t is April already! This month sees the feast day of England’s patron saint, as St George’s Day falls on 23rd April. Whilst the commemoration of St George’s Day is relatively recent when compared with the long traditions of the saints’ days of Ireland, Scotland and Wales, there is one celebration which is peculiar to the English celebration. Popular in Lancashire and West Yorkshire in the modern day, ‘Pace Egg’ plays were historically performed across England at Easter time, and featured St George as the hero. Easter itself falls on 17th April this year; a late celebration which hopefully means brighter weather. The Easter egg is synonymous with modern observance of Easter, but has a long tradition going back centuries. Arguably the most luxurious Easter eggs were those crafted by Fabergé for the Russian Tsars in the 19th century. The first Fabergé egg was made of gold, and contained a little golden hen which opened to reveal a diamond replica of the imperial crown. Always a celebration marked by feasting, it is perhaps no surprise that the egg theme of Easter extended into food. The first chocolate Easter egg was introduced in Britain in 1873 by the company J.S. Fry. In the modern day over 80 million Easter Eggs are sold every year in Britain! Of course, Easter is marked in the UK by a four-day Bank Holiday weekend, so make the most of it by enjoying the warmer weather – and maybe some chocolate, too! 1. Exit the car park onto the road, turn left and then left again into Perks Lane. Walk up Perks Lane for c600m, going past a footpath on the left on a sharp right-hand bend. 2. As the lane nears the top of the hill, turn right into Longfield Wood. Follow the white arrows on the trees through the Wood, staying on the main path for c1,500m until it meets a tall wood and wire stock fence on the left. Continue along this fence line until it meets a driveway and the brick gateposts of a large house. Follow the driveway until it reaches Hatches Lane. 3. At the lane turn right and after c50m take 2 the footpath on the left. Follow it uphill, to the left side of the copse. At the brow of the hill, continue in the same direction and look for the field gate in the hedge line 3 ahead. Continue through this gate into the next field, heading for the far right corner. Go through the kissing gate and turn right towards the lane. Once on the lane turn left. 4. At the end of Pipers Lane head directly across the road junction and through the footpath gate behind the Cockpit Road sign. Follow the path across the field and through the hedge line. In the next field, with the hedge on the right, continue to the footpath marker post in the corner. Here, cut straight across the corner of the field towards the gap in the hedge line. Do not go through the gap, instead turn left and follow the edge of the field with the hedge on the right.

5. After c250m two footpaths join from the right. Take the second of these paths heading through the kissing gate. Ignore the path joining from the left and continue down, then up the hill to a kissing gate. Go through it and at the path junction continue straight ahead between two fences to a road. 6. Cross the road and follow the lane to Copes Farm. At the end of the drive go between the 1 take the path to the rightbrick pillars and hand side of the gate. Follow this path over a stile and through a kissing gate, continuing with the fence line on the left over a further two stiles. Once in the woods, head straight up the hill with the fence on the left, ignoring other paths, to the next road. 7. Cross the road and then turn left on the pavement. Continue past Hare Lane on the right and after 200m turn right into Shepherds Gate. The footpath starts from the left-hand side of the driveway straight ahead. Go through the kissing gate and follow the path into a field. At the path fork take the left path diagonally crossing the field. At the track turn right on the bridleway. Continue to a kissing gate on the left, go through it and follow the perimeter of the field and wood for c400m. Then take the gate on the left into the woods. At the first path junction turn right to meet a road. 8. Cross the road into the woods. Follow the bridleway waymarks and keep to the lefthand edge of the woods for 250m. Just

Turn right and then head half left uphill across the Common (avoiding the entrance to the wood on your right) to arrive at a kissing gate at the top by the side of a cottage.

Hay fever or seasonal allergies can be caused by the pollen of numerous trees, grasses or plants and it affects around 18 million people in the UK. Diagnosis If you’re unsure it’s hay fever causing your symptoms, see your GP. They may refer you for an allergen test to determine whether you’re allergic to pollen or other organic material such as animal hair or dust mites. a skin prick test only tests for the most common allergens, so it may be inconclusive. Your skin is pricked and exposed to a tiny dose of allergen - it should react if you’re allergic. a blood test for the Immunoglobulin E (IgE) antibody, produced when you encounter pollen, may also be used. symptoms Symptoms can range from mild to life-impacting: • itchy and/or runny nose • sneezing • irritated, itchy, watery eyes TreaTing Hay Fever How you treat your hay fever will depend on the type and severity of your symptoms. Research by Allergy UK in 2014 showed that 62% of sufferers found their current medication ineffective – yet they failed to seek better alternatives or didn’t use it properly (only 14%

See your GP if over the counter treatments aren’t working, or you develop sinus or ear infections. oral Medications (Tablets and Liquids) antihistamines block the action of histamine, a chemical triggered by allergen exposure, to reduce or stop your allergic reaction. They may not relieve a blocked nose but are usually effective against other symptoms. As a preventative, they work best if taken regularly and started in advance of high pollen count periods. They can also be taken as required when symptoms begin. Some older antihistamines (e.g. chlorpheniramine, known as Piriton) make you drowsy and can affect your ability to do your job or drive. However, most people now choose newer, nonsedating antihistamines (e.g. Loratadine). steroids are only usually used short-term if other medications aren’t working or if your hay fever causes or aggravates asthma. They reduce symptoms by reducing inflammation. nasal sprays and Drops Decongestant nasal sprays unblock your nose but can cause rebound congestion after a few days, so only use them for occasional relief or as an additional treatment on days

when symptoms are severe. steroid nasal sprays or drops prevent and reduce inflammation in the nasal lining and can help relieve eye itchiness too. antihistamine nasal sprays relieve an itchy nose and reduce sneezing. eyedrops Antihistamine eyedrops reduce itchiness and watering. inhalers and injections If seasonal allergies cause or exacerbate asthma, you may be offered a steroid inhaler and/or a ‘reliever’, such as salbutamol (‘Ventolin’). Injectable medications may sometimes be recommended if steroids aren’t adequate. Monoclonal antibody treatments (‘mabs’) such as Xolair block a substance involved in allergic reactions. immunotherapy If your symptoms are persistent or severe, your doctor may suggest immunotherapy to progressively build allergen immunity. A specialist will gradually introduce your body to small amounts of allergen by injection or a sublingual tablet and monitor your reaction. Treatment is started three months before your trigger pollen season. PrevenTion Reduce pollen contact by avoiding drying washing outside, showering before bed and closing windows. Ricotta Stuffed Chicken Serves 4

Ready in 1 hour 10 minutes

Recipe

This recipe is a great way to turn chicken fillets into something special. You can prepare them a couple of hours in advance and keep covered in the fridge, then simply cook when needed.

Ingredients: • 75g ricotta cheese • 2 tbsp fresh thyme leaves • 2 tsp finely grated lemon zest • 4 large skinless chicken breast fillets • 12 thin-cut rashers streaky bacon • 5 tbsp olive oil • 2 tbsp white wine vinegar • 1tsp Dijon mustard • Pinch of sugar • 100g baby spinach leaves • 2 tbsp pine nuts, toasted

Instead of ricotta you could use low-fat soft cheese such as Philadelphia or a mild and creamy goats’ cheese.

Use a sharp knife to make a deep pocket in each chicken fillet, making sure not to cut right the way through. Place the ricotta cheese in a bowl and stir in the thyme leaves and the lemon zest. Season with salt and freshly ground black pepper. Place one-quarter of the ricotta mixture in the pocket of each chicken fillet. Use the back of a knife to stretch the bacon rashers. Wrap 3 rashers around each chicken fillet and secure with a metal skewer. Preheat the oven to 180C, 160C Fan, Gas Mark 4. Heat 1tbsp of the oil in a frying pan and fry the chicken fillets over high heat for 2-3 minutes until the bacon is browned, turning once. Transfer to a roasting tin and cook for 35-40 minutes until the chicken is cooked through. Cover and leave in a warm place to rest for 10 minutes. To make the dressing, whisk the remaining oil with the vinegar, mustard and sugar in a small jug and season to taste. Slice each chicken fillet into 6 pieces and arrange on the salad leaves. Scatter over the toasted pine nuts and spoon over the dressing. Serve immediately.

Having quickly garnered acclaim from critics and fans alike, the final chapter of Jackman’s long-standing association with the eponymous Logan has been described by the actor as “perfect.” “This story is about a human, not a superhero, hence why it isn't called ‘Wolverine's Legacy’ or something like that,” he explains. “It's not a comic book movie, it's a very human and intimate story told from the point of view of someone who is terrified of that same humanity and intimacy. “Even when I read the three pages of script that I got for the first time, 18 or 19 years ago when they were looking for their man, I knew he was more than your average superhero. Here was a character who was aligned with his humanity, rather than his mutant abilities. He has hidden emotions and virtues that I didn't know existed in the comic book universe. I always felt like there was a deeper story to tell with Logan, and this is it. That is why it's perfect to me.” Jackman will surely be sorry to see the back of a character he describes as a “best friend”. But there is one element of the role he remains conflicted over – the frequent “punishment” he put his

body through in the gym to attain his stacked superhero physique. “I actually think Logan has prolonged my life expectancy because I've been working out like a maniac for seventeen years,” he laughs. “My waistline would be twice the size it is now if it wasn’t for him, so I'm eternally grateful for that. And it's sort of ingrained, but instead of going to the gym for two hours I'll go for twenty minutes. I'll work out like a normal person now, and I'll eat like a normal person.” And what are the first things an exmutant dines out on once he’s wrapped filming his final and most brutal excursion as Wolverine to date? “Bread and beer!” Jackman laughs. “At the same time, down the hatch. Heaven.”
