Fried Rice with Shrimp 1 SERVING • PREP TIME: 25 MINS THAI COOKING GUIDE INGREDIENTS: 1.5 cups Thai jasmine rice
2 tbsp fresh chopped coriander
5-6 large prawns, cut in half
1 fresh Thai chilli pepper
2 eggs
1 tbsp sugar
1 medium/small onion
3 tbsp light soy sauce
3 medium cucumbers
2 tbsp tomato ketchup
2 fresh limes
1/4 cup cooking oil
6 green onions (spring onions) METHOD Steam the jasmine rice in a rice cooker, using about 2 cups water. Slice onion into rings of approximately 1/4” thickness. Fry onion in oil until they start to turn golden brown. Add the prawns, ketchup, sugar and soy sauce, and stir together. Add the steamed rice and continue to stir-fry. Remove from pan. Fry eggs in 1 tbsp oil, turning and breaking regularly. When done, mix in the rice, and season to taste (we suggest sprinkling it with Thai pepper powder). Cut cucumbers into 1/4” slices, and slice the red chili lengthwise. Spoon the stir-fried rice onto plates, and garnish with coriander and chili. Serve cucumber slices, spring onions and lime wedges on the side of plate. 6

When we enter Lotus Bar, we are under the charm of the place where everybody becomes friends for the evening. Cozy atmosphere, soft and colourful light, warm and caring welcome, no doubt, Pitou, the Belgian owner and his wife, Poom, have managed to recreate the wonderful ambience of restaurants bars of their flat country. This is the very place where everybody becomes friends for the evening. The kitchen is open from 12pm to 11pm and offers international food, home made Pizza with products imported from Italy. The generous burger of 200g in 6 varieties has to be tried, spaghetti, salads or even Thai cuisine. Pitou even offers the salad bar and soup with all the dishes. Finally, the house speciality, the famous “Moules Frites” cooked Belgian way with no less than 10 variants is plentiful and excellent. “Happy Hour” for this famous Belgian dish is between 12pm and 3pm with a Chang draft beer offered The boss tells us that the fries are cooked as in Belgium and the recipe is a closely guarded secret. The bar is very friendly and conducive to having a drink with friends or enjoying one of the 20 different Belgian beers or if you want to stay local, sipping a Chang draft beer at 50 baht. The bar offers a snack formula where it is possible to accompany its glass of excellent onions rings nuggets or chicken corn stick for example.
