WELCOME TO 2024 CSA - Week 9

(S) - Small Share, (M) - Medium Share, (L) - Large Share

This key indicates which share sizes get what produce. Different share sizes will often receive different produce. We will vary what goes into the share each week to spread the bounty equitably to all members.

There are times when mother nature puts a kink in our plans, so while we can't guarantee that all of these items will be in your share, you can expect to see most of them and sometimes a few extras.

Stir Fry: CSA Veggie Go-to!

Stir frying can seem a bit intimidating if you’ve never tried it or if you’ve ever seen a kitchen operating with the jet-powered woks. It’s really quite an art form to watch a seasoned wok chef cook stir fry. But! It’s really not that difficult. I have put together some great resources and the steps that I use to make easy and delicious stir fry.

Simple Stir-Frying Steps

Prep Ingredients:

Cut: Slice vegetables and protein (meat or tofu) into uniform, bite-sized pieces.

Sauce: Prepare your stir-fry sauce.

See Chef Dan’s Sweet & Sour sauce recipe below - My kids love it!

Heat the Wok:

Place your wok over medium-high to high heat and let it get hot.

Add Oil: "Hot Wok, Cold Oil" Pour in 1-2 tablespoons of high smoke point oil (e.g., vegetable, canola, or olive oil). Swirl to coat the wok.

Cook Protein:

Add protein (meat or tofu) in a single layer. Let it sear undisturbed for a minute or two, then stir-fry until cooked. Remove and set aside.

Add Aromatics:

Add garlic, ginger, and/or onions and cook briefly until fragrant.

Cook Vegetables: Add vegetables in batches, starting with those that take longer to cook.

Stir-fry until just tender but still crisp

Combine & Sauce:

Return the cooked protein to the wok. Pour in the sauce and stir to combine and heat through.

Serve: Serve immediately with rice or noodles.

Sweet & Sour Recipe from Chef Dan & the Wise Acre Kitchen

Yields about 2.5 Quarts - Freeze for later or halve the recipe.

16 oz Rice Wine Vinegar

2 oz Worcestershire Sauce

2 oz Fish Sauce

6 oz Tamari

2 oz Sambal

2.5 oz Garlic

1.5 oz Ginger

6 oz Ketchup

5 oz Brown Sugar

2.5 cup Water

3 Tbsp Corn Starch

Procedure:

In blender combine vinegar to ginger. Blend until smooth.

In small stock pot combine blended sauce with sugar, ketchup and water.

Whisk together the corn starch with 3 Tbsp water. Add to pot.

Cook until sauce comes to a simmer andt thickens.

Enjoy!
