One thing this terrible pandemic has stolen from us is the ability to sit in our favorite restaurant with our best friends and family, breaking bread together while sharing stories and laughing at bad jokes. It may be a little while longer before we can safely do that again, but we can still enjoy the great cuisine of some of The Bronx’s finest eateries. This year Savor The Bronx Restaurant Week is going to actually last one week. We are happy to announce that a few restaurants are open for delivery (depending on location) and also curbside pickup at a discount. Please support our restaurants during January 11 to 17 if you can. I am confident that we will be able to share a meal together again and speak of these days in the past tense in a very, very near future. In the meantime….ENJOY! Savor The Bronx Restaurant Week is a little different this year. First of all, due to pandemic restrictions, we are no longer doing indoor dining. However, we can still savor the flavors of our favorite eateries. Although many of our restaurants may be temporarily closed until such time we can enjoy a night out again, some are still offering delivery and curbside pick up. HONDURAN BALEADAS

A

traditional Honduran delight composed of a thick handmade flour tortilla stuffed with mashed refried beans, Honduran style sour-cream (mantequilla crema) and crumbled cheese (queso duro). Eggs, avocado and choice of meat can also be added. A Baleada in Honduras is a very affordable and common comfort food for everyone to enjoy at all times of the day. At Seis Vecinos we continue this tradition of making everything from scratch bringing the taste of home to our many customers. MAKING FLOUR TORTILLAS

ASSEMBLING THE BALEADA

Like our beloved taco or burrito, we stuff our handmade tortilla with our mashed refried beans, crema, queso duro with its salty and robust flavor and here you would have a Baleada regular. If you prefer to kick it up a notch with the works, we would suggest adding eggs, avocado and a choice of chipotle chicken or savory grilled steak just to mention a few. Comfort food at its best‌

In a large bowl mix flour, baking powder and salt. Make a well in the center and pour in oil (or shortening if using), add water. Work the flour gently until you form the dough. Transfer to a clean and lightly floured kneading area and work the dough gently for about 5-7 minutes. Dough should feel soft, smooth and flexible. Divide into 10-12 pieces as preferred size of tortilla. Grease your hands with a little oil and form 12 uniformed balls. Place back in the bowl, cover with a clean cloth and let it rest for 45 minutes. Place larger circular rolled dough onto a large preheated (medium heat) pan or skillet and cook for 1 minute on each side, until lightly golden in spots and slightly puffy. Continue Cooking one Baleada tortilla one or two at a time, make your stack of flour tortillas to fill with ingredients. Reduce the heat of your skillet as necessary. Keep the finished tortillas warm and soft by wrapping in a clean tea towel. Once all your tortillas are finished, time to put together the Baleadas!

COOKING THE BEANS

1. Place beans and liquid in a blender, and blend until smooth. 2. In a medium skillet, heat the oil. 3. Cook the onion and garlic for about 2 minutes. 4. Add beans, season with a pinch of salt and pepper. 5. Cook uncovered over low-medium heat, stirring constantly with a wooden spoon until beans have thickened, almost like a hummus consistency.

What’s UP 2021? Though Coronavirus curtailed our 2020 annual signature events, we are confident that, at some point this year, we will be able to celebrate our timehonored traditional activities together again (even if in a modified fashion.) Go ahead and mark your calendars in pencil and forgive us if we have to change a few dates around because, as the past year has taught us...we must remain diligent as well as flexible. MAY Our Bronx Week celebration normally would run from May 6th to the 16th. This 10-day event celebrates the Best of the Borough in various sectors of government, civic, and business communities. This year, we may have fewer events and we may need to shift the dates a bit depending on protocols, but we are making plans to honor some of The Bronx’s best and brightest. JUNE Our Annual Bronx Salutes America Fireworks extravaganza was canceled last year. We are hoping to wish our country a hardy happy birthday in 2021 with some modifications if we get the “all clear” from the powers-that-be. JULY to SEPTEMBER The Summer Concert Series and Bronx Salsa Fest may make a comeback through streaming technology and smaller, sociallydistanced events. Stay tuned.

OCTOBER This year, for our annual Tour de Bronx, we partnered with Ride with GPS® and Transportation Alternatives to provide our riders with customized routes to do on their own, on their own time and with their own group. It may be a while before we can have thousands upon thousands of cyclists come together at one place at one time, so we may, once again, provide a series of different routes for cyclists to enjoy and experience some of the parks, waterfronts, and historic neighborhoods.
