INGREDIENTS
FOR THE MASHED POTATO TOPPING
• 2 1/2 lb (1.13 kg) yellow-fleshed potatoes, peeled and quartered
• 1/2 cup (125 mL) vegetable broth
• 1/3 cup (83 mL) vegan buttery spread or margarine
• 1/2 tsp (2 mL) each salt, black pepper and dried thyme
DIRECTIONS
STEP ONE
Preheat oven to 375°F (190°C). For the potato topping, place potatoes in large saucepan and add enough cold water to cover by 2 inches (5 cms). Bring to a boil; reduce heat to a gentle boil and cook until very tender, about 25 minutes. Drain and return to saucepan. Add broth, buttery spread, salt and pepper. Mash with potato masher until smooth. Cover and set aside.
STEP TWO
Meanwhile, heat 2 tbsp (30 mL) oil in large nonstick skillet over medium heat. Add beefless ground; using spatula, break into four pieces. Cook, turning once, until browned, 5 to 6 minutes. Continue to cook, breaking up into crumbles using spatula, until browned and cooked through, 9 to 10 mins. Transfer to plate and set aside.
STEP THREE
Heat remaining oil in same skillet over medium-high heat. Add onion; cook, stirring occasionally, 2 minutes. Add cauliflower and garlic; cook, stirring often, until softened, about 5 minutes.
STEP FOUR
Stir in flour, tomato paste, soy sauce, salt, pepper and thyme; cook, stirring constantly, 1 minute. Gradually stir in broth. Stir in frozen vegetables and beefless ground; bring to a simmer. Reduce heat to a gentle simmer; cook, stirring often, until sauce is thickened, about 10 minutes.
STEP FIVE

When selecting a fireplace, it is easy to be drawn to its visual appeal—the elegance of the flame, the materials, and how the unit complements your overall design scheme. Yet, one of the most critical factors that determines comfort is often hidden in the technical details. If you are browsing fireplace specifications, you will see the term BTU everywhere. Understanding what it means and how it affects your living space is essential for choosing a fireplace that is both beautiful and functional.
BTU stands for British Thermal Unit. It is the standard measurement of how much heat a fireplace can produce. “Think of BTUs as a way to measure comfort,” says Sonia Presotto fireplace expert at Concord Fireplaces. “The right amount of heat makes a room feel inviting and cozy. Too much can make a space uncomfortable, and too little leaves it chilly.” Knowing your BTU requirements is as important as choosing the finish or style because it directly impacts how your room will feel throughout the year.

Gas fireplaces are typically rated between 15,000 and 40,000 BTUs. A higher number means more heat, but that does not automatically translate to a better choice. “A fireplace with 40,000 BTUs can be perfect in a large, open living room with high ceilings,” Sonia explains. “But in a smaller room, it could easily overwhelm the space. That is why understanding the size of the room, the insulation, and how the space will be used is so important.” Many high-BTU gas fireplaces also offer flexibility in how heat is distributed. Some allow warmth to be transferred to another room, while others can vent excess heat outdoors. This ensures you can enjoy the visual beauty of the flames without creating an uncomfortably hot environment.
Electric fireplaces operate differently and typically max out around 5,000 BTUs. While they do not generate as much heat as gas units, they are ideal for supplemental warmth and ambiance. “Electric fireplaces are perfect for smaller rooms or for creating a cozy zone within a larger home,” Sonia says. “They are not intended to replace your furnace, but they offer an intimate heat source where you need it most, making them excellent for bedrooms, offices, or reading nooks.”
How the heat is distributed in the room is just as important as the BTU rating itself. Fans and blowers help circulate warmth evenly, ensuring that every corner of the room feels comfortable. Heat transfer kits allow you to direct warmth to adjacent areas or vent it outside when a room becomes too warm. Modern fireplaces often feature smart controls, letting you adjust flame intensity independently from the heat output. This gives homeowners both functional control and design freedom, allowing the fireplace to be a centrepiece without compromising comfort.
Sonia offers a designer’s tip that I find invaluable when planning a fireplace: “Always start with the experience you want to create. Think about how people will gather, where they will sit, and how the heat will flow through the space. Colour is the most common, yet equally the most misunderstood and misused element in the decorating toolbox. While colour is often considered just a “background element,” as a designer I can’t stress the importance of colour enough. It expresses personality, affects mood and inspires different activities, from eating to conversation to work. In order to understand how colour can be used and what it can achieve, let’s start with the basics.
The primary colours are where it all begins. That spectrum of stunning shades all starts with various combinations of yellow, blue and red—the most basic of the bunch, yet arguably the most moving.
Yellow has a warming effect; an instant “merry-maker” that stimulates mental activity. For these reasons, yellow is an ideal choice for kitchens, living areas and offices. Yellow stands out before all other colours when placed against a black backdrop. It immediately has that “wow” factor, but when overused, yellow can have a disturbing effect.
Blue is the cool, calm and collected of the primaries. It may even lower blood pressure and heart rate, and is thus often used in bedrooms, living rooms and lounging areas. Gentle blues also make for an unconventional yet subtle neutral colour that goes beyond your basic beige. Alternately, rich blues like “peacock” can create a regal look. But beware the moody blues!
