It’s February and many people will be buying cards and presents to give to loved ones on Valentine’s Day. Read about the origins of this annual event and who Saint Valentine was, in a light-hearted article ‘Is Romance Dead?’ by Cat Knowles-Fitton on page 17. Gay Richardson helps us sort out our wardrobes - the perfect job for a damp February Saturday - see our Style feature on page 24. Take advantage of the dry days to get out in the garden. Phocas lists the main tasks for February on page 27 along with his weather predictions. Our recipe this month on page 22 is a perfect Valentine’s Day dessert and is very simple to make too.

Award winning Gardens Monthly home & garden issues with Louisa Bell of City & Country Landscapes

E

ach New Year brings us a whole set of new gardens for the season ahead. It’s a really exciting prospect when we go out to meet new clients and look at their house and garden and listen to their ideas and plans. Sometimes a new conservatory or extension is going to make an impact on the garden. Other folks are just fed up with looking at the same old garden that they’ve had for 30 years and other new clients decide not to move and ‘do’ the garden instead.

We can only build so many gardens in a year and it’s wonderful when some of these gardens are friends of previous clients and have come via recommendation. We still keep in touch with so many of our old clients – advising on plants, meeting them for lunch, talking about shrubs and trees we planted and marvelling at how everything has grown (of course, we did know that things would get to this size!).

Gardens are such personal things. As a designer, I’m always determined that a garden should belong to the client, and be the culmination of the things they’ve most wished for – even if they didn’t know those wishes at the outset. Being a good designer means making the most of every single part of a garden, having reasons to walk around, areas to discover and wonderful plants that provide colour and structure throughout the year.

The pictures that you see in magazines are gardens that are eminently possible for you to own too. When you think ‘Oh isn’t that lovely’, that could be your garden.

As landscape contractors we were delighted to win a National Landscaping Award in December for construction excellence. This was awarded to us by the British Association of Landscape Industries. Unfortunately we couldn’t get to the awards ceremony in London as it was the ‘day of the snow’ and no trains were running and the roads were impassable. The guys were all dressed up in their suits (something we don’t see very

often!) and it was a great shame that we didn’t get there. I’m mentioning this just to show off really, because once you’ve told your Mum and your sister there aren’t many others to tell! Anyway, it proves that we really do know what we’re doing so you’ll be in safe hands when you decide to take on that wonderful garden make-over.

When we take our portfolio out to clients, they always like to see the ‘before and after’ shots of gardens. I must admit, some of them are quite amazing, even to me. We usually go back to gardens we’ve built the following June with a professional photographer. We visit some gardens for years and watch them grow and mature. We have had some lovely testimonials from clients, which you can read on our new and updated website. It’s so wonderful to know that the gardens are being used and loved by whole families.

If you would like to know more about the process of having your garden professionally designed and built, then please give us a call so that we can visit you and walk around your garden with you. I love it when a client says “I would never have thought of that!” It means we’re doing our job properly. I remember when we had an architect look at the possibility of extending our office and he came up with some wonderful ideas that I would NEVER have considered. See, that’s what it means when you hire a professional. Now, if only I could find a plumber..........By the way, I really do need a Person Friday in the office one day a week, hours to suit. Local Walks - February 2011 Walking in the glorious Sussex countryside is a hugely enjoyable experience and an excellent way of keeping fit. You don’t need any special equipment and it’s completely free! The walks listed are part of the larger programme of walks offered by Horsham District Council, for further details please contact Jill Shuker on 01403 215269. Village Show Gives Boost to Local Youth Groups For the last 80 years West Chiltington has hosted a Fayre and Flower Show on the recreation ground. As a result of the success of the village show, donations have been made each year to a local group. Last year three local youth groups were the happy recipients of £1000 each.

One of the 3 lucky clubs was the 1st West Chiltington Guides, Chanctonbury District. Lesley Boon runs the club at the Church Hall every Tuesday for girls aged 10 -14 and was very excited about the prospect of buying new tents, to replace the 20 year old ones!

The Guide movement is always looking for helpers – phone Lesley on 01798 812457.

The 2nd recipients were the Pulborough and West Chiltington Cub Scout group. Chris Brown is the Group Scout Leader. Chris said that he would be delighted to be able to replace worn out camping and cooking equipment.

The 3rd recipient was the West Chiltington Youth Club, which has been running since 1951 in a hut which was rebuilt on its present site in 1975, intended to be temporary! Phil Albers who has been running the club for over 20 years with the help of volunteer parents said: "It is the highlight of

the week for some children where they can come and let off steam in a safe environment.”

Having become an event which spans a whole weekend in July (16th and 17th 2011) the West Chiltington Fayre and Flower Show has been renamed: ‘The Village Show’. There will be more exciting news to follow in the coming months. The Yokebourne Restaurant at the Mill House Hotel

T

he new owners at the Mill House Hotel in Ashington have plenty of catering experience. The former owners of the White Horse Inn in Pulborough also run their own outside catering company. It’s a genuine family business managed by Karen and David Ockelford and their son Richard who is the head chef.

Since reopening in May this year a refurbishment has added a modern touch to this delightful old property. The cosy lounge bar with its welcoming wood-burner is the perfect place to relax with a pre-dinner drink. Furnished with deep brown leather sofas and scatter cushions we felt quite at home as we perused the refreshingly uncomplicated menu in front of the cheery fire.

The restaurant now named The Yokebourne after the stream that used to feed the mill pond, is open to the public as well as hotel guests for both lunch and dinner. We visited in November 2010 and for a starter I chose sauté of tiger prawns and crab pancake which was served with a tangy chilli sauce. The crab meat was deliciously sweet and smooth and complemented by the crispy pancake.

My husband Jeff opted for a warm mushroom and spinach tartlet which was beautifully presented with a zigzag of parsnip mousse. The pastry was wonderfully crumbly and the filling was creamy with a gorgeous woody flavour from the mushrooms. Other starters included pan seared scallops, duck and pork rillettes with spiced apple jelly and a special of frogs legs which is always very popular. We chose a slightly oaky Bordeaux to accompany our food which was reasonably priced at £19.25. The house red, also French, is £14.85 and there is a good selection of red, white and sparkling wines on the wine list.

Main course options included chicken supreme, pork fillet schnitzel cordon bleu, a vegetarian tagliatelle and sea bream. What took my fancy was the Fillet of beef tournedos. Served with crispy pancetta which gave a lovely salty tang to the dish and delicate little wild mushrooms. I was delighted with the rich flavour and melt-in-the-mouth texture of the beef. Jeff chose a special of Sussex venison with a blackberry and balsamic apple sauce. Jeff was genuinely impressed with his dish and said he had never tasted better venison! It was served in thick slices and was incredibly tender. The meat was pink inside, not too ‘gamey’ and served with caramelised baby onions and mustard mash. It was a generous portion and the sweetness of the blackberries worked exceptionally well. Venison also features on the “Foragers Menu” a selection of dishes with a seasonal flavour including game

pie with ale gravy and beef cheek ragu.

Chefs Richard and Craig make almost everything on site by hand including the bread rolls, ice creams and other tantalising desserts. Although tempted by the home-made ice cream, we ended our meal with a pear syrup sponge for Jeff and Toasted brioche with berry compote for me. Both were delicious and not so large that we had to leave any!

UpsideUpside-down Pear Cake A warming winter treat but made with fruit so counts as one of your ‘five a day’!

Ingredients • • • • • • • • •

1 oz butter 2 eggs, beaten 1 oz soft brown sugar Juice of ½ lemon 3 conference pears, peeled and halved 6 oz self-raising flour 4 oz margarine 4 oz caster sugar 1 teaspoon baking powder

Method Grease the base of a non-stick 8” pan. Pre-heat the oven to 200ºC, gas mark 6.

Melt the butter in a frying pan. Add the sugar and stir until dissolved and beginning to caramelise. Stir in the lemon juice and then add the pear halves. Heat through.

Arrange the pear halves, cut-side down, in the base of the tin and pour over any left-over caramel.

Beat the margarine and sugar together until light and fluffy. Sieve the flour and baking powder together and gradually beat into the creamed mixture. Stir in the beaten eggs to make a batter. Spoon over the pears and bake for 10-15 minutes until golden and risen.

Turn out onto a serving dish and serve with vanilla ice cream or thick whipped cream.
