Celebrity Chef Mark Vecchitto Now Working His Culinary Magic at Carmelo’s Café!

S

ince New London developer Tony Silvestri bought the brick building at 463 Bank Street that once housed Carlo’s Restaurant, he’s transformed the space into a unique dining venue with two distinct identities. For breakfast and lunch, it’s Carmelo’s Bean & Leaf (a coffee shop with a full array of made-to-order egg dishes, salads, and sandwiches) and for dinner, it’s Carmelo’s Café—a restaurant featuring sumptuous Chef Mark Vecchitto Italian and International fare. In November Tony took Carmelo’s to the next level by adding a new partner – Celebrity Chef Mark Vecchitto, winner of both the Connecticut Top Chef Award and Caterer of the Year, for his Blue Shallot gourmet catering business.

A Meriden native, Mark was classically trained in French cooking. He was head chef at such local venues as Mystic Market, Latitude 41, Aspen, and Liv’s Oyster Bar, as well as restaurants in New Mexico. “Here at Carmelo’s, we’re really changing the way people think about a restaurant,” Mark said. “Even though our menu is largely Italian and International, we are venturing into other styles, such as French, Asian, and Southwestern. We’re adding a lot of seafood, such as seared scallops over polenta and crusted red snapper with an orange-mango salsa and quinoa. We use Piedmontese beef, which is grass-fed and famous for its flavor. We’re also adding ‘mobile entrees’ that people can purchase and enjoy at home.”

Word of Mark’s culinary prowess has spread far beyond the borders of Connecticut.

On December 7, The Food Network visited Carmelo’s kitchen to film Mark as he prepared his signature dishes; he recently worked with internationally renowned chefs Guy Fieri and Bobby Flay.

Tony and Mark are excited about another new venture: Carmelo’s Steam Carriage at Union Station in New London. Opened on December 15, this arm of Carmelo’s Bean and Leaf offers organic, locally roasted coffees, teas, pastries, baked goods, and sandwiches.

an you believe it? Another year is gone! Seems like I was just getting the hang of writing 2015 and now we’re days away from 2016. So, your Resident Team worked diligently putting this Year In Review issue together.

So, let’s begin with St. Patrick’s Church, Mystic, reinstalling its antique crosses, all like new with fresh gold leafing bringing them back to their original luster on page 4. Pete and his wife Martha retired to Connecticut in 1962 where he taught at Norwich Free Academy and later became the Director of Guidance at Ledyard High School, retiring in 1983. Pete was an enthusiastic and effective community leader as an announcer, timekeeper and official at Ledyard High School games and meets, in addition to having a huge impact on Ledyard’s youth through tennis.

Pete also volunteered at CRIS radio, drove for the blind, and was a lifetime member of the Ledyard Lions Club. He played tennis with a vengeance well into his 80s, and died peacefully at home on November 7th, 2015.

In recognition of their considerable contributions, the Ledyard Lions Club has renamed two town facilities: the Ernest V. “Ernie” Plantz Boat Launch and the Peter I. “Pete” Olsen Tennis Complex.

In addition, Jan Roberta from the local chapter of Quilts of Valor was on hand to present Ernie’s wife, Caroline, with a beautiful handmade quilt. She had presented one to Pete Olsen on September 30. The mission of the Quilts of Valor Foundation is to cover service members and veterans touched by war with comforting and healing.

There was a palpable sense of warmth, sincere appreciation, and community in the room that day.

And thanks to the actions of Pete and Ernie, everyone present felt proud to be an American.

Joe especially praised the CO for his actions during the 2013 government shutdown which created a “thankless, awful, no-win” situation, with Capt. Lahti left to determine who was or wasn’t “essential” on the base. With emotions running raw, Capt. Lahti, Joe said, showed “incredible leadership in terms of trying to keep the conversation focused on real information to help people in that situation.”

A native of Buffalo, New York, Capt. Lahti took command of the SUBASE in May 2013. In his farewell remarks he was gracious in thanking all of those he worked with, both on and off the base. He thanked his wife Lisa, and six kids for their support, and commented that their two-and-one-half years on base was the longest they had spent living together in 25 years

of marriage.

Capt. Lahti will be staying on at the base as staff of the Undersea Warf ighting Development Center. He said he was leaving a “clean desk, 415 Twitter followers and 31,731 likes on the Naval Submarine Base Facebook page” to incoming CO, Capt. Paul Whitescarver.

From Roanoke, Virginia, Capt. Whitescarver commanded the USS SCRANTON (SSN 752), and has served on the Joint and Chief of Naval Operations staffs.

He most recently served on the staff of Commander, Submarine Forces Atlantic in Norfolk, VA. “Often at events like these, the incoming officer notes what a tough act it is to follow the guy that he’s relieving, and I guarantee you it is no act,” Capt. Whitescarver said during Monday’s change-of-command ceremony. “Carl, you’ve done a superb job here.”

by Indigo Eve Cohen n December 6th, Waterford held it 34th Annual Masters 5.1K road race to commemorate the Japanese attack on Pearl Harbor. It was hosted jointly by Waterford Parks and Recreation and Waterford VFW Post #6573. The Waterford VFW provided their banquet hall for the meal following the race, while Vietnam veteran Ron Dombrowski and his family generously donated the food. 92 Masters (runners age 40 and above) participated in the race. Southeastern Connecticut running group, the ‘Mohegan Striders’, where well represented at the event. Member Tim Smith describes their participation “We formed our group in 1972 and we’ve come from all over the state to run today. Quite a few of our members will get to work in the kitchen after the race. One of them is even preparing venison.”

But he’s recovering from an injury and when he hit the wall, I lost the competition that had been driving me. I still pushed myself but I didn’t make the time I wanted for today.”

The first place winner in the men’s division was Stanley Mickus of Mystic and Karen Dobley of North Stonington took first place for the women. Both crossed the finish line to a roaring crowd. The final runner to cross the finish line, Johnathan Schweitzer, did so with no less fanfare.

Johnathan had been hoping to participate in the race for the last few years. He was still recovering from an injury and as he made his way determinately down the last twenty yards, it was clear it had been a challenge. Johnathan is a Vietnam veteran with a military career of thirty five years. He also served as a state policeman for twenty five years. As he came into sight, his grandchildren cheered him on, waving a banner and squealing with excitement “It’s Grandpa! He’s coming, he’s coming! Come on Grandpa; you can do it! Way Hedding, of SNERRO, expressed the type of support that typified the day “The last runner is just as important as the first runner. We want them to know we’re here for them.”

• Preheat oven to 325 degrees F (165 degrees C).

• In a medium bowl combine graham cracker crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch spring form pan.

• Bake in preheated oven for 10 minutes. Place on a wire rack to cool.

• Preheat oven to 425 degrees F (220 degrees C).

• In a food processor combine cream cheese, 1 cup sugar, flour and eggnog; process until smooth. Blend in eggs, rum and nutmeg. Pour mixture into cooled crust.

• Bake in preheated oven for 10 minutes.

• Reduce heat to 250 and bake for 45 minutes, or until center of cake is barely firm to the touch.

Remove from the oven and immediately loosen cake from rim. Let cake cool completely before removing the rim.

A

miracle of the modern age is the evolution of active adults into active retirees.

Rarely now does the gold watch lead to a life of inactivity and slothfulness. In a parallel development, the average life expectancy of today’s sixty-five year old amounts to about twenty-two more years of life. Considering how much can happen over two decades, it seems worthwhile to plan to take full advantage of these years. There is another whole act to be played!

Fulfilling the promise of the

later decades of one’s life may become derailed by the vicissitudes of the health effects of aging and physical wear and tear. Most seniors have dealt with joint pain and stiffness, with many finding the discomfort and disability leading to inactivity and immobility. Aging knees, hips, and backs cause widespread misery with relief proving stubbornly elusive. Practitioners try physical therapies as well as medications and surgical interventions ranging from joint injections to arthroscopy and open surgeries.

Increasingly, however, people are turning to orthopedists to have their joints surgically replaced with hardware made of ceramic and titanium. Most commonly and most successfully replaced are degenerated hips and knees, though many other joints ( i.e. wrist, elbow, and hand joints) can be repaired with man-made materials.

Joint replacement relieves pain

It is expected that knee and hip replacements will continue to be a growth industry as the population ages, and fueled by ever improving surgical techniques, technology, and efficient rehabilitation. Generally the man-made materials can last for many years, though after ten years a worn out prosthetic may require revision surgery. The limiting factor on how many joint replacement surgeries are performed in the coming decades may be availability of the orthopedic surgeons who do the procedure. The best plan is to keep your joints healthy as long as possible, but joint replacement can ease some of the pain and immobility that in previous generations set boundaries for most seniors.

Living well and to life’s full potential merits consideration of all the options available.
