New entry gates, more parking, easier access
We’ve made key changes to entry points, parking, and access to ensure getting in (and getting around) is easier than ever:
New GA Festival Precinct entry: The main entry gate has moved to The Belvedere end of Apex Park, with access via Crockatt Park.
Exclusive Oasis Club entry: VIP guests can access The Oasis Club through a separate entry gate located in Bicentennial Park opposite the Bramble Bay Bowls Club.
More parking, less stress: We’ve added extra parking around the Festival Precinct, so you can spend less time searching and more time indulging.
Back by popular demand, the free festival shuttle bus will be operating from the Pelican Park satellite car park. All buses are pram and wheelchair friendly. The satellite car park closes at 11pm each night.

Small batch chilli oil company Mrs C’s has perfected the art of flavourful heat. And it all started with a pinch of salt, a slosh of oil, and a whole lot of love.
For founder Will Choi, family cooking has always felt like home. His mum and grandmother (the original Mrs Cs) created dishes by instinct. Recipes were never written down, only passed through generations by taste and touch.
“Mum’s always done it one way,” Will says. “Grandma too. There’s no measuring cup… just touch, taste, and feel.”
Will launched Mrs C’s with one bold product: The OG - a fiery, crispy chilli oil made to his mum’s slap-dash (yet expertly
crafted) recipe. It’s rich, garlicky, and has a pop of fresh sweetness from the crunchy shallots.
“What put us on the map was the spice level,” Will explains. “There’s nothing like it in Australia. [But] our recipes aren’t about blowing your head off. They’re about flavour first, then heat.”
Since launching (and promptly selling out) at local farmers markets, Mrs C’s has become a cult favourite among chilli lovers nationwide.
The latest crowd-pleaser that Will is bringing to
Moreton Bay is all about sticky, spicy sweetness: chilli honey.
“We make it properly, with real chilli oil, not powders or flavourings.”

Celebrated chef, author, and media personality Julie Goodwin is bringing her signature homemade style that first captured the hearts of Aussies when she won the inaugural season of MasterChef Australia in 2009 to this year’s Moreton Bay Food + Wine Festival.
For Julie Goodwin, food has always been a source of community. Cooking is about who’s at the table as much as what’s on the plate. It’s about bringing people together and sharing in something pure and joyful, something that deserves to be indulged. After winning MasterChef Season One, Julie shot to fame and became a renowned figure in the cooking world nationwide. Her debut cookbook, Our Family Table, topped the charts for over ten weeks, setting her on the path to author seven bestsellers.
Last year, a different kind of book graced the shelves. Your Time Starts Now made waves on its release, a stunningly candid and heartfelt memoir that sheds light on Julie’s life behind the scenes—or, rather, that tears down the walls of her public facade.
“It’s a story of hope,” Julie says. “An ordinary life where an extraordinary thing happened. There’s
been super highs and some super lows...it’s about how I’ve muddled through all of that and made my way to the other side. But it’s not all doom and gloom!” she assures us with a laugh.
Julie will be sharing some of the highs and lows of her journey in a Fireside Chat in the Piper-Heidsieck Lounge (located in the Oasis Club), each day of the festival. This intimate session offers festivalgoers the chance to talk, laugh, and perhaps even cry (in a good way!) with Julie.
“I’ve had some really beautiful conversations in this kind of setup,” Julie tells us, “about cooking, behind the scenes of MasterChef, what the TV world’s like…and sometimes it’s personal stuff.”
When asked what makes Fireside Chats so special, Julie lights up. “It’s the toand-fro with the audience,” she says. “That’s the difference between live

events and turning on your TV or YouTube. You get in the room with like-minded people, you’re face-to-face. And it’s not just about the presenter; it’s about the people sitting either side of you… You’re there with all these people who are fascinated by food.”
Julie will also be appearing on The Kitchen stage presented by Ausbuild for a live cooking demonstration every day.
“I’m always keen to see what’s in season and what’s special to the region each year,” Julie says.
Upon asking who in her wildest dreams she’d cook for, past or present, Julie responds without skipping a beat: “My family are my
favourite people,” she replies simply. “From the past, it’d be my Nan…I’d love for her to meet my granddaughter. My family are my favourite people, and that’s who I’d choose to have around the table.”
This is the kind of authenticity you can expect from Julie: real, raw, down to earth, and relatable on so many levels.

International chef and restaurateur Mike Reid knows beef. More specifically, he knows Aussie beef, and it’s his passion for our homegrown cuts (paired with our seriously good wine) that’s entrenched him in the local foodie scene.
Hailing from the UK and having worked and trained under some of the world’s most awarded chefs (Gordon Ramsay and Michel Roux, for instance), Mike now splits his time between London and Melbourne.
Despite a busy filming schedule for Good Chef, Bad Chef and directing Rare Restaurants, Mike is raring to go with ideas for his live demonstrations on The Kitchen stage, presented by Ausbuild.
Mike’s love affair with Australian beef began during his very first visit to Melbourne back in 2013 and it’s been a passionate pursuit ever since.
“I love to showcase supreme aged beef,” Mike says. “Aged in different ways, beeswax, wagyu fat, maybe even an extreme aged cut.”
“One of the first jobs I did in Australia was at Vue du Monde with Shannon [Bennett]. I got introduced to Blackmore Wagyu and fell in love!”
Ten years on, Mike’s relationship with the Blackmore family saw him bring their awardwinning wagyu to London for the first time. Overseas, it’s served exclusively at his M restaurants, where he employs arguably outlandish (yet ingeniously delicious) ageing methods: beeswax and wagyu fat ageing.
Mike reveals that it wasn’t beef but fish that gave him this unusual idea. “I had fish at a restaurant in Europe,” Mike says. “It was cooked tableside in hot beeswax. I just thought, ‘This is stunning.’ Watching them do it, I thought, you could apply this to so many different things.”
The next day, Mike started experimenting with beeswax ageing, which he says protects beef from yield loss while reducing the moisture to maximise tenderness.
Of course, a great steak is elevated to nearperfection when paired
with a fabulous glass of wine.
“Australian wine has such a global reputation now,” Mike says. “Australia does a really good range of accessible wines, but you’ve also got your luxury brands—you know, the wines you have to be in a good mood to spoil yourself with!”
Mike is known both on stage and on screen for his high-energy persona and infectious laughter. For Mike, live performance is like theatre.
“Live demos are off the cuff, very in the moment,” he says. “You feed off the crowd, the rapport, the high energy. I love doing live demos. It’s creating an experience unique to that day.”

For celebrated chef and Aussie icon Matt Golinski food has always been about more than just what’s on the plate. It’s about people, places, and the stories that make every meal unforgettable.
Matt’s passion for supporting farmers and producers runs deep.
Currently living on his own farm in the Sunshine Coast Hinterland, Matt and his family grow all varieties of fruits and veggies, as well as keeping chickens for those unbeatable farm-fresh morning eggs.
“It really drives home how hard it is to grow food,” he laughs when asked about life on the farm. “Too hot, too cold, too wet, too dry—there’s always something that can go wrong. Sometimes you win, sometimes you lose. But when you bite into the best fig you’ve ever tasted, straight off the tree…it’s all worth it.”
At this year’s festival, Matt’s focus is on local produce and the people behind it. His live demonstrations on The Kitchen and The Kitchenette
stages will showcase ingredients from some of Moreton Bay’s best, alongside standout produce from his Noosa home.
“You can sit at a lunch, be brought beautiful food, and not remember what you ate the next day,” Matt says. “But if I can tell you about the people behind that food—the farmers, the cheesemakers—that’s what stays with you. That’s what makes it meaningful.”
It’s a simple philosophy, but one that defines Matt Golinski’s enduring appeal: respect the
growers, honour the ingredients, and never lose sight of the people who make it all possible.
As for what else he’s looking forward to at the festival? “Catching up with old friends like Alastair and Dominique, meeting new producers, seeing how everyone’s businesses have evolved. That’s the magic of this festival.”

DOMINIQUE RIZZO
With a deep appreciation for fresh Italian produce and the food-loving people it attracts, Dominique Rizzo is bringing a *bellissimo* blend of culinary expertise and heartfelt storytelling to the festival.
“This year The Kitchenette stage will be bursting with delicious cooking demonstrations,” Dom says. “We’ve gone further afield to welcome even more local talent, bringing to the stage an incredible fusion of
food, health, gardening, and international flavours.”
That fusion isn’t just happening on the plate; it’s live, on stage, where Dominique thrives as a natural connector and host.
“I love the whole experience,” she says.
“Recommending local talent, bringing together a diverse collection of foodies, and of course the actual hosting.
That’s where I get to ask questions and really create a fun, engaging bridge between the talent on stage and the audience.”
New to the stage this year are Dom’s Quick Chats— bite-sized interviews and product tastings that bring producers out of the stalls and into the spotlight.
“Chatting with producers and chefs for me is all about lifting their profiles,” Dom adds, “and getting them to engage with attendees in an informal, relaxed way.”
Dominique will be kicking off the stage program each day with her own highenergy cooking demo.
“I love to include as many local producers’ products as possible,” she says.
“I really want to get people to move out of their comfort zone when it comes to combining flavours and also show how versatile local food products can be.”
And after a full weekend of demos, chats, and hosting? She’s looking forward to enjoying the festival just like the rest of us.
“I’m excited to sit back, have a cocktail, listen
to some music, enjoy delicious food, and just take in the vibe. I love the breeze from the bay and the sound of the birds. It’s rare that I stop and just be… That’s what I’m really looking forward to.”

This year, we’re proud to spotlight one of City of Moreton Bay’s longeststanding international friendships, the 33-year relationship with Japan’s Sanyo-Onoda City.
Formally established in 1992, this Sister City partnership has grown and evolved over three decades. In 2022, the relationship officially transitioned to a “Friendship City” arrangement, further strengthening the bond between the City of Moreton Bay and SanyoOnoda City.
What started with letters and official visits has grown into a long-standing cultural exchange, with strong ties in education, business, and community life.
In 2023, a virtual ceremony celebrated the 30th anniversary of this partnership and in 2024 City of Moreton Bay Mayor Peter Flannery travelled to and met with Sanyo-Onoda City’s Mayor Goji Fujita and used the occasion to reaffirm the
ongoing commitment to working together.
The celebration continues at the 2025 Moreton Bay Food + Wine Festival. As you explore unique flavours and enjoy curated food and drink experiences, you’ll also find subtle nods to Japanese culture throughout the program. Guests at the festival will be treated to the sharp skills of Chef Suzuki Akinori, the Official Residence Chef for the Consulate-General of Japan in Queensland, as he does a live cooking demonstration on The Kitchenette stage on Friday (included in General Admission ticket). For those seeking a more immersive cultural experience, Tea Master Soho Tomoko White will be leading a Japanese Tea Ceremony on Friday and Saturday, introducing guests to a cultural tradition rooted in mindfulness, respect and harmony.

What do you get when you add quick wit, Michelin-level culinary skills, and a touch of Irish charm? Festival favourite Alastair McLeod, of course. This year, he’s returning with an exclusive showcase of the Bay’s best bites.
Samford local, chef, TV personality, and food ambassador, Belfastborn Alastair McLeod is somewhat of a veteran at Moreton Bay Food + Wine Festival.
On his inspiration to start cooking, Alastair says simply, “It’s nice making people happy. And of course, the craft of cookery holds a fascination for me…a certain magic.”
Alastair runs his Moreton Bay - based catering company Al’FreshCo; appears as a regular on Ready Steady Cook, Queensland Weekender, ABC Radio and 10 Minute Kitchen and has hosted his own travel-food show Off the Eaten Track and taken us around the world with Imagine Holidays Iconic Rail Journeys. And now, of course, he’s back for another year of festival foodie fun, this time with an even sharper
focus on the paddock-toplate movement.
“It’s the ultimate lie detector test,” says Alastair. “If you don’t have good ingredients, you cannot make good food.”
“Ten years ago, people would’ve asked me, ‘Can I get the recipe?’
Nowadays, especially at the [Moreton Bay] Food + Wine Festival, people ask, ‘Where did you get those ingredients?’ That speaks of a real maturing in our food narrative.”
“It’s a real privilege to be the chef for The Tastes of Moreton Bay Pavilion,” he says. “The Moreton Bay Showcase will be an authentic celebration of the region’s producers. I’ll have some of the primary producers there so we can meet and talk to them.”

seafood from Morgans and meat from Gilly’s Smallgoods. “Another absolute food hero of Moreton Bay,” he says.
As for desserts, Alastair says it would be remiss not to use locally farmed strawberries at this time of year. They taste, for him, like a bite of pure nostalgia, a welcome departure from the high-footprint punnets we get in supermarkets.
“They’re soft, ripe, sweet… they haven’t travelled far. They taste like they used to taste.”
At its heart, Moreton Bay Showcase is designed to bring people together and promote a back-to-basics way of eating.
“My big hope is that it will foster change,” says Alastair. “The Moreton Bay Showcase will have people reconsider how they do their shopping. These producers should be on people’s menus, and I want to help people access them.”
Like us, Alastair is also looking forward to soaking in the bay breeze and vibes. He depicts the heart of the festival perfectly: “I want to sit on the foreshore, glass of wine in hand, a plate of oysters, watch the sun go down… it’s a moment you could remember for a lifetime.”

She’s headlined comedy clubs and entertained audiences at sea and on land. Now, iconic Brisbane comedian and radio broadcaster Kat Davidson is bringing her sharp wit to Moreton Bay Food + Wine Festival.
“It’s gonna be the easiest way to spend an afternoon,” Kat tells us about the Laughs & Lagers comedy show in the Tastes of Moreton Bay Pavilion. “We’ve stacked it full of the best and brightest in Australian comedy.”
Laughs & Lagers presented by Hip Hops Brewers will showcase three of Kat’s favourite acts: “Kel Balnaves is brilliant. He sounds like your mechanic but tells these effortlessly sharp jokes,” Kat says. “Ellen Briggs is a total pro, she’s performed all over the country. And Ben Hunter is one of the best up-andcomers…you’ll hear a lot more of his name in years to come.”
As comedy host, Kat thrives on connecting with the crowd and reading the room in real time. “I like to think of myself as your comedy concierge,” she laughs. “I’m not confrontational… I’m the one setting the tone and making everyone feel welcome.”
For Kat, performing at a food and wine festival
is a unique kind of magic that perfectly complements a full weekend package. “It reminds me a bit of cruise ship gigs,” she says. “You’re part of a larger experience. People aren’t just there for the comedy, they’re there for the food, the wine, the company.”
She’s also a huge fan of the bayside setting. “This part of the world is bloody gorgeous,” she says. “It’s on the most beautiful piece of land, looking out at the most incredible view.”
And yes, she’s already got her eye on the seafood. “I would actually kill a man for a Moreton Bay bug,” she says, only half-joking.
From one extreme to another, Kat’s had to finely dice her crowd-working chops to suit a wildly different range of people and places. “I’ve done comedy for retirement homes, even for bikies,” she reveals. “I didn’t know that’s what I was booked for…but they were actually quite lovely!”
From the unpredictability of live crowds to the
rush of making a whole room laugh, it’s clear Kat thrives on that immediate connection. “There’s nothing else like it,” she says. “Radio does have a real intimacy to it, but nothing can compare to a live audience.”

“Expect afternoon tea classics with a nourishing twist, paired with locally grown tea,” he tells us.

His energy is off-the-charts infectious. His food surpasses every *chef’s kiss*. His family gettogethers are seventy-plus-person affairs. With a personality as bold as his dishes, Miguel Maestre turns up the heat returning to Moreton Bay Food + Wine Festival for 2025.
Miguel Maestre wears many hats: chef, restaurateur, author, TV presenter, humanitarian, and mental health ambassador. Miguel is a busy man, but when the call came to return to Moreton Bay Food + Wine Festival for the third year, he didn’t hesitate.
“I hope I get to do it a hundred more times!” he says.
We ask Miguel how he developed his love for cooking, and his answer leaves us speechless. “My mum is one of twenty children,” he reveals, “so I have seventy, eighty cousins…it’s powerful to see so many people eating so much! I think that’s why I love cooking at big events. I feel that link to growing up.”
And if he’s accustomed to cooking for seventyplus rowdy Spanish family members, we know his experiences at the festival will be expertly crafted and totally joyous.
“The cooking demonstration is always a fun part of what I do,” he says. “There will be a lot of interaction with the audience. I always like to give them a little part of me to take home.”
But it’s his new dining events that Miguel is especially excited about this year. “The special lunches, people will have a much closer experience. I’m really looking forward to that.”
with Miguel Maestre will showcase the chef’s signature Spanish-inspired cuisine in a high-energy yet intimate shared dining experience within The Bayview Pavilion. Expect long tables, each course paired perfectly with Robert Oatley Wines, and non-stop banter from the chef himself.
“I’ve kept my Spanish flair through the menu, honestly, I don’t know how to cook anything else!” he adds with a laugh.
“I hope people learn a little bit of cooking, that’s the main thing,” says Miguel.
“And I hope they have a good time. Life is so stressful. I hope people can take their minds out of their busy ‘everyday’. That’s my aim.”
We ask Miguel what he is most enjoying cooking at home right now, our mouths already starting to water from glamorous expectations of tortilla española or sweet, crispy homemade churros. But in classic fashion, Miguel surprises us yet again:
“My kids’ lunches… That’s what I love to cook,” he smiles. “Roast chicken, avocados mashed up, squeeze of kewpie mayo… Mix it all up, put it into wraps, sprinkle some cheese. My kids love it.”
While his family are tough critics (no surprise with a dad like Miguel Maestre), they love the simple pleasures. Miguel says it’s something that he grew up with, where
family meals were so good because of their simplicity and connection.
“My mum is such a good cook,” he says. “I still go home sometimes and Mum’s paella is better than mine!”
It’s clear that for this renowned chef, cooking for the people he loves, even a simple wrap, is what it’s all about. And that notion of people being at the heart of his cooking extends to Moreton Bay Food + Wine Festival.

As the sun dips behind the bay and golden hour bathes The Bayview Pavilion in Moreton Bay’s trademark glow, one of Australia’s most celebrated voices will rise. Mirusia Louwerse invites you to an intimate evening of song, storytelling, and sumptuous food.
Known to the world as the “Angel of Australia” (a title gifted to her by André Rieu himself), soprano Mirusia Louwerse will take centre stage for one of the most enchanting new events at this year’s Moreton Bay Food + Wine Festival: An Evening with Mirusia Louwerse: Sip, Savour & Serenade.
This intimate event pairs a curated food and wine experience with the soaring vocals of one of the world’s most beloved classical crossover artists. It’s a rare chance to see the internationally acclaimed star up close.
A slight departure from the lavish ball gowns and expansive orchestra of André Rieu’s beloved concerts, which set Mirusia on the fast-track to pop opera stardom in her early twenties, Mirusia says this year’s festival is a unique chance to reconnect with bayside locals.
“I love the intimacy of smaller concerts,” she explains. “You have a personal connection to the audience, which is lovely because I do a lot of interactive moments during my concerts. It becomes a conversation with music. We get to know each other…we leave as friends.”
Her recently released single Raise a Glass is a joyful toast to life and music, and this celebratory spirit is exactly what she plans to bring to Moreton Bay.
“There will be operatic classics, but also some more popular songs,” Mirusia tells us. “Phantom of the Opera, The Impossible Dream, some crossover classics. And paired with amazing food
and wine… It’s going to be a really magical night.”
Outside of her two exclusive evening concerts, Mirusia can’t wait to enjoy the festival weekend in full.
“I just want to sit back with a beautiful glass of wine and watch the sun
set over the bay,” she says. “That is such a stunning moment at the festival… total golden hour. It’s just a really delightful place to be at that time, with that select group of people. It’s really special.”

Fondly dubbed ‘the young Italians’ during their winning season on My Kitchen Rules 2024, Simone Prest and Viviana Barile have since become household names in pizza, pasta, and everything cooked ‘with a twist’.
We settle in by the window at Doughcraft, Simone Prest’s Italian diningmeets-French patisserie establishment in the heart of Brisbane City. After a perfectly brewed coffee (and sinfully good chocolate croissant), he and Viviana dish out delicious tidbits from My Kitchen Rules and life after winning the show.
The best friends, both originally from Italy, had never even cooked together before auditioning. In fact, as Viviana laughs, “When Simone asked me if I could cook, I said no. And he said, ‘Perfect!’” Somehow, that perfect partnership led them all the way to the grand final, and the trophy.
Now, the duo is heading to the Moreton Bay Food + Wine Festival for their first live festival appearance together, bringing their signature energy and Italian accents to the stage. They’ll headline a live demonstration (no doubt featuring plenty
of best friend banter, well-tuned during their time on reality TV) and will also host an intimate masterclass.
Knead to Know is the ultimate authentic Italian pasta masterclass, where Simone and Viviana will share expert techniques, from mixing and kneading the dough to crafting traditional shapes and pairing them with delicious, made-fromscratch sauces.
“We’ll definitely keep it simple and fun,” says Simone. “We’re thinking fresh pasta made from scratch, maybe a beautiful carbonara…something delicious that people can actually make at home.”
Audience participation is also guaranteed. “We want to involve the crowd as much as possible,” Viviana smiles. “Get people up, cooking with us, having a glass of wine... To us, it’s not about showing off, it’s about sharing good food and good times.”
Sourcing local produce is non-negotiable for the duo. “In Italy, we call it ‘kilometre zero’,” Simone explains. “The closer the food is to you, the better. It’s more affordable for the restaurant, and it’s just fresher. You know where your food is coming from.”
When they’re not cooking, the friends are looking forward to soaking up the festival’s lively atmosphere and maybe reconnecting with a few familiar faces.
“We’re excited for great fun, lots of wine,” Viviana says. “And we need to see Julie [Goodwin]. She scored us on My Kitchen Rules. It will be fun to meet up again.”
And if you’re wondering where they stand on one of Australia’s most divisive food debates—pineapple on pizza—their answer is swift: “They should be banned!” Simone says, only
half-joking. “Or better yet, sent to Italy. Once they taste real Italian pizza, they’ll understand.”
Their time on My Kitchen Rules may have been a wild ride, but for Simone and Viviana, it was just the beginning. “It made our lives fuller,” Viviana says. “We became better people afterwards. We have so many opportunities now, like this festival… It was definitely worth it.”

Some stories begin in the kitchen. First Nations Chef and food sovereignty advocate Aunty Dale Chapman’s began around an open fire, where culture, memory, and native ingredients were passed down by hand and heart.
A proud Kooma and Yuwaalaraay woman, Aunty Dale Chapman has spent over 25 years building her company, My Dilly Bag. Now nationally recognised, the brand champions native Australian foods and shares the cultural knowledge behind them. Dale’s work has taken her around the world, from teaching Aboriginal bush food cooking classes in French culinary schools to representing Australia in global food sovereignty conversations.
This year, she returns to Moreton Bay Food + Wine Festival with two unique experiences: her immersive dukkahmaking workshop and an inspiring live cooking demonstration, both of which bring native ingredients to the fore.
On A Taste of Country workshop, Dale is especially excited: “It’s going to be a handson experience where people learn about native
Australian ingredients and how we can utilise them in everyday dishes,” she says. “You get to fill up a little bag and take it home to use in different things.”
Some of those ingredients? “Australian macadamia nuts, lemon myrtle, wattleseed, bush tomato, native mint and thyme, Tasmanian pepperberry… It’s a reconciliation spice mix,”
Dale explains. “We’ll also show you how to use them with conventional herbs and spices like cumin, coriander, paprika. They all work together.”
Beyond recipes and techniques, she hopes festival-goers take home something deeper: “It’s about learning a little more about Aboriginal Australia, why we used these plants in the past and why we still use them
today. Many of our native herbs and spices have medicinal uses too.”

Down-to-earth, all class and no fuss, Nick Ryan is Australia’s most distinctive voice in wine. He’s also a firm believer that anyone can appreciate a good drop.
Best known as the senior wine writer for The Australian and a columnist for The World of Fine Wine, Halliday Magazine, and Robb Report, Nick brings decades of tasting, judging, and storytelling to the tasting table. From launching world-class vintages overseas to penning award-winning essays on the culture of wine, his passion runs deep, though he’ll tell you he only got into it because writing about wine was easier than lifting it.
“I used to raid my old man’s cellar. That taught me a bit about wine,” Nick laughs. “Then I worked in a wine shop for the best
wine merchant in Sydney. Every day he’d put a glass under my nose and go, ‘Alright, talk to me about that.’ That’s where I really fell in love with it.”
Nick is also a highly experienced wine show judge and an in-demand presenter at wine events around the world, including, of course, the Moreton Bay Food + Wine Festival.
“We’ll look at the enticing and delicious wines on offer at the festival in a bit more detail,” says Nick.
“You’ll get to hear directly from the people behind the wines, the stories from the vineyards and the wineries.”
While Nick’s masterclasses are built to be immersive, they’re not just for the seasoned connoisseur. Whether you can tell your pinot from your grenache at fifty paces or you simply know wine comes in red and white, you’ll be welcomed with open arms, and an open bottle.
“Everyone has the ability to smell, and everyone has the ability to taste,” Nick says. “The only difference is that some people are better at articulating it than others… It doesn’t matter where you’re at. As long as you come with an open mind and an open mouth, you’ll have a good time.”
Which is exactly what Nick hopes guests will do during his masterclasses. While he’s no stickler for rules, he’s a fan of breaking old food pairing assumptions (he recommends saving some white wine rather than red for your cheese course, by the way). Nick believes that when wine and food come together in the right way, they become something more than the sum of their parts.
“You get this whole new third thing,” he says. “It’s not just the wine and the food, it’s an experience. A moment.”
