I
n typical Quapaw Tribe fashion, staff at Downstream Casino are always looking for something to make their guest’s experience a little more exciting, trying to provide that extra touch you can’t get anywhere else. While always thinking of ways to make that happen, Food and Beverage Director Lucas Setterfield happened on an idea that offering fresh made sushi at the casino might be well received. “You have to really try to find that thing that people say “Oh my gosh, you got that? That’s great!’ It keeps people coming back.” he said. Enter Han the Sushi Man! Sushi is made exclusively by Hein Han, better known as Han the Sushi Man. Han owns a sushi restaurant on 32nd street in Joplin under the name of Han the Sushi Man. Now sushi is being offered in the newly remodeled employee marketplace in their cafeteria, at their 24/7 deli Wa-Na-Bee-Dea and at the Ma-Ko-Sha Coffee and Snack Bar across from the Lover’s Leap Bar and Lounge. indulge Sushi is a popular Japanese dish made from seasoned rice with fish, egg, or vegetables. A sushi roll is shaped inside a thin sheet of seaweed. Sushi comes from a Japanese word meaning “sour rice,” or “rice with vinegar” and it’s the rice that’s at the heart of sushi, even though most Americans think of it as raw fish. In fact, it’s the word sashimi that refers to a piece of raw fish. When you eat sushi, you might eat cooked egg and rice, avocado and rice, or cooked fish and rice, as well as sushi made with raw fish and rice.

wanting to provide sushi to Downstream. “I just got to thinking about it,” Setterfield said, “We knew we were going to do the marketplace (in the employee cafeteria) and so we went around looking at different places to get it,” he said. “We (he and Han) started talking, we’ve been talking to him for years about it, and it just made sense,” he said. “Now he’s here every day and we have him a little space downstairs where he can work and it’s going great.” Han and his sushi have quite a following, he says. Among other places, Han also supplies sushi to the cafeteria at Freeman Hospital in Joplin. 8
“A lot of people that come in here they know me from my place or when I made sushi at Price Cutter,” Han said. Han had a couple of sample days for the employees in the cafeteria before launching the product. “There were a lot of people that never had sushi before,” Han said. He said he had a few converts on his sample day, including T.C. Bear who serves on the tribe’s business committee. Sushi’s been growing a lot around this area, Han said. “When I got here in 2005 not a lot of people wanted to try it, but now I have so many customers and kids, five and six year-olds that come in and want to eat sushi,” he said. Traditional food fare can be found at Downstream Casino’s
24/7 snack bars, but now the display case is filled with several kinds of sushi that is available 24 hours a day to guests. “You’d be surprised how much sushi we sell at 2 a.m.,” Setterfield said. “It’s been pretty good so far, every day selling more and more,” Han said. Sushi types include several versions of California rolls and Crunchy Shrimp Tempera. Han says making sushi isn’t as simple at it might look. “Sushi it takes a long time to find a chef and to train somebody to do it good,” he said. “It’s kind of like an art.” “I’ve been doing this for 15 years, every day making sushi,” Han said. “That’s completely what this is about, giving somebody
something unique but it’s so popular and good,” Setterfield said. “And, it’s something we can’t recreate here, you need a trained specialist.” Han comes in everyday and makes fresh sushi. Currently, he comes in Monday through Saturday to make fresh product. If, by chance, there is any sushi left, he takes everything off the shelf from the day before so only fresh sushi, less then 24 hours old is being served. “Doesn’t matter how busy we are top seller is always crunchy shrimp, “ Han said. Setterfield said it was a good decision to bring in sushi and although it might be a little thing, everything you do to make guest’s and employee’s experience a little more fun is what it’s all about.

INTERVIEW BY Cheryl franklin | Casino Connection In Oklahoma, roulette is not legal to play in casinos like it is in Las Vegas. But, all of you roulette lovers, take heart. It’s been sitting there, beckoning you for about two years at Buffalo Run Casino in Miami. It’s Roulette, but it’s not, technically. According to Cindy Courtney, Director of Table Games at Buffalo Run, the game is pretty popular. “The guests love it. We have people who come just to play roulette,” she said. The game, created by Innovations in Native American Gaming, Inc (INAG) is called Mystery Card Roulette. “Sir Mark Jones, INAG President/CEO invented the wheel as an alternative for roulette in those justification that do not allow a ball,” Courtney said. In other words, they get around it actually being a true roulette table because it doesn’t have a ball in play. The game complies with the law because it is cardbased, thus allowed under the compact between the tribe and the state The Mystery Card Roulette Wheel has 38 slots. Custom cards, which have the exact same number and color as traditional roulette, are inserted into those slots. The wheel head is spun, the “flapper” apparatus is engaged, the wheel stops and a “card” is drawn to reveal the number. hen Indigo Sky Casino staff moved the bingo games back over to the Bordertown Casino location it was up in the air when the popular Indiglo Bingo would return and what they would call it. Melanie Chase, Assistant General Manager said she thought they would probably rename the bingo since technically it’s not at Indigo Sky location. But Indiglo it is – and always is, that’s what people know it as and it’s time for the lights to go out and the blacklights to come on. Returning March 16 at 11 p.m. Indiglo Bingo will be held at Bordertown Casino complete with Bubba Evansco DJ, lots of music, beer, games and prizes and of course, bingo! This is definitely a get the friends together and go play bingo event.

MIAMI – It can be an overwhelming task to pull together exhibits and create a museum, heritage and culture center from the floor up, but Director Marnie Leist’s experience is certainly a valuable asset towards these efforts to bring to

life the Shawnee Tribe Culture Center. The construction of a $2 million Shawnee Tribe project is well underway and is a labor of love for Leist who was hired on by the tribe to develop and direct the important undertaking. The Shawnee Tribe Culture Center will be located next to the Northeastern Oklahoma Inter-Tribal building at 108 Eight Tribes Trail in Miami. The facility will include a gallery/exhibit area, large and small viewing rooms, a catering kitchen, gift shop, classrooms and administrative space along with areas for storing and preserving artifacts. The center will be accessible from the Miami Travel Center to tribal members, the local community and visitors in a convenient and highvisibility location just south of the Missouri/Kansas border. Visitors also will be able to park and easily visit the Culture Center without paying to exit the turnpike. Moving from Ohio to Kodiak,

His group’s most recent record, 2013’s Baptized, featured the platinum-selling “Waiting for Superman,” which the singer points to as a turning point in his songwriting. “It was a nice hybrid of where we had been and where we’re going, and it opened my eyes a bit,” says Daughtry. “Everything was so serious and doom and gloom, and ‘You broke my heart,’ but we never saw ourselves as those people outside the music—onstage we were always joking around. That helped me wrap my head around the fact that we can be light-hearted and still be us. And that really changed the way I approach the songs in general.” Daughtry and his band have been per-
forming together for over a decade. “Like anything with a ten year relationship, you know more about each other than you do most of your family,” says Chris Daughtry. “It’s a love-hate thing—you get sick of being around them, but after two weeks at home you’re ready to get back out on the road and do it again. The fan base really keeps us alive. That’s the key ingredient to keeping a band together—that’s the gasoline, and without it you can’t run.” One thing that has kept the fire burning for Daughtry has been the need to constantly challenge himself creatively. He has collaborated with artists from Timbaland to Vince Gill to Carlos Santana and took on the role of Judas Iscariot in the 2016 live television performance of The Passion, and even fulfilled a lifelong dream by drawing the cover DAUGHTRY CONTINUES ON PAGE 29 23

She advanced the care of the museum’s extensive holdings, helping to preserve over 250,000 objects in perpetuity. She was instrumental in obtaining national accreditation for the museum, becoming the second accredited tribal museum in the country. On the remote island, with its stormy seas, vast black sand beaches, and moss-covered spruce forests, Leist had many opportunities that went way beyond the norm. From programs such as Community Archaeology and Travelling Traditions, to creating exhibits with international partners, to the daily work of serving the public, their tight-knit staff created an inviting environment to celebrate Alutiiq culture. Recently, her conception of the museum’s first interactive exhibit, Pililuki-Make Them! was awarded the Museums Alaska Award of Excellence. In her career, Leist has over 13 years of museum and non-profit experience as a Board member, volunteer, and staff member. “The creativity that Marnie Leist fostered at the Alutiiq Museum will allow the Shawnee people to have a place to be their own storyteller,” Second Chief of the Shawnee Tribe Ben Barnes said, “Her leadership experience will ensure the Culture Center is relevant to our Shawnee community and sustainable for many years to come. From our first interview, we could see how accomplishments at the Alutiiq Museum would be a fantastic fit within our own organization. The professionalism, immersion, and desire for knowledge while Marnie was the Alutiiq Museum will most certain guide the Tribe’s mission of telling the story of the Shawnee.” Along with a community presentation held Feb. 28 to gather feedback and ideas, there is much work involved in developing the Center. When asked if the scope of the process was a little daunting, Leist

For example, a normal exhibit development schedule would be about two years. Develop an idea based on your existing planning, which of course we don’t have yet, research enough to be able to write a little, have some imagery/objects, a rough floor plan, then run ideas by close stakeholders, like committees, then hone idea and plans, apply for grant/sponsors, then probably a year and a half later install the exhibit/associated programs. We have a few months.” Not only the obvious displays and programs need to be brought together, but much work goes into the progress behind the scenes building the supporting structure for the facility. “In addition to what the public sees, there are policies and procedures, things like an emergency plan, furniture and even power tools to work with are nice too, also communication tools like website, perhaps a logo, brochure, and a whole lot more,” Leist said. “Museums, in particular, have a lot of special requirements in establishing best practices. It really is a huge component of operations and also is the backbone of all the things that we do and what people see and experience, like awesome logo gear in the store, traveling education boxes...” The Shawnee Tribe’s Culture Center has been a vision of Shawnee Chief Ron Sparkman’s and many
Shawnee tribal leaders and members. “It’s something we look forward to completion and something that’s very important to us,” Sparkman said at the Center’s groundbreaking ceremony back in June of 2017. Leist is tasked with ensuring the tribe’s mission in creating the Culture Center is accomplished. “The mission of the Center is to be the place for Shawnees to tell the story of the Shawnee past, how that informs and shapes Shawnees today, and who we see ourselves becoming tomorrow,” Leist said. She has begun the endeavor to gather the Shawnee Tribe’s cultural, historical and archeological pieces and artifacts for the center. “There are none. We are reaching out to other organizations and community members to create programs,” Leist said. Leist has a vision of her own for the Culture Center she hopes to accomplish. “I come from a background where visitors not only interact in exhibits and experience culture but also contribute to what is going on. I hope the phrase ‘beyond hands-on’ could be said about the Culture Center. It may not happen on day one, but over the next year, the connections will run deeper and deeper,” she said. As the Shawnee Tribe’s Culture Center comes together the excitement is building to see the finished facility and implement the first ex-
hibits and programs. The center has a projected completion date scheduled for sometime later this summer. “We hosted a presentation in part to gather ideas. We are very much in the developing ideas phase,” Leist said. “This first exhibit will be about culture bearers’ experiences in the last few years as they reconnected with Fort Ancient pottery. There have been workshops learning about how these pots were made and used. From using local clay, to figuring out the best way to grind shell for temper, to firing temperatures. The thin pots are special indeed, and learning the technique of making them has been quite the undertaking. “The tribe has also been collaborating with scientists to not only learn more about the manufacture of the vessels themselves but for example, the study of the temper may reveal about the movement and connection of people, as Shawnees were prolific travelers and traders. The vessels were made for cooking, so thin a small fire could be used, so exploring the kinds of foods that could be cooked in such pots. Also, the design of the pots is very distinctive, so we are looking at the adornments. It’s hard to summarize this project! It is art, science, culture, and all of these elements will be in the exhibit and programs. We are creating a Kids’ Committee to help us with some of those ideas, so we can have STEM or STEAM activities.”

Orlando fell in love with music at the age of 15 and spent much of his time singing doowop on the corner and in the subway with his friends from the neighborhood. With hopes of breaking into the business, he performed and recorded demos with local groups like the Five Gents. Hanging around the legendary Brill Building, the New
York-based home of some of the leading pop songwriters of the day, he managed to snag an audition with record producer Don Kirshner, who hired him for a dollar a week to sing on songwriter demos. One tape, featuring the Carole King-penned tune “Halfway to Paradise,” was considered good enough to release and hit the U.S. charts at number 39 in 1960. A couple of months later he recorded the Barry Mann-Cynthia Weil penned
