he has helped groom hundreds of her clients and has transformed them completely. An MBA by qualification and an ex-assistant manager with Modi Group, her enthusiasm for make-up led her to leave her job and follow her passion. She has been trained by Pearl Academy of Fashion under the supervision of industry veteran, Ashima Kapoor and has been in this industry for more than 5 years now. What inspired her to get into the industry?? Well, seeing her mother doing make-up at weddings and occasions, fascinated her and made her fall for this profession. Specializing in bridal make-ups, she caters to brides all over India and across the globe. “I believe in bringing out the best in each bride and making them the best versions of themselves,” she says. Besides having a knack for the perfect make-up for an individual’s skin type, she also understands her client’s needs rather than imposing her own style on them. At the same time, she is always there to guide her clients by telling them what will suit them the best. Thus, striking a balance to create the most stunning personalised looks. In 2017, she launched her own label of make-up brushes which is her first step towards entrepreneurship.

GAURAV GUPTA UNVEILS COUTURE FLAGSHIP STORE IN THE HEARTOF THE HISTORIC QUTAB AREA

Gaurav Gupta recently unveiled his brand new couture flagship store in the heart of the historic Mehrauli area in New Delhi. This will be a first-of-itskind experiential retail space unraveling the couturier’s dreamscape, with an added focus on haute couture and customization. Spread over 5000 sq. ft., there will be five-concept rooms; an haute couture and customization atelier, a bridal salon and a demi couture section for women. Fast emerging as a key focus for the brand, the GG Man collection will also have a dedicated space, including formal and occasion wear for grooms. The brand’s special collaborations and projects will also be available at this address. Built in collaboration with Studio Lotus, the store is designed to be multi-functional and interactive. Finding inspiration in surrealism, it is Gaurav’s interpretation of fantasy palace ruins, complete with mystical references and magical creatures. The designer has also developed signature objects d’art, mono-tonal furnishing, carved wooden furniture, suspended art nouveau mirrors and handmade brass murals to further enhance the cosmic quality of the interiors. Architecturally, the old and new have been brought together in a harmonious contrast - a Romanesque oval fountain in the center of the store is outlined with curvilinear walls, beveled mirror edges are interspersed in the space to create a feeling of endlessness. Right at the entrance of the store is an age-old Siris tree, encased in a pristine glass prism, with a carefully shaped moon-roof, balancing the geometric with the poetic. To celebrate this landmark occasion, the brand presented its latest couture collection ‘Descend’, featuring sophisticated, structured garments for men and women. Innovative architectural elements have been introduced in new forms of MODISH MAGAZINE

Indian wear for this collection, highlighted with embroidery resembling the alignment of stars in a galaxy. Indigenous boning and sculpting techniques of the brand developed in-house all combine to enhance the plural dimensions of the pieces. Key silhouettes include statement gowns, sari-lehengas, sari-gowns, lehengas for women, and Tuxedos, boning T-shirts, textured suits, bandhgalas, Nehru jackets and sherwanis for men. This flagship joins two other Gaurav Gupta stores in India currently, at DLF Emporio in New Delhi and Kala Ghoda in Mumbai. The store will be operational on all days, from 11am-8pm. 21

We got into a conversation with this talented and young entrepreneur and got to know more about him. MODISH: How did the transition from a career as a full time Architect to an Architectural photographer happen?? I was just fascinated with the sun, so I started chasing it. With its movement everything about the nature, changed. This phenomenon really intrigued me. I did not plan on taking photography as a full time profession. I just happened to learn it for the joy of it but then decided to stick on. Photography is now my full time career and I am extremely glad I took that leap. MODISH: You obviously enjoy photography more than architecture, what else gives you a kick apart from these? Well, I am a man of many interests. I have a passion for writing fiction & philosophy. I also have a keen interest in educating people through my writings and I strive to achieve that in future. MODISH: What is luxury to you?? Luxury to me is very different to what most people perceive it as. I feel luxury is to be able to work on your own terms and not have a boss. Luxury in my line of work is that I get to meet so many people,

visit so many countries, enjoy the vibe and in return get paid for it. So, I am always on a paid vacation, doing the thing I love. MODISH: You are a very inspiring person yourself, but we would love to know who inspires Purnesh Dev? Fernando Guerra, an architectural photographer from Lisbon has been my inspiration. I love the fact that he is very adventurous when it comes to his work and he experiments with lots of things. His work is impeccable. MODISH: Pencil or camera? What would you label as your forever love? I would say, Pencil. Not really for architecture but for writing. I love to scribble my thoughts and philosophies. This is my first and forever love. MODISH: What would you call your euphoria moment? I just told you about my inspiration, Fernando Guerra. So, I happened to contact him on instagram and told him how I totally appreciate his work and creativity. He replied back to me with the utmost humbleness and in return complimented my work. Getting a compliment from him to me was my euphoria moment.

I love the architecture and design there. The best part is that it isn’t crowded at all, so roaming there is much more fun. MODISH: Anything special that you would like to share with our readers? Yes, one should always follow his heart and take up things that interest them. When you put in your heart and soul into something, you are bound to get successful, sooner or later. ◆

MODISH: What has been your most challenging project so far? So, I was working on a project in Ahmedabad where I had to do photography for a high-rise building. As we know, India and high-rise buildings don’t go together. It was a task to conceptualize the shot as I stood on a crane at 4am in the morning, with a restricted time window in hand. Being in the modelling circuit for close to a decade (he started quite young – at the age of 16) potentially worked as an advantage when it came around to having a taste in design that resonated with the world at large.

Who could tell then that Mustafa was here to re-write the rules of the game, set benchmarks for others to follow and create an impact that is devoured even today? However, behind the opulence of the brand, is a story that revolves around Mustafa Eisa – his sacrifices, his sweat and labor, his determination and his perseverance to deliver top-notch quality results. The grandeur of his journey is hard to miss and a revelation of a man who has created waves in a niche industry. In this edition of Modish, Mustafa Eisa walks us into his life, looks back at the golden years and opens up on his daughter’s entry into the business, current projects and a lot more.

MODISH: Walk us through your journey; the transition from a professional super model to a full time interior designer? I had been a successful model for 12 years, at a time when modeling did pay quite well and there were just a few successful models - who did most of the work. Whilst it was easy to lay back and enjoy this, I realized that this profession came with a definite shelf life. Fortunately, I had invested in a couple of apartments, which were tattered

and had no buyers. Nevertheless, deep within me, I knew I could transform these spaces. With no formal training back then, I took on the task of transforming the space that was available to me. Unknowingly, I managed to create a few ripples, which were noticed by my friends and family alike. A few them were kind of enough to allow me to do up their homes. However, I knew that having a keen eye can may be make you a decorator but if I wanted to be an active designer and take this up as profession, I would need to do a formal course and study design.

MODISH: Speaking of the world’s leading design institute Parsons School of Design, do you think it is imperative for an aspiring interior designer to take formal training or your creative talent would suffice?

True luxury is time; true luxury is space. Now if I were to combine these personal mantras to my work, I need to create a Timeless Design and enhance the area so that it appears more spacious. While the use of luxurious materials could compliment and enhance the design, but to say this would be sacrosanct to achieve a luxurious environment.

I think it is extremely important to have a formal training to completely understand the subject. Contrary to what most homemakers believe, design is not just picking up furniture Thus, I took a leap of faith to get closer from magazines. Whilst it is an improper protocol to name these projects, they range from Villas at Emirates Hills in Dubai, Penthouses in Mumbai, a 15-bed room holiday home in Mahableshwar amongst others. I am currently working on a project in Goa, which is very close to my heart. The project is a classic example of what can be termed as elegant and minimal luxury. We have called it “Contempo” - a collection of five exclusive Villas each with their own private pool.

To me Salman is and always will be a childhood friend. It is amazing to see what he has achieved and how he has grown both in his career and as a human being. In terms of designing for him, he is the best type of client to have, he trusts me as a designer and gives me a free hand, added to which MODISH MAGAZINE

he is unmarried. Hence, there is no one else to deal with when making design decisions. Having said that he is not someone who is obsessed with opulence, it is very refreshing to see that success has not changed his simplicity. MODISH: Your company recently completed 25 years of successfully designing luxurious places. What would your advice be to all the aspiring interior designers who want to follow your path? I do not think any designer should follow someone’s “path”. Like I said, design is an art form and a true artist should always be original.

Whilst it is OK to appreciate and be inspired by other designers, someone starting out should not only appreciate the work of designers they like but spend an equal amount of time examining why they like a particular designer’s work. Then they should adapt what they have learned to their own sensibility. I always tell my daughter to follow her own path, create her own story and trust her instincts as a designer, while I can help solving the technical issues. MODISH: Which has been your most challenging project? Tell us why and how. I have been so used to dealing with high-end projects that when a developer from Pune approached me to design the interiors for an affordable housing project, I was surprised. This was truly challenging to me, since I had to create an opulent look but within a modest budget. This “challenge” opened ➢

my eyes to a huge opportunity; I am now in the process of setting up a new venture in the affordable design segment. I truly believe that everyone should enjoy a beautiful environment, and that it is MY expertise that should provide them with this luxury within their budget. LUXURY! ASHMIT S. ALAG HAS BEEN DOMINATING THE INTERIOR DESIGN INDUSTRY FOR CLOSE TO TWO DECADES. A FEW MINUTES INTO THE CONVERSATION WITH HIM AND IT IS CRYSTAL CLEAR THAT ASHMIT AND LUXURY IS LIKE A MATCH MADE IN HEAVEN.

They both complement each other like a perfect couple, a fairy tale phenomenon. For Ashmit designing came naturally as he spent most his time in an environment that sang a luxury design tune. He says, “I’ve always been living in a particular way and I know a lot of people who would want to, so to think design was easy since I have always lived in a designed environment. Typically when you design for luxury, you don’t design luxury, you design a lifestyle because luxury is not about possession, it is about consumption.” If you have followed his work over the years, you would vouch for the fact that he has a unique taste for luxury. Customized dinner sets, bath mats, sole importer of international water to be mixed with alcohol are just a few things he does in the name of luxury. With his background in practicing and teaching visual merchandising, retail 44

design and psychology, his specialization lies in providing customized solutions in the field of retail and hospitality design by studying the consumer behaviour, spending patterns, lifestyle and more. “It is not luxurious I believe to write with a Mont Blanc or a Cartier but rather luxury to write or scribble on a Cartier or Mont Blanc writing pad.” The sound of interior designing may sound familiar to our ears but visual merchandising is a fairly new concept and definitely not so common here in India. However, Ashmit is an expert in the business of visual merchandising. He tells us, “Visual Merchandising is the act of creating a design to evoke a particular reaction so it’s a reactionary design disciple. becomes a huge role-playing element here. Again, when you design for luxury, it is not about the materials necessary or about the things you possess, it is about how you consume. It is not about the flowers but how you position the flowers. So visual merchandising became an important part of it. In India, it is a naïve field, people do not know about it and think it is to do with display window but is an all-encompassing science to live better.” As we get chatty about his experiences of over two decades split between India and US, he tells us that when it comes to luxury it is not about a specific country or continent and the people who reside there. Luxury is a common thread that cuts across through the globe in a similar fashion and holds true for an Indian as much as it does for an American. He says, “India has a lot of people who want to live luxury and also a lot of people do. What is true for luxury is that a luxury client is not an Indian, an American, or a European client. He candidly reveals, “There are more differences than similarities of course. In India suddenly a lot of people have started spending a lot of money, which is good, but a lot of consultants don’t have the exposure to luxury. So, that’s one of the reasons why Indian houses cost a lot of money to be able to make but they are not luxurious. They might look luxurious, might as well feel luxurious in the first initial years

but the shelf life is very poor. The difference is that in India, it is easy to buy luxury but it is a little difficult to lead a luxurious life.” Having said that, it would not be wrong to say that we are bridging the gap slowly and gradually. “My idea of luxury is all encompassing, it is not chunks, it is not sometimes luxury and sometimes not luxury because that is not luxury. Luxury is an expression, it is a sense of living, it is like somebody who is spiritual in his being will always be spiritual. He does not become spiritual when he gets to a religious place and does not lose his spirituality when he goes to a party or club or a bar. So luxury has to be all encompassing which basically means from the way you would sleep to when you wake up, the first thing that you see to the kind of slippers you would wear and as you walk in and around the house what do you continuously see and it has to evolutionary. Luxury cannot be static, it has to constantly change. It is never revolutionary but evolutionary because it has to become better than what it is. Luxury is not about the space but about an emotion.” With expertise in residential as well as commercial designing, we ask Ashmit about how is one different from the other and the challenges, opportunities and excitement associated with each. He says coyly, “When you’re designing for commercial, you’re designing for the end consumer to be attracted to come to your venue. You do not design it for yourself. However, when you are designing houses, you are almost designing an outfit, so it is an extremely personalized experience. A house has to be the natural extension of the person living there therefore making it a very different experience.” For a man who has donned the hat of being the master of luxury for so many years, it is not surprising to know he has a few awards under his belt. There are two kinds of suit jackets and blazers - canvas jackets which come in a full or half canvas, and fused jackets. When you lay the fabric out on a table, it is completely flat. It does not take the proportions and angles of a person’s body into account. It lays there like a piece of paper. The interlining is what is put in the jacket to make it three-dimensional, so it drapes well on your body and does not just hang flat. It may be worthwhile to understand what goes wrong when you choose heat fused construction for your luxury suit fabric. To begin with, a fused suit requires below average level of expertise from its maker, as it is more of a labor-intensive work than real craftsmanship. Typically, these suits are MODISH MAGAZINE

made in factories in assembly line setups. Even if it were a tailored fused suit, it would be measured, cut and stitched by all different persons. While you might end up owning a suit that fits you slightly better than a ready-made one, but the real luxurious feel of the purchased fabric will be completely missing. With a machine-made fused coat, a special synthetic material called “Fusing” is used. Fusing effectively turns to glue from one side when heated. It does a lot of harm to your luxurious fabric making it rough and un-breathable from the inside. Fusing is used to give the fabric an added weight and fall, but it ends up making the suit extra heavy giving it a flat and lifeless feel unlike that of a full canvas suit. The fused interlinings glued to the jacket, leave little to no scope of movement, causes discomfort in hot and humid weather and will eventually show its true colors – that of being an ill-fitting and poorly made suit. The fused suits come with an expiry date and are not durable enough. Soon, as the cloth separates from the fusing, the suit forms unpleasant bubbles that leave it unwearable. Eventually, causing you to throw it away. The life of a fused suit is short lived and deteriorating in every sense of the word. Take a true bespoke handmade full floating canvas suit, and you will notice the shift. The reason a canvassed jacket is more expensive often has to do with all the natural and far better quality of trims used for making the jacket, like handmade shoulder pads, infused horse hair chest canvas, infused camel hair body canvas, horn buttons, silk threads for button holes, luxurious bemberg or pure silk lining amongst others. However, the biggest and the most important factor is the craftsmanship of putting it all together in harmony, as it takes far more effort and deep understanding of the real art to create such a masterpiece. Generally, in a true bespoke suit, One Master Tailor does the entire job right from start to finish and it takes him many preparatory measurements to draw up the design and outline the cuts, which will further enhance your body shape. Unlike a fused jacket, which is held together using glue, the canvassed jacket has an interlining that is sewn to the outer shell. Hand pick stitching is done on the lapels, pockets and vents, and the buttons are hand sewed. Nearly 4,000-5,000 hand

stitches run across the suit to give it the desired structure and shape, which stays for a lifetime. With so much work in the background, it is anybody’s guess that the suit will adorn your body shape and move along with you to give that perfect fitting and luxury look. At Meraki Brothers, a true bespoke handmade canvas suit takes whopping 60 to 80 man hours having intricate luxurious details like functional handmade buttonholes made out of pure silk thread, bar tuck stiches by hand to secure pocket ends together. The outdoor ceremony had pretty floral decorations and fun colourdo, in the Veneto region located in Northern Italy, this country has proved to be the marriage destination for Bollywood. The recent tying of the nuptial knot between Anushka Sharma and Virat Kohli took place in a grand fairytale private ceremony in Tuscany, Italy. From the sangeet ceremony, the Mehendi ceremony to wedding, everything seemed to be magical and beyond perfection. A beautiful overgrown garden of love was created in ash rose and lavender that preached prosperity, serenity and growth. The bride and groom wore outfits designed by Sabyasachi that were perfectly in sync with the decor. ASHISH STARTED THE KNOWLEDGE BASED TRAVELLING AGENCY THAT ESSENTIALLY MEANT HE WOULD RECCE THE PLACE HIMSELF FIRST AND LATER DESIGN A LUXURY TRAVEL EXPERIENCE FOR HIS CLIENTS. Story by Roman

W

ith a practicing chartered accountant as his father, running his own firm, it was no surprise for Ashish Sapra that sooner than later he would prefix the coveted CA title before his name. In addition, as in the case of a hot selling deal in a super market, Ashish went onto pair his course of chartered accountancy with a degree in Law. Clearly, a feat many dream and few achieve. While YOLO, which stands for “You Only Live Once”, has climbed the charts of popularity in the most recent times, a few minutes into the conversation with Ashish and you know instantly that he introduced the concept of YOLO very early on in his life. Out of sheer boredom of juggling between two of the most demanding educational courses, Ashish decided to pack his 82

bags and travel to the exquisite Europe. In Europe, he experienced the thrill of travelling from one destination to the other, hiking his way through the tops, renting beds in hostels, staying at friends’ apartments and many other moments that lasted for three months but changed his life forever. He had found his love – travelling the world. He then went onto marry his passion for travelling with work by creating travel experiences for people. Once he was back in India, he indulged himself in research on the Indian travel sector and sensed the immense untapped potential. Ashish was not convinced with the packaged tours offered by travel companies. For him, the pre booked tour bus for sight-seeing, the morning sunrise, the evening sunset, the moving around the place by the watch on your wrist was ironically in contrast with the purpose of travelling – leisure,

luxury and liberation. Undoubtedly, the inherent limitations that came along with these 6D/7N trips is what Ashish was determined to remove from the travel experiences he had decided to plan for his clientele. With zero experience but infinite love for travel, he floated his company “Horizons Holidays” almost two decades ago. Interestingly, Ashish started the knowledge-based travelling that essentially meant he would recce the place himself first and later design a luxury travel experience for his clients. However, what is a rose without a thorn. A few months after Horizons Holidays came into being, a lot of things shook the global economy that resulted in massive recession. Kargil war, SARS epidemic and September 11 attacks led to an obvious fear amongst travelers for more reasons than one and luxury travel plans took a back seat for many. Nevertheless, Ashish and his company fought the odds, continued to focus and found growth in leaps and bounds. Horizons Holidays had gained significant momentum since its inception and became a name to reckon with in the circuits that mattered. Soon active advertisement of the travel consultancy firm was strategically discontinued as the positive word of mouth from his patrons spread like wild fire. He had given life to the dreams of people who hitherto believed that dreams do not always come true. Few of his luxury travel experiences include:

On a honeymoon trip to the paradise island of Bora Bora, a teetotaler couple were surprised with a bottle of champagne that instead of the drink had love notes filled in it. The love notes popped out in the same style as the champagne. Remarkably, Ashish is amongst the first Indian tour operators to visit Bora Bora for inspection in the year 2006. Today, it is one of most sought after tourist destinations owing to its natural beauty and celebrity visits. ventique concepts by Reema Arora is known to be one of Delhi’s first Exhibitions which bring together the best of designers as well as customers to showcase integrated exhibition. It has proved to be the best platform in town which help people to stay fashion updated. Reema Arora, A Fashionista and an Entrepreneur paved the way for Eventique Concepts - A fashion, jewels and lifestyle exhibition that in a very short span of time has become the favorite of almost everyone. Let us know more about her journey.

Delhi has a lot of shopping malls and boutiques, so what made you come up with your own Fashion exhibition? I personally feel that Delhi is a place with two different aspects to shopping, out of which one is Street and Free style and other is very High End. Keeping that in mind, I formed a vision of bringing some sort of Exhibition that would satisfy the shopping needs of all, be it masses or classes. I feel that any Woman of Fashion, at the end of the day is often busy managing her professional and personal life. Hence, she deserves at least one day, which would provide her with solutions to all her fashion and lifestyle worries. Can you give us a glimpse of how your journey started? Born and brought up in Delhi, Fashion has always fascinated and held my interest. However, I never bothered to take up any course on designing but would always be up for advising people about the latest shopping places they should check out. Thus, I decided to create a platform to which everyone could relate to and where they could come in alliance. Hence I first started with the concept of Boutique Exhibition to test the market and its audience. It was an instant hit and gave me the required boost to start looking at the bigger picture. I started organising bigger exhibitions and moving to larger venues from time to time. Since then, there has been no looking back and with each exhibition, I am glad to be always bringing something exciting and great! What is your Unique Selling Proposition (USP)? We try doing different things every time. We have definitely come a long way and have evolved to a great extent. I have done a huge number of shows till now. Every year, we divide our shows into: winter, summer, monsoon and festive season and bring forward different designers for the respective collections. After having a grand success in Delhi, Dubai and USA, I am finally planning on expanding it to the international market in 2019. Please tell us something about your upcoming exhibitions. As of now, we have planned a few things. To end 2018 on a high note, we are doing Eventique Concepts, Chritsmas pop up shop on the 19th of December in Hotel Vivanta by Taj-Ambassador, New Delhi. We are also holding a Valentine Fiesta on the 6th of Febuary, 2019 in Hyatt Regency, Delhi. Both the exhibitions are going to be unique as we will be handpicking selective and attractive pool of designers. Recently, Reema Arora hosted Sparkly Diwali Fiesta Exhibition (edition 25) at The Grand hotel in the capital. The Exhibition brought a plethora of urban & Indian designers from all across India who displayed best of designs with latest festive fashion. Seen at the event were known faces like Rekha Chawla, Taniya Khanuja, Vaishali Rai & many more. ◆

CHICKEN PESTO ARANCINI

A

rancini, which means little oranges in Italian, originated in Sicily. Keeping its name and appearance aside, Arancini are not at all related to the orange fruit; they’re simply fried balls of risotto. A big thumbs up for the chicken lovers… Quick to make and delectable too ... Treat yourself with this mind-boggling appetizer, crisp from the outside with a burst of flavour of Basil and Pine-nut pesto ... Preparation Time: 20 minutes; Cooking Time: 08 minutes Makes: 12 Balls

INGREDIENTS AND QUANTITY: • Arborio rice, cooked and cooled / Leftover Risotto- 1 ½ cups • Fresh Basil and pine-nut pesto, thick- ½ cup • Salt- To taste • Grilled Herbed Chicken breast, minced- 01 no. small • Mozzarella, cut into 12 cubes- 24 gm. / or more as desired • All-purpose flour- 01 cup • Egg- 01 no • Panko bread crumbs- 01 cup • Peanut Oil / Vegetable Oil- to deep fry METHOD: In a large glass bowl, combine to together the cooked Arborio rice and pesto. Add salt to taste. Divide the rice into 12 equal portions. 94

Place the blended mixture on your palm; place a small cube of mozzarella, ½ spoon of minced chicken, ensuring that the cheese and chicken are completely encased in the rice ball. Place on a Parchment paper. Place it in the freezer for 05 minutes to get a firmer Texture. Prepare three bowls, one bowl with all-purpose flour, one with whisked seasoned egg and panko bread crumbs in the third bowl . In a deep non-stick pan, heat the oil. Dredge the balls each one by one in flour, then egg and then in panko bread crumbs. Gently drop 06 balls in the hot oil and ensure that it is lightly browned from all the sides. With the help of a perforated spoon remove the balls and place on the absorbent paper to remove excess of oil. Repeat the process for the left over Arancini. Serve very hot with Marinara Sauce or any sauce of your choice

Place the mixture in a bowl, which is covered in the refrigerator for 10 minutes. Form the mixture into 16 equal balls and deep fry in hot oil on each side so that it is evenly cooked and coloured. For preparing the Beetroot Tahini Sauce: Pulse garlic, beetroot puree, cumin, salt and pepper in a food processor until smooth. Add tahini and lemon juice; process only for 30 seconds. Add water to adjust consistency and whisk well. Serve the Chickpea , Oats and Cilantro falafel hot with creamy Beetroot Tahini Sauce.

CHEF TIPS: 1. Time saving tip: Make the risotto a day ahead of time and keep it the fridge until ready to use and all you’ll need to do the day of is to fry them when required. 2. Time saving tip: You may use leftover risotto for making Arancini

CHICKPEA, OATS & CILANTRO FALAFEL WITH BEETROOT TAHINI

ltra-crispy on the outside, moist and fluffy on the inside…. prepared with drained chickpeas, onion, parsley, cilantro, garlic and Bengal gram flour with a twist of Oats added to it, deep fried and served hot with Beetroot Tahini Sauce.

Preparation Time: 15 minutes; Cooking Time: 10 minutes Makes: 16 Falafel INGREDIENTS AND QUANTITY: • Chickpeas, canned and drained - 3/4th cup • Oat meal / Quick cooking oats- 1/4th cup • Fresh Cilantro, chopped- 1/4th bunch • Onion roughly chopped- ½ cup • Parsley, finely chopped- 01 tbsp. • Garlic cloves- 03 nos. • Cumin, lightly roasted- ½ tsp. • Salt- to taste • Bengal gram / Refined flour- 2 ½ tbsp. • Canola oil- as required for deep frying • Beetroot Tahini Sauce: • Tahini- 1/4th cup • Garlic cloves-02 nos. • Cooked Beetroot puree- 01 tbsp. • Lemon juice- 01 tsp. • Salt- to taste • Pepper- to taste • Ground cumin- 1/4th tsp. METHOD: Place the chickpeas in a food processor. Blend it along with MODISH MAGAZINE

CHEF TIPS: 1. You may add herbs and freshly ground black peppercorns in the Chickpea mixture before it is refrigerated. 2. You may add more Bengal gram / refined flour to the chickpea mixture, if required. 3.
