14th February is Valentine’s Day, a festival which has been celebrated in the United Kingdom for centuries, with the giving of flowers and cards to lovers becoming commonplace in the 18th century. The original story of St Valentine is one shrouded in layers of myth. Valentine was a 3rd century Christian martyr, whose life is obscure but has been embellished by legend. One such tale told how St Valentine clandestinely performed marriages for Roman soldiers, who were banned from matrimony at the time. As romantic as this is, it is entirely unsubstantiated – Roman soldiers at the time were actively encouraged to marry! Leaving aside the world of romance, February marks the start of the transition between winter and spring. The official flowers of February are the violet and wild primrose – both of which can be seen in hedgerows at this time of year – so look out for them when you are out and about! Falling on 28th February this year is Shrove Tuesday, also known as Pancake Day. Shrove Tuesday marks the final day before the fasting season of Lent, and as such was traditionally the last day on which perishable rich foods such as dairy products and meat could be eaten. The tradition of using up these foods evolved into a more secular festival, celebrated by the eating of pancakes and communal games such as pancake tossing and pancake races. So whether you are exchanging romantic gifts or eating pancakes be sure to wrap up warm as the cold spell is upon us! Till next time. Walk along Kiln Lane until you leave the surfaced road and meet a crossing path. Either turn right along the bridleway and then immediately left to follow it down to rejoin Kiln Lane in the valley below or, for a more gradual descent, continue walking down Kiln Lane keeping with it as it curves right to meet the crossing bridleway. Follow the bridleway uphill alongside Grim’s Ditch and you will notice you are walking in a slight hollow with trees on raised banks on either side. This is an ancient earthwork believed to date from before the Saxon period. Eating Disorders Awareness Week - 27th February to 5th March

Eating disorders affect over 725,000 people in the UK and one in five of those most seriously affected die prematurely through suicide or physical consequences. That’s why it’s essential we’re all aware of the dangers of eating disorders and our susceptibility to them. Forget the stereotypical teenage girl starving herself. There are several different eating disorders that can affect people of any age, gender or ethnicity. WhaT Causes eaTing DisorDers? Often, it’s a combination of genetic, psychological, environmental, social and biological factors. Risk factors are: • Bereavement or abuse. • Being criticised about weight, body shape or eating habits. • Intense stress. • Family history of addiction, depression or eating disorders. • Pressure to be slim from themselves, society or a career/hobby, e.g. dancing, sports. • Underlying issues such as anxiety, low self-esteem, perfectionism or obsessive personality. • Relationship issues. Types oF eaTing DisorDer anorexia nervosa Around 1 in 250 women and 1

in 2,000 men will experience anorexia, becoming preoccupied with weighing as little as possible via excessive exercise and/or starving themselves. It usually develops at age 16 or 17 but sometimes, as young as 7. Bulimia Bulimia sufferers alternate between binge eating and purging by inducing vomiting or using laxatives, and 90% are female. It’s more common than anorexia and usually develops at around 18 or 19. Binge eating disorder (BeD) BED affects around 5% of adults, compelling them to eat large amounts of food very rapidly. It affects both sexes equally, usually developing between 30 and 40 years old. eating Disorder not otherwise Specified (EDNOS) Some people may have some but not all of the symptoms of a specific eating disorder, so they receive an EDNOS diagnosis. Diagnosis anD TreaTmenT Doctors and healthcare professionals use internationally agreed criteria to diagnose eating disorders, normally using the Diagnostic and Statistical Manual of Mental Disorders (DSM) or International Classification of Diseases (ICD). They ask patients about their weight, self-image and relationship with food. But how do you know someone needs to be referred for diagnosis? Often, people with eating disorders will be in denial or try to hide symptoms, but they may: • Skip meals or claim they’ve already eaten/will eat when they’re out. • Only eat tiny/low-calorie meals. • Claim they’re fat when they’re

a healthy weight/underweight. • Repeatedly weigh themselves/ study themselves in the mirror. • Cook large family meals yet eat little themselves. • Refuse to eat in public or become stressed when they do. • Use ‘pro-anorexia’ websites. If you suspect you or someone else has an eating disorder, get professional help immediately. Rapid treatment makes full recovery more likely and minimises the impact on the patient’s body and life. However, recovery can be lengthy and, like the disorders themselves, complex. Physical health is monitored while the disorder’s underlying causes are treated. Onion & Goats’ Cheese Pizza Serves 4

Ready in 1 hour

Recipe

This is a tasty alternative to the classic cheese and tomato pizza. Serve with a simple mixed green salad dressed with balsamic vinegar and olive oil.

Ingredients: • 3 tbsp olive oil, plus extra to drizzle • 2 large onions, peeled and thinly sliced • 2 tsp brown sugar • 2 x 145g packets pizza base mix • 2 tsp fresh chopped rosemary leaves, plus 1 tbsp small sprigs • 2 x 100g round goats’ cheeses, sliced • 5 cherry tomatoes, halved

TIP

Instead of the caramelised onions spread, the pizza base with sun-dried tomato paste then top with some cooked and drained spinach. Scatter over diced mozzarella cheese, grated parmesan cheese and some fresh chopped oregano.

Heat the olive oil in a large frying pan and add the onions. Fry over a gentle heat for 15 minutes, stirring occasionally, until softened. Add the sugar and fry for a further 10 minutes until golden brown. Leave to cool. Preheat the oven to 220C, Fan 200C, Gas Mark 7. Empty both sachets of the pizza base mix into a large bowl and stir in a large pinch of salt and the chopped rosemary leaves. Stir in 200ml hand-hot water and mix to a soft dough. Knead the dough on a lightly floured surface for 5 minutes until smooth and elastic. Roll the dough out to a 30 x 45cm oblong. Place on a greased baking sheet and turn up the edges of the base. It was during the filming of Elementary – now in its fifth season – when Miller received the postcard that announced the arrival of a sequel that has since sent fans of Boyle’s iconic 1996 black comedy into raptures. “I got it here in New York,” says the 44-year-old. “It said: We’re going to have a go at T2 and will send you a script when we have one soon. I got the script and thought it was pretty good and I heard the other guys liked it too. That was a matter of months before we started. It was a pretty quick process for me.” And though more than two decades have passed since we last saw Miller as the amoral con-man Simon ‘Sick Boy’ Williamson, it was business as usual for Boyle and his boys as soon as they hit the set. “It’s very much the same; it’s about rehearsals and preparation,” he reveals. “Danny flew out to New York to visit me with the script and we sat down and read through it and we’d talk about it and I’d give him some ideas and then he’d go back to the writer and incorporate those - or just his ideas from hearing you read it out loud.

“He’s very visual,” Miller continues. “We got together and sat down and rehearsed the scenes and he shows us pictures he’s got boards of pictures up on the walls of the production office. I would watch movies, the same as we did the first time - he’d get us to watch movies together that might have something to do with our story, however small.” All the elements that made its cinematic elder sibling regularly voted one of the best British films of all time can be seen in T2 – including the iconic soundtrack, with Miller stating that “Rick Smith from Underworld has been involved from day one.”
