Creating a healthier future through food education

In the UK, Obesity accounts for over 30,000 deaths each year with obesity levels having more than doubled over the last decade. Today, one in three children leave primary school overweight or obese and children in deprived areas are more than twice as likely to be obese as their more privileged peers.

Sussex based charity, Table Talk Foundation has a two-pronged mission – namely to deliver high quality food education and provide children with an insight into the hospitality industry, and to also provide mental and physical health support and financial assistance to the local hospitality industry.

The charity’s co-founder, Jessica Aggarwal, (inset picture right) says, “We believe this health crisis requires immediate intervention. We exist to create a healthier future by helping young people build better relationships with food through innovative and fun food education.”

The charity is also keen to provide support for the hospitality industry, which was hard-hit by the COVID-19 pandemic and has continued to suffer from the increased cost of living crisis, rising operational costs, staff shortages and from meeting demands for increased sustainability arising from environmental concerns and climate change. “The hospitality industry is the UK’s third largest industry for employment and yet hospitality faced a staggering loss of £115 billon and over 660,000 jobs during the COVID19 pandemic. Hospitality businesses are three times more likely to fail compared to other UK businesses.” Jessica goes onto say that the charity believes that the hospitality industry plays a vital role in society. “We’re transforming the hospitality industry with a strong focus on mental wellbeing, physical health and financial support. We want to encourage more young people into careers in hospitality and support them every step of the way.”

The work of the Foundations is funded by a mix of grants, sponsorship and Industry Partnerships. Jessica expands on the roles each play in supporting the Foundation. “We have been fortunate enough to receive generous grants from several trusts and foundations committed to creating positive change. These include The

Band Trust, Enjoolata Foundation, Fonthill Foundation, Focus Foundation and The Lawson Trust. “Through the kindness and dedication of local people and businesses who’ve sponsored local schools, we've managed to raise over £20,000. These sponsorships not only provide vital funds but also help foster a sense of community around our mission.” Additionally, the charity is, Jessica says, “Proud to collaborate with hospitality businesses that have found creative ways to raise money through customer donations. Initiatives – like adding one pound to a bill or featuring a “Cocktail of the week” – have collectively raised over £43,000. The dedication of our Industry Partners exemplifies the spirit of the hospitality industry.”

Table Talk Foundation also has a sister organisation and Community Interest Company: “Table Talk Business Club, has been instrumental in our fundraising efforts,” and is an exclusive club for executive-level owners and key decisionmakers holding monthly events at “The best independent hospitality venues in Sussex. These events not only raise awareness of our mission but also generate vital funds to support our ongoing work.”

Founded in 2021, the charity has grown extremely quickly - from a Summer Party thrown to launch its mission to a Festive Feast in December –raising £60,000 in its first year. In 2022, the organisation hosted “nine inspiring fundraising events, raising over £40,000 – generating awareness and excitement for the Foundation and

our mission,” and March this year saw Sussex Showcase 2023 raise £22,500 for table Talk Foundation over seven days, “Fourteen chefs with twelve Michelin stars, two Great British Menu Winners and one Masterchef: The Professionals winner amongst them, collaborated to bring guests a one-of-a-kind food experience, in the most exciting restaurants Sussex has to offer.” Future events include a Christmas Party in December andSussexShowcase in March 2024.

The charity is staffed by a combination of a small number of paid staff and volunteers – trustees as well as ad hoc volunteers who fundraise and help out at events - and is, Jessica tells me, now at capacity with current staffing levels. In 2024, the aim is to recruit another chef to grow the team and meet increasing demand.

“All this growth requires more funding so our main challenge will be to bring in more donations and partnerships to ensure we can keep moving forwards.”

Ensuring the generosity of the local people is put directly back into the immediate community. When I ask how much support the charity receives from the local community, Jessica is emphatic. ”A lot! Our School Sponsorship, Industry

Partnerships and Table Talk Business Club members are predominantly Sussex based. Those attending our events and bidding at fundraising auctions are also mostly from Sussex. We believe in creating an ecosystem whereby the generosity of the local people is put directly back into the immediate community.”

The foundation also works with the Royal Academy of Culinary Arts’ Adopt a School Trust, which brings chefs and hospitality professionals into primary schools, helping children develop healthy eating habits, enthusiasm, interest in food and learn about the hospitality industry. to the Trust which sponsors the Foundation’s full-time Sussex-based chef and delivers food education across the Sussex region.

“I learnt so much and had such a fun time – this was the best day of school ever!” Brodie, aged 11 Table Talk Foundation has delivered food education to more than 30 schools and holiday clubs, helping over 1,200 children make informed choices and eat better, teaching skills and knowledge that will foster healthy choices throughout children’s lives. In 2022-2023 the Foundation, in partnership with Adopt a School Trust, raised £200,000 to build a bespoke training kitchen at Plumpton college. From where they can offer Chef on a Farm sessions that give children a hands-on farm-to fork experience. Jessica says, “Sessions started in May and we’ve been overwhelmed with positive feedback.”

“It was wonderful to see the children using the skills Chef John had taught them in a real kitchen. Being able to create their own lunch from scratch would have been the first time most of them would have experienced anything like it.”Primary School Deputy Head Teacher.

This year also saw the Foundation launch its Hospitality Training Programme, featuring eight

sessions and networking lunches. Entirely funded by charity fundraising, the programme is designed to develop critical skills, knowledge and industry connections to hospitality professionals in Sussex. Jessica says that feedback has been positive – with one hundred percent showing “an improved confidence rating in their ability to open safe conversations around mental health and to signpost appropriately.”

Comté stuffed mushrooms

On sourdough toast

Ingredients – serves 2

(For all ingredients visit us at Village Larder

• 4-6 medium-large flat mushrooms

• 125g smoked bacon, cut into small pieces

• 1 banana shallot, finely chopped or whizzed in a food processor

• 1 garlic clove, crushed or use a food processor

• 4 tbsp rolled oats

• 1 tsp Carla’s rosemary seasoning

• 1 tsp Carla’s piri piri seasoning

• 50g Comté cheese, grated

• 4 slices toasted sourdough

Method

1. Preheat the oven to 200c fan. Wipe any dirt from the mushrooms and remove the stalks, then finely chop the stalks, and set aside. Place the mushrooms on a baking tray flat side down.

2. Fry the bacon in a pan for 8-10 mins until starting to crisp, then add shallots, mushroom stalks, and garlic, fry for a further 5 minutes.

3. Remove from the heat and add the oats and seasonings to the pan, mix well so the pan juices start to absorb into the oats. Spoon the mixture into the hollows of the mushrooms and sprinkle with the grated Comté cheese.

4. Bake for approximately 10-15 minutes until the cheese has melted and serve with toasted sour dough.

More people are moving to Horsham according to recent study

A new study conducted by conveyancing solicitors, Bird & Co, has uncovered the most popular regions to live in West Sussex, having analysed Office of National Statistics net migration figures.

The study breaks down the stats by County and includes statistics on net internal migration, average house prices and the average ages of people migrating to the region.

According to migration data, people moving to West Sussex are moving to:

5. Mid Sussex, 390

Based on ONS data from 2021 released in December 2022, West Sussex’s average house price is £498,117. In Horsham, the average house price was higher at £458,212.

In West Sussex, the majority of the population is below the age of 40, except for the district of Arun, where a significant proportion falls within the 65-69 age group.

Painted lady migration patterns and other migratory insects:

Every year, Southern England becomes the stage for a remarkable sight when 3.5 trillion flying insects, equalling the weight of 20,000 reindeer, migrate across the country! Among these in-sects are the Painted Lady butterflies, the subject of a recent discovery among scientists and butterfly enthusiasts.

The Painted Lady butterfly (Vanessa cardui) has a 4-7.3cm wingspan and often populates dry open areas. Every spring they journey from their overwintering grounds in North Africa and the Mediterranean region to the UK, Asia and Northern Europe. These butterflies obtain average altitudes of 500m, can reach 30mph in favourable conditions, and can do a 9000-mile round trip from Africa to the Arctic Circle! For many years it was a mystery where Painted Lady butterflies went in the autumn, whether they died in the UK or made a return journey, as they fly at such a high altitude and could not be seen by butterfly observers. It was recently discovered that the Painted Lady butterflies do make a return journey in autumn, returning to favourable temperatures further South.

These butterflies are unique due to their migration being the longest-ever recorded flight for butterflies. These migrations can take generations, as they lay their eggs in the UK, and the offspring continue the migration South to southern Europe and North Africa, although not all participate, and some may not survive the harsh UK winters. As they undertake continuous, year-round mating, painted ladies are able to stop, breed and die at locations along the migration route.

How do they know when to start the migration?

The caterpillars of Painted Ladies grow while the days are lengthening, to then fly northwards, and when the days shorten the butterflies know to travel south to warmer climates.

Painted Ladies are the only butterflies found in Iceland and since the 1970’s their population has increased by 32%! In the UK they feed on, amongst other plants, Teasels, Ivy, Ragwort, Heather and Hawkweed.

Although the migration of Painted Lady butterflies is one of a kind, other migratory insects are worth keeping an eye out for.

Sometimes we experience mass migrations of insects in summer and autumn. Between 10 and 25 billion medium and large insects move back and forth out of regions in Britain. This includes hoverflies for example, where 4 billion come to and from Britain each year, and they are essential for pollination and natural pest control.

Mass migrations truly can be a shocking sight, for example in World War 2, military observers reported a ‘golden ball’ drifting over the channel and thought it was poison gas, only for it to be migrating Clouded Yellow butterflies.

We also host other insects on their migratory journeys, such as the Red Admiral. This butterfly is extremely common in spring and throughout summer too, usually spotted near flowers such as Buddleia. They make their journey from North Africa and continental Europe, arriving in the UK in Spring. They lay their eggs in the UK, meaning new butterflies are around from July onwards.

We also host Hummingbird Hawkmoths in Spring, which usually live in Central Asia and in the Mediterranean region. They are named for their similarity to hummingbirds, feeding on nectar using their long beaks. Hummingbird Hawkmoths have very good memories, and often return to the same flowerbeds every day at the same time. They breed in the UK, and due to their inability to survive the winter they make return migrations in Autumn.

If you are lucky enough, you might be able to spot a Monarch Butterfly which makes occasional, sporadic appearances in the UK. It is believed that strong winds may carry individual Monarch butterflies across the Atlantic Ocean

into the UK. They’re native to the US and can fly up to 100 miles per day. Migratory insects that visit the UK undertake incredible journeys driven by instinct and environmental cues, playing an important role in pollination, pest control,

Admissions open in September for Surrey Maths School - a new state-funded specialist maths school for gifted maths students aged 16-19, located in Guildford and serving the South East. The school, which is set to welcome its first cohort of students in September 2024, will be delivered through a partnership between Learning Partners Academy Trust and the University of Surrey. The Ourstory Archive at The Keep in Brighton shows how the UK's most popular international Pride Festival began as a small annual march against Section 28. Sometimes called Clause 28, this was the Conservative’s government’s response to the LGBTQ+ community’s demands for equality in the late 80s. Becoming law in 1988, it banned the ‘promotion’ of homosexuality by local authorities. The LGBTQ+ people of Brighton fought back, forming ‘Brighton Area Action Against Clause 28’ or BAAAC28. The strength of the LGBTQ+ community in Brighton today has its origins, in part, in the activism and the endurance of BAAAC28. Labour repealed the law in 2003. www.thekeep.info.

Summer success for young equestrians

It has been a very busy summer few months for an equestrian team from Steyning Grammar School. On 11th June they came second at the Felbridge showground qualifying them for the national championships at Addington in October. Then on 30th June they competed at the prestigious All England jumping ground at Hickstead, followed by gaining a team first place at Coombelands Showground in July. Kitty Lovell placed second individually and Tilda Angell was eighth. Megan Duke rode a lovely clear round to help her team to first place. All the girls were

In January this year Horsham District Council partnered with Podback to launch a free collection service for residents to recycle their used coffee pods from home. The service has proved to be a great success with over half a million pods collected and recycled in the first six months of operation. Local builder wins armed forces award

Local housebuilder Thakeham has been awarded the highest level of recognition for its support of the armed forces community. Under the Defence Employer Recognition Scheme (ERS), Gold is the highest award for those organisations who pledge, demonstrate and advocate support for, and align their values with, the Armed Forces Covenant. With only 193 recipients of this accolade nationally, Thakeham is the only housebuilder in the South East to achieve this status.

Acapella group widens its repertoire

A local group of male singers Vocal Fusion Acapella (VFA) with their director Zoe Peate have been busy in the last year. New members joined us after a free Learn to Sing Course in 2022 and are now happily part of the VFA family and learning a whole new repertoire. The group’s repertoire is now expanding from barbershop, popular song and musicals to Sea

Shanties and Folksongs. Over the last few months, they have added a couple of Disney songs, starting with ‘The Bare Necessities’ and ‘You’re Welcome’ from Moana, with more to come. The group would love to recruit more members - especially basses! Wednesday evening rehearsals are at Dial Post Village Hall RH13 8NH and their next concert is on Saturday 7th October at St Peter’s in Henfield. These are the “Heart Smart Walks” run by Chichester District Council. They must be pre-booked up to 7 days in advance, see below.

few days before you add on any more. There’s no right answer. Setting things up so you win often is a great way to give yourself some positive experience with your goals.

When you win, you want to win again

Your goal becomes something you can successfully take steps towards, and not an unsurmountable task – and that makes the mental portion easier.

Never underestimate the power of taking small steps consistently. Things don’t have to be perfect for you to be winning.
