Grilled Eggplant w/ Miso Maple Vinaigrette
Is salting eggplant necessary? Historically, the point of salting eggplant before cooking was to remove bitterness Today's eggplant has been bred to remove most of the bitterness so salting is optional. But, there's still a benefit to salting as it helps draw out water to intensify the flavor and help the eggplant to caramelize. The process is simple. About an hour before cooking, salt the cut side(s) of the eggplant and let it sit in a colander to drain. Then simply use the eggplant as planned, whether that's grilling, roasting, or frying.
Grilled Eggplant with Miso Maple Vinaigrette
2 eggplants, cut into 1" thick discs
Salt Neutral cooking oil Pepper
For the Vinaigrette:
2 TBSP ginger, grated
1/2 cup maple syrup
3 TBSP miso
1/4 cup rice wine vinegar
1/4 cup water
1 lime, zest and juice
1/2 cup olive oil
Salt the eggplant and allow it to sit in a colander for 1-hour minimum. Pat the eggplant dry, coat it with oil, and season with pepper. Grill on high until the eggplant is cooked through. For the vinaigrette: whisk everything except olive oil together. Slowly stream in the olive oil while whisking. Drizzle the vinaigrette over the eggplant.
