MEET TWO OF OUR ELITE CHEFS

Chef Israel Hernandez Maciel

Elevate your dining experience with the phenomenal Chef Israel, a culinary mastermind who brings more than just a meal to your table; he brings a vibrant mosaic of culture, history, and exceptional skill. Born in the bustling heart of Mexico City, he found his calling in the aromatic kitchens rather than the drawing boards of architecture. His culinary journey, rich with diverse experiences, blossomed in the historic core of the city, where he was profoundly influenced by culinary masters like Linda Rodríguez and Martin Swift.

Israel’s passion for cuisine is evident in each creation, a harmonious blend of tradition and innovation. His culinary canvas is vast, having been refined with international experiences in France, the Bahamas, and the United States. His repertoire not only embodies the heart of Mexican cuisine but also showcases a deep appreciation for the intricate flavors found in Asian and fusion cuisines. Each service he offers is a challenge, aiming to resonate with diners through a tapestry of flavors and memories that linger long after the meal.

His gastronomic philosophy is deeply personal, believing “to be a chef, one must love to serve, for it is in that moment where the magic unfolds, crafting not just a meal but an unforgettable experience etched in the grand tapestry of flavors and memories.” Inspired daily by his son Matías, his culinary creations are often reminiscent of cherished family recipes, including the Chilpancingo-style hard tacos, a beloved specialty of his Aunt Marielena. In Los Cabos, where he has resided and charmed palates for over 16 years, he finds true joy in witnessing an empty plate returned—a universal sign of a culinary battle won, and a memory beautifully made. It’s not just a dining service, but a culinary journey that turns a vacation into an extraordinary gastronomic adventure.

Chef Emmanuel De Castro

Born and raised in San Luis Potosi, Mexico, Chef Emmanuel’s culinary passion was sparked in his family’s kitchen, guided by the artistry of his grandmother and mother. He began his formal culinary education in his hometown before embarking on a journey across Mexico to delve into the nation’s diverse cuisines and further refine his skills through various courses and programs. His culinary compass was recalibrated under the mentorship of renowned Chef Martin Lippo during an international course.

Today, Chef Emmanuel’s heart lies with Mexican cuisine, cherishing its freshness, vibrant flavors, and versatility. His signature dish, the Tortilla-Crusted Sea Bass and Adobo Mexican Shrimp, is a true embodiment of this passion. This culinary masterpiece pairs a fresh sea bass fillet with a crunchy tortilla crust, alongside a vibrant and spicy adobo shrimp, complemented beautifully by a butternut squash puree and a side of grilled organic vegetables. This dish merges Mexican authenticity with innovative culinary techniques, creating an unforgettable fusion that pleases even the most discerning palate.

Quality ingredients are paramount to him. He’s unwavering in his commitment to celebrating the purity of flavors and nourishing both body and soul. His kitchen is a sanctuary for authenticity, where hormones, additives, and subpar ingredients have no place. Cooking, for him, is an art form—a medium for storytelling, emotional expression, and fostering connections. In Chef Emmanuel’s words, “every dish is a canvas, and each bite is an opportunity to delight the senses and foster connections, one remarkable meal at a time.”
