EDITOR’S DESK I subscribe to the maxim that life’s too short to queue for a meal, but it’s a testament to this city’s culinary obsession that any night of the week hundreds of eager foodies are willing to stand in line outside our most popular restaurants for a coveted table.

In the past six or seven years, the no-bookings policies of Melbourne’s hottest eateries, and the subsequent queues to get in, have transformed our dining landscape.

Arranging to meet friends in town for dinner now requires military-grade strategic planning, precision timing and someone prepared to arrive at 5.30 to “bags” a table.

It’s not clear if this week’s cover star, Chris Lucas, actually started the no-bookings phenomenon, but the man behind Chin Chin, Kong, Baby and Hawker Hall has certainly turned it into an artform.

How did a former IT executive become the “line king” of Melbourne’s food scene? Read our revealing interview inside. ●

how did a former it executive become melbourne’s hottest restaurateur? PETER WILMOTH meets chris lucas

F

inally, I got into Chin Chin. After several waits in the queue in the nearly six years since it opened – all of them mission abandoned – here I am sitting at a prime table at the Melbourne restaurant in Flinders Lane, where the opening hype of 2011 has never settled down. All I had to do to get here was ring the owner and ask him to tell me his life story.

Happily Chris Lucas, 56, the king of casual dining in Melbourne, obliged.

Chris’s achievements since his self-described “accidental” launch as a restaurateur in 1996 are amazing. As well as the super-successful Chin Chin, he has a clutch of some of Melbourne’s most popular eateries: Baby Pizza and Japanese/Korean-inspired Kong BBQ in Richmond (there are plans for a second Kong in Fitzroy), as well as Hawker Hall, a “food and beer hall” in Windsor, where the hip and the hungry queue to get in.

That’s just the start. Chris tells me that, in the next few months, he plans to announce six new projects for Melbourne “based around some of this country’s best chef talent”. By the end of this year The Lucas Group will employ 1000 staff, including 200 chefs.

To understand how Chris’s empire grew, we need to go back to his childhood in 1960s Geelong.

Chris’s father Con, who emigrated with three of his brothers from Greece as a 10-year-old in the 1920s, owned pubs and cafes there. “Most of my childhood memories are in the cafes and the pubs, running food, washing dishes, fooling around on the stoves learning to cook,” Chris says.

Chris learnt about hospitality, and about people.

“In those days working-class Geelong was a little magical,” he says. “Pubs are a club in a way. My dad’s customers were wharfies, shearers, storemen and packers, plumbers, builders, construction workers.

They were a wild bunch of guys.

“I loved it because it was like a tribe. I always felt safe. They were my friends and they had my back.

I grew up in this environment where I sort of had lots of fathers. It’s where I laid my foundations for what I’m philosophically on about today – strongly working class, a real belief in a fair go.”

It was a culture of damn hard work: “I can’t remember Dad having a holiday … It was ground into me – there are no short cuts.”

No member of the family had gone to university and Chris’s father wanted him to be the first. “Like all good immigrant families, they want the best for their children,” he says. “It was my father’s dying wish that there was something better for his son.”

But Chris didn’t want to go to uni. “I wanted to take over a pub, I wanted to cook. And my other ambition was to become an actor. You can probably understand that, to a Greek immigrant family, a career choice in acting was not what they worked hundreds of hours for.”

Con died in 1975 aged 64, when Chris was 15.

“He was cooking right up until he died,” Chris says. “He was a four-packet-a-day cigarette smoker.

Chris felt an obligation to do the right thing.

In 1979, he began studying pharmacology and chemistry. “At the local church, mum would say, ‘My son’s sort of like a doctor’.”

In 1982 he joined IBM and for 12 years moved in the marketing-executive ranks of the IT industry, travelling abroad. “It afforded me an amazing journey, exposed me to a world I would not have seen if I’d stayed in Melbourne or Geelong,” he says.

“The ’80s was Gordon Gekko – high flying. I spent most of my time hanging out at Studio 54 in New York and Annabel’s in London, partying in Tokyo, in my 20s, single. It was a pretty wild time.”

As well as how to party, Chris learnt a lot about hospitality in this time overseas. These places might have been elite, and Chris suspected he was seen as an outsider, but he was “taken in and shown extraordinary generosity and hospitality”.

Years later, moving back into restaurants, he would access that memory.

“While I’d fulfilled my obligations to my father, always in the back of my mind I wanted to come back to the family business,” he says.

In 1996, the direction of his life changed. Chris was an investor in a new restaurant, One Fitzroy Street in St Kilda. “We were a few weeks from opening.

My partner, who was supposed to run it, decided to not go ahead with the deal and I was left with a fully fitted-out restaurant, a chef and a manager. I made them partners. I thought I’d run it for a few months then go back to the real world.”

He found restaurants a seductive world, one he wanted to stay in. In 2002 he bought The Botanical hotel in South Yarra and relaunched it with Paul Wilson as head chef. It became one of Melbourne’s hottest food and drink destinations before he sold the business in 2007. He still owns the building.

I

n 2009 he was approached by a friend to invest in a small, much-loved restaurant, Pearl, in Richmond, which he says “had outlived its time, like a lot of so-called fine-dining restaurants”. On the site Chris created Baby, “a really cool, family-style Italian trattoria”.

At the same time, the Chin Chin site in Flinders Lane – the home of a nightclub that had lost its liquor licence – became available. “Underneath the disco balls and the velour carpet and boarded-up windows, we found what was a beautiful building,” he says. “I used those two sites to begin the journey.”

Chin Chin opened in May 2011, Kong in 2014 and Hawker Hall in 2016. Chin Chin remains white hot, as evidenced by the queues that snake out on to Flinders Lane every night. Everyone knows you can’t book there.

it was so revolutionary,” Chris says. “To me, it was a line in the sand to say the restaurants that we want to create are about a fair go, about people being able to come in whenever they want, at whatever time.”

The policy has its roots in a 1983 experience, one that could be the catalyst for the local dining scene as we know it today. “I tried to book into a fancy restaurant in Melbourne. I couldn’t get in,” recalls Chris. “They could sense I was just a young guy and, I don’t think they welcomed me. It really got on my goat. So I turned up to the restaurant with my date.

“I thought I was a bit of a hotshot, had my new suit on. There was a European-style maitre d, Austrian, quite imposing. He looked me up and down and said, ‘You have a reservation?’. ‘No, I tried to make one, but you wouldn’t accept it’.

“He looked at me and [must have] thought to himself, ‘This kid’s gone to the effort to come here’.

So he gave me the worst table in the house.

“That memory stayed with me. I wanted to create restaurants that were more about the people, more egalitarian. First come, first served.”

How does he explain his Midas touch? “I create restaurants that I would like to eat in myself.

Those childhood years, those years as a bit of a lost international citizen, gave me a broader perspective from a design and hospitality point of view, of what a restaurant’s guiding philosophy should be.

“My creativity is based on challenging the ethos, challenging the norm, ensuring that the restaurants are not pretentious, that they’re welcoming, and that there is a really strong sense of hospitality.”

hris says his travels inspired him to “create extraordinary experiences that would sit comfortably in any of the great food cities of the world”, but they also hammered home how the dining experience was changing. As more people moved into Melbourne and Sydney – a trend seen in New York, London and Tokyo – cities needed 24/7 servicing.

“There was a perfect storm already brewing. There was a massive shift away from fine dining because of the GFC, a massive cultural and social shift,” he says.

“Our cities are changing too. Going from nine-to-five, tea’s ready at 6.30 when I grew up, to a city with people eating and socialising at all times of the day. When I was living in Tokyo, you could go to a ramen bar at 10 in the morning and it would be full.

You could go to it at 1am and it would be full.”

In May, Chris’s group will open a Japanese restaurant in Flinders Lane – a three-level restaurant with “a number of concepts within it” – and in August, Chin Chin will open in Sydney’s Surry Hills.

He has three children: Holly, 26, who heads his group’s marketing department; Conrad, 23, who is embarking on an investment banking career; and Ryley, 21, who is studying commerce and is a champion skier aiming for the Winter Olympics in 2018.

Chris tells me about a cherished early childhood memory. Sometimes the family would drive up to Melbourne and take the pulley ferry ride from Williamstown to Port Melbourne. “It was one of the highlights of my life,” he says. “Dad would sit me on his lap, and I’d see the big city lights of Melbourne and I dreamed of hitting the big smoke one day. Dad would say ‘I want you to leave Geelong and come to Melbourne, leave the small town. I want you to go to university, I want you to become something’.”

“But MKR is gruelling enough.”

Manu’s career is the classic follow-your-gut tale: the “hopeless daydreamer” who abandoned circus school at 15 to pursue cooking. He rose from lackey to award-winning head chef in eight “really tough” years in London, before heading Down Under, where a nerve-wracking Ready Steady Cook audition took him from kitchens into lounge rooms. “My five ingredients were going terribly,” Manu says. “I said to camera, ‘I look like a wanker’, but got the job. ‘You’re so natural,’ they said. ‘Stay that way.’”

Fame might have gone to the 43-year-old’s stomach, but not to his head; fatherhood and a modest upbringing keep him grounded, so do trips to poverty-stricken countries.

“In Africa with [charity] Plan International, I cooked for 30 villagers with ingredients I had to kill, pluck and clean. For them it was like I’d served foie gras, truffles and caviar, the best thing ever. It was very emotional.” ● Words & pictures by STEPHEN McKENZIE

t’s hard to imagine MKR’s Manu Feildel, the epitome of cool, dodging insults and airborne fry pans. But long before reality cooking fame, the novice chef’s kitchen was ruled by a temperamental drunk who baptised apprentices with fire.

“He was an a---hole,” says Manu, in a lilting Gallic accent that makes it sound like a compliment . “But he was testing my hunger to cook. After a year of torture he said, ‘You clearly want it, now I will teach you everything’. I owe him much.”

It’s a tantrum-free kitchen this morning at hip St Ali in South Melbourne, where caffeine zealots are taking morning sacrament, in Manu’s case a double-shot latte.

Heads swivel when he passes: ruggedly handsome with trademark stubble and slicked back hair, but less dapper than on TV, in a tattoo and paunch-revealing T-shirt. “I love the finer things,” he confesses. “But carbs, full cream and my body type? Eeek.”

I’m reluctant to share my favourite Vietnamese restaurant with Melbourne, but duty calls. The food here is authentic, and not in a buzzword kind of way. The com am phu has a place on my death-row menu; a clay pot of white rice and crumbly pork jerky with sweet, fishy nuoc mam sauce that you mix together with accompaniments including omelette, whole baby crabs, tiny pickled pea eggplants and sticky diced pork belly with school shrimp. ●

Stumbling on Mensousai Mugen a few years ago on an empty stomach was a happy accident.

The house specialty is tsukemen – the “t” and “u” almost silent, like how you pronounce Tsukiji, the famous Tokyo fish market. If pronunciation fails, just ask for dipping ramen.

A bowl of saucy dashi broth (flavoured with soy or curry) arrives with cold, springy house noodles and a slice of chashu (braised pork belly), crunchy bamboo shoots and seaweed. Dip the noodles into the broth using your best ninja chopstick skills, then slurp loudly. Once the noodles are gone, staff dilute the broth with hot water so you can finish it as a soup. ●

Falafel salad @ Tahina Northcote’s worst-kept secret is this tiny Israeli-vegetarian cafe with a few seats inside and fewer out. The pitas are easy to take away, but why pick one falafel when you can have two? The falafel salad comes with six in total – three red (with chilli and red pepper) and three green (with parsley, coriander and mint) – on a generous bed of hummus, pickled cabbage, Israeli salad, and squirts and sprinkles of tahini and zaatar. Add pita for a couple of bucks, and some hot Shipka pickled peppers from the counter. ●

Bombe alaska @ Donovans This is the best bombe alaska, if the best dessert, in Melbourne. I’m biased because I grew up eating it on special occasions, but then again, so did many others. Velvety chocolate and hazelnut ice-cream propped up with a disc of chocolate sponge is piped with Sonic the Hedgehog-like meringue spikes, torched in the kitchen, quartered at the table and then drizzled with chocolate sauce. After 20 years on the menu, it remains one of the beachside restaurant’s best-selling dishes.

Note to diners: you can’t swing by Donovans just for dessert. I’ve tried. Twice. ●

Too many Italians, only one Asian @ Nora When you eat for a living, it’s a delight when you can truly label a dish as creative. This is a pasta of sorts, made from delicate strands of green papaya. Nora’s Thai owners have pumped it full of oriental flavours with “pesto” made from stink bean, fermented garlic, cashew nuts and school prawns. Eating it has all the comfort of a good bolognese with the exotic funk of a wet market in Asia.

Scotch quail egg, arancini & falafel on potato roesti nest with mixed bean and chilli concasse @ Crux & Co I have a rule when eating brunch at a cafe – order something you can’t make at home. This dish from Crux & Co fits the brief. A nest of thinner-thanshoestring fries sits in a puddle of mild chilli concasse, chunky with three types of beans and sweetcorn kernels. Like any good nest, it has eggs: a chicken scotch quail egg with an oozy yolk, a herb-filled falafel and an arborio rice arancini ball spiked with saffron. It’s incredible how quickly the words “smashed avocado” disappear from your vocabulary after eating like this. ●

Glenfiddich Experimental Series #01 IPA Cask (Scotland) $130; 43% Whisky and ramen might not sound like a match made in heaven, but it goes close.

Glenfiddich is giving things a shake up with its experimental series and first up is a single malt whisky that’s been finished off in IPA beer casks. The barrels have added a citrus note on the nose, which complements its caramel flavours and a hoppy bitterness that grips the back palate and lingers. ●

Campbells Topaque (Rutherglen) $19; 17.5% Any food with chocolate hazelnut ice-cream calls for Rutherglen topaque. Nothing too old and concentrated, mind you, but the tea, burnt orange, toffee and nutty flavours in this bottle from Campbells are spot-on. This manages the elusive balance of sweet fortified wines – concentration and lightness – where a glass complements dessert rather than feeling like it’s a dish itself. ●

Chalmers Montevecchio Bianco 2015 (Heathcote) $24; 13% A field blend of Italian grape varieties from Chalmers’ Heathcote vineyard, with flavours bold enough to stand up to the garlic in falafels. Delightfully perfumed, with citrus and stonefruit, dried herbs and white flowers.

It’s sensuously textural – silky, juicy and neatly structured. All up, it’s a delicious and highly drinkable wine. Structure is perfect – flavours fill every corner of the mouth. ●

he countdown is on to Melbourne’s annual feast of food, wine and fun. From March 31 to April 9, more than 250,000 people will join in celebrating the culinary lifeblood of Victoria at the 25th Melbourne Food and Wine Festival. This year’s program features about 300 new and returning events.

There’s the sold-out World’s Longest Lunch, which will take over Lygon Street on March 31, as well as much-anticipated masterclasses led by some of the world’s best chefs, who will be in Melbourne for The World’s 50 Best Restaurant awards. But what I love most about the festival is that there really is something for everyone.

April 3, $125 Usually you have to be a family member or a chef to score an invitation to Monday Hong Dinners, a Vietnamese feast cooked at home by chef Dan Hong’s mum (Ms. G’s and Mr. Wong, Sydney). However, this year you can join the fun as chefs and their families cook cherished recipes alongside the Hongs at this highlight event at The House of Food & Wine. Expect the Ayubi family (Parwana, Adelaide), Amy and Palisa Chanta (Chat Thai and Boon Cafe, Sydney) and Kate and Cameron Reid (Lune Croissanterie). ●

HOAXED: An April Fool’s Event April 1, $110-$255 There’s nothing more alluring than a secret, and George Calombaris isn’t giving anything away about this one-off event at his signature restaurant The Press Club. Diners should expect the unexpected. As George says, it will be nothing like what you usually get at the restaurant, but if I tell you any more, I’ll have to kill you. ●

Easy, Cheesy and a Little Squeezy March 31, $88 How does a night of cocktails, wine and cheese sound? Even better when you add Milawa Cheese and Green Park chefs Jesse Gerner and James Wilkinson to the picture. While the boys add a contemporary touch to classics, such as fondue and the ubiquitous cheese hedgehog of the ’80s, bar manager Carlos Araujo will revisit mixed drinks and local wines.

With Barry Morgan as MC for the night, you can expect some cheesy tunes with your camembert. ●

Stop at notable gravesites during this culinary history lesson to taste signature dishes re-created by head chef of Cafe Vita et Flores, Allan Koh, and see if hungry wins out over spooky. ●

his year’s Alliance Francaise French Film Festival promises a taste of France – in more ways than one. Expanding on an epicurean theme running through many of the titles, new festival director Philippe Platel has lined up special events pairing the best in French cinema with choice Gallic cuisine.

“It is a recurring theme in French movies, which I hadn’t ever noticed when I was in France,” Philippe says. “It’s something we share with Australia; you like to eat and drink as well. There are so many movies in the program where drinking wine and having good food is important.”

Opening night film The Odyssey Odyssey, a biopic of legendary diver Jacques Cousteau, will be accompanied by French sparkling and a selection of chocolates; edgy comedy In Bed with Victoria will be preceded by wine and cheese; and crudites will be served before a special screening of environmental doco Tomorrow.

For his first year in the role, Philippe has shifted the focus towards new feature films.

There are only two documentaries on the program, no TV series and classic French

titles have been farmed off to a separate festival to run later in the year.

“There have been so many good films in the past year that it’s already too difficult to make a selection. If I had to insert classic films it would be too complicated. I wanted a very diverse line-up open to young talent, to first films and especially to female filmmakers.”

A new program stream called Girl Power reflects this push to be more inclusive.

Philippe, who is also cultural attache to the French Embassy in Sydney, says the diversity of titles on show reflects a national film industry in rude health. He has spent six months watching the year’s crop at a breakneck pace of two movies a day – one before and one after work.

“The French cinema industry has been very busy,” he says. “It was easy for me to make the selection because all the movies I watched were good.”

Less easy is picking two or three films to recommend. “That’s a horrible question. It’s impossible to just choose. I would say go and see all 45.”● mbartlett@theweeklyreview.com.au

The reality When guests walk into the industrialchic-inspired former timberyard, they are whisked away to the distillery room, where Wilma, Jude and Eileen reside. These are the custom-made copper pots, named after the three founders’ mothers, that are used to create Four Pillars gin.

Cameron explains which ingredients are used in each of the six gin varieties we smell and sip. Each botanical – such as juniper, lemon myrtle and star anise – is placed in a glass along the centre of the table so guests can sniff and touch the elements.

“It’s not a wine-tasting, it’s not intimidating,” Cameron says. “It’s transparent and fun, and just a bit different.”

He also discusses gin’s colourful history and its comeback as a desired cocktail ingredient after spending decades in vodka’s shadow. “Modern gin is now so much more

about innovative cocktails. It’s no longer nanna’s drink.” The ticket price includes the 90-minute behind-the-scenes talk and tasting plus a goodie bag with a 700-millilitre bottle of Rare Dry Gin, a jar of Four Pillars orange marmalade and a cocktail recipe book so you can start experimenting at home.

The pain factor As someone not accustomed to drinking straight spirits, the first sip was a baptism of fire. But each subsequent taste was more enjoyable than the last.

The pay-off I left the class with a greater appreciation for gin – from the intensive and time-consuming processes required to make it to the interesting ways it can be used in cocktails.

the dash, although the speedo and tacho have been relocated in front of the driver. A chubby steering wheel and alloy pedals turn up the sporty appeal and are matched with JCW-specific side sills, exhaust tips, 19-inch wheels, and grille blades on the outside.

A quick blast around the block reveals a very different character to the JCW hatch.

The Clubman is no less playful, but it fires from standstill like a rocket, and bolts out

I

n 2000, when Gail and Kevin Donovan bought the Middle Park house they now share with their two poodles, it was a true renovator’s delight. But one factor sealed the deal for the couple who own iconic St Kilda restaurant, Donovan’s.

“We bought it when she was a wreck because we liked the window,” says Gail of the large headlight window at the front of the house.

The couple took on the challenge of renovating the house, which came complete with green shagpile carpet and lime-green shiny wallpaper. They bought books about bungalows to research how to “bring it back to what it might have been”.

Fast-forward and today it’s a stunner: white walls, high ceilings and polished floorboards frame rooms with a purpose and feel. The intimate front room is ideal for serving aperitifs; one lounge room hosts the annual Christmas gift-giving, and the kitchen is the epitome of style and generosity.

“Gail had a poodle [named Beau] when I met her,” says Kevin.

When the couple moved in together in November 1989, they got Gable. Both dogs have since died and now Wallis, 16, and Red, 7, are their pride and joy. “Wallis is in charge,” says Gail. “She’s the elder stateswoman of the house.” Red was a rescue dog who arrived at the age of two. “He’s so enthusiastic about the world, he’ll be eight in October.”

The Donovans have more than 20 collections of plates of different sizes. “When we go away, we try to carry six plates home with us,” says Gail.

There are antique plates from Royal Boch, a more contemporary set they found in the nowclosed South Melbourne shop Izzi & Popo and a mystery collection found in Geelong, each painted with a different animal.

M I R K A M O R A PA I N T I N G “Mirka rang on Christmas morning [in 2011] and said, ‘I need a table for lunch, darling’,” says Kevin. “I said ‘We haven’t got the best table in the house but come in’. Mirka walked in with this painting. It was still wet. It was a Christmas present for getting her a seat.”

Each piece from British furniture maker Robert Thompson’s (18761955) Mouseman Furniture series has a small mouse carefully carved into it. “It was a gift from a dear friend,” says Kevin. “We use it as a cheese board.”
