” Perry said.
“From there, I put my trust in God and let go of the pressure. When you pair hard work with faith, it brings a sense of calm and confidence that carries you through even the highest-stakes moments. That mindset has been a game-changer for me, both onstage and in everyday life.”
Perry credits many mentors and supporters for guiding her along the road to competition.
“Maria Montgomery and Becky Minger helped with my walk and mindset — Becky even styled my hair in LA! Mimi Griffin took care of my hair and brows for both pageants, and Katy Moody Cusick with Team KMC did my makeup for Kentucky,” she said.
She also credits Renee Cunningham (who handmade her “Run for the Roses” state costume that included 1,500 roses), Samantha Jean Moore, Soreyda Begley, Julie at Jovani and the team at Henri’s Cloud Nine for assisting with her wardrobe among the two pageants, as well as Jimmy Langhoff, Joel Marianan and Coach Colene.
“And, of course, my incredible support system — my village — offered love, encouragement and financial support. I truly couldn’t have done it without them,” Perry said.
Beyond those who were there to personally support Perry, she felt the entire state behind her in competition.

For now, though the year of competing is over, Perry would like to focus on building healthier habits, with a main focus being on hydration, a simple task she sometimes struggles to maintain.
“For me, wellness starts from within. I believe that outer beauty reflects inner health — so I focus on gut health, staying nourished, and staying active, even on busy days,” she said. “I’ve actually enjoyed exploring healthier alternatives to old habits. It’s been a journey of learning and loving my body in a more holistic way.” •

HOUSEPLANTS & CUT FLOWERS
The easiest way to incorporate a little bit of nature into your space is by bringing in some plants. Look for species that love high humidity environments and which are appropriate for the light level of your space. ZZ plants tolerate low light, high humidity and infrequent waterings. There are many varieties of Pothos, which can thrive in a wide array of conditions. Snake plants tend to do well in bathrooms. If your bathroom offers a lot of light, some smaller tree plants can do well in your home spa. Dracaena, bamboo, money trees, small palms and ficus all need some sun, but will offer so much style.
Cut flowers and stems can bring nature into your space regardless of your lighting situation. Eucalyptus is a popular pick, as the fragrant stems can offer aromatherapy as well as beauty.

Think back to your last trip to the spa. How much of the interior was comprised of stone, wood and natural fibers? The designers of those spaces know that natural materials encourage us to unwind. So why wouldn’t you use the same tricks in your own home? Free Space
Mirrors can create the illusion of extra depth or more space in your room. They can trick the eye into thinking there’s more space than there actually is. Interior designers love putting mirrors in small spaces, such as narrow hallways, niches, shelves and powder rooms for this reason. Placing mirrors vertically can also help draw the eye upward, creating a sense of height in rooms that may be a little on the short side. Mirrors covering a wall – floor to ceiling – can actually trick a viewer into thinking that a room keeps on going.
Light It Up
Mirrors can help bounce light around a space, brightening the room. Place mirrors across from or beside light sources, whether natural or artificial. Some homeowners like to place mirrors directly behind lamps, enhancing their brightness and projecting the light further into the room. Placing a mirror in a darker area of the room almost always results in a space that seems brighter.
Reflect the Good Stuff
Positioning a mirror to reflect your home’s most interesting features can help guests notice those elements. Reflecting leaded glass windows, arches, ornate fireplaces, intricate millwork or stunning artwork, for example, increases the likelihood that these features will catch the eye of passersby. The reflection can also bring cohesion into the space, bringing the look of those details into other parts of the room. If a wall across from a beautiful architectural feature is rather plain, then it’s a prime location for a mirror!

This all-too-common issue is one that many people are embarrassed to discuss, even among friends or in health care environments. We’re here to talk about this hairy situation and shed some light on your treatment options so that you can rock your locks with confidence. by Amanda Harper
Why You Should See a Doctor First
All hair loss has an underlying cause. Treating that cause is often the most effective way to tackle this issue. Many write hair loss off as “just getting older,” but that’s not the full picture.
For most people, hair loss is caused by androgenetic alopecia – a fancy way of saying hereditary hair loss. This is more commonly referred to as male-pattern baldness or female-pattern hair loss because the way you lose hair is fairly predictable. And yes, this condition does tend to progress as we age.
But there are many other causes of hair loss. Stress, medications, nutritional deficiencies, underlying health conditions, hormonal imbalances and certain hair treatments can cause your hair loss. Some of these issues are easily treatable, while others are a major cause for alarm – and you won’t know until you talk with a medical professional. Always follow their advice regarding treatment.
Vitamins and Supplements
Hair loss and thinning can be caused by certain nutrient deficiencies. Once you’ve identified which areas may be giving you trouble, follow your doctor’s guidance on supplementing that nutrient intake. For many women, a lack of iron is a common cause.
Other supplement products on the market claim to help with hair loss. Broadly speaking, the research doesn’t bear out that they can help with hair loss. In particular, over-the-counter supplements that claim to block androgens have been proven either ineffective or significantly less effective than prescription treatments. When time is of the essence, it’s important to stick with treatments that are known to work.
That said, some of these supplements have a proven track record – if you need them, that is. Biotin has been touted for helping with hair thinning and hair loss. It’s true that if you are biotin deficient, then taking this supplement can improve the look of your hair. But if you’re already getting enough biotin in your diet, then any effects are generally of the placebo variety.
Topical Minoxidil
Considered the frontline treatment option for both men and women, topical minoxidil is perhaps the easiest option. Sold under the brand name Rogaine, this over-the-counter option is available at your local grocer or pharmacy.
Topical minoxidil is most effective for people under the age of 40. It’s intended to slow hair loss while promoting the growth of new hair; it will not “cure” balding or receding hairlines, and the effects may stop once treatment stops.
Hairy Situation
BEAUTY
Always follow package directions and warnings, but most of these treatments are applied once or twice a day to the scalp as either a foam, shampoo or liquid. Some people actually see an acceleration of hair loss initially, but you should start to see new hair growth within a few weeks.
Oral Finasteride
This prescription treatment is just for the gents. Taken once a day, this little pill can slow hair loss, though some men do see new hair growth. Results can take a few months to appear. Finasteride isn’t intended for men over 60 or women; if you are pregnant or nursing, avoid contact with the medication, but especially any broken or crushed tablets.
Laser Therapy
The Food and Drug Administration has approved the use of low-level laser therapy devices for the treatment of hereditary hair loss. A few small studies have shown this may encourage regrowth, but longer-term studies are needed to prove the efficacy of this option.
Hair Transplant
For those with permanent hair loss that doesn’t respond to other interventions, then a hair transplant may be an option. Choose a board-certified plastic surgeon with extensive experience with the procedure.
This procedure can mean a painful recovery, and it’s not a cure; hereditary hair loss may still progress, even after your surgery. We’ll save the gory details for your later Google research, but it should be explored only after other avenues have failed. Insurance typically does not cover this elective treatment.
PRP
There was a huge boom in Platelet-Rich Plasma (PRP) treatments in the last decade. These were overused to treat a range of conditions that was simply too broad, so many were left with the impression that PRP was a waste of time. However, studies have shown that PRP has promise for hair regrowth in those with androgenetic alopecia. Many doctors use PRP in conjunction with a
hair transplant with the idea that the PRP will not only stimulate hair growth but also healing in the areas of hair grafts; ask your surgeon about this option.
Thicken What You’ve Got
For most folks with only minor hair loss, the hassle of hair loss treatments simply doesn’t feel worth their time. If you’re not concerned about slowing your thinning hair but still want the appearance of lush locks, then hairthickening shampoos and products may be right for you. Thickening shampoos often contain proteins, polymers, and other thickening agents to give each strand a bulkedup appearance. Thickening sprays, mousses, powders and creams often contain fibers that adhere to the hair to create a fuller look.
One drawback of these products is that they often create buildup, which can actually encourage hair loss at the scalp – ironic, we know. Prevent this with a routine...
Scalp Cleanse
Product buildup, dead skin cells, oil and other impurities can indirectly cause hair loss. Irritation, acne and clogged pores on your scalp can prevent hair growth. You can remove this through gentle exfoliation and cleansers designed specifically for the scalp. In addition to your usual shampoo routine, you should be doing a scalp cleanse every 2-6 weeks, depending on how sensitive your scalp is. This may not cause new hair growth, but it will help you keep what you have looking its best – and this process may cut down on itchiness and flakiness, to boot!
Embrace It
Gone are the days when intentionally going bald – for men and women – was seen as a last resort. Many people genuinely love the bald look for themselves, and we love that for them!
If that’s not your style, then don’t fret; there are plenty of options that will allow you to feel good while letting go of the worry. Today’s options for supplementing your hair are far superior to years past. Mascarpone
From 16th century Italy to your table, this luscious cheese is deliziosa!
Mascarpone and cream cheese are both soft, spreadable cheeses. The biggest difference lies in the lusciousness: mascarpone has roughly double the fat content of cream cheese, so it’s richer and creamier. It also lacks some of the tanginess of cream cheese, making it a better pick for a wider variety of applications.
So why is cream cheese more popular? Well, for one, it benefits from being an American invention; it was created in 1873 by an upstate New York dairyman. At the time, importing a soft cheese that required refrigeration such as mascarpone would be virtually impossible. The first American company to produce mascarpone wouldn’t come until over a century later. By that point, most home cooks had grown accustomed to good ol’ cream cheese. You’re probably most familiar with mascarpone in Italian desserts, particularly tiramisu. But this decadent cheese
is wonderful in savory applications, as well; in the UK, it’s common to get pizza with mushrooms, prosciutto and mascarpone.
Local legend in the Lombardy region of Italy holds that the name for mascarpone comes from a word in the local dialect for ricotta. And it’s true; you can use mascarpone in many applications where you’d ordinarily reach for ricotta; try mixing equal parts ricotta and mascarpone with a little grated Parmesan for your next lasagna and just see if you ever go back!
Mascarpone is very easy to make at home as it requires only two ingredients: heavy cream and lemon juice. It requires careful heating and straining, but the result is well worth the effort. (For less intrepid home cooks, Ina Garten says that store-bought is fine.) by Amanda Harper

Vacation season is in full swing. While you’ve probably picked the perfect swimsuit and super-cute sunnies, have you stopped to think about your luggage? Most of us make do with a rag-tag collection of bags and suitcases. But is that really the most efficient way to get around? An upgraded luggage set may be a luxury, but it’s also a big help when it comes to travel.
Size Res ictions
Airlines across the country are cracking down on bag sizes. New luggage sets are typically designed to perfectly align with size restrictions, taking the guesswork out of packing. The exact measurements of what’s allowed varies by airline, and you should defer to the rules of whichever company you’re flying with. Here are some rough guidelines to consider.
Checked Bags:
• 62” linear inches TOTAL and 50 lbs. max weight
• 27” x 21” x 14” is the most common size
Carry-On:
• 22” x 14” x 9”; some airlines have weight limits
Personal Item:

Could a boutique grocer in LA selling $20 smoothies really influence the whole country into eating seaweed? Apparently, it’s more than possible. Maritime munchies have become a part of our collective culinary consciousness. While “kelp” and “algae” may not sound particularly scrumptious, they do pack health benefits that are worth diving into. by Amanda Harper
Erewhon was practically designed to go viral. The California-based upscale grocery chain’s smoothies are intentionally Instagrammable, with stunning swirls that purport to better your health while tasting delicious. Since none of us can easily take a sip without hopping a flight, we have to take influencers’ word that they’re as yummy as they are wholesome. (The fact that those influencers include some of today’s top celebrities? Yeah, that’s all part of the Erewhon viral magic.)
But how can a smoothie change the way America looks at stuff dredged up from the sea? Well, by being cute, for starters.
For the past several years, health food and supplement brands have been trying to get folks to jump on the spirulina train. This blue-green algae is rich in vitamins, minerals, protein, antioxidants and more, and its unique coloring can make anything it’s mixed into vibrantly colorful. It also has the added benefit of just making you feel like you’re taking in something good and wholesome, the way many of us feel after munching on a salad (regardless of how much dressing we’ve heaped on).
So why have we been hesitant to jump on board with this supposed superfood?
Well, frankly, it tastes terrible – and anyone who says otherwise is lying to both you and themselves. It’s fishy, sulfury, earthy and grassy, sometimes bringing along a briny taste of the sea. And worse, it’s pungent; it’s virtually

impossible to hide completely while also consuming enough to enjoy any real health benefits.
One breakthrough came when lab geeks managed to extract pigment from spirulina, thus creating the proprietary supplement known as Blue Majik. While it still has the same flavor drawbacks as spirulina, the blue hue is the stuff TikTok feeds are made of. Swirl it in with some whipped coconut cream and suddenly, you’ve made a smoothie that looks just like the sky. Add it to your oatmeal with some blueberries and your breakfast is suddenly baby blue – and healthier!
Fortunately, the funkiness of spirulina does retreat somewhat into the background when paired with the right ingredients. Erewhon’s signature Coconut Cloud Smoothie – replicated here – includes organic almond milk, pineapple, banana, avocado, almond butter and coconut cream, vanilla collagen powder, vanilla Stevia and, of course, blue spirulina. (Registered Dietician Melanie of Miss Nutritious Eats estimates that each serving contains over 600 calories and 20g of fat.) Even with those sweet mix-ins, Erewhon sippers do admit that there’s always an earthy, funky note in the background.
The virality of the Coconut Cloud Smoothie sparked an increase in public interest in spirulina. But it also sparked the question: are there other, easier ways to get the benefits without the awful taste?
And the answer, of course, is yes!
Using the back of a spoon, paint roughly 1 T of yogurt onto the sides of a jar to make clouds. Sprinkle with a few pinches of Blue Majik. Set aside.
In the cup of your blender, add milk, avocado, banana, pineapple, almond butter, vanilla, remaining Blue Majik and maple syrup; blend on high until smooth.
Pour into prepared glass. Top with remaining yogurt. (adapted from Wholehearted Eats) Note: can also be made into a smoothie bowl with your choice of toppings.

Seaweed
Scientifically speaking, “seaweed” is a term given to over 10,000 species of marine plant life. Depending on the variety, seaweed tends to be rich in iodine (which supports thyroid health), fiber, prebiotics, vitamins and minerals.
Seaweed has been enjoyed as a delicacy in China since 600 BC. You probably have it most often as part of a sushi roll or as part of a salad, but seaweed can be eaten fresh, dried, cooked or crushed into a powder.
Dried seaweed has become a popular snack on its own, with a salty, mineraly crunch. You could also chop up dried seaweed to mix into your favorite salad or soup. Kelp, another type of seaweed, is often enjoyed fresh or cooked.
Sea moss is a nutrient-dense seaweed that grows off the coastlines of Europe and North America. The texture, however, is less appealing; it’s most commonly harvested to produce carrageenan, a food thickener.
Since Kim Kardashian posted about drinking a sea moss smoothie, all sorts of health claims have been made about this seaweed. Studies are just being conducted into the exact health benefits of sea moss gel, which has a texture similar to aloe vera and tastes like oysters.
Sea Beans
Sea beans aren’t a part of the bean family at all; they’re actually flowering succulents. They grow on the beaches of the Northern Hemisphere and parts of southern Africa, actually soaking up some of the salt from the ground and water, thus improving their environment. Their texture is quite similar to that of green beans or sugar snap peas, but with a salty bite that’s delightful.
Health-wise, they’re a good course of vitamins, dietary fiber, antioxidants, omega-3 fatty acids and minerals such as calcium, potassium and magnesium.
Chlorella
While derived from another seaweed, you’ll most likely encounter chlorella as tablets, liquid extracts or powders. It’s a good source of fiber, chlorophyll, vitamins and minerals. It’s often used to prevent low iron levels during pregnancy, but it’s important to check the label; some chlorella supplements actually contain very small amounts of iron compared to others. It’s a good source of complete plant-based protein.
Microalgae
Studies into some microalgae – microscopic photosynthetic organisms found in marine environments – are showing potential health benefits. While a definitive body of research on the subject is likely years away, that doesn’t stop the supplement market from jumping on the buzz. Like other algae, they contain important vitamins and minerals that are essential to human health. That said, there are varying claims online that suggest health benefits that simply haven’t been proven – or even borne out by a single study. Before you rely on one of these supplements, look into alternatives that have a more proven history. •
Seaweed Salad
Handful dried seaweed
1 T rice vinegar
2 tsp. sesame oil
1/4 tsp. salt
1/4 tsp. sugar
2 tsp. toasted sesame seeds
Add seaweed to a large bowl filled with water; let rehydrate for 10 minutes, or until supple. Squeeze out residual water; you want roughly 2 cups of rehydrated seaweed.
Place seaweed on a cutting board and chop. Toss together with sesame oil, salt and sugar. Sprinkle sesame seeds over top. (adapted from Serious Eats)
Ultimate Green Smoothie
1 T dried wakame or nori
1 banana, frozen
1 1/2 c. pineapple
1/2 tsp. spirulina
6 leaves curly kale
2 T fresh lemon juice
1 tsp. flax-seed oil
1 tsp. agave syrup
Rehydrate wakame in warm water for five minutes.
Add all ingredients to the cup of your blender; blend until smooth. If necessary, add cold water to thin your smoothie to your desired consistency. (adapted from Pacific Harvest)
Blueberry Spinach Spirulina Smoothie
1 c. oat milk
1/2 c. fresh spinach leaves
1 c. blueberries, frozen
1/2 banana, frozen
1/2 tsp. spirulina powder
1 T maple syrup
1 T chia seeds
1/4 tsp. cinnamon
1/4 tsp. vanilla extract
1/4 c. orange juice
1 T almond butter
Add all ingredients to a blender; blend until smooth. (adapted from Healthy Little Vittles)
Notes: If the consistency is too thin for your liking, add more frozen blueberries and blend between each addition until you reach the desired consistency. If you find it too thick, add more orange juice.
Tip:
Many smoothie recipes – like the one listed above – are designed to mask the flavor of spirulina. As you grow accustomed to this supplement’s strong taste, you may find that you can get away with adding just a bit more. You may also find yourself adding it to your regular smoothies, overnight oats, yogurt and energy bites.
Be sure not to exceed the package’s recommended amount of spirulina per day, or as discussed with your doctor and nutritionist.

Shrimp and Grapefruit SaladBright Pasta Salad
Looking for summer on a plate? This salad is a strong contender. Feel free to cook your shrimp on the grill to make this dish a true summer stunner.
8 c. mixed greens/microgreens
2 large Ruby Red grapefruits, supremed
1 large avocado, sliced
1/2 English cucumber, sliced
1 lb. shrimp, peeled, cooked and cooled
DRESSING
1/4 c. olive oil
2 T red wine vinegar
1 1/2 tsp. stone ground mustard
1 T grapefruit juice
1 tsp. maple syrup
1/2 tsp. salt
1/4 tsp. pepper
Prepare the dressing: in a medium bowl, whisk together dressing ingredients. Add the shrimp and toss to combine.
In a large bowl, toss together salad greens, grapefruit segments, avocado and cucumber. Notes: Part of the eye appeal of this recipe are the bold red grapefruit segments. Ruby Red, Red Rio and Henderson varieties should all provide the look. More importantly, they’re a bit sweeter than their pink and white counterparts.
That said, if you simply hate grapefruit, you could substitute for 3-4 oranges and several squeezes of fresh lime juice.
This recipe from Love & Lemons adds arugula and torn basil to bring more “salad” to your pasta salad. You’ll be using lemon juice to add acidity and brightness to your dressing; if you want to add even more zing, squeeze a wedge of lemon over the salad just before serving.
3 c. fusilli pasta, cooked
2 c. cherry tomatoes, halved
1 1/2 c. chickpeas, drained and rinsed
2 c. arugula
1 c. Persian cucumbers, sliced
1 c. feta, crumbled
1 c. basil leaves, torn
1/2 c. parsley, minced 1/3 c. mint leaves, chopped 1/4 c. pine nuts, toasted
DRESSING
1/4 c. olive oil
3 T lemon juice

TOPS Tip: Once you drain your pasta, it may be helpful to add a little olive oil and toss to coat; this will prevent the pasta from sticking while you prepare the dressing.
Popcorn Salad
Cookbook author and Food Network host Molly Yeh basically broke the internet with this recipe. Everyone was deeply divided on the concept of stirring popcorn into an otherwise standard salad. Supposedly, popcorn salad is a Midwestern staple, though many folks in the region hadn’t heard of such a thing until this recipe came across their social feeds.
Puffed grains in salad are nothing new; if popcorn simply sounds too strange for you, try substituting a different grain.
1/3 c. popcorn kernels
1/2 c. mayonnaise
1/4 c. sour cream
2 T apple cider vinegar
1 T sugar
2 T Dijon mustard
1 shallot, thinly sliced
2 c. sugar snap peas, cut into thirds
1 c. carrot, shredded
1 c. chopped celery
1 bunch watercress, torn
1/2 c. tender celery leaves
Pop the popcorn in an air popper according to the manufacturer’s instructions. If desired, sprinkle with white Cheddar popcorn seasoning. Let cool completely.
In a large bowl, whisk together mayonnaise, sour cream, cider vinegar, sugar and Dijon. Add the snap peas, carrot and chopped celery; toss to coat. Add popcorn and toss to coat. Sprinkle on watercress and celery leaves. Serve and consume immediately. (adapted from Food Network)
Notes: The popcorn will not keep well, so try to enjoy all of this in one sitting. Fortunately, this recipe is very easy to divide in half so you don’t end up with leftovers.

Bluegrass Fields Salad
Featured on the official menu of Kentucky Derby 151, this simple salad is finished with a truly delicious sweet-tart vinaigrette that you’ll want to make again and again. Overall, it’s a snap to make, using the best of a perfect Kentucky summer’s bounty. We love how adaptable this salad is; feel free to add citrus, protein, cheese or additional herbs for your own spin on this classic.
The Derby culinary team recommends pairing this salad with the La Crema Pinot Gris Monterey, 2023, which offers flavors of Meyer lemon and nectarine with a nice acidity.
1 lg. head Bibb lettuce
1/2 c. strawberries, halved
1/2 c. blueberries
1/2 c. blackberries
1/2 c. raspberries
1/2 c. toasted almonds, sliced
DRESSING
1/4 c. raspberries
2 T raspberry jam
2 T apple cider vinegar
1/2 tsp. Dijon mustard
1/4 tsp. salt
1/8 tsp. black pepper
1/2 c. Extra Virgin olive oil
1 T poppy seeds
Prepare the dressing: In the cup of your blender, add raspberries, jam, vinegar, Dijon, salt and pepper; blend until raspberries are broken down and the mixture is relatively smooth.
While blending on low, slowly drizzle in the olive oil to create a smooth emulsion.
Pour dressing into a bowl or dressing container. Gently stir in poppy seeds; salt and pepper to taste.

Copycat Kale Crunch Salad
No more waiting at the drive-thru for a meager little cup of crunch. Make this salad at home and enjoy as much as you like. If you want to add chopped fried chicken on top, who are we do tell you no?
8 c. kale, stemmed and chopped
2 c. green cabbage, shredded
1/3 c. olive oil
3 T cider vinegar
2 T maple syrup
1 T spicy brown mustard
1/2 tsp. garlic powder
1/2 tsp. pepper
1/4 tsp. salt
1/2 c. sliced almonds, toasted
Add kale and cabbage to a large bowl.
In a small bowl, whisk together olive oil, vinegar, syrup, mustard, garlic powder, pepper and salt; pour over the salad. With clean hands, gently massage the dressing into the salad until the volume is reduced by roughly a third. Stir in the almonds before serving.

Notes: Feel free to add in some of your favorite kale salad mix-ins just prior to serving. Sliced apples, dried cranberries and chickpeas are common favorites!
Pickled Cucumber Salad
Pickles are the 2025 food trend nobody saw coming. Chef Carla Hall shared this recipe on the Food With Mark Bittman podcast a few years back, but it’s become a sleeper hit for summer cookouts. The bright crunch of quick pickled cucumbers is refreshing and invigorating. They’re a wonderful side for barbecue and other rich main dishes.
2 cucumbers, peeled and sliced
2 T apple cider vinegar
1/4 tsp. sugar
1/4 tsp. red pepper flakes
Arrange cucumber slices on a large platter in a single layer; generously season with salt and pepper. Cover with plastic wrap and refrigerate for 1 hour.
In a large bowl, whisk together vinegar, sugar and pepper flakes. Remove the cucumber from the platter with a slotted spoon, and add to the bowl; toss to coat cucumbers. Pour any liquid off of the platter. Return the cucumbers to the platter in a single layer. Cover with plastic wrap and refrigerate 3-4 hours. Before serving, garnish with dill sprigs, if desired. She finished her Kentucky career as a seven-time All-American who became known as the “Beam Queen” because of her prowess in an event where she had 25 scores of 9.925 or higher in her career.
Yet Isabella Magnelli didn’t think she was good enough to be on the Kentucky team as a high schooler in Suffern, N.Y. Magnelli was being recruited by a few schools, but none that overly excited her, so going into her sophomore year, she emailed about 30 schools.
“I went downstairs and my father said, ‘Did you email Kentucky?’ I told him I didn’t because I didn’t think I was good enough. He said, ‘Go email them.’ I did, and the next day, I went to my club gym and my club coach said Kentucky got in contact and wanted to come in and watch me. Kentucky was the only school that got back to my coach.”
Kentucky assistant coach Rachel Garrison visited, and then head coach Tim Garrison came to see her compete. Magnelli and her father went to UK’s Blue-White meet.
“Tim said he was watching me and knew he wanted me. He said my gymnastics were awesome, but he wanted to see how I interacted with teammates and came to see me as a person, not a gymnast. He offered me on my visit. I was going to say yes, but he said to talk with my family and coach first,” Magnelli said.
“Another school I had looked at offered me after Kentucky. I was really conflicted. But with a lot of prayers, God told me to come here and it worked out better than I could ever have imagined.”
Faith is a huge part of Magnelli’s daily life and that certainly carries over to gymnastics. That’s why she knew the Lord was pointing her toward Kentucky.
Magnelli capped her remarkable Kentucky career by being named Miss Wildcat at the annual CATSPY Awards along with volleyball All-Americans Emma Grome and Brooklyn DeLeye. The winners are picked based on all-around excellence in athletics, academics, character and service during their UK careers. Former Kentucky gymnastics coach Leah Little, a student-athlete mentor at UK and a gymnastics analyst for SEC Network+, thought Magnelli was the perfect Miss Wildcat.
“Isabella exemplifies all of the attributes to be selected as Miss Wildcat. As a coach, my marker for excellence was the triangle. Excellence in your sport, excellence in academics and excellence in your character. Isabella excels in all three and more,” Little said. “Her All-American and All-SEC awards, coupled with her All-American Academic awards, speak for themselves.
“Her impeccable character is one of the things that shines bright as her unwavering faith is noticeable to all who know her. Bella is a shining star. She has brought attention to the sport. She has served her community. She has achieved the highest academic success. She has been a leader for her teammates. She is an idol to many young fans, including my granddaughter.”
Magnelli, a marketing major, is weighing several job opportunities. She plans to continue giving gymnastics lessons and working camps this summer. She’s engaged and will have her “big wedding” next year.
“My father wanted me to focus on gymnastics so I was not able to do any wedding planning,” the UK senior said. “But it all worked out so well for me. I loved being here at Kentucky and am just so thankful the Lord guided me here.”
Take Charge of Your BRAIN HEALTH
June is Alzheimer’s & Brain Awareness Month, the perfect reminder to care for your brain health.
Today, 7.2 million people ages 65 and older in the U.S. are living with Alzheimer’s dementia, including 80,500 in Kentucky. The lifetime risk for the disease at age 45 is 1 in 5 for women and 1 in 10 for men. The brain changes that cause Alzheimer’s are thought to begin 20 years or more before symptoms start, which suggests that there may be a substantial window of time to intervene in disease progression.
“People need to know there are steps they can take to potentially reduce their risk of cognitive decline,” said Shannon White, executive director of the Alzheimer’s Association, Greater Kentucky and Southern Indiana. “We encourage anyone experiencing memory or thinking problems to talk to their doctor. If it is Alzheimer’s disease, there are many benefits to getting a timely diagnosis.”
4 STEPS YOU CAN TAKE:
1. Adopt Healthy Habits
You can reduce your risk by exercising, not smoking, challenging your mind and controlling your blood pressure and diet. It’s estimated that up to 40% of dementia cases could be delayed or reduced with healthy lifestyle choices.
3. Be Proactive
With the development of anti-amyloid drug therapies, a new era of hope has emerged for Alzheimer’s disease treatment and care. These treatments, while not a cure, can slow down the progression of the disease, making it more important than ever to prioritize early detection, diagnosis and intervention.
2. Learn the Early Warning Signs
Other warning signs besides memory loss can signal cognitive decline, like altered judgment, mood swings and challenges in decision-making, planning and executing projects. If you notice changes, see a doctor.
4. Get Involved
Join the Lexington Walk to End Alzheimer’s, the largest fundraiser of its kind in the area. The event kicks off at 1:30 p.m., Sun., Oct. 5 at the Kentucky Horse Park’s Alltech Arena. The goal is to raise $275,000 to further the care, support and research efforts of the Alzheimer’s Association. Register online at act.alz.org/Lexington.

June marks the 250th anniversary of the founding and naming of Lexington. In honor of that historic moment, June 2025 will be the biggest birthday party this city has ever seen!
In June 1775, two pioneer brothers from Pennsylvania and their fellow frontiersmen were surveying and mapping the land surrounding Elkhorn Creek. Kentucky was located within the Virginia territory at the time. Under Virginia law, William and Francis McConnell staked claims to the land, which included their camp near a sinking spring. While they were at that encampment, the party received word from Fort Boonesborough that the first battles of the American Revolution had been fought at Lexington & Concord. They named their settlement Lexington in honor of the event. Just a few years later, Lexington was named the county seat of the newly formed Fayette County.
Over time, the original site was used for many purposes, from agriculture to industrial uses. Forgotten and filled with junk, the community came together in the 1990s to reclaim and restore the area. The Friends of McConnell Springs organization, led by Isabel Yates and Jim Rebmann, helped create a park that honors Lexington’s history while providing a beautiful natural area for everyone to enjoy. McConnell Springs is remarkable because few cities are sure of the site of their settling and founding; even fewer have beautiful parks where locals can celebrate that legacy.
This year, the 250Lex Commission has collaborated with community organizations to host events in June to celebrate the 250th anniversary of this important moment. June is called “Come Home Month” to encourage everyone to explore Lexington’s magic. Here are some of the amazing things you won’t want to miss this month.
