I always admired the kids who mastered chin-ups back in gym class. That kind of physical exertion that required working against one’s own body weight and gravity was simply impressive, and I remember my PE teachers and coaches fondly. The teachers always pushed me to do my best and taught me how to be a team player. The young people recently impressed me and other adults who engaged with the “Chin-Ups for Children” fundraiser kick off during last month’s Fall Festival Parade in Zionsville, but I was appalled to learn why the fundraiser was necessary. Mark and Kristina Moreland, owners of Body Outfitters Personal Training Studio in Zionsville, are the spearheads behind this fantastic cause that will benefit local elementary school teachers and students. “Zionsville had to cut PE funding [among other programs] in 2010 due to a change in state education budget laws,” Kristina explained. “The current scenario isn’t good, and we have established a fund and are working with ZCS administration and other community members to improve PE at the elementary level.”

Property taxes play only a minuscule role in the issues of educational funding. There are laws in effect in Indiana that dictate how funds are placed and categorized for education (facilities, general fund, etc.), and the monies can’t cross between the designated “silos” even if there is a surplus in one of the funds. School corporations are not allowed to just simply move it over even if it results in staffing and program cuts. Ergo, the budget shortfall resulted in the cut of the elementary PE programs in Zionsville. “We can’t fund salaries the way that we used to and remain within the metes and bounds of the state laws,” Kristina said. “Every school district throughout the state was affected and had to either close schools, cut teachers or force early retirement, and Zionsville elected to cut PE from the elementary level.” While the school referendums that were passed in recent years have helped, they were not enough to bring back the Elementary PE Teacher Corps which would cost the local school corporation $500,000 annually to bring back all the PE teachers at all the Zionsville elementary schools. “We knew that we wouldn’t be able to fund all of the benefits and salaries of all of the teachers, but what we want to give the current classroom teachers who are teaching

PE is support,” Kristina said. “There are state standards that are required to be met and there is a curriculum that was left by the outgoing PE teachers, but unless you have a true understanding of how PE is taught and how the lessons build on one another it can be really difficult for classroom teachers to make heads or tails of.” Kristina and Mark’s two primary goals for the fund are to develop a very clear cut curriculum with complete lesson plans, step by step instructions with goals and objectives and to provide continuing education on coaching students for every grade level for every elementary school in Zionsville. They hope that the fund will aid in stocking the schools’ equipment closets and get them all up to par with one another with what they need. “Our long term goal is to partner with a local university,”Kristina said. “We’d like to partner with a class and with their students who are in their junior or senior year but are not quite ready to go into their student teaching yet. They would have the opportunity to come and learn how to run a PE class. Mark sits on a panel for the IUPUI School of Exercise Science, and the students there are eager for opportunities that will set them apart from other students and accent their resumes with experience like this. It would be a great benefit for them to progress our students through a unit or a lesson in its entirety.” During the Fall Festival they captivated the audience with their float along with their personal trainers and clients. They helped get the message out in a big way. “We promoted our fundraiser ‘ChinUps for Children’ that has a goal of raising $10,000 to go towards this fund,” Kristina Moreland proudly announced. “We have community partners, sponsors, etc. that are all working together to reach this goal. Our float had members of our team doing chin ups through the entire parade route. We had a total of 3,770 chin ups in total over the weekend. We moved the rack down to our booth and continued having key community members, guests, clients, general public performing chin ups throughout the whole weekend. Our goal was, as a community, to complete 2,000 chin-ups. Body Outfitters, aside from underwriting the event, will pledge $1 towards each of the chin-ups we do to meet that goal. To date, we have achieved $7,000 of our $10,000 goal and we still have pledges coming in.” Now that the fund is established, they can continue to fund the guest speakers, professional development for the teachers and future fundraisers to keep this fund going and to continue to help the teachers and students within our community. The fund is set up at the Boone County Community Foundation, which is a 501(c)(3) organization, so all donations are tax deductible. ne of the Eagle Elementary second grade classes is paying it forward by participating in a Project Based Learning (PBL) initiative under the direction of their teacher, Candace Hons. Hons is a mother of two and a resident of Zionsville.

Hons explained that a PBL project works by presenting students with a challenge or a problem in which they are given very little information, and then they decide how to solve the problem. “My students watched a video on the Zionsville community, which highlighted just how much we have here and that there are communities that have much less,” Hons

said. “They were read a letter from a second grade teacher at Whittier Elementary School in Denver, Colorado, whose school serves a large homeless population. The letter talked about who she is and a little bit about her class and the things that her classroom was lacking. The students were then put into four groups and were challenged with what they wanted to do and what they could do to make a difference for these kids in Colorado.” Her students are writing to their second grade peers and are getting to know them on that level as they devise ways to assist with their needs. To date, Eagle Elementary and Hons’ class is trailblazing the classroom participation in a PBL within the local school corporation. There is a group of Zionsville teachers who attended a PBL conference this past summer, and they are working on kicking off their own projects so that other classes receive the opportunity to gain practical, problem-solving experience.

“This project is amazing, and I am so passionate about it because it is student driven,” Hons said. “They are so excited to learn, and they are asking questions that

One will host a yard sale outside of Eagle Elementary on Oct. 4, which they are asking their peers to donate items to sell to help raise money. Another one of the groups is starting a coffee shop geared at the teachers and one of the groups is organizing a family bingo night. AD:

Steve Schwartz, owner of Ballerinas and Bruisers, Victor and Mica Gosnell, owners of Bites by Confectioneiress and Mike Chapel with Mike Chapel State Farm Insurance Agency demonstrated the need for the community and its business members to support local causes. Empowering the children’s efforts teaches them how to be compassionate and productive adult members of their communities. They raised $500 on that Saturday, starting their cause off on the right foot. Be sure to check the Eagle Elementary events calendar for the rest of the PBL events that will include family bingo night. The students are working on receiving their gaming license for the event. THE DEAD WALK AGAIN IN THE VILLAGE Writer / Janelle Morrison

Once again, the leaves are changing, the air is crisp and the dead are walking amongst the living in the village and downtown Zionsville. Have you ever walked through the alleys of the village late at night and thought that perhaps you saw something lurking by the gazebo in Lincoln’s Park? Perhaps you’ve frequented a local store or restaurant and have heard the local lore from the owners about their “resident” ghosts. There are many tales, some factual, that date back more than a hundred years and have been meticulously archived by the SullivanMunce Cultural Center. The SullivanMunce will be hosting its 12th Edition of GhostWalk this Oct. 10 and 11 benefitting its center and its community programs. GhostWalk is a 45-minute guided walking tour of the historic village of Zionsville. Guests will stop at up to seven vignettes

to experience reenacted ghost stories and tragic tales from the town’s past. GhostWalk Chairperson and script writer Kelly Masoncup paid homage to the event’s founding chairperson, Lynne Brown Manning, and to the two chairs prior to her, Drew Kogan and Allison Wharry, for the hard work and commitment they put into developing and growing the walk prior to her chairing this incredibly entertaining event. Masoncup and her team of writers continue to re-work and write new scripts for the walk that are based upon local legends and news articles that have been published over the last century and reenact these tales with the help of local, volunteer actors and actresses.

Every time that I work on the walk and I read these stories, I think about how grateful I am to be living in modern day. Life was tough back then, and it makes these stories easy to come by.”

Masoncup has been involved with the GhostWalk for the past four years in various ways. “Drew and Allison chaired it in 2011, and I’ve chaired it in 2010, 2013 and this year,” she said. “We have a director, Vikki Soliday, who told us that directing was on her ‘bucket list.’ Vikki will be working with the actors, managing the scenes and taking care of our actors, especially the nights of the event. anyway they can. We have folks that work on the costumes, the makeup and sets and sound effects, even smoke bombs. This is a fun event that we’d like to see the entire community involved no matter what your age or participation level. This is a great way to act without being a professional actor. We just have a lot of fun with it and with our volunteers. There are over 100 volunteers that work on this event and it is a huge undertaking and the community’s responding well to it.” Masoncup and her writers have invested their time into reviewing old publications to brush the dust off some of these stories and bring in new vignettes to the walk. “The publications had the liberty to write more freely and descriptively with the events that happened back then,” she said. “Even the way things were written then gives us a lot of material to build upon and create these stories. From there, we’ll look for some interesting stories about what was going on in the community at the time and we’ll take a piece of it. Our stories are about three

minutes each and hit the big points of what happened. Some are historic and actually happened and others are stories that were told and passed down over the years and are mostly fear-based.”

Masoncup’s team of writers includes herself, Kirk Horn and John Tousley, one of their favorite tour guides who is also writing a story on one of the spooky houses in Zionsville. “John knows a lot of local lore,” Zionsville had two train systems running she said. “We are always collecting stories through the center of town and with that come the stories of children playing carelessly throughout the year and people will send us emails about their ghosts or ideas. Becoming a crime statistic is one of the worst feelings imaginable. It’s like a quick punch to the gut that leaves a nasty, empty feeling behind. I’ve been there. You may have too. The morning I realized my car had been stolen, I felt unlucky and possibly cursed (the same car had been burglarized a couple months prior). At the time, I told myself I needed to take more precautions to ensure my personal safety. Fast-forward more than a decade. On the way to work several weeks ago, I saw the aftermath of a shooting at the edge of my usually quiet subdivision. It was enough to refuel my desire to be proactive. I took part in a Women’s Self Defense Seminar hosted by Fishers-based Krav Maga Indy. On a rainy Saturday afternoon, we crowded inside a hot martial arts studio to learn the basics of self-defense.

Aged 18 to retirement, we took turns hammering our fists into boxing pads and pushing our partners off of us. Some of us giggled during sparring, feeling slightly embarrassed and hoping this will ready us in case the occasion should arise. “We love the groin,” Instructor Jeff Fredericksen tells us. “It solves a lot of problems.” The women around me share looks of bewilderment and surprise. “The eyes are another point to aim for when all else fails,” he continues, putting his hand over his sparring partner’s face. He goes on to demonstrate how to effectively strike those areas of the body in a myriad of situations. Fredericksen is an expert—he’s the Head Instructor at the state’s only official Krav Maga Worldwide training center. Fredericksen opened the center in 2008 and has trained law enforcement at the local, state, and federal levels. Krav Maga originated in Israel in the late 1940s/early 1950s as a means of military

training in a short span of time. It was brought to the U.S. in 1981. Fredericksen offered the class several key takeaways, rooted in common sense: 1. Awareness: People often fall prey to criminals simply because they’re not

paying attention. Fredericksen says always be looking around, especially when you’re alone in a public place like a mall parking lot. 2. Body Language: Stand tall, walk with purpose, and look confident. The less fear you show in your face and body, the less likely you are to become a target.

3. Have An Escape Route: Know where the exits are and how fast you can get to them in your home, school, or office. 4. Tell the Story: Fredericken says if you do end up in a hostile situation, tell the story. He likened it to bathing a cat. “When you try to put your cat in the tub, it becomes very vocal,” he laughs, but he has a point. Yelling and describing what’s happening to you can be the difference between life or death. The overarching theme is simple: “Get home alive.” Krav Maga Indy will be having another, more comprehensive self-defense seminar on October 11.

WALK FOR WOMEN’S LUNG HEALTH AWARENESS Writer / Kara Reibel

On Oct. 18, the American Lung Association is holding an inaugural LUNG FORCE walk to raise awareness for women’s lung health with a focus on lung cancer. “LUNG FORCE is a new initiative to make lung cancer in women a public health priority, to drive policy change and to increase research funding,” says Sheena Lee, Special Events Manager for the American Lung Association in Indiana. Lung cancer is the most deadly form of cancer for women, and prevention is a major part of the cure, but not always. In Carrie Aloisio’s case, she acquired a rare form of lung cancer without ever lifting a cigarette to her mouth, with zero family history, and without being consciously exposed to secondhand smoke or any other known factors. “It began with a cough,” she says. “The cough progressed, and before I knew it, I was having surgery to remove the majority of my right lung.” Her final diagnosis came only after surgery: mucoepidermoid carcinoma. She was 38 years old at the time. Luckily her form of lung cancer is rare, occurring in less than 0.1 percent of all cases and does not require chemotherapy or radiation. The surgery to remove her lung occurred in May of 2013, and as soon as she could, she went back to what she loved: running. adapting to having only one lung, she was learning to walk again and slowly building up her strength. Aloisio was able to run her first half-marathon 11 months later, which occurred in April of this year. “I wanted to finish a race before the one-year mark of my operation,” states Aloisio. “That was my goal and I did it!”

Diane Tetrick came from a family of smokers. Of course they smoked, with a family legacy of tobacco farmers from Kentucky. However,she has never taken a puff, but she had been exposed to secondhand smoke. Her dad died after losing a horrible battle with lung cancer. Tetrick’s sister, Barbara, died on the operating table because of lung cancer; she had been a smoker. Tetrick, now 63 years old, has been in remission for the last two years. The first symptom for Tetrick was also a cough—a nagging one that wouldn’t go away. Having a sister who had just died from lung cancer, she insisted on a CT scan. Two spots were discovered, so portions of each lung were removed, with her family by her side. Marvin, Tetrick’s husband who is retired from GM, and their kids, were there with her throughout the process. Their son, Marty, an Army warrant officer, and their daughter, Mindy, a teacher at Center Grove, are a source of pride and resilience for their parents. A spiritual woman with a strong faith and married 46 years to her high school sweetheart, Tetrick is tough and takes it as it comes—with optimism. And even though she found out that another surgery is required, she is ready. She has staying power and possesses all the signs of a positive outcome. These are only a couple examples of survivor stories. There are plenty of others who are running their own race of sorts. Tetrick has a “team” walking with her at LUNG FORCE. Aloisio does, too. For all runners and walkers, the goal is to cross the finish line. Aloisio wished to recapture that experience. Have you ever thought about how many dining and entertainment options have vanished in the last 40 years in central Indiana? Gone are entertainment hotspots such as Market Square Arena in downtown Indianapolis, the Patio in Broad Ripple and Starlight Musicals at Butler University. Lost in time are dining stops such as Victoria Station on Keystone Avenue, King Cole in downtown Indianapolis, The Glass Chimney and the Stable Inn on 86th Street. Certainly, history has knocked out many of our once-upon-a-time favorite stops in the last 40 years. Habits changed. Places aged. But, perhaps surprisingly, there is one place that just keeps rolling along on the northwest corner of Indianapolis and just a few miles south of Zionsville. Take an encore, Beef & Boards Dinner Theatre, a business still serving a full menu of both entertainment and food for 41 seasons after opening in 1973. It has become an Indiana monument in College Park.

Stark and Zehr raised their hands and took over the local shop. Eventually, Zehr, who owns Oak Hill Mansion in Carmel, sold his ownership share to Stark in 1998. “We’re still very good friends,” said Stark. “Bob was just ready to move on.” And the former Fort Wayne native who polished his theatre skills was ready to jump on the ride as a solo pilot. He has scripted a remarkable tale of success. Beef & Boards has consistently attracted about 150,000 visitors annually to his performances. That tally grows to more than five million customers since 1980. Public relations director Patricia Rettig targets the affable Stark as the driving force in the successful run.

The author of this long-running success story is Zionsville resident Doug Stark, who started his dinner theatre career with Ball State friend Robert Zehr in 1977. That was when the Indiana duo opened up a Beef and Boards near Louisville, Ky. Stark remembers two specific challenges he and Zehr faced.

“Simply put, he knows what he’s doing,” said the former Ohio newspaper editor who joined the theatre in 2006. “He knows his audience and he cares deeply that their experience at Beef & Boards is enjoyable from start to finish. He is directly involved in every aspect of the theatre – from the business, to the creative and performance sides. Beef & Boards’ success absolutely starts at the top.”

“We were in a dry county and we were located a long distance from Louisville,” Stark remembered. “That was when we were having a gasoline crisis. The market just wasn’t right. But we learned

“We were performance oriented,” he remembered. “We would have three different shows, three different plays going on at the same time. It was training by being under fire, but it was a terrific experience.” Geographically, Stark has stayed on the north side of Indianapolis, just a few stoplights from his theatre. He alternated between Zionsville and Carmel before recently returning to Zionsville. Stark has integrated two families into the theatre. The first is his blood family. His three children have been involved in acting, stage managing, house managing and serving as a director (daughter Elizabeth directed Oklahoma). Former wife Suzanne remains a stage partner, annually acting in one or two performances. “It is wonderful seeing my children being so successful,” said Stark. “They are carrying their own weight.”

He is also a big fan of his other employees. “One of the reasons why I continue to love what I do is how great the staff is,” Stark said. “A lot of them have hit their 25th or 30th anniversary with the theatre. They have become part of our family.” Rettig agrees on the family assessment. “There’s no place like Beef & Boards,” she admiringly stated. “It’s fun. It’s friendly. It’s family. Not only is it a family-run business, but it’s incredibly family-oriented. We care about the people who come through our doors and we care about each other. The Starks are directly involved. They know their employees’ spouses and children. They care about them. How could you not love working in a place like this?” And Stark, who turned 65, is not planning on bailing out soon. “I get mail from the AARP and Social Security,” he admitted. “But I am not ready to quit. When you get older, some things may take a little longer to get done. I can’t perform in as many shows that I used to do, but I love this business. It is truly rewarding seeing people have a good time night in and night out. We are not trying to change the world. We want people to have a nice dinner and be entertained.” Beef & Boards is Indiana’s only year-around Equity dinner theatre and only one of seven Equity dinner theatres in the country. The theatre employs both Equity (union professionals) and non-Equity performers. Actors are discovered locally and in auditions in Chicago and New York. A new cast is selected for each show and Beef & Boards provides travel and living accommodations for outof-town actors. Casting director, producer, performer and director Eddie Curry will be dispatched soon to New York City to audition more than 500 actors for the 2015 season.

“That is one reason why we are constantly upgrading the building,” noted Stark, who has implemented improvements on the theatre’s façade and carpeting. “And why we work on bringing in the shows that people want to see.” The owner also keeps in touch with his counterparts at Civic Theatre (Carmel) and Indiana Repertory Theatre (downtown Indianapolis). “Indiana has an interesting theater market,” he said. “I think our audiences are different. We each have our own niche.” And with Stark, family and employees at the front of the stage, you can expect audiences to keep rolling in at Beef & Boards Dinner Theatre.

Fons Smits points to a metallic vat. His eyes sparkle as he discusses the mechanics of cheesemaking. With the patience and detail of a seasoned professor, he discourses on the process, tossing out words like enzymes and cultures. Many would find this conversation foreign-sounding, but what is clearly communicated is that Smits knows his stuff.

In 2003, Smits was working for a consulting company in the Netherlands when Traders Point Creamery hired him to manage production. Smits, his wife Eileen, and then newborn daughter Dana moved to Zionsville. “I thought we’d only be here for three months,” Smits chuckles. “We had just bought a house in the Netherlands, but we Smits has devoted much of his life to really liked it. In June, Smits opened Tulip Tree Creamery, which produces handcrafted, specialty cheeses and butters. Tulip Tree Creamery currently operates from a location on the Northwest side of Indianapolis. However, Smits plans to relocate his operations closer to his Zionsville home. He is coordinating a move to a Zionsville farm and hopes to open the doors for business in the spring. Smits hails from a dairy region in the Netherlands where he traces his ancestry

Smits was committed to his Zionsville home, and so he endured daily three-hour drives. By 2014, the Illinois creamery was running and Smits’ lengthy commute was taking a toll. He hatched the idea of opening up his own business. “We decided to do something ourselves,” he proclaims. “We decided to go for it.” Tulip Tree Creamery is a nod to Smits’ Dutch roots and the Indiana state tree.

Smits prides himself on making a quality product and says carefully researching the dairy source is key. Tulip Tree Creamery only partners with Indiana dairy farmers who pledge not to use growth hormones. Product development is a favorite for Smits.

“All cheeses have the same basic steps, but what you do with the little steps make the cheese taste differently,” Smits declares. “That’s the fascinating thing about it, and that’s what I really like. People have so much cheddar. I want to try something different. I like to play with tradition.”
