Welcome

Next Deadline

This month it’s all about art of all kinds. Of course September is the month of the Royston Arts Festival. Creative Royston do a fantastic job each year of pulling together this vibrant festival to showcase Royston and the surrounding villages at their creative best. We also feature Herts Open Studios which is a celebration of local artists who open their work places to the curious public. If you haven’t visited any studios yet I can recommend it. You may get to see art works being created in front of your eyes and it is always fascinating. With the children heading back to school, or maybe just starting out look out for open days, tuition opportunities and the chance to learn new skills - there is plenty for adults too!

truly independent What makes St Christopher School stand out as truly independent? St Christopher School in Letchworth Garden City is a distinctive school that has favoured a modern approach to education for over 100 years, confident that their forward-thinking methods and excellent results have stood the test of time.

Business Profile

An independent day and boarding school for girls and boys aged from 3 to 18, St Chris is set on a large, leafy 25-acre campus just a short train ride from London and Cambridge. The School has long been known for its progressive approach to education where students are valued as individuals. Head Richard Palmer sums up the St Chris approach as “promoting independence, creativity and happiness as a means of supporting students to become self-disciplined, successful and able to make informed choices.” St Chris believes in the benefits of an informal approach – there is no uniform and everyone is called by their first name. There is a strong emphasis on promoting democracy and

removing hierarchy at all levels of the School underpinned by the belief that all voices, from the youngest member of the nursery to the chair of governors, should be listened to and treated respectfully. St Chris prides itself on the happiness of its students, and on each one of them reaching their own personal goals not a standardised notion of success – which can be a difficult value to uphold in a world of league tables and education reforms – however it’s this belief in its pupils and the School’s support of them that can see pupils fly.

My Local Life

Steve & Mary Griffiths Steve and Mary Griffiths are skilled manufacturers of quality bespoke curtains and blinds. They have been making curtains for a well-known partnership and local people for almost 20 years. They are also experts in soft furnishing design. Where do you live? Kneesworth – Originally we hailed from Worcester and Warwickshire but now Hertfordshire is our home and we love it here. What’s your favourite local place to eat? We love Yuva Restaurant in Kneesworth. It’s just round the corner from us and serves the most amazing food . We do walk there but sometimes could do with a Taxi home! What is your favourite local annual event? The Cambridge Show and the Great Gransden shows are always on our list. Great atmosphere with lots to do, and lovely food stalls What was the last film you watched together? Mmm tough one that. I watch them but Steve falls asleep, and then we have to rewind them and watch the end. The best one we watched was Frozen when Steve asked after 5 minutes “Are they going to sing all the way through?” Musicals are not his favourite. What is your favourite way to spend a Saturday? Mostly we work, but when we do get time out, we like cycling, walking the mutts Milly & Tilly and, when we can, spending time with family and our grandson Dylan. Steve also has a man shed with trains in it... What do you love about your work? The variety is great and meeting wonderful people from all walks of life. Also being able to produce our own bespoke products in our own workroom, 14

run brilliantly by Jenny our Workroom manager. Charlene, Steve’s daughter and my wonderful step daughter, is keeping us busy with her Leicester branch of New Dawn, and we get to spend time with her when we are fitting for her so feel very lucky. What are you looking forward to most this September? Mary: I’m off to Burghley Horse trials with the girls! Steve: Perhaps a sneaky break away somewhere... What’s top of your Bucket List? Mary: To one day go to Colorado and spend time on a ranch . I ticked one off this year when Charlene and I rode on the beach in Cornwall and that was amazing! Steve: To see the Grand Canyon – that’s it! Who do you most admire? Mary: Steve would love me to say him! There are so many people who face so many things on a daily basis and I admire them for their courage. Also my mum who is an amazing lady at 85 – I know she won’t mind me saying that. Steve: Obviously the wife! New Dawn Blinds 01763 243 894 info@newdawnblinds.co.uk www.newdawnblinds.co.uk

Business Profile

We are a family run business owned by Mary and Steve Griffiths. We have both worked in the local curtain and blind industry for over 30 years. Steve started as a fitter in Melbourn in 1984 and Mary as a fabric cutter in Potton in 1987. We wanted to focus on giving high-quality customer service which we are both passionate about and so opened our own business ten years later. In 2014 we were delighted to buy the local business New Dawn.

“We will soon be approaching property owners in Royston with a view to discovering where their title deeds are kept with a view of saving them for posterity,” says the Society’s Chairman Neville Chuck. The deeds may be privately held or deposited for safety with a solicitor. The documents often contain information of previous owners and of neighbouring buildings which can seldom or never be found anywhere else. The History Society meets in The Heritage Hall, Town Hall from October to April, on the first Thursday of the month at 8pm Admission is free to members and £2 for visitors. All are welcome.

Think Garden, Think Richard

Garden Focus... Garden Styles Melbourn garden designer, Richard Arnott

To continue my series of articles for 2018, designing with plants, this month I am going to look at garden styles and how plants can help to achieve this. It is always good to know the style of garden you want before you start designing, building and planting. Plants can play a key role in setting the scene. Here are some things to consider when choosing the style and the plants. There are many different styles, but here’s just a few: English garden style marries good strong lines with traditional planting. This style makes me think of roses trained over obelisks, clipped hedges delineating space, definition between plant forms and manicured lawns. Sissinghurst Castle garden in Kent is a classic example of this style. The space is controlled with a series of hedges creating garden rooms that lead into each other and the planting is a careful mix of shrubs and perennials. The white garden at Sissinghurst is a demonstration in controlling the plant palette to create a very deliberate statement. Consider creating a space to sit along a pruned buxus hedge with Rosa ‘Gertrude Jekyll’ spilling over either side. Cottage garden is an altogether more relaxed affair and is the most commonly requested style. The tradition is taken from the workers cottage garden that would have had produce in the front and flowers in the back or a mixture. This style conjures up the image of billowing borders of Delphiniums, phlox, lupins, holly hocks, foxgloves and lavender. In my mind’s eye I see rambling roses in old apple trees and Wisteria scrambling over an old cottage. However I like to contrast clean clipped topiary with the lush, billowing border planting to give contrast of shapes and plant forms. Naturalistic perennial style is a personal favourite as I love the informal feel it gives with plants prolonging the season of interest with their dying forms and drifts of colours. Piet Oudolf is the god father of this style and has inspired the clever use of perennials and grasses to achieve a more natural style of planting design. Grasses such as Miscanthus sinensis ‘Marlepartus’, Calamagrostis ‘Karl Foerster’, Stipa tenuissima ’Ponies Tails’, Deschampsia cespitosa, Panicum virgatum, Pennisetum alopecuriodes and Stipa gigantean are all typical of naturalistic style. The mastery is in using grasses sparingly and mixing them with perennials of differing plant forms such as button shapes, spires, plumes and umbels. The dying form of the plant is also taken into consideration as this helps extend the season of interest. The stoat square stems of Phlomis russeliana and the tall round stems of Foeniculum vulgare ‘Purpureum’ hold up well into the winter months.

18

Wildlife friendly style is often considered to be relaxed, informal and messy, all of which could be said to be true. However the planting has to be carefully considered to encourage wildlife from birds and insects to mammals and amphibians. Water is often a key linkage and magically draws wildlife into a space. Budleja or the “Butterfly Bush” as it is commonly known is often considered as a good starting point, followed by native hedgerow mixtures and nectar rich flowers such as Pulmonaria, Geranium, Nepeta, Sedum, Lavatera, salvia and Campanula to name just a few. Japanese style is a little more niche but never the less very popular. Bamboo has acquired a bad name over the years, but careful selection and root barriers can and should be used. I am a fan of the black stemmed Phylostachys nigra which looks great in a contemporary garden in a trendy planter. The more serious Japanese gardens embrace the symbolism and ceremony of taking tea and contemplation. But a Japanese feel can be achieved with a well-placed Acer palmatum ‘Dissectum’. Town & Country

We welcome our ur new w partner… We are pleased to announce that local entrepreneur, Mark Hagger has now joined the prestigious company, ‘Abode Town & Country’. With a wealth of business knowledge & businesses’ all over the world, we are excited for what our new partnership will bring to the company’s bright future. “I am very impressed by what the team at Abode Town & Country have achieved in their first year and I am extremely honoured to now become a part of it.” Mark was born and raised in Royston and has always been into his sports and local teams. He grew up in the race horse industry where he was a local stable boy as a teenager, before he began his journey to become a successful entrepreneur in the engineering industry. Mark later became part of ‘Royston Table Tennis Club’ and was also a boxer for Royston ABA for four years at the Royston British Legion club. Mark now enjoys taking part in the more relaxing sports such as fishing and golf, which he enjoys doing with his fifteen year old son, Morgan and friends. Mark has had many business successes, with his proudest being that he built his own company, CVMSL, from scratch. Years later the company then merged with another local competitor to form the new company, 1G Dynamics, which is now a thriving worldwide company. Mark is looking forward to expanding his business knowledge and joining partnership with his brother Graham in the property industry.

Abode Town & Country’s new partner, Mark Hagger.

Apart from relocating to America for work three times, Mark has worked and lived in Royston for most of his life and is passionate about Royston and supporting the local town and shops which includes eating from his favourite takeaway “Mughal Kitchen” (He considers himself an Indian connoisseur!) and of course shopping at “La Bella Vita” which belongs to his fiancé, who is keeping them both busy with their wedding plans for next year! Mark’s passion for the town is what drew him to join the team at Abode and we are all really excited to have him as part of the team!

“My vision for Abode Town & Country is to be the best and most successful local Estate Agent in the area. I would like to see the company branch out further afield and for more of our offices to open, providing jobs for the local community but most of all, the aim is to continue to offer a friendly, honest and reliable service.” Abode Town & Country, 10 Church Lane, Royston, Herts SG8 9LG. The multi award-winning Fox & Duck

Business Profile

There are a good few reasons you should have heard of the Fox and Duck in Therfield before now, but even if you haven’t visited this picturesque countryside pub, you’ll certainly want to now. The current landlords began their tenure in October 2012 and have gone from strength to strength since. In 2015 the team scooped its first award for best service in the county in the Hertfordshire Food and Drink awards. In 2016 and 2017 they were voted PUB OF YEAR and this year the Fox and Duck were runner up in the competition, not bad for a village pub in the small but quaint village of Therfield! It has established itself with both those looking for a pint of real ale as well as a delicious, a la carte meal, the Fox and Duck is quickly becoming one of the most popular gastro pubs in Hertfordshire.

the famous ‘Foxy Burger’ along with sandwiches and salads. Or, for a treat, the chefs a la carte menu boasts dishes such as Dover sole, a duck trio, free range rose veal duo or chill polenta triangles. Why not try walking there? The Fox and Duck is only a 45 minute stroll from the heath car park in Royston and if you have a four legged friend then your pooch will be more than welcome too. With a stunning village green to dine on and a children’s playground at the rear, the Fox and Duck is well with a visit!

Making your own jam

James Day, Head Chef at the award-winning Belle Freehouse in Bassingbourn gives his tips for an unusual jam. The ingredients you will need are as follows: 450g Melon 450g Caster Sugar 4 tbsp Lemon Juice This recipe is for a melon jam - a lovely reminder of the summer in the months to come. First of all halve the melon and remove the skin and seeds so you only have the flesh remaining. Dice this into approximately 1.5 cm dice to allow for even cooking. Place the melon into a thick based pan (or a preserving pan if you have one) with half the lemon juice and cook down to a pulp. Using The Belle Freehouse and Restaurant North End, Bassingbourn, SG8 5NZ www.thebellefreehouse.co.uk 01763 250921

a potato masher or wooden spoon, squash the fruit to a puree. At this stage add the remaining lemon juice and the sugar, stirring over a low heat until the sugar has dissolved. Increase the heat and boil until the setting temperature of 105 degrees is reached. If you haven’t got a sugar thermometer, place a teaspoon of jam on a cold saucer - if it forms a skin as it cools then the setting temperature has been reached. Place your jam into a sterilised jar, seal and allow to cool. For an extra bit of flavour you can add a tablespoon of rum to every 450g of sugar. This is to be stirred in just before setting point is reached.

Elderflower Cordial Hello my fellow foodies... This month I would like to share with you a recipe for Elderflower Cordial or “Back to School Flu Fighter” as it known in the Le Fey house! This is delicious, very simple to make. It’s also full of antioxidants and bioflavonoids, rich in vitamins A, B6 and C, and iron and Potassium and allegedly clinically proven to help with Flu symptoms. Before you start guzzling it with gay abandonment please remember it does contain sugar...quite a lot of it too! You will require a muslin to strain the fruit through and bottles to store the finished product in, but other than that no special equipment is required. The whole process starts with picking the Elderberries so what better way to start the day than grabbing the dog and something to pop your Elderberry harvest into and heading off into the country for walk? One word of warning. Please ensure that no leaves from the Elderflower go into the berries at the cooking stage. The leaves contain toxins and that way trouble lies, just be extra vigilant when washing and picking over the berries and all should be well. Elderberry Cordial 1kg freshly picked and washed Elderberries. (All leaves removed.) 1lb of sugar for every pint of liquid produced or if you are in metric 450g of sugar for every 600ml of liquid produced.

Now measure the amount of liquid and return it to a clean, thick bottomed pan -a preserving pan is idea. Calculate the amount of sugar required and add to the liquid and then return to the heat long enough to gently dissolve the sugar. Next, add the lemon juice, cloves and ginger and boil for no more than 10 minutes and leave to cool. Before bottling up in sterilised bottles remove the cloves and ginger. If you find you have more than you can use this Cordial freezes and keeps well, but freeze only in plastic bottles remembering to leave room for the liquid to expand in the bottle as it freezes. Plastic containers work well too but be prepared to have a purple tinge to your favourite Tupperware forever after! The Cordial can be enjoyed as a hot drink - simply dilute with boiling water 1 part Cordial to 5 to 6 parts water depending on your personal taste. Or you may choose to enjoy this as a more “grown-up” hot Toddy or splash a dash into a glass of fizz, but it is also delicious simply drizzled over ice cream or fruit salad? If, like me, you are not a big fan of ginger just leave it out all together, my past “brews” have featured cinnamon sticks, twists of orange peel, and one time I used demerara sugar and the Cordial took on an almost toffee/ caramel flavour. Experiment and have fun, I’d love to hear what flavour sensations you come up with. Until next time my fellow foodies...

Tallulah Le Fey x

You will also need 10 cloves, the juice of one lemon and a 2 cm piece of fresh ginger for each measure of liquid. Once you have picked and carefully rinsed the Elderberries checking them for bugs and leaves etc., pop them in a large pan and just cover with cold water. Bring the temperature to a gentle simmer until the berries are soft. Now strain the berries through a muslin lined colander making sure you keep the liquid. Try not to squash the berries to release the last of the “juice” as this may result in bitterness from the pips tainting the finished cordial.

NEWS FROM The ConservatorS The Kite Festival was a huge success in searing heat, yet the Heath was very busy with a reported 6k people coming to see the annual spectacular. The Friends of The Heath also attended the Festival and got some great feedback. Well done Rotary for again organising such a great event and for the huge team effort to clear up so quickly, Thank you to all who helped. At last a few showers, is there such a thing as the correct rain? Well yes - the gentle downpours in mid August were beneficial. This has helped the grasses to recover slowly and remove any potential fire hazard. The natural life-cycle of grasses sees the stems die and go brown as their seed ripens. The dry weather adds a stress which can hurry this process up. It is, however, completely natural for the Heath to go brown, just not necessarily so early in the season. There could be a knock-on effect in availability of seed

food for birds later in the season: seeds may be smaller and may drop sooner. It’s been a fabulous year for butterflies so far on the Heath - with good showings of Chalkhill Blues, Dark Green Fritillaries, Marbled Whites and many more. A few dedicated volunteers conduct regular butterfly surveys on the Heath and we await their results with interest. A volunteer group conducted Ragwort pulling over the summer, as agreed with Natural England. We did not aim to eradicate it because it is not without its ecological benefits and we didn’t remove those that were already being eaten by caterpillars. Please remember, it is an offence for anyone to pick or uproot any plant on Therfield Heath unless prior agreement is obtained from Natural England. September should see a cut and collect on Lankester Hill as the second best option to grazing, as discussed with Natural England. If you are interested in volunteering on Therfield Heath, please contact Cynthia. c.combe@therfieldheath.org.uk Enquiries maybe directed to clerk@therfieldheath.org.uk www.therfieldheath.org.uk

Professional A professional Image How do you define a professional image? We decided that it is comprised of four elements: • Attire and clothing: • Body Language: • Attitude and behaviour: • Conversation and language: Dress the part. And don’t forget your social media profile – what do people see when they look at yours? Maybe rantings about old flames, Twitter spats with restaurants giving bad service? But enough about me… Does the way you look and behave give your customer complete confidence that you understand what they need, and that you can (and will) deliver it in the way they want? What do you think?
