I am David Holder … and I’m a professional Lego master I was totally into Lego as a kid, but I only got back

into it in earnest when I was 22. The renewed interest went hand in hand with a bit of disposable income, and one of those $10 vouchers that you get from Target. My voucher was expiring that day, so I went in with the intention of blowing it on a bag of lollies, but I saw a sale on Lego: three figurines for $10. It just so happened that the trio came from a set of 16, and the collector in me kicked in straight away. I had no idea it’d turn into a career. Melbourne Legoland announced the “Brickfactor” contest when they decided to hire a master builder, so I signed up. It was amazing, but intense: it was a two-day Lego-building expo and competition, with a hundred entrants. Everyone from engineers to IT professionals and teachers had a crack. I don’t have an engineering or construction background, but I am good at Lego. I’d studied music, so maybe a creative background helped, too. I also have an open mind and I’m patient, which you really need because working at Legoland as a master builder isn’t just about sitting in a room building Lego by yourself. The biggest part of the job is instructing kids on how to build, and interacting with people. I started work at Legoland two months before it opened in 2017, to help set up the site. Since then, it’s been one of the broadest roles I’ve ever had; covering everything from keeping displays up to date and in good repair, and building in the workshop with the window open so that kids and parents can see what you’re working on and have a chat, through to teaching classes. My favourite and most challenging build was when we constructed the world’s largest Lego Millennium Falcon. It was five metres’ long with more than 50,000 bricks. Builds like that are never wholly mapped out, and they don’t have step-bystep instructions. You have to be intuitive. I’m pumped to have this role, and my friends and family all think it’s cool. My nieces and nephews are definitely the most excited. At the start, everyone was like, “that’s so cool” – it’s definitely one of the most unique jobs in Melbourne – but it’s become normal now. It’s more like, “yeah, that’s Dave. A professional Lego builder. That’s his thing.” ●

Our journalist Simone Lee met him and, in a similar vein to our own humble Chris Hemsworth, found an honest man with foibles. He discusses his lifelong anxiety and, for someone in the spotlight, it’s a generous and important admission. yan Reynolds is enjoying what he describes as the “most rewarding” time in his life. Happily married to fellow actor Blake Lively, with two young daughters (Ines, one, and James, three), the Canadian heartthrob has found the kind of happiness that was frustratingly elusive in his 20s. At 41, Ryan resurrected a floundering career with his smash box-office success Deadpool, the highest grossing R-rated film of all time ((Deadpool 2 opened in Australia last month). He personally lobbied 20th Century Fox for more than a decade to make the film and when the slick, self-mocking action comedy finally saw the light of day in 2016, it went on to earn almost $800 million at the worldwide box office. The trash-talking, foulmouthed, angst-ridden comic-book outsider was a hit with audiences and far surpassed industry expectations and those of Reynolds himself.

Have you already started thinking about the kind of life education you would like to give to your daughters? I want them to grow up feeling loved and protected and without feeling like they’re part of a celebrity family. They deserve to have as normal a life as possible and I would also like them to grow up in the outdoors, the way I and my brothers grew up. Even though you’re a very outgoing type of individual, you’ve been very protective of your family’s privacy. I’m concerned with protecting my children’s privacy. Your children deserve to grow up without being made self-conscious of who their parents are and why photographers are following your family. They never get to make a choice, so I want to shield them as much as I can from the kind of public exposure that Blake and I deal with because of our work.

COMIC RELIEF LOVE AND FAMILY SET RYAN REYNOLDS ON THE RIGHT COURSE You’ve said in the past that you’re glad this kind of success has come later in your career. Can you explain? What I think is that if Green Lantern had been a massive success and earned $6 billion, maybe I would have got trapped for life playing in superhero movies. I think I’ve benefited in life from having gone through those peaks and valleys and also made a lot of other films that have been important to me. Does having children also make for a big change in your perspective on everything? Having a family means that you stop worrying about a lot of stupid things and you start focusing on the present. I remember how I used to get bored when people would show their baby pictures, and I wanted to jump out of the window after parents would show me baby photos on their phone displays. Since I’ve become a father, though, I can’t stop taking my own children’s photos and showing them to my friends. And when other people show me photos of their children, I’m very open to that and I’ll start asking questions about how they get their kids to go to sleep and different things about parenting.

You went to college but then you decided to quit and move to Los Angeles to pursue acting full time. I was getting bored in college and one day I just thought I should drive down in my Jeep to LA and see what would happen. I spent a lot of time auditioning and expecting that everyone would be ready to hire me. I found out pretty quickly that it wasn’t going to be like that and that I was competing against a lot of very talented people who had exactly the same ambitions as I had. What made you stay the course? You’ve got to be willing to tough it out but I thought acting was a lot more interesting than driving a forklift or any of the other odd jobs I had done up to that point. Now that you’ve hit your 40s, do you have any different perspective on life? You have this feeling that life is passing you by much faster, suddenly. Loathes ANXIETY \ I’ve dealt with anxiety for most of my

life. I have three older brothers, (and) our father was tough. I think the anxiety might have started there. By the time we were in [post-production with Deadpool], we’d been to Comic-Con and people went crazy for it. The expectations were eating me alive. I had a little bit of a nervous breakdown. I went to go see a doctor because I felt like I was suffering from a neurological problem or something. And every doctor I saw said, ‘you have anxiety.’ I’m just lucky that I had Blake to help me keep it together and keep me sane. TATTOOS \ I hate them all [Reynolds’ body is speckled with tattoos he had put on as a teenager]. It takes three hours in makeup to mask them. I’d get them all lasered off if it wasn’t hours and hours of brutal pain. But my wife says I should keep them, keep a record of the choices I’ve made.

The defining presence of chilli, pickling and fermenting in Korean cooking can present drink-matching challenges for those with a more Euro-centric palate. Beer is always a good fallback position with Korean cuisine’s robust flavour profile, but other options are equally successful and more interesting. Restaurant Shik is a new, modern-Korean restaurant in the city opened by Peter Jo, a sommelier and self-taught cook known via a series of pop-ups as Kimchi Pete. Jo is a big fan of minimal-intervention wines and just as Shik’s soundtrack is all hip-hop all the time, his wine list never veers from the natural wine path. But Shik has interesting alternatives to wine, in the form of soju, a clear distilled drink made from fermented rice and a drink called makgeolli, a cloudy white, slightly spritzy, drink, also made from rice and known in Korea as “farmers’ beer”. There are a couple of sojus at Shik, both made from unpolished rice. This gives them a more robust flavour than Japanese sake or shochu, where the rice is polished before fermenting, which gives them a cleaner, more subtle flavour profile. The Korean version of rice-based soju has a more floral bouquet, with sour, melon and pepper notes that are more than up to the job of matching with banchan and gochujang. The makgeolli is also a great food beverage. It starts with an inoculated cereal mix that’s mixed with cooked rice and produces a milky coloured, slightly bubbly drink with refreshing fermented characteristics. ●

Perfectly on song “Like static on the dial, a look comes back in style,” sings Joe Camilleri. And just like The Black Sorrows song after which it’s named, Harley & Rose makes family dining great again. Two Andrew McConnell chef alumni (Josh Murphy and Rory Cowcher) serve wood-fired pizza and table-silencing pub grub to parents, while kids eat rigatoni with their fingers. The corner site radiates laid-back warmth, with butcher’s paper-coloured canvas blinds and striped tea-towel napkins. Food is unfussy and delicious. Fluffy cod dip is a nod to the Builders Arms, but croquettes made with gorgonzola dolce and Brazilian tapioca, dipped in quince “ketchup”, are a crunchy golden original. Focaccia is replenished as we scoop stracciatella piled with baba ganoush and piquant pomegranate molasses. The pipi pizza with caramelised onion and cream is an exception to the seafood-doesn’t-belong-on-pizza rule. I do have a complaint: a juicy chicken schnitzel, wing attached with a batter that threatens addiction, remains a special. Twenty-five years ago, when current Almond Board of Australia chairman Neale Bennett scrapped his dried-fruit business and planted almond trees on 17 hectares in north-west Victoria’s Sunraysia region, just 500 tonnes of Aussie almonds were produced, all for the domestic market. A decade ago, production had risen to 26,000 tonnes. Now, Australia grows more than 80,000 tonnes a year, 60 per cent of which goes overseas to 46 countries, led by India. California supplies 80 per cent of the world’s almonds, and Australia is second, with 7.7 per cent. And the harvest trajectory is predicted to get steeper, so that current orchard expansion soon will double this year’s production to hit $1 billion in export revenue. In February this year, a UK private-equity fund bought a 400-hectare almond orchard in the Sunraysia district for an undisclosed sum, and Australian investment bank Macquarie Group has sold more than 1000 hectares of Sunraysia’s almond orchards on behalf of investors; among the buyers,

who paid $115 million for the deal was a Canadian teachers’ pension fund. “It’s really taken us from a cottage industry,” Bennett says. “The health benefits have pushed a lot of the growth, as people have become more conscious of what we put in our bodies, looking for a more natural product, less processing and an alternative source of protein.” Almonds are still available in the supermarket and bulk store, flaked, slivered and whole, but now they’re also the ingredient in hundreds of everyday foods and product lines: breakfast granolas and lactose-free coffee; gluten-free almond-meal cakes and treats; protein-rich snacks at the gym and school canteen; in savoury recipes for pastas, salads and Asian and Middle Eastern foods; as a coating for fried foods; and adding nuttiness to desserts from the bottom crust to the decoration. consumption. Almond-orchard areas continue to expand — in 2016 by 16 per cent to 10 million trees over 36,000 hectares, mostly in the Murray River’s Sunraysia and Riverland regions. Most are boutique but, increasingly, multinational companies are investing in vast new agribusinesses. At the same time, new areas of demand open up, such as in aromatherapy and the cosmetics industry. Researchers are developing uses for the byproducts as a stock-food supplement, in rubber production, as a fertiliser and after torrefaction (super heating) as a stiffening agent in the manufacture of plastics for disposable cutlery, plant pots and wood-polymer material in decks and fencing. Adding to its planet-friendly reputation, most Australian orchards are irrigated with drip systems managed by soil-moisture-monitoring technology. “Farming has become a science and this is an efficient industry,” Bennett says. “We’re now seeing that people are interested in everything about the product. They’re reading packaging before they buy; where a product comes from, even its carbon footprint.”

Increasingly, people are even making their own almond milk. This is because it is cost effective, has no additives and a better flavour than the packaged variety. The main reason for its production are the widely

hese days it seems like everyone’s got a side hustle they’re working on, be it a podcast, blog, start-up or app. They are generally the first step towards ditching a traditional nine-to-five job and becoming your own boss. But many are generating little or no income – some with scant intention of doing so. Freelance writer Madeleine Dore is an example of the movement, as the creator of popular website Extraordinary Routines. “I was unemployed and felt pretty dismal having just come back from an exciting year studying abroad in Denmark,” Dore says about starting the website as a university graduate in 2014. “Back in Australia, I was unable to find work as a journalist, while friends around me were making leaps and bounds in their newly forged careers.” Dore created Extraordinary Routines as a platform to help document high-profile people’s

daily lives (academic Susan Carland, artist Bill Henson and businesswoman Zoe Foster Blake among them), often revealing insightful musings – on career, health, friendship, spirituality and family, for example. Within a few months of launching the site, Dore went on to land a job as the deputy editor of industry website ArtsHub. Recently, Dore started another venture – Side Project Sessions, which hosts free events designed for other creative types and entrepreneurs to work on their ideas. While generating only modest income, Dore says her side projects are providing numerous other opportunities. Wilhelmina Ford is another side project devotee and founder of website Share Abode, which connects Australian single parents looking to “share the load” financially and emotionally. “They share the load by sharing a home which

halves rent, everyday expenses, household duties and creates a support system and friendship under one roof,” Ford says. She hopes that the site will eventually become a sustainable not-for-profit organisation able to be partly automated and managed by a team. ●
