TRENDS AND NEWS FROM THE BEST BARS AND KITCHENS THE GREENHOUSE

Tucked away down a quiet Mayfair side street sits this venerable London dining institution, a two Michelinstarred joint untroubled by fast-moving fads and trends, concentrating instead on technical brilliance under the watchful eyes of head chef Arnaud Bignon. I’ve previously enjoyed his cooking when he was in charge of Athens’ celebrated Spondi restaurant, and on the strength of this visit he seems to be settling perfectly into his new home in the capital. The Greenhouse experience starts before you’ve even entered the restaurant, with visitors entering the oasis of calm that is the venue’s elegant, decked front garden – a tree-lined space that transports you through to a cool, spacious and well thought-out dining room.The room was buzzing during our weekday lunch and there were plenty of staff on hand to guide us through the menu – particularly useful when it came to the 3,000-strong wine list. As for the food, the kitchen’s brilliance was established from the off, with a tiny tomato meringue amuse-bouche providing a flavour-packed hit of essence of tomato. We also enjoyed a tiny log of foie gras, served with sweet muesli and fig confit, and Cornish crab accompanied by an intriguing cauliflower cream, mint jelly and apple. Special mention must also go to bread selection, which was sublime. Like most men of a certain age, I tend to avoid carb overload, but these were too good to pass up. Reader, I tried every one. Mains comprised a chunk of pearly turbot, served with baby artichokes, cockles, kaffir lime and pak choi cress, plus a beautiful piece of Dorset lamb carved into a cute rectangle shape and served pink. Again, this is a dish that bears repeat eating. Indeed, while many would see this restaurant as a place for a

special occasion, I’d argue that with its impressive set lunch option, and a relaxed, unhurried atmosphere, this beautiful dining room demands repeat visits. thegreenhouserestaurant.co.uk

AFTERNOON TEA WITH A DIFFERENCE Mr Fogg’s, the bar of choice for the Mayfair post-work crowd and one of the quirkiest drinking spaces in the area, has introduced the wonderfully named Tipsy Tea to its offerings. Served with charm and efficiency in a Victorian-style setting, guests can enjoy a delicate array of dainty sandwiches, cakes, pastries and petits fours, served alongside tea-infused cocktails (in teapots, of course), including a zingy Earl Greybased gin cooler and another that combines English breakfast tea with crème de bergamot, lemon juice and bee polled sugar. MARGAUX Until now, South Kensington has missed out on the round of interesting new restaurant openings in the capital. The launch of Margaux, designed by the team responsible for Dabbous, is a welcome addition to the area, not least because head chef Xavier Castella Vilamajo has previously worked at Zuma, Iberica and El Bulli – the sort of CV that whets the appetite of every serious foodie. The menu comprises a fashionable mix of French and Italian dishes, served

Sir Alex Ferguson was a football manager who always displayed a canny sense of timing and value when it came to buying and selling players. When I heard the news that Sir Alex was to sell a large chunk of his wine collection, some 5,000 bottles estimated to raise £3m, I thought that he couldn’t have picked a worse time, as the bottom has fallen out of the Bordeaux market and values have struggled of late. But when I saw what the wily old fox was selling, it told a different story. Two-thirds of the collection is from Domaine de la Romanee-Conti, the most ‘in vogue’ and impossible-to-secure Burgundy there is. The timing is perfect, although don’t expect to see David Moyes putting his hand up in the auction room.

Reviewed by Jay Boisvert in a space on Old Brompton Road that feels more New York cool than it does ‘ladies who lunch’. There’s a huge copper bar that stretches almost the length of the room, plus metal furniture, exposed brickwork and inspired lighting making it an excellent venue for both a business lunch or a party with friends. My dinner visit allowed me to investigate the restaurant’s renowned wine list – let’s face it, if you call yourself Margaux then you need to

offer oenophiles something special – and the waitress guided us perfectly. With a beautiful bottle of Californian pinot noir on the table, I kicked off with a thick, creamy mushroom risotto, with each grain of rice offering the perfect level of bite. The boldness of the pinot also worked well with the main course – the Gallic classic that is beef bourguignon. The home-baked bread served well for mopping up duties – I didn’t want to miss a drop of that rich sauce – while tender, melt-in-the-mouth pieces of beef brought memories of happy holidays in France come flooding back. When it came to dessert, it was hard to resist the delights of the cheese selection. All the options were strong but the standout was the Blue Des Causses, a blue cheese from the Midi Pyrenees with a creamy, spicy punch. This is confident, inventive modern European cooking at its best – highly recommended. barmargaux.co.uk

Highlights from the sale

dip eight years ago. The market for Burgundy has gone stratospheric of late so this estimate is conservative – it costs at least £10k a bottle in the open market. Given that Sir Alex is making sure that the provenance and his ownership are carefully recorded this is one case that I think will smash the estimate, especially since ‘99 was a special year for Manchester United.

Sir Alex used to have ‘special bottles’ reserved to drink after a game and which he often shared with the opposing manager. He tells a great story where, having finally won the Champions League Cup Final in 1999, a prepared bottle of Petrus ‘61 was decanted and prepped for slow, satisfied enjoyment of the highest order. Unfortunately a few of the players descended to the gaffer’s room and proceeded to knock it back, unaware that they were guzzling a £5k bottle of wine. The Petrus 2000 is one of the few wines to be awarded a perfect 100 points by Parker.

Classic Italian wines are one of Sir Alex’s real loves and they don’t come more classic than this, one of the original ‘Super Tuscans’, a movement that chose to ignore the rules and regulations that had restricted Italian winemakers. The wine first started appearing in 1968 and it was given its own appellation in 1994 – Bolgheri Sassicaia DOC. And wines don’t get higher recognition than that.

BLAME IT ON the financial crisis, blame it on the rise of ‘no bookings’ dining spots, blame it, if you like, on the boogie, but London’s fine dining restaurants are slowly turning from hushed temples of gastronomy to become altogether more relaxed affairs. Marcus Wareing, one of the capital’s top chefs, recently said he wanted to introduce a “dinner party atmosphere” to his two Michelin-star Knightsbridge restaurant, advising his waiters to be more American and less French in their approach, thus attempting to end the stuffiness that many associate with this kind of dining. You know the sort of thing – haughty waiters, endless explanations of each course and constant interruptions to pour wine or water. Honestly, put the wine on the table, or by the side in an ice bucket, and I am perfectly capable of pouring it myself. The lack of tablecloths and fussy service doesn’t mean the food quality suffers though, and nor does the price. Look at Dabbous, one of the hottest London restaurants of last year. It’s a hip and casual dining experience, but the technical brilliance of the kitchen is unquestionable. Elsewhere, Russell Norman’s empire (Polpo et al) has captured the imagination of the capital’s foodies, combining brilliant cooking with a buzzy, relaxed ambience. As well as Marcus Wareing’s new approach at his eponymous restaurant – now rebranded under the more brasserie-style MARCUS name – there is also the Pollen Street Social, overseen by former Gordon Ramsay protégé Jason Atherton. It’s a fun, informal experience – the polar opposite of what many consider to be fine dining. It features wildly inventive cooking and has rightly been celebrated as one of London’s best dining rooms.

The fussy cheffery of molecular gastronomy also seems to be fading as chefs rediscover more traditional skills, such as foraging, pickling and smoking. Crucially, this also allows them more money to spend on the actual ingredients, rather than expensive techniques. Elsewhere, those seeking a playful, unsnooty dining experience should visit Pont Plage, a crustacean, sashimi and ceviche bar set up outside the legendary Le Pont de la Tour on the banks of the Thames. Alternatively, top chef Nuno Mendes – formerly of Viajante – has set the gastronomic world on fire with his brilliant take on modern American food at the newly launched Chiltern Firehouse in the increasingly fashionable area of Marylebone. If you can secure a booking, this place is a must-check. Customer-friendly dining, with chefs cooking for your pleasure rather than for a Michelin inspector? By jove, I think we might be on to something…

Are they worth it or do you consider them among those watches you hate in the £700–£2,000 bracket? I see they are about to launch in the UK, which is the reason I ask. (To be more specific, the model I’m considering is the Tudor Pelagos with titanium case and ceramic bezel). Thanks for the help. I suppose I only have myself to blame for the fact that everyone and their brother and their dog and cat and budgie and their postman, for all I know, seems to think I hate inexpensive watches as a class. What I have done in the past is present my own personal preferences as ex cathedra pronouncements, and that I feel justified because of my incredible grasp of the essential points of the horological arts and sciences is beside the point; I have been a party to creating confusion. Let me clarify something. There is nothing objectively wrong with such watches; indeed, they serve a noble purpose in allowing those who might otherwise not be able to enjoy a mechanical watch to do so. There are perfectly respectable watches to be had in the lower end, just as there are perfectly awful, shoddily designed, listlessly made pieces of excruciatingly ill-conceived junk in the high end (which are there for all to see if you can do so past the carefully

obsequious smiles of the boutique staff and the powerfully distorting effect of the money you pay.) That there are virtually none that I am personally interested in is obvious to any regular reader, but that doesn’t mean they’re objectively bad (whatever that means.) My own tastes may or may not be instructive but they should be taken for what they are, and no more emulated for their own sake than you would in your own life ape my inexplicable but long-standing preference for petite, argumentative brunettes with well-defined biceps. Tudor, therefore, I can recommend sincerely, if not with the warmth of personal enthusiasm. They’re solidly made, mostly devoid of silly attempts to be au courant (I said, “mostly”, advisedly; the Fastrider is a pretty risible attempt to pander to the base, as they say) and moreover they do nice things to the stock ETA movements they use, virtually none of which are cosmetic and most of which are sensible functional improvements. I’m totally disinterested in Tudor but if I weren’t, the Pelagos is the one I’d choose.

Is Ventura ace? Dear Watch Snob, I’m an avid reader of your nicely penned, well intentioned advice — I have actually followed it, as you convinced me to buy a Sinn over a Stowa. I know you have no great opinion of digital watches, but can

you find any redeeming qualities on the Ventura line of automatic digitals? It would seem to me they answer to many of your demands for a decent watch: mechanical in-house movement, hardened cases, sapphire crystal, innovation in styling and a ‘complication’. I have a certain morbid fascination with these mongrel watches, which I find quite a lot more interesting than other selfwinding watches that use a rotor to charge a capacitor but have a conventional face — like putting lithium ion batteries and an electric engine in the body of an Alvis roadster. First of all, the designs have a nice retrofuturistic flavour to them and, second, they seem to come by them honestly (unlike so many other such things). Moreover, they seem like something Kier Dullea might have worn in 2001: A Space Odyssey, which I’ve had a sentimental fondness for every since accidentally running across a screening, projected on a purloined bedsheet, of a contraband print being shown in a grotto behind Le Rosey, as I wandered through the woods during my last year while under the influence of a poorly characterised species of psychoactive fungus that used to grow behind the rugby pitch. (You can’t make this stuff up.) Anyhow, despite that I have no personal interest in any such thing, but if such a Proustian madeleine is your, haha, cup of tea, I feel you may imbibe without guilt.

A shirt that fits Bespoke tailoring shouldn’t stop at a suit – a handmade shirt will complete any outfit

T

he smile says it all. As Nash Masood, creative director of Emmett, circles around me, checking the fit and finish of the handmade shirt he and his team have crafted for me, it’s clear that he’s pleased with his work. “Look at the shoulders,” he says. “It sits perfectly at the edge of each shoulder, plus it hugs your back neatly and the collar is just so.” We both grin at each other. Two men bonding over a piece of tailored cloth. It sounds ridiculous, it is ridiculous but, hell, this is one fine piece of clothing. The story started a month before when I visited Nash (pictured right) in his studio beneath Emmett’s Jermyn Street store. I like Jermyn Street – it has a traditional feel, with many of its men’s outfitters plying their trade there for decades. One criticism could be, though, that some of the stores feel a little old-fashioned. However, Emmett’s style is bang up to date. Little wonder when it’s directed by Nash, a hip, livewire chap whose healthy irreverence for the traditions of Jermyn Street are refreshing. “From the moment you come in, I am sizing you up,” he says. “Not just your

measurements, but how you hold yourself, what you do for a living, where you might wear the shirt we’re going to create and so on. Then it’s about listening and collaborating with the customer.” After a quick admonishing regarding how I wear my jeans – too low, apparently – Nash goes on to show me a variety of colours and shirt styles to choose from. I choose the ‘Dermot’. This, incidentally, is my name for it as it’s same style that Dermot O’Leary – a regular in Nash’s studio – sports when presenting The X Factor. There then follows a series of micro-adjustments to ensure that the piece is totally bespoke. “Most of my customers order three shirts at a time,” says Nash. “And once I have your measurements – unless your body shape changes – we can produce more shirts and ship them to you whenever you want.” The store also offers a great selection of ready-to-wear shirts, with each range made in a limited edition of 25. However, if you’re visiting ‘London’s street for men’ then you really owe it to yourself to let Nash work his magic. “The first rule is to reply to your shoot invitation promptly. From a host’s perspective, getting a team of eight busy people together on the same day is comparable to herding cats. Therefore, accept their invitation in good time. You also need to ensure that you have all the kit you require on the day, from your gun to your wellies. If you are not a regular visitor to the field then you should arrange use of guns, 4WD travel, cartridges and so on. Most important you should have enough cash for all gratuities (tips for gamekeepers, loaders and any other necessary staff ). Your host can advise on this. On the day you should give the safety briefing your full attention as there may be unusual quirks to the day which you have not encountered while shooting on other estates. The host will also clarify the quarry for the day and any necessary timings. After this, pegs will be drawn and you will boot up and move off to the first drive. There are three crucial things to remember when you are on your peg: do not poach your neighbour’s birds, shoot at the more sporting birds (providing they’re within your capabilities) and, most important, shoot safely. Before leaving, there are a few traditional formalities that need to be taken care of. First, if you have a loader he will have cleaned your gun ready for you to depart. Make sure you thank him and pass a tip for his services. The host will introduce you to the head gamekeeper who will give you a brace of the day’s quarry to take home with you. Again, you should make sure you thank him for his services on the day and tip him Lastly, a letter of thanks never goes amiss and you should always return an invitation, whether it be a reciprocal day’s shooting, a day’s fishing or something a little different, such as a trip to the races.” bettwshall.com

hen it comes to Rolex watch customisation, Pro Hunter is the brand to check. Originally designed as a robust timepiece for hunting – the black finish (not offered by Rolex itself ) is non-reflective, thus unlikely to spook your sharp-eyed quarry – the collection is more subtle than many other ‘pimp my Rolex’ modifiers. A wristwatch can be a key part of someone’s Your go-to wardrobe essential? style but I get the sense that, for you, it’s only part of the equation. Jeans! Like a necklace, a new hairstyle or a pair of shoes, it transports you to a new level. A watch is something that doesn’t just require a big occasion, and I think that makes it pretty unique. So I’m usually dressed down in my off time, but whether I’m casual or dressed up I have to feel comfortable and confident in whatever I’m wearing.

Can a watch speak volumes about the person who wears it? Well, I think the Link Lady is for the confident, elegant, modern woman who sees her watch as a piece of her favourite jewellery.

How do you decide on what accessories to wear? Less is definitely more for me. I feel that accessories should complement what you are wearing and not overpower the outfit.

How would you define luxury? Luxury is anything that makes you feel good. To me, luxury is about quality, not extravagance.

Is there a luxury you cannot live without? The luxury of time. When I’m not working I love the feeling of not rushing around.

Speaking of time passing, how have you felt about turning 40? Do you worry about ageing? I’ve always lived in the moment – I’m an ebb and flow girl. I don’t worry about how people perceive me. I’m fortunate that I get to make movies, period. I’m not worried about how many dramatic roles I get to do. The good roles will somehow find you. When you’re in your 40s you may not be playing the sex symbol roles anymore, but who wants to play the sex symbol forever, anyway? That was never my ambition.

You’ve also gone to some lengths to present a strong body image for women. Tell us about The Body Book you wrote… I feel like there are so many women of my age who say, ‘I don’t understand how my body works. I have been in it for 40 years and I still just don’t know how it works and it’s constantly fighting me. I do one thing and it does another and then I go on a diet and I gain more weight back.’ I’m like, ‘How can you live in your body for four decades and not know how it works?’ And it’s just because we have not been taught. It’s information that we should have been given in school on day one; the same way we learn our reading, writing and arithmetic. We learn those things so that we can get a job, so that we can buy food, so that we don’t die. That’s the whole point. Why don’t we know how our body breaks down nutrition? Where does it go, how is it needed, what is nutrition, how does it function inside of our body, how does our body utilise it? It’s science that we should know and it should be just something we shouldn’t have to think about. But if we don’t have that information we rely upon these fad diets… So I just thought that making a comprehensive science book about the body would be helpful.

Wellbeing for you stretches beyond the body and into social responsibility, though. While Leonardo DiCaprio’s partnership with TAG Heuer is raising funds for environmental organisations, your endorsement is supporting UN Women. What do you think about TAG Heuer’s social responsibility? I appreciate TAG Heuer’s social responsibility and it was an important factor in my decision to align myself with them for this campaign. It is very important that companies and individuals strive to make our world a better place and I’m happy to be involved with a company that understands that. Look at the TAG idea of supporting women and giving them freedom and encouragement. I feel that’s so important. There is still so much repression in the world – perhaps down to religion, or gender, or where you live. We need to free people and by raising awareness to it, that’s possible. UN Women is a fantastic organisation and I’m so glad we’re, collectively, doing something special.

You don’t tend to endorse many products. Why TAG Heuer? Throughout my career I have been very selective about aligning myself with brands. I love the fact that TAG Heuer challenges the rules and thinks outside the box, and I’m honoured to be associated with such an iconic and forward-thinking brand.

I’ve heard you don’t like the suggestion it’s just a smaller version of a man’s watch…? Well, it’s true to the TAG Heuer line, but distinctly feminine at the same time. There are as many variations on the women’s watches as there are types of women. I consider mine one of my favourite pieces of jewellery, much more than just a timepiece.

Do you have any regrets in life? I don’t believe in regret. I think regret is

a real waste of time and energy. Regret means that you don’t value the experiences you have. Every experience has value, and it’s up to you, no matter if you look at something and you say, ‘I could have done this or I could have done that,’ but I did this. You have to really take the value of that experience so I think regret is just a terrible way to live life.

What has been your biggest challenge in life and what will be your next one? I don’t think about challenges, I consider them opportunities to learn and grow. I consider having the career I have to be a great gift and I try to never lose sight of how fortunate I am to be able to do what I do. Armin Strom One Week Skeleton As masters of skeletonisation, it was no surprise to find that boutique brand Armin Strom released one of the show’s most striking skeleton watches. Powered by the brand’s inhouse manual winding ARM09-S movement, it features beautiful traditional-style engraving on an otherwise resolutely modern piece. Julien Coudray 1588 Sport Swiss watchmaker Julien Coudray unveiled a host of novelties at the event – the most exciting was its first sport collection featuring the limited edition model 1588 Sport. This reveals an oil drop after four years of operation as a sign that the watch is due to be serviced. rolex Milgauss Z Blue The world’s best-known watch brand had a host of updates and new models on show, including a rerub of their famous ‘Pepsi’ model. The one that caught our eye, though, is the new Milgauss Z Blue. It’s an odd colour combination – something of a 70s look – but one that really works, plus it’s fitted with the Rolex calibre 3131 (encased in an iron cage to protect the movement from magnetic fields) and a robust 40mm stainless steel case. Romain Jerome 1969 One of the more adventurous brands at the show, Romain Jerome showed Tempus some incredible pieces, including one featuring parts sourced from the Titanic. The watch that really caught our eye, though, was a more restrained affair – the 1969 – which comes with some Moon dust mixed into the case back. There are four versions available, although the blue is the piece of choice, in a limited run of 99 watches per style. zenith El Primero Not content with offering the best mechanical chronograph on the market – the striking 10th – Zenith released a tricked out version of it this year, dubbed the El Primero Lightweight. or those who’ve been fortunate enough to visit different watch manufactures, Richard Hoptroff ’s studio comes as something of a surprise. There are no giant machines pumping out parts, no white-suited tweezer-wielders dissecting movements on banks of benches and little sign of the paranoid secrecy that often overshadows a visit to a timepiece factory. Instead, the visitor – and you sense that Richard doesn’t get many – is treated to the sight of banks of books, many watch-related, stacked on old wooden shelves, various pieces of electronic testing equipment scattered around on work benches, next to hundreds of watch parts and, arguably best of all, the surreal sight of an artist at work, painting an enormous wall-sized picture in the adjacent room. “Oh, him,” says Richard airily. “He’s our resident artist. We rent him a room that he uses as his studio.” For the uninitiated, Hoptroff wowed the watch world last year when he released his debut timepiece, the No 10 pocket watch. Containing a highly accurate atomic clock, it included a caesium gas chamber inside a temperature-controlled oven, a laser to excite the atoms and a microwave resonator to gauge their atomic transitions in order to measure time. Despite its vintage styling, there’s also a USB port to govern a multitude of complications, including longitude and latitude indications, tide height, atmospheric pressure, sidereal time and more. The result is a one-of-a-kind pocket watch that is accurate to an amazing 1.5 seconds every 1,000 years.

Arguably the most surprising thing is that this level of complexity has been created in what is effectively an artist’s garret situated on Clink Street, a cobbled lane close to London Bridge and the former location of a notorious 12th century prison. “As far as we know, this is the first time an atomic time source has been used in a pocket watch movement,” says Richard. “And it delights me that it was achieved right here in London, not Le Locle or Tokyo.” Despite the apparent chaos of his workshop, though, and Richard’s informal, cerebral bearing, he is no scatty mad professor. With a PhD in physics and a lucrative background developing tech startups and selling software to digital watch producers, Richard then decided to devote all of his time to building a watch range. The three watches in the core collection are the No. 11, with a neat swinging pendulum, the No. 8, which off ers a dual time zone and personal assistant function and – for the City boys and hedge fund types – the No. 9, which tracks a city share price of your choice on the dial. All of this is run through Bluetooth technology, regulated by your iPhone. And while the No.10 pocket watch is strictly POA, the wristwatches come with a very reasonable sticker price of £5,000. “We have a defined market, for sure. Specifically, there’s an age cut off. People above 50 can’t make the leap and prefer traditional pieces. People who’ve grown up with technology are very comfortable with our concept,” says Richard. Perhaps the most cutting edge part of the process, though, is the fact that the gold cases of his watches are 3D printed, allowing

Richard to create small production runs and change aspects easily. “The creative process is definitely my favourite part. Sadly, it’s only about 10% of what I do. I don’t have an average working day as such. I spend a lot of time just designing on a computer, mostly 3D design in Rhino or dial design in Adobe Illustrator. “The design is the hardest part. Designing a watch that consists of hundreds of parts, designing circuits, software, aesthetics and, crucially, designing for manufacture. A lot of things that go into design are not to do with it how it fi nally functions but how you make it. For example, I’m designing the plastic shell that holds the movement at the moment and that has to be crafted so that a machine can cut the mould, ensuring that it isn’t too thin, or too fat. Will it cool correctly, and so on.” The watches are in a classic British horological style, with something of a nod to George Daniels, the late legendary British watchmaker. Indeed, before he died, George sent Richard a note regarding watchmaking ideas – a letter he still has in his office today. Despite this, Richard avoids checking out other watchmakers. At the recent Baselworld event, for example, he spent his time in Hall 4 “drooling over milling machines”, rather than evaluating the competition. “I try not to look at other people’s watches because I don’t want to be derivative,” he says. “I like the watch industry because, although there’s a few big players, there’s also a very healthy independent watchmaker section because buyers will always want something individual.” Like his watches, Richard Hoptroff is a true original.

Italian rosés

While France is a secure and traditional destination, Italy is developing its rosé wine industry at great pace. The biggest surprise of this year’s Rosé Wine List was definitely Cataldino, Caltadi Madona, 2013. Its paleness equals that of a Provence rose; its lingering fruit component, firm acidity and freshness are unusual and exciting for a rosé wine from central Italy, Abruzzo; further north, eccentric Pojer e Sandri makes Vin Dei Molini, 2012 (100% Rotberger, a cross between Trollinger and Riesling). Besides its unique grape variety, its Sauvignon Blanc-like freshness and tanginess captivated our palates and minds. The mouth-watering acidity that makes champagne the ideal aperitif also makes it more versatile than still wine with regards to food matching, not least with perceived difficult pairings like egg and asparagus dishes. A light champagne with a flavour profile of freshness, finesse and elegance is the perfect accompaniment to scallops, crab remoulade or soft cheeses such as brie or goats cheese (eg Taittinger Brut Reserve £44.95, Harrods Grand Reserve Blanc de Blancs £32.50). Finally, rosé champagne offering riper, stewed or concentrated strawberry fruit pairs wonderfully with plump juicy sweet strawberries, strawberry gazpacho or foie gras and even savoury and spicy dishes. Here he makes the case for a muchmaligned wine. To paraphrase Mark Twain, ‘reports of the death of chardonnay have been somewhat exaggerated’. The last couple of decades have been a wild ride for a grape variety at once maligned, adored, misunderstood, avoided, sought after and disparaged. Most chardonnays on the market used to be overoaked, over-extracted, over-buttery and dreadfully unbalanced. They were like drinking a pineapple croissant. Elegance was scorned. Kiwi Sauvignon Blanc and oceans of Pinot Grigio sold as a result. People would noticeably flinch when offered a glass of chardonnay, as though you’d threatened them, or mentioned a particularly odious disease. It was wineshunning on a scale hitherto unseen. But the Anything But Chardonnay movement has started to stutter now, and with good reason. In a sea change that some view as inevitable, chardonnay is making not only a tremendous comeback, it’s reaching new heights of quality the world over. With wineries sourcing fruit from cooler vineyard sites, cutting back on new oak, embracing elegance and complexity without sacrificing richness, France, California, Australia and South Africa are now producing the sorts of wines that you used to have to go to Grand Cru Burgundy to find. Chardonnay isn’t just good or acceptable again; it’s fresh and exciting, and deserves to be once again a permanent presence in any well-stocked cellar. Organic wines Pasquale Amico, founder of organic vegetarian Italian restaurant Amico Bio, which has two London branches plus a sister restaurant in Naples, on the organic wine revolution. My culinary ethos when I first opened Amico Bio, was to provide London with delicious Italian vegetarian and vegan food that would appeal to all tastes. All food is imported from my family run farm in Capua, Italy and completely seasonal, so offering seasonal organic wine for the summer was a natural progression. Organic wine is made from grapes that have been grown without using harsh chemicals which can be found in herbicides and pesticides. This should also follow through

to the wine making process itself with as little manipulation as possible. It’s so important to think about what we put into our bodies and wine is no exception – organic wines tend to taste better and have also been known to prevent next day headaches! It’s really great that other restaurants in London have begun to recognise the popularity of organic wines and that as consumers we’re all becoming so much more interested about where our food (and now drinks) come from. I’ve always been an advocate for organic wine, and at Amico Bio, I’ve specifically chosen wines to complement the dishes on my menu now that we’re heading into summer. Below are three wines that I would recommend:

Catarratto, 2012, Barone Monalto This wine has delicious notes of melon and apple blossom. A beautiful rich yellow colour, it’s light and refreshing for warm summer days. Primitivo, 2011, Perrini, Puglia This delicious red wine is very fruity, it’s great with lighter bites or perfect to drink without any accompaniments (weekends only of course!). Scotland windyhill Located in the village of Kimacolm, 29 miles west from Glasgow, Windyhill is one of only three houses built by the world-renowned architect, designer and artist Charles Rennie Mackintosh, and is regarded as one of the most important. Collected the world over, Rennie Mackintosh was the leading figure in the Art Nouveau movement. Today, Windyhill has been restored to museum quality and is an important example of his work. A substantial seven-bedroom house, Windyhill sits in two acres of gardens in a beautiful setting. Pamela Robertson, senior curator at the Hunterian art gallery and museum in Glasgow, describes the house as ‘Mackintosh’s first essay into the room as a work of art’. The interiors of the house today reflect the Art Nouveau style on which Mackintosh was so influential. Original features from his construction include glass-fronted

Horsing Around A trip through thoroughbred motoring history at Ferrari's Maranello factory

s any Ferrari fan will tell you, the next best thing to actually owning one of their supercars is being invited to Maranello, Italy – the home of Ferrari and a mecca for any petrolhead. It’s here that every one of these beautiful babies is born and the whole town seems to unite in celebration of the prancing horse. Before then, though, we travelled to Modena to visit the Museo Casa Enzo Ferrari. This quaint barn was not only the company founder’s home, but also the first Ferrari workshop and now forms part of the museum. Elsewhere, the space that was formerly the garden is now given over to a dramatic, swooping yellow building that houses some of the world’s rarest Ferraris, each given a plinth to show off their beauty. In short, it comprised an amazing walk through the history of Ferrari, where it came from and where it is today.

On day two we moved on to Maranello, where we had the opportunity to look around the factory. Now, I’ve have been fortunate enough to visit a number of car factories over the past few years, but this was something else. I can only liken it to the feeling I had as a child when watching Charlie and the Chocolate Factory – that sense of envy mixed with wonder when Charlie entered the gates of the factory. This time, though, I was the one with the golden ticket, giving me the chance to see first-hand how these cars are put together – a truly priceless moment. The sheer level of detail that goes into every aspect of production is astounding. Just when I thought the day was drawing to a close we were invited to view the ‘customer section’ of the factory – an area usually seen only by the most valued Ferrari customers – the sort of people who buy every new model. You only need two things to be a part of this elite club: a burning desire to drive fast Ferraris, and money. Lots and lots of money. Effectively, it’s a private car club, but one that sees you hand over £1.1m in exchange for a fully race-ready 599X or Enzo FXX, as well as a place to garage it. Three or four times a year Ferrari will take your car to a race track, along with a team of mechanics and engineers, offering the owner the driving experience of a lifetime. Better still, Ferrari deal with all the logistics – all you need to do is arrange for your jet or helicopter to take you to the race circuit where your gleaming car will be ready for some hard driving.

If that sounds good, then option two is even more impressive. The offering is essentially the same, except this time you hand over £1.6m in return for the use of an F1 car. Yes, you read that right. An actual Ferrari F1 car, as driven by the likes of Massa, Alonso or Schumacher. To be fair, a little training is required in this case. After all, it takes a team of five people just to start an F1 car, and once started it doesn't get any easier. For the average Joe, jumping into an F1 car and expecting to be able to drive it around a track is no different to expecting to be able climb into the cockpit of a fighter jet and fly to Afghanistan for afternoon tea. For those considering either of these insanely fun options, it’s worth noting that the car is yours. If you crash it, then you’ve lost your investment and, I’m guessing, there are few insurers wanting to take the risk of providing a policy for a racetrack-thrashed Ferrari. Oh, and there’s also the minor detail of having to have the engine rebuilt every 1,000km, costing a cool £100k. Our final part of the trip saw us attend the opening of a new exhibition, California Dreaming, at the Museo Ferrari – timed to coincide with the launch of the new California T and opened by Luca Cordero di Montezemolor, the company president. The California T launched in the UK last month and is the first Ferrari since the F40 to employ a turbo. And while they may not let Tempus near a track when we come to test it, rest assured that I’ll push it as hard as current UK speeding laws allow. Ok, maybe just a tad more…

I

f you are prone to fits of jealousy, then stop reading now. The reason? Because the subject of our interview – despite being a highly successful businessman – appears to squeeze more enjoyment out of life than any human being on the planet. His name is Flavien Neyertz and his company, Luxury Water Toys, offers some of the finest ways to have fun on the water. Like any great businessman, he had a eureka moment. It came following the 2008 financial crisis when his father’s yacht business sailed into choppy fiscal waters and Flavien decided to focus his attention on the growing area of high-end water toys, such as jetskis. “I was out on a lake one day,” he reveals, “when I saw a couple of guys doing about 60kph on a surfboard across the water. It turns out that they’d attached an engine to it and, holding the throttle in their hand, took turns racing across the lake. I was genuinely amazed.” The inventors had built it purely for pleasure and it took Flavien a year and a half to convince them to let him make it as a product for the open market. In the end he built 1,000 pieces and the reaction from the yachting business was astonishing. Yacht owners were looking for something new to amuse themselves and their guests, and this really seemed to hit a sweet spot. “Once they’d seen it in action, yacht owners were super keen to get on board,” says Flavien. “It’s like snowboarding meets watersports meets motorsport – totally unique.” Flash forward to today and powered surfboards have become the must-have toys

for yacht owners and seaside dwellers, and no model offers a more impressive combination of speed and lightweight construction than Flavien’s Jetsurf Factory GP 100. The board uses a 17hp 100cc gas-powered water jet engine (similar to those used by jetskis) to blast riders along the surface of the water at up to 35mph. Riders stand on the board, strapped in by their feet, and control the speed with a hand-held throttle which is fastened to the front of the board. “We also sell other water toys, such as sea bobs and jet skis, but the Jetsurf is by far the most popular,” says Flavien. “It’s become huge, like jetskis were a few years ago. It’s also accessible to anyone who has a degree of balancing skills.” There is now an official governing body of what has developed into an actual competitive sport – the Federation Internationale du Surf Motorisé – and, unsurprisingly, Flavien is a high-ranking jet surfer, winning competitions worldwide. “I am an extreme sports guy – from dirtbiking to wakesurfing to skateboarding, so this just felt like a natural evolution,” he says. His company, Luxury Water Toys, has also recently added another string to its bow in the form of Jetsurf training. He and his team can fly anywhere in the world to help board owners become proficient on their new toy. Recent high-profile clients include Justin Timberlake, Sébastian Vettel and Sebastian Loeb (pictured). “Every day is a new adventure,” he smiles. “We are having some serious fun out there.” luxurywatertoys.eu

Easy Living The Mandarin Oriental London is the last word in refined luxury, from its spectacularly appointed suites to one of the very best spas the capital has to offer. Its beautiful surroundings even encouraged this writer to go for a run...

want to live here. Not in the Mandarin Oriental hotel itself, you understand, although that would be lovely. I mean I want to live in Kensington, simply so that I can run in Hyde Park every day. One of the best-known of ‘London’s lungs’, this glorious symphony of deep green lawns and landscaped lakes makes it the perfect place for an evening run. To explain, a recent fitness initiative has seen me take up running but, three months in, I still find it a Herculean effort to get out there and pound the pavements. After trotting past the liveried doorman at the Mandarin Oriental and taking a sharp right towards the park, however, I suddenly found myself running with genuine pleasure. In truth, everything about a stay at this hotel is designed to fire up your pleasure circuits. Our room itself was spectacular – a turret suite that overlooked the bustling heart of Knightsbridge and was filled with elegant sofas, thick carpets and a beautiful, and large, marbled bathroom. Six big windows arranged in an arc let light flood in while the bed is easily large enough to sleep four, should that be your thing. Service, too, is impeccable. My wife is an indecisive type and we must have

rearranged the time for our spa booking and dinner reservation at least four times, and on every occasion the reception staff were a delight to deal with. The spa is one of the best in London, a tranquil space that feels a million miles from the hustle of the streets outside. There’s a brand new 17m swimming pool too, plus a gym equipped with state-of-theart Technogym equipment. A couple of hours spent here saw us suitably relaxed for our visit to Bar Boulud, the hotel’s casual dining restaurant, handily located next to the spa. Full and buzzing on a Saturday night, we enjoyed a classic coq au vin and a chunky USDA ribeye steak – even writing about it now is making me feel hungry – along with a beautiful bottle of red burgundy. This, combined with our spa experience, put paid to any grand plans we had for painting the town red that evening. Instead, we retired to our suite, sated, happy and ready to enjoy some ondemand entertainment on the Bang & Olufsen television. Stephen Worrall, manager of Chiltern Street’s Cadenhead’s Whisky Shop & Tasting Room, on the rise of smaller distilleries Single malt has become the dram of choice for many across the world, with young and old seeking Scotland’s wonderful amber liquid. For those whose interest in the spirit is more than passing, however, they would be well placed to investigate beyond the big name brands. Scotch whisky, like many other businesses, depends on PR spend or having the right sponsorship deals in place. Meanwhile, great smaller whisky brands stay under the radar for all but the cognoscenti because they deliberately avoid the mass-market approach. One of the most highly regarded smaller distilleries has to be Springbank. Established in 1828, it’s Scotland’s oldest family-owned and run distillery and still operated in much the same way as it was during its early days. Its owners’ approach to whisky making is very simple – do it well and do it with care, from malting its own barley to distilling and maturing in oak casks until ready for bottling, all onsite. Quite simply, the whisky is ready when it’s ready. Springbank never uses added colour because it always bottles at 46% vol or above. This means that the liquid doesn’t cloud and so doesn’t require chill filtering – a process that removes the proteins and oils along with some of the colour. To explain, when whisky is watered down to the commercial level of 40%-43% it will become cloudy because the oils and proteins thicken up. To remove the cloudiness the whisky is passed through chilled filters and, once the cloudiness has been removed, then caramel colour is added to give the liquid an amber hue. The natural colour of single malts can range from light straw to deep reds, depending on the cask used to mature the liquid. Springbank has been issuing a number of vintages and wood ranges over the last few years, ranging from rum casks to the incredibly rare 16-year-old Madeira cask – 312 bottles made from this batch will be sold very soon. Around the beginning of January every year the iconic 21-year-old hits the market. It sells out after a few days, although our store usually carries stocks at the normal retail price, as opposed to the collectors’ prices it fetches a few weeks after it sells out nationally. Another lesser-known whisky brand of note is Kilkerran, made on the site of the former Glengyle distillery in Campbelltown and also owned by Springbank. This year sees the release of its first 10-year-old vintage (it’s being bottled as I am writing this!) and I’m very excited about its arrival in-store. In today’s fast-moving whisky industry it’s refreshing to see that tastes are changing, driven mainly by a younger, more open-minded consumer who seeks quality over quantity and taste above fancy packaging. In the UK we often hear the doom-mongers condemning young people for being out of control and unable to hold their drink, but nothing could be further from the truth in the world of whisky. It’s the younger consumer who leads the charge for better drinking. They seem to appreciate the history they hold in their hands every time they choose a single malt – these are customers who understand the heritage in each bottle. Indeed, last year saw more than 3,500 people attend our tasting sessions at our Chiltern Street store, most of them aged between 23 and 45. It’s truly inspiring to see so many people being turned on to the best that this spirit has to offer.
