There are so many different ways to make potato salad but we like it light and fluffy with lots of mix-ins. Hard-boiled eggs, sweet pickles, green onion, and bacon make it really shine.

INGREDIENTS

Perfect Potato Salad

• 5 lb. russet potatoes (about 8 medium potatoes)

• 1 1/2 cups mayonnaise

• 4 Tbsp. mustard (yellow, dijon, or a mixture of both), plus more as needed

• 5 green onions, sliced up to the darkest green part

INSTRUCTIONS

• 1 tsp. kosher salt, plus more to taste

• 1/2 tsp. black pepper

• 1/2 tsp. paprika (optional)

• 8 small sweet pickles, chopped )

• 4 hard-boiled eggs, roughly chopped

• 4 slices bacon, fried and crumbled

1. Cut the potatoes in halves or thirds, then boil until fork tender. Drain. Mash the potatoes or run them through a ricer or food mill to make them extra fluffy.

2. In a large bowl, fold the potatoes together with the mayonnaise, mustard, green onion, salt, pepper, and other seasonings you like, such as paprika. Fold in the pickles, eggs, and bacon, then taste for seasonings, adding more salt, mustard, or mayonnaise as needed. You may also splash in juice from the pickle jar if salad needs a little moisture.

Spokane Countyexperienced a moderate increase in the average sale price, raising to $492,510, marking a 6.2% increase compared to May 2024. The median sales price also saw a slight increase of 7.7%, settling at $457,823. The current inventory rose in a big way to 1,326 listings, an notable increase of 14.8% from the previous year. This represents a 2.0-month supply, an increase from May 2024, still indicating a seller's market. Residential closed sales also decreased by 0.7%, totaling 572 transactions. Additionally, the median days on the market increased to 12 days. Annual residential sales is up from year’s level, up 2.0%, totaling 2,190 sales.

On the other hand, Kootenai Countyshowed slightly decreased price performance, with the average sale price lowering to $668,387, reflecting a 2.0% increase from the previous year. The median sales price had a similar decrease of 1.0%, reaching $543,710. Inventory in the area increased by 4.8% to 1,282 listings. Residential closed sales however saw a decrease of 10.8%, with 307 transactions recorded. The average days on the market decreased to 82 days. Annual residential sales in Kootenai County are up 1.5%, totaling 1,250 transactions so far this year.
