I first met Isabel Paz Lewis in her way to return shoes at the mall. We both are generally alike in thoughts and taste which made us drawn together. And we’re energetic to create good things for the earth. I helped my mother since in high school while Isabel is beauty expert. That’s the right mix to nurture our love and business altogether. When we first met was the initiation phase of Jeunesse.

Over the past 25 years Yannick Alléno has surprised and delighted the world of fine gastronomy with his rigorous creations and vision and is often differentiated by his skill at reinventing traditional dishes, giving them a new interpretation and, surprisingly, no extravagance but with modern inspiration.

From the age of 15, Yannick Alléno spent his life in the kitchen learning from some of the great chefs.

It was at Drouant, under Louis Grondard, that his maturity and drive were forged. He consolidated this experience under the auspices of this respected chef, who he admired greatly, before setting off to head the kitchens at the Hotel Scribe. In 1999, his hard work and creativity was rewarded with a first star from the Michelin Guide. This was confirmed in 2002 with a second star. In 2003, the restaurant ‘Le Meurice’ at Hotel Le Meurice in Paris entrusted him with its menu and Yannick Alléno then created veritable works of art to accompany all seasons. His precision, creativity and respect for ingredients quickly won him special recognition from the Michelin Guide which listed him as one of the most promising chefs of his generation.

I was one of those people who started planning in advance, waiting for the right time to arise. It starts from learning and interest in marketing. If I did understand, I learned more. Fortunately, with m 20-yearexperience in hospitality, I am using to it and it makes me think that I can do more than being a PR. It means we must focus on what we do more than 100% in everything. How to become a successful woman in business Nowadays, does Miss Asita think she has become a successful person?

At some level, I think so. Because I am a person who is always learning especially now when we are in the online social era. I must catch up with the technology and new developments all the time so I apply them in my work and my life or to try to develop the business. So I believe that learning is endless.

There are many things we do not know and many interesting things waiting, for example, now I can do some graphic work. What I can do I do. It does not mean I am covetous but it means being economical. It leads me to be a person who does not

need to wait for anyone but move forward and faster. I like it. It’s fun. (Smile).

Key tools for entrereneurial success It is impossible without a lot of things but importantly knowledge, ideas and experiences, including family, friends and relatives’ encouragement. Also advice from respected seniors. What is importance is all members in my family are active, from grandparents. They have a head for business and often teach us to do our best and never surrender easily. When I was under my boss, I understood the culture and behavior of this nation so I can work with him. Speak once without being bossy, if we think different, say it but it does not mean to win but to learn the demand of our co-workers. This is because it results to our success in work, to reach the target. I do not speak indirectly but be honest. Sometimes, I know to be too honest, it does not work so we must improve by taking courses, study our mind and do mediation. I think it’s effective.

First of all, we need to schedule a meeting with the customer in order to understand what the customer wants since each of them all have different set of demands.

From that, we’ll be able to derive a PR plan that will most effectively reach the target audience and communicate our key concept.

Most importantly, a quality product has to be accompanied by a clear concept, say a restaurant needs great taste, quality, and story in order to draw the interests of reporters looking to write features that’ll appeal to their customers. As for Theoxeny PR, we only accept customers from the hospitality industry because I specialize in this area of the media and used to work as a PR practitioner for Agoda.com and a PR Director for Bangkok Marriott Hotel Sukhumvit.

What makes you different from other PR practitioners?

I am a workaholic. I like new things all the time, so that once I know what the customer wants, I can meet his or her demands ten times faster. A promise is a promise. You need to deliver, even if you have to take a loss. And importantly, I don’t get too personal when it comes to work. I know when to switch on and off from by personal issues [laugh.]

Say, sometimes, I had a really bad day, but I’m still smiling in order to carry out the best image for the product that I’m representing.

Where did you get the idea for working systematically like this? Was anyone your model in work?

Think, plan, prepare, and complete each piece to the best of your abilities. Deliver more than the customer have asked for, so that they can get the best from us. I used to work as a PR practitioner for Agoda.com, a foreign company with systematic planning system and innovative thinking, then a PR Director for Bangkok Marriott Hotel Sukhumvit. With all the experiences I have, I can guarantee that I can deliver more than a 100% to customers.

T he Indians in South and Central America did ot smoke cigars as we know them today. The natives smoked tobacco wrapped in maize, palm or other native vegetation. The Spanish created the cigar industry, and are given credit for creating the modern cigar.

The Origin of the word cigar comes from the native language of the ancient Mayans. The Mayans called the cigar a “Ciq-Sigan” which the Spanish word “Cigarro” is derived from. The New English Dictionary of 1735 called the cigar a “seegar”, and was later adapted into the modern word “cigar”.

The History of Cigars Everybody knows that Christopher Columbus discovered America, but do you know that he also discovered cigars? Both America and cigars existed long before Columbus, and just as he did not create America, Columbus did not invent nor create cigars, either. However, he did observe the local natives in the Caribbean smoking an unfamiliar substance, either rolled up inside of a large leaf, or through a tube referred to as a tobago. Columbus and his sailors packed up some of their newly discovered tobacco and returned to Spain, where the methods of making cigars and pipes were readily perfected. The custom of smoking tobacco in cigars and pipes soon spread throughout Europe, and eventually throughout the world.

Cigars and Ybor City Jumping ahead a few years, did you know that or City, near downtown Tampa, was once cigar capital of the world? Many top cigar ducers from Cuba migrated to Florida ng the late 1800’s, and established cigar [ries in several cities. However, Ybor soon became the top cigar manufacturing town, havingclose to 70 cigar factories. Although Ybor lostits status as the top cigar town by the late 1950s, area is still rich in cigar culture and is now primarily an entertainmentdistrict. Some of the old cigar have been renovated, and a number of old cigar storesstill line East 7th Avenue. For a trip back in time a visit to Ybor is a must foranyone interested in actually experiencing cigar history, as opposed to merely reading about it.

Cigars and the Cuban Trade Embargo In the year is now 1962, and before President John F. Kennedy authorized a trade embargo with Cuba, he instructed his press secretary to acquire as many of his favorite Cuban cigars as he could find. Once the embargo was signed, Cuban products were no longer legally available to United States citizens. The embargo still remains in effect, and in fact, was even made more restrictive in September 2004.

‘nahm’ was the first venture in the country by Thompson — an Australian-born chef, author and TV personality whose talents secured him the first ever Michelin star for Thai cooking in Europe at ‘nahm’ London.

Influenced as much by the street food of Bangkok as by centuriesold cookbooks belonging to private Thai households, his style combines big, bold flavours with meticulous attention to detail, fresh local produce and traditional cooking methods.

With the Bangkok outlet, Thompson was able to raise the stakes in the kitchen: ‘Bangkok has allowed me to cook for Thais in Thailand — and that is significant. I use some old favourites from London, such as ma hor. But in fact, most of the dishes here are new. I prepare and cook intensely flavoured dishes attuned to ingredients that simply cannot be found outside of the country.

The whole place is also more relaxed than my original London restaurant — much as the Thais are themselves.’

What is the speciality of this preparation?

Preparing olive oil with dessert is very difficult. It needs to be nicely balanced. In the preparation of ice cream along with egg yolk, sugar and cream just before final preparation we add good olive oil which is not very bitter so that it complements the taste.

What would you say is your technique while preparing these dishes/pastries?

Through our pastries we try to spread happiness. At the core of all of my ideas, I always think what will make the guests happy.

The taste should always be well balanced and not with too much sugar. I do not like to use alcohol much in my desserts.

Since how long have you been preparing pastries?

It has been more than twenty years now. For a long time I was in France and other parts of Europe. Few years ago I got my first experience outside Europe when I worked in Maldives with in a luxurious Resort.

This experience allowed me to improve my mind a bit about the French desserts. In the high temperatures and humidity it is not possible to consume a too much cream and sugar. I learnt some amazing dishes with Asian flavour by working with some great professionals and I have always loved Thai food not only since I got here but from before.

What would you say defines the character of this Oriental place you have created with European touch?

I think balance of the taste is very important. Even when experimenting with ingredients like the example of olive oil, we need to keep the right balance.

But it is very innovative and good for the guests as we create different preparations. You can clairvoyant and add a bit of originality but always keep in the mind the reality of the meal. And the European touch is coming through some fusion between French techniques and traditional dishes and the Asian taste.

What is the first dish that we will be talking about?

The first dessert is something similar to the French _Vacherin . It is a traditional French dessert with Chantilly cream, meringue, ice cream and sorbet and sauce.

But for this dish I have changes the preparation a bit. We have the white meringue stuffed with olive oil biscuits and ice cream, mango espuma Can we label it as “luxury topped with liquid yuzu pastry”? sauce. Every spoonful of this dessert will have the taste of every ingredient.

Well yes because these kind of preparation are requiring a long time of preparation and a very meticulous and conscientious staff, using the best quality items (from different part of the world) for an optimal guest satisfaction .

While it is very fast and easy to eat it takes a bit of time in preparations. Here I am lucky to have a good team.

We prepare some really special desserts with innovative techniques and ingredients for example we have a sweet corn base dessert which request some liquid nitrogen knowledge especially for the Christmas and New Year menu creation.

What according to you defines luxury pastry?

According to me luxury is not just because you put truffle but rather on how you can bring in your creativity and originality to the taste and how you can link it to the sweet side. This is a full time research to find some new texture, concept and in the same time, keep reminding the fabulous taste from our childhood. Pastry can bring you in the past and travelling through the taste of the items.

Can you tell us about the accolades and awards you have won?

I have won a few awards in France. I was the finalist in France national championship of desserts 2003. I have also won a few contests in “Sugar-work Showpiece” as well as some few awards for Innovation and creativity with a company I had founded in France.

Let us talk a bit about these beautiful dishes This dessert dish is Chibouste with sweetcorn. It is prepared with a mix of pastry cream and Swiss meringue, fresh sweet corn cream, blueberry sorbet and liquid sphere. The other special part of this dish here is Dampfnuddel from East of France. It is the place from which I hail. It is made with a brioche dough steamed and caramelized with a Mandarin and cinnamon syrup. It has some white fluffy texture which is white chocolate popcorn, siphoned in nitrogen. It is a special mix created by us.

Passion fruit Agar Sauce - Passion fruit Puree - 300 g.

- Water - 200 g.

- Agar -5 g.

- Sugar - 100g.

- Yellow Color Method : 1. In the pot, warm water, passion fruit puree and color.

2. Put Agar and sugar with the warm ingredient, keep stirring until boiled then wait until cooling.

3. Blend it to be saucing.

Mango Espuma -Mango Puree - 350 g.

-Cream - 50 g.

-Milk - 50 g.

-Proespuma Cold - 20 g.

-Sugar - 50 g.

Method : 1. Mix the ingredients properly.

2.Sieve and pour in the Soda Siphons bottle.

Olive Oil Ice cream -Milk - 1000 g.

-Cream - 200 g.

-Yolk - 200 g.

-Sugar - 200 g.

-Vanilla Pod - 2 Pcs. -Olive Oil- 100 g.

Method : 1. In the pot, boil milk ,cream ,vanilla pot.

2.Whisk together egg yolks and sugar until smooth. Slowly pour half of hot milk mixture into egg yolks, whisking constantly. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Continue to cook, stirring constantly, until the mixture coats the back of a spoon, and then put Olive oil later.

3. Mixed it in the Ice cream Machine.

Black Olive Marinated -Water 500 g.

-Sugar 100 g.

-White Balsamic50 g.

-Black Olive200 g.

Method: 1. In the pot, boil water and sugar until 300 g. evaporated then keep syrup in temperature room.

2. Marinate White Balsamic and Black Olive in syrup one night.

2. In a medium blow, mix icing sugar and Malto powder together then 3. Mix both of them together 4.. spread lightly on the plastic sheet and roll ,warm at 60 C 12 hrs.

5. Cut it as size.

Mango marinated with Olive oil -Mango scooped - 50 g.

-Olive Oil - 20 g.

Method: .1. Mix all together properly.

Opaline -Fondant - 400 g.

-Glucose - 200 g.

-Isomolt Sugar - 200 g.

Method : 1. Boil all ingredients until 150 Co, then place on silicone for cooling.

2. Blend it .

3. Sieve onto tray then bake at 180 Co 5-10 minutes.

4. Mold texture together.

Pistachio Sponge Microwave -Pistachio Powder - 90 g.

-Egg White - 250 g.

-Yolk - 160 g.

-Cake Flour - 40 g.

-Sugar - 150 g.

-Oil - 25 g.

-Green Color Method: 1.Mix all together then blend until it smooth.

2. Pour it in the Soda Siphons bottle.

3. Put in a half of cup.

4. Put in the Microwave 1 minute per 1 cup.

Meringue Tube -Egg white - 200 g.

-Sugar - 180 g.

-Icing Sugar - 180 g.

-Malto Powder - 10 g.

Method: 1. Whip egg whites until foamy using an electric mixer. Sprinkle in sugar a little at a time, while continuing to whip at medium speed. When the mixture becomes stiff and shiny like satin.
